Want some good, tasty alternatives to help you stay in line with those fitness goals? Try these! They’re not pretending to be a perfect food, they just know they’re not as bad an influence as their cousins.

Avocado, Spinach, and Artichoke Dip *(vegan/gf)

If you like guacamole and spinach artichoke dip, you will LOVE this easy dip. It’s the BEST of both dips in one bowl. What You Need • 1 large or 2 small avocados about 1/2 pound total, halved and pitted • 1 tablespoon extra-virgin olive oil • 1 tablespoon lemon juice or more if needed

1 clove garlic roughly chopped 1/4 teaspoon fine sea salt Pinch of red pepper flakes Freshly ground black pepper 1 1/2 cups packed baby spinach about 1 1/2 ounces • 1/2 cup well-drained marinated artichokes from 5-ounce jar • Serve with homemade pita chips crackers, or veggies What You Do Using a spoon, scoop the avocado flesh into a food processor. Add

the olive oil, lemon juice, garlic, salt, pepper flakes, and several twists of black pepper. Blend until smooth, pausing to scrape down the sides as necessary. Add the spinach and artichokes and pulse until they are roughly chopped, 15 to 20 times, pausing to scrape down the sides if necessary. Season to taste with additional salt or lemon juice, if needed. Transfer the dip to a small serving bowl and serve with pita chips, crackers, or veggies. Note: To store the dip, press plastic wrap against the surface to prevent it from browning. It will keep in the refrigerator for up to 4 days. For gluten-free, serve with vegetables or gluten-free crackers or chips.

3-ingredient Lentil Tortillas *(vegan/gf)

Tasty, gluten-free, high protein lentil tortillas. Yes please!! You can use these with your avocado spinach dip- YUM! What You Need • 3/4 cup red lentils (150 g) • 1/4 tsp sea salt • 1/4 tsp ground black pepper What You Do Drain and rinse the lentils well. Soak them in 1 1/4 cup filtered water for at least 3 hours. Blend the soaked lentils together with the water, salt and pepper until smooth. The batter should be slightly thick, like pancake batter. Heat a non-stick pan (!!) to medium heat. Transfer 1/4 cup* of the batter to the pan and spread it evenly to a (not too) thin circle. Cook till the upper side begins to harden, then carefully flip and cook from the other side. Repeat with the remaining batter. Cooking time per tortilla is about 1-2 min. They should be slightly browned (see photos). Serve directly or store covered in the fridge. To reheat, simply place them on a hot pan. Notes *1/4 cup servings makes lentil tortillas the size of corn tortillas. **Spice it up! Add a few spices or herbs to the batter, if you like. **The lentil tortillas can also be frozen. Simply defrost them in the fridge overnight and reheat them in a pan.

Creamy Mango Ice Cream Recipe *(vegan/gf) What You Need • 2 cups mango frozen • 2 banana frozen • 1 teaspoon chia seeds What You Do In a high-speed blender combine the mango and banana. Using a tamper put the blender on the highest speed setting. Mash the mixture until fully mixed and forms into “nice cream”. Scoop up and enjoy with your favorite toppings, we use chia seeds as natural sprinkles.

My passion for learning, teaching and history is undeniable, but I was struggling financially, so I began moonlighting as a bartender just to make ends meet, and unexpectedly fell madly in love with every aspect of the bar business. For my squad and I it is about so much more than making a great cocktail. It’s about memories, music, history and sharing those moments, ensuring you embrace the present, reflect on the past and securing a bright future. Rosa Keen is a fictional character we created in response to the 1938 classic, Margarita. The fictional story starts with a question, what if margarita had an older sister we never knew about? Who is she is? What is she about? Well, Rosa was an avid reader, intelligent, kind and obsessed with the idea of traveling the world! Inspired by one of her personal heroes, Frida Kahlo, she left her humble hacienda in 1935 to explore Nordic countries where she met her husband Leif Keen. Rosa returns home to introduce her beau to the fam and discovers her sister, margarita, was a famous dancer and even had a classic cocktail named after her! Rosa couldn’t be happier and the entire squad approved of Leif and all lived happy and meaningful lives. A person this awesome and humble deserves their own cocktail. • • • • • •

2 oz of Infused Resposado .25 oz St. George Raspberry Liqueur .5 oz lime juice .5 oz Demerara simple 3 eye drops of orange bitters Pinch of salt, or two

Add all ingredients and ice to your shaker tin, and shake vigorously for 15 seconds. Fine strain over fresh ice and garnish with cilantro. Enjoy the good vibes.

