SHITAKE MUSHROOM + LENTIL ASIAN TACOS BY SARA SNELLING OF ALL ON THE TABLE

You can get shitakes and cilantro micro greens right now from some of our local farms! Woohoo! If you don’t like mushrooms, triple the amount of lentils, or try tofu or Hugh also suggested some steak, if you’re into that sort of thing. Shitakes are not a beginner mushroom, I find them very “mushroomy”, so use any type you like really. The same things can be put in rice paper for a great spring roll too.

FOX VALLEY MAGAZINE / MAY 2019

SERVES 2 (ABOUT 6 TACOS) // Miso Herb Sauce // • 3 garlic cloves • 2 Tbsp. white or yellow miso • 1 Tbsp. honey • 1 Tbsp. soy sauce • pinch of red pepper flakes • 3 Tbsp. orange juice • 1/4 cup rice vinegar • 2 packed cups basil leaves • 1 packed cup cilantro • 3 Tbsp. toasted sesame oil • 1 1/2 Tbsp. extra virgin coconut oil, divided • half of a yellow onion, diced • 6 oz. shitake mushrooms (halve any large ones) • 3/4 cup cooked lentils (I used de puy) • 2 tsp. apple cider vinegar • sea salt + pepper • small tortillas • 1-2 super ripe avocados • 3/4 cup fresh grated carrots • micro greens, for garnish For the sauce, pulse the garlic cloves through the rice vinegar in a food processor to blend. Once mixed, add in the herbs and give a few more pulses to chop. You want it slightly textured. With the motor going, drizzle in the oil. Taste and adjust as you prefer. Cover and set aside.

they have reduced in size, about 4 minutes, add the remaining coconut oil and sauté to mix. Add the lentils and another pinch of salt and pepper and sauté to warm through. Lastly, add the vinegar and stir to scrape up any brown bits in the pan. For the assembly line of the tacos, heat the tortillas over a stove flame until a bit charred. Smash about a quarter of an avocado down the center. Top it with a few pinches of grated carrots, a portion of the mushroom mixture, a generous dose of the sauce (don’t be shy, it’s all the gusto here) and top with the micro greens. Enjoy warm. *So with mushrooms, don’t immediately cook them in a bunch of fat. If you cook them in just a teeny bit and some salt, they release a lot of their own water and concentrate the flavor and THEN you add some fat (oil, butter or what not) and it finishes off the flavor and texture instead.

Heat 1/2 Tbsp. of the coconut oil in a large sauté pan. Add the diced onion and sauté until just translucent. Add the mushrooms and a pinch of salt and just leave them to heat up and start to release moisture*. Once foxvalleymagazine.com

Swing into Summer with Primrose Farm’s Annual Barn Dance There’s no better way to swing into spring or get a (Lindy) hop on summer than with the fourth annual Barn Dance held at Primrose Farm on May 19. With music provided by Chicagoland’s own 10-piece swing band, Shout Section, and dance lessons courtesy of Geneva’s own Vargo’s Dance, this evening under the stars at the Farm promises to be a jive-hot step back in time. Shout Section Big Band features compelling vocals, talented musicians and amazing, quality music. The band will perform classic jazz from the 30s & 40s and showcase modern hits adapted to the big band style. The folks from Vargo’s Dance will be providing dance lessons to help dancers get in the – well, swing of things. The Farm will open their doors at 6pm to allow plenty of time to checkin before dance lessons begin.

FOX VALLEY MAGAZINE / MAY 2019

And learning swing dance can be that much more fun if one dresses in costumes of the era. Anyone wearing period appropriate clothes from the 1930s and 1940s can choose to participate in a costume competition. This “People’s Choice” contest will reward creativity and authenticity in capturing the era through vintage clothes and accessories, so get ready to raid grandma’s closet or sift through area thrift stores. Just as taking a break from the rigors of seasonal chores at events such as barn dances was a popular form of entertainment for farm families back in the 1930s, so was the chance to show off the fruits of their harvest and talents in their kitchen with a pie-baking contest. In the spirit of keeping it authentic, guests at this year’s barn dance are encouraged to show off more than their Lindy Hop by bringing a homemade pie to compete for bragging rights. During band breaks, pies will be judged based on appearance and taste. Winners will be announced during the final break of the evening. At that point, let the eating begin!

