QUICK RAMEN BOWLS

Ramen bowls are extremely popular, and for good reason. They’re comforting, filling and just so delicious. This quick version is a perfect, complete, dinner that comes together in minutes. Use whatever veggies and protein you have in your fridge.

Ingredients:

2 Gefen Noodle soup, with spice packet

3 tsp soy sauce

2 tsp sesame oil

1 tsp toasted sesame oil

2 frozen garlic cubes

Topping ideas: Scallions

Edamame

Thinly sliced carrots

Thinly sliced radishes

Thinly sliced mushrooms

Thinly sliced celery

Shredded cabbage

Grilled chicken

Sliced steak

Hard boiled egg

Fried egg

Sesame seeds

Chili crunch

Directions:

1. In a medium bowl, combine soy sauce, sesame oil, toasted sesame oil, garlic and spice packets.

2. Fill up noodle soup cups with regular amount of boiling water. Add to prepared bowl. Mix well. Place thinly sliced vegetables on top to soften a bit. Cover with foil until done to your liking. Top with remaining toppings and enjoy.

BOUREKAS SANDWICHES

This popular Israeli dish is perfect for an easy, light dinner. Make it interactive for little ones and everyone is happy. Just bake the bourekas and stuff with all things yummy.

Ingredients:

Frozen potato Bourekas

Frozen breaded eggplant

Sliced Israeli pickles

Scallions

Hard boiled eggs, sliced

Homemade or store bought tomato dip

Tehina

Directions:

1. Prepare bourekas and eggplant according to package directions.

2. Once done, slice bourekas in half. Spread tomato dip on one side and tehina on the other side. Add remaining toppings.

SMASHED FALAFEL SALAD

This is a delicious way to enjoy falafel. Not your typical falafel in a pita, this salad is filling and perfect for a light dinner. This also makes for an amazing lunch.

Ingredients:

1/2 bag frozen falafel, baked in oven according to package directions

1 box of your favorite spring mix

1/2 cup shredded purple cabbage

1 large plum tomato, diced

1-2 cucumbers, diced

1/2 Tbsp fresh cilantro, chopped, optional

1 tsp olive oil

Crushed pita chips

Sliced Israeli pickles

Tehina/ Babaganush