Run, Walk, Eat Donuts!! Donut Dash 5K!!

Calling all runners, walkers and donut lovers! The Geneva Community Chest is hosting its 3rd annual Donut Dash 5K and Primrose School of St. Charles West Kids Runs on Saturday, July 13th. Last year, participants enjoyed an amazing race experience! This year the planners will be adding a chip-timed one-mile run to the race and Burger Local, a race sponsor, will be opening upon completion of the race for participants to provide for more socializing with their friends and family. The end result is a family-friendly event that will delight adults and children, alike. The Donut Dash will be a scenic 5K walk/run along the Fox River trails and along with the Primrose School of St. Charles West 1-mile run for children ages 7-12 and a “Munchkin” run for children under age 6. And most importantly…donuts at the finish line for all participants! The Jaguar chip-timed, USATF certified 5k run/walk will start at 8:00AM at the Gunnar Anderson Forest Preserve (behind the Kane County Gov’t Center) located at 719 S. Adam Gibbons researched this history with more than one hundred never-before-published images gathered from both private and public records. As a farming community, Wasco, IL supplied Elgin’s cheese, butter and condensed milk plants with raw milk. Wasco, IL was included in the Museum’s documentary Dairies to Prairies that tells the story of Elgin’s dairy heritage. Elgin Civil War Experience Returns June 8 and 9 The public is invited to attend the third annual Elgin Civil War Experience, taking place on Saturday, June 8 and Sunday, June 9 on the property adjacent to 600 S. State Street in Elgin. Saturday event hours are 9 a.m. to 5 p.m. and 6:45-10 p.m. and Sunday event hours are from 9 a.m. to 3 p.m. The City of Elgin is proud to offer a unique educational event providing an immersive look at a turbulent time in American history. The Elgin Civil War Experience will feature live battles, offer spectators the chance to experience living history, see accurate portrayals of soldier encampments and so much more. This year the 9th Virginia Cavalry Co. B will lead over 300 Civil War Reenactors in a series of “Living History� events and activities. For this event, there will be two featured battles. On Saturday, June 8th, The Battle of Atlanta will be reenacted at 3 pm. On Sunday, June 9th, The Battle of Ezra Church will be reenacted at 3 pm. The battles will feature live simulated combat with artillery, calvary and infantry soldiers providing the audience an up-close look at how battles were fought during the Civil War Era. With the two battles being the main attraction, history enthusiast and guests of all ages will have an opportunity to explore various acFOX VALLEY MAGAZINE / JUNE 2019


tivities and learn about this historic period. The famous and historic generals, General Ulysses S. Grant and Stonewall Jackson to name a few, will provide an in-depth lesson of their role during the Civil War. Harriet Tubman and Jefferson Davis will also be featured. Perhaps the most famous and popular historic figure, President Abraham Lincoln will be available for guests of all ages to engage and take photos with. Guests are invited to walk and tour the military camps to discover and engage with the all the historic figures and soldiers. This year will feature a “Fashion Show” highlighting the unique costumes and dress attire during this period. Guests will also learn how medicine was administered through a Surgery Demonstration and how medicine was prescribed by an “Apothecary.” There will be an ongoing food demonstration throughout the day. A game of “Rounders,” which is the Civil War’s version of baseball, will be played on Saturday June 8th. Guests are invited to visit the Civilian camps to learn more.