wiches, a variety of hot dog specialties and all the country fixin’s you might desire. Dancing in the barn can be an energetic pursuit, so when dancers need to cool their heels and catch their breath they can enjoy a break on a hay bale next to a bonfire or a tractor-drawn wagon ride around the farm fields. Twinkle lights and kerosene lanterns give the farm yard a festive glow and vases of fresh-cut flowers also add to the party atmosphere. And lest one forgets that all this food, fun and music is taking place at a working farm, several of Primrose Farm’s resident animals will be overlooking the fun as well. Most of the farm animals will be accessible for petting in the lots and pastures closest to the barn. Advance tickets are $10 per person while those purchased at the door are $15 each. Food and beverages are additional. To learn more about the evening, including information on the pie-baking and vintage costume competitions, visit the Primrose Farm’s Facebook page or call Primrose Farm at 630513-4370.

Being able to identify a problem and evaluate when something is right or wrong is one of the best gifts you can offer your child. Through highly motivating dramatizations and games like: toothpaste turtle, CEO Corner Office, cotton candy catastrophe, and the case of the balloon bouquet robber, children will learn how to problem solve using many methods. Located 24 stories above the Loop at 100 W. Monroe at the Hyatt Centric The Loop Chicago, this stunning blacklight mural will cover the entire East, West, and South facing walls of AIRE, further enhancing Chicago’s already remarkable cityscape. Designed and created by Onur, an internationally acclaimed artist known in the street art scene for his futuristic and experimental painting techniques, this vintage inspired piece is meant to immerse viewers in a dream-like “vignette” thus evoking emotional and introspective feelings while drifting amongst the clouds. By incorporating the use of cutting-edge materials, the timeless imagery of the mural will transform and change in appearance from day to night offering different versions and interpretations of the story. The mural is produced by the well-established curatorial team, Beauty & Brawn, who have earned their reputation as leaders in the creative community for their innovative arts programming, as well as for the production of some of the most iconic murals in Chicago. The series launch will feature an interactive installation designed and fabricated by Chicago artist, Tristan Hummel, which will then be redesigned and reimagined by a different local artist every month, utilizing a different artistic medium. Beauty & Brawn will oversee the curation and arts programing for the upcoming series and Maplewood will be releasing a pale ale, aptly named the “Up in the AIRE Pale,” available in cans created by local artist, Chris Cantore. In addition to the exclusive canned beer, other year-round and seasonal offerings will be available on draft along with a rotating boozy shake featuring Maplewood beer and spirits. “The Hyatt Centric team is thrilled to have supported and co-facilitated two highly innovative and visionary works of art as a gift to the Chicago community,” said Karen McGuigan, General Manager at Hyatt Centric The Loop Chicago. “We have an incredible and dedicated team of curators, local and international artists, local businesses and company staff who have helped us leave our indelible mark on the city stories high above the hustle and bustle of the busy Chicago Loop and on the global art landscape as well. Debunking Social Media

BEAUTY MYTHS

BY AMI CHRISTIANSON, OWNER OF ONE SALON AND BRIDAL COMPANY

As a hairstylist who started in the beauty industry over 30 years ago I have seen many changes in our industry. None of which come has come close to how social media has affected our careers. I found this a great opportunity to educate our clients on the reality of what it takes to recreate some of the new trends. #1. Grey/Ashy hair color....Really hot on all social media platforms. When you see this process on social media you are unlikely seeing the entire process that it taking to create that look. Some of the famous “influencers” see only 1 client a day at starting rate of $1000.00. If your hair is dark brown or has existing hair color it will more than likely take more than 1 bleach application to remove all your nature, and existing hair color. This process will most certainly damage the integrity of your hair. As an experienced stylist I would not recommend this. I would suggest a treatment program to rebuild

your hair before another lighting process. Your hair will have to be lightened slowing moving through the warm/ gold/ brassy stages before it ever becomes white enough to reflect the tone of grey, purple, blush, or any fashion color. Always let your stylist know when scheduling your appointment if you are looking for a dramatically different look so they are able to discuss the process, and schedule enough time to create your desired result. This is just one of many examples of how social media has affected our careers. Not everything is as it “appears when it comes to the beauty trends you see on social media. Always consult and trust your stylist for a reality check. We know the truth behind the scenes social media. Www.theonesalon.com

