The month in which you can literally fall outside: June. The city beckons, the fields bloom, terraces sizzle, windows swing open, and events draw people onto the streets. You fall into summer vibrantly, warmly and full of anticipation. But ‘falling outside’ has a completely different meaning. Less visible, sometimes painful, and even more important to mention - especially in a time of summer bustle and full squares. In Eindless we focus on people and initiatives that do not automatically move within the lines of society. But who actually draws those lines? And who sees what happens outside of them?
She usually interviews others for A Slice of Life, but this time researcher Ankita Mukherjee herself lifts a corner of the sari and shares her findings about a pluralistic society. Coen van Ham painted feelings for every day of the year, I think it is wonderful how individual words come to life. In the duo column by Loubna and Mathilde, an exciting conversation unfolds about borders, perspectives and the
question of who sets the standard. There is another Queer Pride that puts the spotlight on the strength and visibility of the Eindhoven queer community, and there are personal stories, such as that of the Argentinian Sophie, who chose an unusual source of income as a cat sitter, or of Maha who feels like she belongs at Burst Your Bubble.
Especially in a city like Eindhoven, where innovation and creativity are paramount, it is important to reflect on those who are still too often left out of the picture. Culture connects and softens, and sport can also build a bridge. By facilitating encounters and dialogue, we can ensure that everyone can join in - outside, into the summer, into the city, into life. First of all, this new Eindless will be with you. We wish you a sunny, open and curious June..

Paul Vernooij
Age 36 years • Nationality Dutch
‘We are going away for a weekend with a few friends, to Portugal. Two friends are already there; they have organised all kinds of activities. Traditionally, what we are going to do is still a secret. A packing list stated what we need to take with us, and that is in my backpack. I know these guys from high school, Breda. We try to get together once a year. After my studies in Biomedical Technology at the TU/e, I stayed in Eindhoven. I got married and bought a house here. I make full use of the city: I like to eat out and travel a lot to and from the city. We go to the Parktheater and to the movies, and we have a drink on a terrace at Strijp S. I regularly use public transport and like to fly from Eindhoven Airport. I love going there by bike, put on my backpack and go on a nice trip. Isn’t that great? It is a nice, quiet and well-organized airport.’
Paul lives in Eindhoven and works in Tilburg as an investment manager at the Brabant Development Company.

Age 21 and 20 years • Nationality Argentinian
‘We know each other from our studies in Argentina, and are in Eindhoven for an exchange program at the TU/e. We came to live here two months ago. We really like it here. The people are great, so nice! And everyone rides a bike here. We also rented a bike. The past few days we visited our friends in Madrid who are on exchange there. Now they are here and we will show them Eindhoven. We will make trips to Amsterdam and Utrecht.
In total we are nine friends. We travel a lot in Europe, and have also been to Barcelona, London and Marrakesh. Sometimes we travel together, sometimes separately. From Eindhoven Airport we can visit many cities. When we are in Eindhoven, we study or go to the pub on Stratumseind. We have a beer and something to eat. We love it here!’
Ivo and Lucas are studying Industrial Engineering via an exchange program at TU/e.
Eindhoven Airport has 7 million passengers per year, which is an average of more than 18,000 arriving and departing people every day. 53% of them travel on a holiday or a city trip, 33% visit family and/or friends and 14% make a business trip. However short their visit may be the airport strengthens the growth of the region for settling, for living and working, and in economic terms.

Rudolf Vermeulen bonbons
The Chocolate Factory of Waalre
What started in 1939 as a small chocolate factory in Waalre, grew into a traditional family business where three generations now make delicious bonbons with love and craftsmanship. All these generations work according to their own traditional recipes, by hand and in small quantities. Every bonbon is therefore fresh and quite irresistible. Chocolate is, in addition to being addictively delicious, also a fun product to work with. It is easy to work with and pour into shapes. The people at Rudolf Vermeulen like to share their love and passion for their profession by giving workshops. Just like the bonbons, they are for all ages.