Before the end of Saturday night, guests are invited to a “Candlelight Tour” through the military and civilian camps. The tour will shed some light on some historical facts and showcase how life was during the period. At the end of the tour, guests will have an opportunity to watch a period musical and dance performance by several Civilian reenactors. The tour preludes the closing activity of the “Night Fire” at around 9:30 pm. The skies will be lit up with the firing of cannons. This is a spectacle and a perfect close for an eventful first day of this year’s Civil War Experience. Another unique feature for this year is the opportunity to eat “period food.” Fresh “Johnny Cakes” will be available for purchase. Naperville Park District to Offer Free Summer Events

Farmers Market, Night at the Movies and Rock the Hill returning in 2019 As we look forward to the summer weather which we hope is just a few weeks away, it’s time to mark your calendars with the Naperville Park District’s free, outdoor concerts and events. The 13th annual Frontier Kite Fly Festival and Kick Off to Summer, presented by The Branch, will be held at Frontier Sports Complex, located at 3380 Cedar Glade Drive on Sunday, June 2 from 10:00 a.m.-4:00 p.m. A free event, the Kite Fly Festival offers fun for all ages and a chance to view gigantic kites flown by kite enthusiasts from Chicago Kite. Participants also can practice flying their own kites. Other activities include free, live music, unlimited inflatable jumping for $5, and activities provided by KidsMatter for teens. Families are encouraged to enjoy a relaxing day at the park, and to bring a picnic lunch or purchase food from a variety of food trucks on site. St. Charles History Museum Summer Exhibit to Feature Local Connections to the Titanic Disaster The St. Charles History Museum’s summer exhibit, Tip of the Iceberg: St. Charles’ Ties to the Titanic will explore local connections to the most infamous disaster in maritime history, the 1912 sinking of the White Star Ocean Liner RMS Titanic. Alice Berg Johnson and her two children, Harold and Elanor, were returning home to their hometown of St. Charles after visiting Alice’s ill father in Finland. Alice purchased three Third Class tickets to set sail on the Titanic for what would be its first and final journey across the Atlantic Ocean. The Johnsons were among the approximately 710 people who made it off the ship alive after the vessel struck an iceberg and sank with over 1,500 passengers still on board. Through months of research, the St. Charles History Museum Staff has been able to piece together the story of the Johnson family to find out exactly what happened to the family on that fateful night in the North Atlantic Ocean on April 15, 1912, and how they and FOX VALLEY MAGAZINE / JUNE 2019


the other survivors were able to make it home. “The Johnsons’ story is just one of the many reasons why we are still so fascinated with the Titanic to this day,” said Alison Costanzo, Executive Director of the St. Charles History Museum. “Although the Titanic will always be remembered as a terrible tragedy, it is also an amazing story of survival and resilience that also led to improved safety regulations that have prevented a similar tragedy from happening since.” In addition to the Johnsons, the exhibit will also feature the stories of Molly Brown, first class passenger remembered for her bravery and actions during the sinking, as well as the Second Class Caldwell family, who were also on their way home to Illinois when the ship went down. My clients love to travel, but they don’t always enjoy packing. That’s where That Girl Organizes comes in. Just like our advice for living simply with only what you need and love, the same rings true for packing. Women need to layer and mix and match outfits. A soft silky top can be worn casually with a skirt and flats or dressed up with a necklace or scarf and heels. However, we still recommend keeping shoes neutral and few (1-2 pair) so your shoes don’t take up most of the bag! Don’t forget to stuff undergarments in your shoes to hold the shoe’s shape and to save on room. Sweaters and pashminas are great for layering and are easy to wear and carry with you on the plane. Also, dresses are all-in-one outfits that take up less space. You only need one outfit per day ladies! Fashionistas: remember that travel is about the experience and that you are not in a fashion show.