Organizing to Sell BY ANN MARIE GUENTHER, OWNER OF THAT GIRL ORGANIZES

Organizing to sell...does that sound like a “four letter word”? Headaches and aching muscles come to mind when most of us think of moving. Two weeks ago, I received a call from a busy mom. She was so full of excitement when she called that I thought confetti was going to burst from the phone! She quickly explained that her husband had gotten his dream job on the West Coast! They were “over the moon,” until they looked around their home of 20 years and saw all of the “stacks of stuff” that no longer served them. The piles of items needed to be organized, gone through, packed and donated. Her realtor told her that she had to meet Ann Marie Guenther, owner of That Girl Organizes.

FOX VALLEY MAGAZINE / MAY 2019

The couple had already gone through many life changes and now this! Suzy had just retired from a career of 20 years, and her husband has traveled five days a week for years. Their home needed to be ready for pictures in two weeks. This project was so large that there was no way one person could accomplish it on their own. Furthermore, Suzy mentioned, organizing wasn’t her thing. The house needed to sell A.S.A.P.! She wanted it decluttered, organized and packed in the next ten days. My team was there the next week and “knocked out” this project for Suzy! She and Hal could “move on” out West and begin their new life. The last five clients’ homes that we prepacked and organized, sold in record time! Their realtors attributed the quick sales to the way That Girl Organizes prepares a house to sell. My greatest claim to fame happened just over a year ago. The client, Kathy, called excited and frazzled. She said that her husband finally got his job transfer order, so she could move near a Health Clinic that could help her. Kathy was in her 30’s and was bedridden most days with three children and a live-in caretaker.

Our team helped Kathy get rid of all broken, unused toys, stuffed little “friends,” and outgrown clothes. We packed up everything that was out of season and donated the rest. All the winter gear, that would never be useful again, was given to a local homeless shelter to bless another family in need. Real Simple magazine is what this home resembled once we were done! It was gorgeous! I gave Kathy the number of one of my favorite realtors, and she was ready to roll! House pictures were taken the following day, and showings began the next week. In two weeks, her house was on the market and ready to sell! Moving can be stressful, but with the right help and a positive outlook, it can all be done efficiently, effectively and without frustration! Just one simple call to That Girl Organizes can get you on your way! Ann Marie Guenther is known as Naperville’s Most Organized woman and the Face of Facebook! Check out her video on Facebook for more tips at www.Facebook/ thatgirlorganizes.guru or www.ThatGirlOrganizes.com. Questions about organizing? Call 630.673.3637

Kathy saw hope by being able to move closer to where she could participate in a new medical trial. Tom, her husband, got a transfer order on a Friday in July. My team of seven hardworking professionals organized her home from top to bottom, accomplishing 40 hours of work in one day!

Upcoming Events at Batavia Fine Arts Centre Presley, Perkins, Lewis and Cash Rock Once More at the Batavia Fine Arts Centre You definitely won’t want to miss a night of pure entertainment and fun with the most rockin’ artists of the twentieth century! The four men that you will see on the stage represent the music artists that stood in the center of the rise of the phenomenon known as ROCK AND ROLL. Elvis Presley, Carl Perkins, Jerry Lee Lewis, and Johnny Cash are performers that, having shaped a whole new genre of music, will never be forgotten. Join us at the last touring show of the season to witness the recreation of how these men shaped rock and roll, a genre that overtook America from the 1940’s to the 1960’s. The origins of this genre are highly debated among historians of music, however, it is mostly agreed upon that it comes from the Southern United States, and its roots lay in the rhythm and blues, originally called “race music.” It is said that blues, gospel, country, and folk music FOX VALLEY MAGAZINE / MAY 2019

influenced this “race music” until a time of great technological change came around - the invention of the electric guitar, and instruments of that nature. In the mid 1950’s, Presley, Perkins, Lewis, and Cash drew on the country aspects of early rock and roll to create a rise in a new denomination of it, called “rockabilly.” Although some of these artists caused controversy with their style of music along with their black influences, it didn’t stop them from creating what we now know as “Rock’n’Roll.” Here in Batavia, we want to celebrate the four artists that helped give rise to the phenomenon of ROCK we know today. The four-man cover band coming to the Batavia Fine Arts Centre, each one representing one of the famous rock’n’roll artists, knows exactly how to help you do so. PARAMOUNT ANNOUNCES CAST FOR FIRST WORLD PREMIERE PRODUCTION,