Poetry of Feelings
A art projct about power of emotion
Poetry of Feelings is more than an art project; it is an invitation to explore your own emotional landscape and to start a conversation together about mental health. How are you feeling today? Do you ever consciously reflect on your feelings? Half of all Dutch people have had a mental illness at some point. Among young people, this is half and in the queer community even three quarters. At the same time, the World Health Organization (WHO) shows that experiencing art has a proven positive effect on health and well-being. But how do you give shape to emotions? And how do you make feelings a subject to discuss?
Artist Coen van Ham took on this challenge. In his project ‘Poetry of Feelings’ he painted 366 feelings, one for each day of the year (including a leap day). Each painting is a translation of a feeling, captured in a square of 15x15 cm. Van Ham challenged others to contribute a feeling, making the audience part of the process.
The result: a colourful and versatile series that makes the invisible visible. Coen hopes that the series will inspire others to recognize, share and shape feelings through art.
Which emotion did you find most difficult to paint?
‘After I had collected all the feelings and had them translated into English (by Lizzy Kean), I started painting. Purely on intuition I chose a feeling, I felt it. Piece by piece. Then I chose colour, touch and shape and put my impression of that feeling on paper. Gradually I noticed that it became more challenging. I looked at the remaining feelings and saw that they were my personal qualities that I had not yet painted: ‘creative’, ‘positive’ and ‘clear’. But also, my pitfalls such as ‘skeptical’, ‘dominant’ and ‘hurt’ and the things that remained for me as a person: ‘queer’ and ‘persuasive’. It is precisely then very much about my, sometimes visible and sometimes invisible, deepest values and feelings.’
You invited people to contribute feelings. Which entry surprised you the most?
‘It was very nice and special that many people shared a personal feeling with me. That requires courage and openness. Many words touched me and only made my project more valuable. The word ‘bubbly’ and the story of the young woman who shared it, nicely balances the plus and minus for me.
She had lost her brother to suicide, and he used the word intense. But it also really suits her. When she has a nice day and is having fun with her friend, for example, she feels ‘bubbly’. It has therefore become a very light bubble-blowing work. The word spleeny also has that challenging combination of discomfort and desire. Han Roijakkers, a good friend and Dutch language and literature specialist, brought in this feeling. ‘Spleen’, also known as annoyance, has sadness, disappointment, and the desire for something beautiful or nice at the same time.’
Which day of the calendar book would you most like to share with as many people as possible?
‘To me, that question feels like which child do you love the most? All the feelings are now correct for me and are in exactly the right place in the book. When a work of art is finished, the interpretation of it is for the viewer. And since feelings often do not last a whole day, it gives more of an impetus to reflect on that day. Do I feel sad, and why or why not? Or are there other emotions that play a role that particular day?’
A specific date would be the birthday of my love Peter. The word ‘sweet’ is on that day. Also placed there from intuition, I now realize. But it is correct: he tastes sweet as honey and is the love of my life. Peter makes me shine every day with my art, my creativity and with all my other feelings together.’
During the exhibition, all 366 works will be presented once. At the same time, the impressive 752-page English-language book ‘Poetry of Feelings’ will be published, with a collection of the paintings in a perpetual calendar and conversation starter. There will be lectures and workshops by, among others, special professor of Art and Care Prof. Dr. Tineke Abma, curator and art historian Pim Hoff, Patrick Verhoeven and Coen van Ham himself.
De Kruisruimte in Eindhoven is open every day from 12:00 to 17:00. Closed on Monday 16 & Tuesday 17 June. Admission is free. www.poetryoffeelings.com
‘Many words touched me and only made the project more valuable’
Coen van Ham
Ankita Mukherjee
This month I write from a city in the south of India, Coimbatore, where I am staying for a few weeks. Although it is officially a city, it feels more like a collection of villages strung together. People know their neighbours, trust has been slowly built up, and the rhythm of daily life reminds me of Eindhoven, where there is also a strong sense of community behind the urban facade.
Being here has made me think about how diversity works in India. It is not a topic that is talked about much. Long debates, campaign slogans or big celebrations of inclusion, none of it. Diversity is not a goal to achieve here, because it is already there, a natural part of daily life. People with different languages, beliefs and customs live side by side. And yet they seem to go together. It is not without tensions of course, but there is also no great display.
You notice it in small, quiet moments: a shopkeeper who switches languages in the middle of a sentence without thinking, a wedding that combines rituals from two traditions, a street where you see a mosque, church and temple at the same time. No one is surprised. It is simply part of the street scene. This self-evident approach to differences here in India is particularly striking when you compare it to how carefully diversity is often directed and organised in the West. In the Netherlands I am regularly aware of my otherness; in India I effortlessly blend in with the environment. Even after years of being away. No one asks me where I come from, and I do not feel the need to explain myself. That silent acceptance - it is just like that - can be so unexpectedly reassuring.
These weeks pass at a pleasantly slow pace. I get up early, take walks under tropical greenery and read in the afternoon, while listening to the rustling of palm trees and the calling of birds in the distance. One day I get stuck at a calendar with paintings by Raja Ravi Varma. His women, captured in light and shadow, remind me of the soft glow of Vermeer and the raw drama of Caravaggio. Familiar yet elusive, classic and cinematic at the same time. Like India itself: a country that effortlessly carries multiple moods at once.