Don’t forget to pick out your accessories to match or even change up your outfits. Pick one or two go-with-everything necklaces and earrings. Consider wearing one of these jewelry sets on the plane. Place your items in a jewelry roll, a small roll up bag made especially for jewelry, to fit snuggly between your clothes or simple zippered bags. See-through bags from Eddie Bauer are That Girl Organizes favorite! The small rolls up bags are great for makeup as well. Keep everything fresh and neutral to go with everything. Don’t forget liquids have to be 1oz or less. Remember, you can purchase toiletries at a hotel (often you can get these free) or local drug store easily. Gents: You Need So Little, We Envy You! My gentlemen clients aren’t always keen on packing either, but boy do you guys have it easy! So, the same rules apply here as did for the ladies for the most part.

Pack only what makes you feel good and that you can mix and match. Guys, you can wear khakis or denim with pretty much anything and look polished! Once you choose a pant or denim, choose a short or long- sleeved shirt and be able to top it with a button down, sweatshirt or blazer and you are ready to roll! You should be able to wear your denim several times and pants at least twice (unless you are hiking or are engaged in a sport). Your “topper” can be worn more than once as long as your base shirt is clean. Wow! Talk about reducing the amount of clothes you need to pack! Now, roll your clothes and you save even more space! Toiletries are pretty much the same as the ladies. Take few items and only what are truly needed. Packing can be as easy as that!

NAPERVILLE’S RIBFEST and the Last Nights at Knoch Ribfest Rocks and Rolls July 3-6 The Exchange Club of Naperville is firing up for its 32nd Ribfest and its final nights at its home of 32 years, Naperville. The club’s leaders try to never lose focus on their mission: raise funds to eliminate child abuse and domestic violence in all forms. To that end, every year, they donate thousands of hours to produce what has become a destination concert series found in social media under hashtags #napervilleribfest #partywithapurpose #lastnightsatknoch. club distributes net proceeds from Ribfest to area agencies in DuPage, Kane, Will and Cook Counties. This past winter, 48 agencies received funds from Ribfest 2018. “People in crisis and agencies who serve them are counting on us”, says club president John Dunham. “We’ve donated $17.5 million dollars back to area agencies, and it’s a privilege to do so.” The strong line-up on the Navistar Main Stage highlights the growth and popularity of the festival. “It’s a balance to court a younger generation and keep our loyal patrons,” says 2019 co-chair Pete Paulsen. “We have worked to diversify our music line-up for a few years, and we hit the sweet spot this year.” Ribfest opens July 3rd with the iconic Living Colour, best known for one of their hits “Cult of Personality”. Living Colour’s first appearance at Ribfest is a must-hear for music fans, says co-chair Sandy Rocush. “Their sound is influenced by heavy metal, funk, jazz, hip hop, punk, and alternative rock, and their lyrics are complex and compelling.” Punk rocker Billy Idol who defined Generation X will headline on the 3rd. An early architect of sound, style and fury of punk rock, Idol’s lip- curling sneer and fist-pumping persona vaulted him into the mainstream as one of MTV’s first megastars, making him one of the most recognizable faces in pop music, while selling out arenas everywhere he played. He has sold 40 million albums while scoring numerous platinum albums worldwide, nine top forty singles in the U.S. and 10 in the U.K. including “Dancing With Myself, “White Wedding,” “Rebel Yell,” “Mony Mony,” “Eyes Without A Face,” “Flesh For Fantasy,” and “Cradle Of Love.” July 4th at Ribfest will be highlighted by performances influenced by Miami sound. Rapper Flo Rida who has sold over 100 million records with #1 records “Low,” “Right Round,” and “My House” will headline the Navistar Main Stage on the 4th. The four-time Grammy nominee and 42-time platinum artist’s performance will be followed by the annual fireworks extravaganza, sponsored by Meijer. KC and the Sunshine Band will perform earlier in the day. “Every time we talked about the possibility of KC and The Sunshine Band, the vibe in the room got happy and everybody started moving and singing, albeit badly, a favorite KC and The Sunshine Band song,” says Paulsen. “That’s when you know you have a winner. Their catalog of music is impressively long, and fun.” Country Day at Ribfest is July 5th. Naperville’s own Joe Hanson will be the first act of the day on the Navistar Main Stage. one with a heart for others makes him a great fit for Ribfest. He’ll bring a party for our mission.” July 6th at Ribfest will be bittersweet. The final night at Knoch Park means big changes are ahead for the Exchange Club of Naperville. A new location, most likely in Romeoville, Illinois, will be home in 2020. The Ribfest Committee asked the Entertainment Committee for a big night for the 6th, specifically classic rock. They delivered: Bad Company will close out Ribfest and ZZ Ward, Grand Funk Railroad, and Empty Pockets will perform as supporting acts. One of the most acclaimed bands of the classic rock era, England’s Bad Company has put its indelible stamp on rock ‘n’ roll. “There’s no better way to celebrate an enduring