August Rush: The Musical April 24-June 2 Chicago audiences will be the first to see the world premiere of August Rush: The Musical a never-before-seen musical based on the original Oscar-nominated Warner Bros film about a musically gifted orphan and the search for his birth parents. For the first time since launching its own Broadway Series in 2011, Aurora’s Paramount Theatre is presenting a world premiere musical. John Doyle, the internationally acclaimed director who earned a Tony Award for Sweeney Todd and also staged the Broadway revival of The Color Purple starring Jennifer Hudson, helms Paramount’s production, running April 24-June 2, 2019. Press opening is Friday, May 3 at 8 p.m. Today, Paramount Theatre announced the principal cast members, leading with two exciting young actors – Jack McCarthy and Huxley Westemeier - who will double in the title role of August Rush. McCarthy made his Broadway debut at age 8 as Michael in Finding Neverland. His other recent credits include Shadowlands Off-Broadway, the films Viper Club, Family Fang and The Path on TV. Westemeier played Billy and understudied Lawrence in the National Broadway Tour School of Rock the Musical. Other credits include Watch On the Rhine at The Guthrie Theater, Jesus Christ Superstar at The Ordway, and as Manny in the world premiere of Diary of A Wimpy Kid the Musical directed by Rachel Rockwell at Children’s Theatre Company in Minneapolis. Broadway he played in The Resistible Rise of Arturo Ui opposite Raúl Esparza, Nathan The Wise opposite F. Murray Abraham, Peer Gynt opposite Gabriel Ebert, Allegro directed by John Doyle for Classic Stage Company and The Band’s Visit at Atlantic Theater Company. Broadway veteran John Hickok will play dual roles, Wizard and Thomas Novacek. Hickok originated the roles of Governor Slaton in Parade, Professor Bhaer in Little Women, Zoser in Aida on Broadway and is featured on all three cast albums. Other key credits include Man and Boy with Frank Langella at Roundabout and Our Country’s Good. Regionally he played Beauregard opposite Michelle Lee in Mame, and John Adams in Frank Galati’s 1776. Leenya Rideout, who plays Hope, performed on Broadway in War Horse, Cyrano de Bergerac, Company and Cabaret. Her Off-Broadway credits include Wild Abandon, Before We’re Gone, As You Like It and Taming of the Shrew. Sydney Shepherd will play August’s birth mother, Lyla Novacek. Shepherd’s Broadway credits include First Date as standby for Casey/Lauren/Allison. She was the cellist in Folk Wandering Off-Broadway and performed regionally in Jasper In Deadland as Gretchen at Seattle’s 5th Avenue Theatre. Just like Paramount’s recent hits Million Dollar Quartet and Once, the cast members in August Rush: The Musical are both the actors and the orchestra and play all instruments live on stage, creating the beautiful symphony of this story. The multi-talented ensemble is Marta Bagratuni, Alex Bender, Matt Deitchman, Ginna Doyle, Brad Giovanine, Lizzie Hagstedt, Jessie Linden, Troy Valjean Rucker, Doug Smith and Katrina Yaukey. Paramount audiences will recall Deitchman for his memorable turn as the faux barber Adolfo Pirelli in Paramount’s 2017 Jeff Award winning Best MusicalLarge, Sweeney Todd-The Demon Barber of Fleet Street. Already announced is Doyle’s August Rush creative team including Emmy Award-winning book writer and lyricist Glen Berger, who also co-wrote the book for Broadway’s Spider-Man: Turn Off The Dark, and celebrated composer and lyricist Mark Mancina,