DUOCOLUMN MATHILDE & LOUBNA
What does freedom mean when origin and image play a role? In this correspondence, Loubna Bakra and Mathilde Lageman enter conversation. Open and personal, vulnerable on both sides and certainly not with easy answers.
Dear Loubna,
‘I could learn something from this, I thought’
Dear Mathilde,
I recently had an appointment with Zeynep, a business associate. She was observing Ramadan and didn’t eat or drink anything between sunrise and sunset. In a form of solidarity, I skipped lunch and stuck to a glass of water. Zeynep spoke enthusiastically. In addition to fasting, she talked about what is extra important to her during this period: gratitude, forgiveness, avoiding bad habits, giving to charity, time for spiritual devotion and space for self-reflection. I could learn something from this, I thought. She beamed; her face wrapped in a colorful hijab. The way she spoke with pride and openness about her life and the holy month moved me.
Zeynep told me that she is the only one in her family who is actively involved in her faith. My curiosity was aroused. How had she made this choice? She was fine with me asking. ‘Because of my headscarf, by participating in Ramadan; I genuinely connect with my values’ she explained. ‘It creates a certain inner peace, which strengthens the bond with my faith even more. I liked how she expressed her conviction and thought about it. Her family respects her choice. The outside world often reacts differently. When she told me that many people immediately have an opinion about wearing a headscarf - ‘That happens immediately, Mathilde’ - I realized how beauty must be visible to be recognized, even for me. My assumptions were further tested when she said: ‘People often think that I don’t speak Dutch, while I was born and raised in Eindhoven!’ Her voice, once so happy, now sounded sad. ‘If you knew how people sometimes react, you would be shocked. People think that I am forced to dress like this. That I have no will of my own. But the opposite is true.’ I was shocked by the turnaround in our conversation. It touched me. So, this is her daily reality. Here, in Eindhoven. I had to think of you, Loubna. In our previous column, we talked about ‘freedom’. That multiple realities exist side by side and that such a concept means something different to everyone. The conversation with Zeynep made me even more aware that even in our city freedom is not self-evident for everyone. That image of ‘everyone can be themselves here’ does not always seem to be true. What is that like for you? You also wear a headscarf. Do you get these types of reactions and how do you deal with them? I would really like to hear your story.
GREETINGS, MATHILDE LAGEMAN Director & Co-owner STE Languages
‘Now I feel a bit pigeonholed’
I had a completely different subject in mind to write about, but now there is your letter. To be honest, I don’t really know how to respond. Your story is about Zeynep. You spoke to her, but you direct your questions about freedom to me. I wonder why? I am also surprised that you say you are shocked by the reactions she gets because of wearing her headscarf. I remember that you once mentioned that you have difficulty with women wearing headscarves. Perhaps it unconsciously plays a role that you know very few women wearing headscarves personally? But it is precisely this mechanism that Zeynep suffers from: people react based on prejudices, without knowing the story behind it. We call it framing. What was your opinion about women wearing headscarves based on? You also refer to my previous letter, where freedom was mentioned. We could perhaps have built on that, especially because it was about freedom in a broader sense. Now I feel a bit pigeonholed: you are having a conversation with a woman of foreign descent wearing a headscarf and you ask me, also a foreign woman wearing a headscarf, about freedom. How should I interpret this question? Is it only about freedom in relation to my headscarf and my religion?
I notice that in conversations I often feel that I have to prove my opinion, substantiate it, while others can state their position as self-evident. I had that feeling in our previous correspondence as well. My letter to you contained questions, and I was very curious about your answers. I thought it was a pity that you hardly responded to them and instead stated that your conclusion is obvious. But that does not make it a fact. For me, your conclusion was anything but obvious, otherwise I would not have asked those questions. That got me thinking. Does that obviousness perhaps exist because you - in your words - are that white, highly educated woman? Is it then sufficient to find something obvious, without explaining why you think so or what you base your opinion on? And is that exactly the ‘white privilege’ that is so often talked about? That you are the norm, and I am the one who must justify and prove myself? And maybe that the space to be able to state something as self-evident without explanation is not the same for both of us? It is precisely this discomfort and difference that I would like to discuss. Precisely because I believe in an honest, equal conversation. In order not to fall into the trap of writing framing instead of combating it, I would like to make a completely different proposal: can we ‘just’ talk about the phenomenon of men urinating in public after a football match next time? I saw this for the first time recently after a PSV home match! I think it helps us if we have such a clear topic in our minds and let go of our perspective on it. Would you like that, Mathilde? Do you know when PSV will be playing at home again?

