Pesach is all about classics and this definitely tastes like one. With fragrant cinnamon and warm apple-pear flavors, it’s a refreshing dessert to enjoy all Pesach long.
Yield: 2 large compote containers
Ingredients:
8 Cortland or Golden Delicious apples, peeled and thinly sliced
6 Bosc pears, peeled and cut into small, thin slices (make sure they’re small as they don’t disintegrate as the apples)
2 teaspoons cinnamon
1 tablespoon vanilla sugar, optional 12 cups water or to cover fruits
Directions:
1. Add the sliced fruits to a large pot.
2. Add the rest of the ingredients and bring to a boil.
3. Simmer for 1 hour. Using a potato masher, roughly break up the softened fruits to create a more mushy texture. Serve chilled.
Everyone loves a good apple crisp. Here, we take it up a notch with some fragrant tropical flavors. Serve warm with some vanilla ice cream on top.
Fruit Filling:
6-7 Cortland apples, peeled and thinly sliced
1 ripe mango, cut into small slices
2 red plums, thinly sliced
1 fresh lime, juiced
½ teaspoon cinnamon
Topping:
½ cup almond flour
¼ cup chopped pecans
⅛ cup sugar
2 tablespoons potato starch
½ teaspoon cinnamon
2 ½ tablespoons oil
Directions:
1. Preheat your oven to 350° and line a 9” round pan with parchment paper (or grease it with cooking spray).
2. In a large bowl, toss the sliced fruits with the rest of the filling ingredients. Add to the prepared pan.
3. In the same bowl (no need to wash), combine the topping ingredients and mix with gloved hands or a fork until a thick crumb forms. Spread evenly over the apple filling.
4. Bake for 1 ½ hours until the top is golden and the filling is bubbling.
TIP: This freezes well. Reheat uncovered at 200°.
Inspired by a cinnamon roll, these super-simple, super-delicious cookies are a must-have to have around on Pesach and all year long. Their nutty cinnamon flavor and chewy, crunchy texture are the perfect accompaniment with a hot coffee or tea. Enjoy!
Yield: 20 Cookies (Suggestion: make a double/ triple batch!)
Ingredients:
2 cups ground nuts (such as pecans, almonds or walnuts)
½ cup chopped pecans
½ cup almond flour
1 cup sugar
¾ teaspoon cinnamon
3 egg whites
chopped pecans, for topping
Directions:
1. Preheat your oven to 325° and line a large cookie sheet with parchment paper.
2. Mix the ground nuts, chopped pecans, almond flour, sugar, and cinnamon in a bowl.
3. Stir in egg whites and mix until a paste forms (no need to beat the egg whites).
4. Using a teaspoon-sized cookie scoop, create uniform cookies. Wet the palm of your hands and gently flatten each cookie into a flatter disc (not too flat).
5. Sprinkle the center of each cookie with some additional chopped pecans.
6. Bake for about 14-15 minutes or until golden brown.
7. Let cool completely before removing from the baking sheet (otherwise they will crumble). If you prefer a crispier texture, you can return to the oven for 2-3 minutes.
TIP: These freeze amazing in airtight containers or ziploc bags.