who also composed the platinum selling soundtrack for the film August Rush, many songs for The Lion King and the score for Pixar’s hit film Moana. Choreographer is JoAnn M. Hunter whose Broadway credits include School of Rock (US National Tour, West End, Australia), Disaster, On A Clear Day… and Broadway Bound. Orchestrations, arrangements and additional music are by Dave Metzger, who orchestrated the films August Rush, Training Day and Tarzan and earned a Tony nomination for Disney’s The Lion King. “I’m excited about the development of this new and unique musical,” said director John Doyle. “August Rush centers on the emotional and musical journey of a young boy – a lost boy. Through music he reunites with the parents he otherwise may never have found. The ‘hope’ that the story highlights is powerful. That, more than anything, is what attracted me to the material, and I’m honored to be a part of its journey.” “When our Broadway Series began in 2011, we had big dreams for what it could become. Over the years, those dreams have been brought to life again and again. And now, one of our biggest dreams is finally becoming a reality,” said Jim Corti, Artistic Director, Paramount Theatre. “August Rush: The Musical, the first major project from our New Works Development Program guided by my colleague Amber Mak, represents the next step in Paramount’s evolution into one of the nation’s preeminent regional theaters. What does this mean to our more than 41,000 subscribers? It means they will be the first ever to see this production come to life.” Previews of August Rush: The Musical, Paramount Theatre’s 2018-19 Broadway series finale, start April 24. Press opening is Friday, May 3 at 8 p.m. Performances run through June 2: Wednesday at 1:30 p.m. and 7 p.m.; Thursday at 7 p.m.; Friday at 8 p.m.; Saturday at 3 p.m. and 8 p.m.; and Sunday at 1 p.m. and 5:30 p.m. Single tickets are $36 to $69. Exhibiting Artists Peel Back the Layers of Human Experience This June at Water Street Studios Water Street Studios’ upcoming exhibition unites four artists using a variety of media, compressing layers of individual experiences, relationships, and the contemplation of passing time in the exhibition title, “Through the Surface”. Janice Meister (mixed media), Paul Schranz (digital/photography), Robin Trew (video/installation) and Carol Weber (mixed media) explore the deep richness of layers both literal and figurative contributes to works that hold layers of meaning beyond the external surface in the Dempsey Family Gallery located on the first floor of Water Street Studios. Paul Schranz has created synthetic collage works employing an expanded definition of photography for the past two decades. Schranz combines various elements to create a single image filled with layers including man-made objects, plants, animals and human forms, both living and dead. His current body of work is a series entitled “In These Times,” which also fits the overall concept of the “Through the Surface” exhibition. He shares, “I consider each piece to say something about contemporary issues like life and death, injustice, the plight of the environment, dehumanization, and in every case, the mystery and reality of time. My work often portrays an ongoing struggle between order and disorder, planning and disintegration, in today’s competing theaters of social, political, religious, scientific, and of course, personal concerns.” Robin Trew is a video artist living in Downers Grove, IL. Her work focuses on creating personal imagery and presenting it in a context that shows the beauty, wonder and ponderous interest in the ordinary. Everyday images are layered and distorted to FOX VALLEY MAGAZINE / MAY 2019

give new meaning. The images are combined with sound tracks that weave in and out of a narrative that includes poetry, sound effects, and conversation. While basically self-taught, Robin has worked in the corporate world as a video producer. Janice F Meister is a printmaker/mixed media artist and member of Studio Conversations. Jan, a retired art educator resides in Crete, IL. A love of nature and organic forms has long been the center of her art work. This focus takes her beyond a visual description and allows Jan to explore elements related to defining the subject. A passion for drawing, collage, printmaking and mixed media construction lies in the endless variety of techniques available for Jan to manipulate materials and express ideas. Varied subjects may be handled with traditional techniques and alternative approaches. Abstract landscapes and iconographic images become elaborate mixed media mono-print constructions. Textures, layers of color, and obscured lines together with text are achieved with natural materials and recycled elements with handmade papers and segments of bound books to add dimension to the vvvvworks. Janice’s combined media works have been exhibited in National and International Exhibitions and are in several private and corporate collections. Carol Weber was born and raised in St. Louis, Missouri and actively pursued art since a very young age. She moved to Illinois as a MFA student at Northern Illinois University and has remained in the Chicago vicinity since that time, exhibiting extensively in the Midwest region. Weber taught art at South Suburban College and is currently a cocurator for Gallery 201 at Argonne National Laboratory in Lemont, IL. Weber draws inspiration from nature and architecture, particularly buildings that are a little worn around the edges and landscapes that enthuse a sense of quiet awe. Weber shares, “The combination and reaction of different materials is interesting, expressive and challenging to me. My thoughts while working are often immersed in the stories of our lives. The pieces are imbued with implied narratives and atmospheres that take on a new life while embracing the past.”