philanthropic music event than to host Bad Company. At 19, he joined his father, who by then had influenced some of the top bluesman of history: Jimmy Reed, the Fabulous Thunderbirds, Johnny Winter and Junior Wells. For 12 years the two would tour together, putting Ronnie out front with Eric Clapton, B.B. King, Buddy Guy and Koko Taylor. In 1998, when he was 32, his father told him to go solo. an in-demand drummer. By the early 1990s, Montoya had his own band. His debut as a leader, 1995’s Gotta Mind To Travel became an instant fan favorite. After two more successful Alligator releases—2002’s Can’t Look Back and 2007’s Dirty Deal, Montoya signed with Ruf Records. Many musicians claim that they “grew up in the church,” but for Robert Randolph that is literally the case. The renowned pedal steel guitarist, vocalist and songwriter led such a cloistered childhood and adolescence that he heard no secular music while growing up. If it wasn’t being played inside of the House of God Church in Orange, New Jersey—quite often by Robert and members of his own family, who upheld a long but little known gospel music tradition called sacred steel—Randolph simply didn’t know it existed. Sculpture at the Fine Line Indoor exhibit runs through June 29th Outdoor exhibit runs through October 20th This year Fine Line Creative Arts Center, 37w570 Bolcum Rd, St. Charles has combined its indoor and outdoor spaces into one incredible gallery exhibit. Titled “Sculpture,” the show brings together local and national artists to showcase all things sculptural. Fine Line first hosted an outdoor sculpture exhibit in 2017 and has chosen to host one every other year. The outdoor show consists of works by seven artists, both local and out-of-state, whose pieces will be on display around the Fine Line campus until the end of October.

The indoor exhibit shows pieces by thirty artists, and while, as expected, many are local, there are a large number of pieces from other states. In fact, ten states including Illinois are represented by the exhibit. The exhibit is a beautiful mix of artists views with many whimsical pieces included. One of the local artists taking part is Connie Oberta from West Chicago. Connie describes herself as a story teller. Each of her pieces tell the story of a person that she has known; an ancestor; a historical person or one imaged based on our culture and the society of today’s world. Her piece titled “Girlfriend Listen to Me”, which represents the #MeToo movement was given an Award of Merit. This exhibit is an incredibly diverse group of sculptural pieces and certainly worth seeing in person. Fine Line is Open to the Public Monday – Saturday from 10 am – 5 pm

Batavia Park District Free Summer Concert Series The Batavia Park District present the River Rhapsody Concert Series, which kicks off Wednesday, June 12 at 7:00 pm at the Batavia Riverwalk. FREE SPEECH IS NOT ALL THAT IT’S CRACKED UP TO BE!