will be on display in the Chicago Capital Gallery located on the second floor of Water Street Studios. This well-known, Quad Cities artist suffered a stroke at the age of 41, which completely debilitated his right side and painting hand. This exhibition invites audiences to observe Kevin’s will to create using his left-hand to produce artwork that demands your attention. According to the Rock Island Dispatch, Kevin Lonergan is one of the Quad-Cities’ leading mural and graffiti artists. You can find his murals at Pig Pen, on the side of Pizza Chef at Five Points, the John Deere Pavilion and along the Bix race route. He also designs skateboards for amateurs and pros alike. Opening reception for “Through the Surface” and “Kevin McQueen Lonergan II” will be held on Friday, June 14, 2019 from 6:00-9:00 p.m. The artists will be present at the reception to discuss their work and answer questions. In addition, appetizers will be provided by Gaetano’s Batavia, cash bar featuring beer from Solemn Oath Brewery, and wine will be available for purchase. This event is free and open to the public. Paint the Pavement – A Chalk Fest! WELCOMES MORE ARTISTS IN SECOND YEAR

After a first year that brought both local and national chalk artists to downtown St. Charles, Paint the Pavement - A Chalk Fest! is looking to increase their numbers for their event on May 25 and 26. Located on First Street and in the First Street Plaza, this outdoor chalk art festival features artists that spend two days on their hands and knees creating beautiful pieces of art on the pavement, only to have them washed away by time and the elements. Fine Art Show committee member Chris Prieve said she hopes that the show will grow this year. “In 2018, we were ‘small but mighty” and received much positive community and business feedback,” Prieve said. “A boost in the numbers of artists would be fantastic because we had amazing works of art made during last year’s Paint the Pavement. I envision a First Street Plaza full of incredible and colorful chalk art this year.” While there will be professionals that come to display their skills, Paint the Pavement is open to all skill levels. Artists, organizations or local businesses can select a square to chalk and will be provided with a box of 48 chalk pastels. Prieve said this is a great chance for artists who may not ever have dabbled in the chalk medium, to get their name out, demonstrate their creativity and have a lot of fun. “We want to give professionals, students and emerging artists a new platform to help launch themselves to more opportunities,” Prieve said. There are also opportunities for businesses to get involved by sponsoring artists. The Downtown St. Charles Partnership will pair artists with businesses, though there are a limited number of sponsorships. For more information, contact Laura Purdy at lpurdy@downtownstcharles.org Artists interested in participating in Paint the Pavement can find more information at www.downtownstcharles.org/dscp_events/paint-the-pavement/ or find the free application at https://fas-paint-the-pavement.eventbrite.com. foxvalleymagazine.com

IF YOU THOUGHT WEBSITE ACCESSIBILITY WAS ONLY FOR YOUR CUSTOMERS, THINK AGAIN! By Bill Boznos, Boznos Law Office In today’s workplace, most employers have gone (kicking and screaming) into the digital age as it relates to their employment practices. Prospective employees fill out on-line applications that are filtered by OCR programs designed to seek out relevant key words in order to pass along an applicant to a company. Many companies now use on-line employment applications. Employee manuals and policy and procedure guidelines are now digitally stored and are only accessible through the use of a computer. If a visually impaired applicant or employee cannot access these materials, chances are that your business may be missing out on qualified applicant or worse, become the target for claims under the Americans With Disabilities (“ADA) Act.

The EEOC’s Guidance on the Americans With Disabilities Act provides that: [a]n employer must provide a reasonable accommodation to a qualified individual with a disability that will enable the individual to have an equal opportunity to participate in the application process and be considered for the job (unless it can show an undue hardship.)” Many retailers who sell their wares on line have learned (some the hard way), that they must make their offerings on line accessible to consumers with visual or auditory disabilities. Employers who use on line applications can be targets for visually or auditorily impaired applicants, or potentially a group of applicants who were unable to apply for a job simply because he or she could not read the content of the on line application. While public accommodation cases involving potential customers result only in the payment of the claimant’s attorney’s fees, cases involving job applicants who have been denied the ability to seek employment because of a physical impairment can result in significant amounts being paid in damages.