BY BILL BOZNOS, BOZNOS LAW OFFICE By now you may have seen the viral video of the woman who decided to express her views about President Trump by giving him the finger as he rode by. Or, you may have looked on as a man tried to cut in line and interfere with the President’s limo procession recently. And finally, who can forget the searing images of race hating protestors in Charlottesville, S.C.? In each of these instances, the individuals who expressed themselves so vocally (or through obscene hand gestures) were summarily fired by their employer. What gives? Isn’t there a right to speak up in public without fear of losing your job? Wasn’t peaceful protest the corner of the civil rights movement of the 60’s? What happened to “freedom of speech?” Well, as you are about to learn, that “freedom” only goes so far and with a few, limited exceptions, an employer is wholly within their rights to terminate an employee for causing a distraction or for portraying the company in a negative light. Employers and employees need to balance two competing ideals. The first ideal holds that employees as individuals and citizens should be able to speak their mind about issues they feel are important, especially when they are not working. On the other hand, businesses should be able to insist that workers do the jobs they are employed to do and refrain from voicing opinions that cause distraction or are contrary to corporate values and policies. Let’s start with the proposition that all speech is not “free”. Everyone knows you can’t yell “fire” in a crowded theater or auditorium without legal reper-

cussion. The First Amendment to the Constitution protects against governmental censorship of speech. With certain exceptions, a private employer can restrict speech in the workplace. And now with the pervasive nature of social media, an employer may, with limited exception, restrict an employee’s right to express their views. Employers with carefully crafted social media policies, (which Boznos Law Office can design), or those that provide employees with company tools (laptops, smart phones, desktop computers, to trumpet their views can take steps to discipline or even terminate employees that cross the line.

and technology policies that inform employees of what personal use, if any is permitted on company technology; • Implement an appropriate social media policy that does not run afoul of Section 7 of the NLRA and make certain comprehensive training on the policy takes place; • Educate and train ALL levels of employees on the company’s core values and policies regarding equal employment opportunity, and prohibitions against discrimination, harassment, and hateful, offensive, or threatening speech.

One area however where an employee may be protected in espousing his/her views involve terms and conditions of employment. It may come as a surprise to many employers, but the National Labor Relations Act (“NLRA”) contains a provision that applies to ALL employers, not just those that are unionized. Known as Section 7 of the NLRA, this provision provides that “employees shall have the right to self-organization to form, or assist labor unions, to bargain collectively through representatives of their own choosing, and engage in other concerted activities for the purpose of collective bargaining or other mutual aid or protection…” The term “concerted activities” has been interpreted to include speech that relates to the terms and conditions of employment, such as wages, and working conditions. The key here is to be able to differentiate between social commentary that is purely political in nature as opposed to conversation that impacts a term or condition of employment. In the first instance, an employee has no protection and may be subject to discipline or even termination, whereas the second example is protected free speech.

And so, our poor female employee who decided to vent her political frustration against the President was rightfully terminated for her “free speech.” The driver who wanted to complain about the President’s policies was also terminated properly. Regardless of whether or not the President believed there were “good people on both sides” of the issues in Charlottesville, those that were preaching hatred or violence were justified in being terminated from their jobs. In each of these instances, the employer was correct that the speech or conduct had nothing to do with the terms and conditions of the employment and further reflected negatively upon the employer. The lesson here is that speech is only “free” if it involves a genuine workplace issue. Mailboat tours open for the season on Friday, June 15, running daily through September 15. What began in 1916 as a service born out of necessity has evolved into a popular tourist attraction in the historic resort town of Lake Geneva, Wisconsin. Jumpers are selected based on 50 percent for athletic skill, 50 percent for delivery of narrated tour information, and 50 percent for enthusiasm. “Yes, we hire those who give 150 percent,” says Captain Neill Frame. “We have an important job to do-making sure lakeside residents receive their mail without a hitch while passengers get the history lesson and entertainment they signed up for.” The U.S. Mailboat leaves the Riviera Docks daily at 10 a.m., downtown Lake Geneva, while passengers watch the non-stop action on the 2 1/2-hour cruise as the jumper leaps back and forth. No two mailboat tours are the same with the exception of every tour delivering fun and spontaneity when a jumper misses the boat and makes a splash in the lake. In between jumps, passengers get a history lesson about the Chicago notables such as Schwinn, Wacker, Selfridge, Swift and Wrigley families who built estates after the Great Chicago Fire. Cost to take the mailboat cruise is $40 for adults, $38 for seniors age 65 and over, $23 for passengers 4-17 years (no charge for 3 years and under). Group rates are also available.