CULTURE & ART
Join in. Play along. Create along. CKE invites you:
You feel it. See it. Notice it. Cultuur & Kunst Eindhoven (CKE) is buzzing, hopping and dancing. As soon as you enter the renovated café, you can feel that creativity is in the air. Through the exhibitions, the courses, the performances by amateur art groups and accessible programming. Also, outside the door, CKE teachers work on inspiring cultural education and cultural instigators bring art and culture to Eindhoven neighbourhoods and districts. All of this is based on the same conviction: offering creativity for everyone. ‘We are indeed making considerable progress’, director Rianne Brouwers summarises soberly.
For the record: CKE is still Eindhoven’s main supplier of creative courses. In addition to music lessons in duo and group form and individual lessons via our external partners, it is also the place to learn (better) dancing, photography, singing, drawing, painting, acting, ceramics.
Rianne Brouwers: ‘More than 150 courses will start next season, from short workshops to six and 12-month courses, for beginners and advanced and for all ages. And talented young creators who dream of a career as an artist, lay a solid foundation for creative vocational training in our Talent Stream.’
‘The cultural drivers brighten up neighborhoods and districts, literally and figuratively’
On the streets
If you want to get to know CKE well, you also must go out on the streets.
‘Our cultural drivers bring creativity into the city’, Rianne continues. ‘They brighten up neighbourhoods and districts, literally and figuratively. Making something beautiful, tasty or useful together is fun and it strengthens the bond between us. A good example is the annual KruisstraatOriginal festival on Friday 5 September, for which we collaborate with the neighbourhood and the Eindhoven Municipality in various ways. There is dancing and music, the Kruisstraat entrepreneurs provide tasty snacks, neighbourhood initiatives help out and primary school children make the decorations. The result is a colourful, creative festival where everyone sits down together at the end of the afternoon.
Creative living room and exhibitions
In CKE, the ground floor with Café C is the creative living room for workshops, performances and shows. Rianne: ‘Because there is a need for accessible places to present or experience culture. A look at the agenda shows that that will be fine next month. From free workshops on the theme of freedom, a craft club, preparatory workshops for Eindhoven Pride: it’s all there. In addition, there are regular exhibitions by amateur artists from Eindhoven, who find the building a perfect place to exhibit their work.’ Many of these activities are free of charge or for a very small fee. CKE wants as many people as possible to enjoy culture.
Bruisweekenden (Sparkling Weekends)
And then there are also the free Bruisweekenden. ‘Four weekends a year, amateur artists and associations come to us for performances, concerts and workshops. Students present their work, from musical routines to exhibitions. From the large concert hall to the theatre hall and from the foyer to our workshop spaces: we open our doors as much as possible for Eindhoven residents to enjoy and experience amateur art.”
Alive and kicking
Rianne concludes: ‘I dare say with confidence and pride that CKE is alive and kicking. We are working in every possible way on a pleasant, livable city where we invite everyone to participate, play and experience.’

The nature around the municipality of Best through the lens of Bas van Laarhoven
A special lecture on nature photography, seen through the artistic eyes of nature photographer Bas van Laarhoven. During this afternoon, Bas will take you on a visual journey through the nature reserves around Best. Using his artistic nature photos, he will talk about his working method, his love for the landscape, and the patience and eye for composition that is needed to capture the magic of nature.
While the echo of our civilization slowly fades away due to the climate that is too pure for humans, a new chapter of Future Living unfolds. The void we leave behind is filled by a wondrous transformation of life itself. In the abandoned cities, where skyscrapers once dominated the sky, lush, unprecedented plant species now climb. And in the midst of this green renaissance, a symphony of new life is created. The focus shifts from human innovation to the unstoppable force of evolution. Eindhoven artist Stef Fridael has been painting a series with the theme Future Living for some time. The gallery will become an open project studio where he will work on two large paintings, with the next phase of Future Living. Earlier works from the series will also be on display. This growing process can be viewed from day to day through the display windows of the gallery. The artist is working on Tue, Wed and Thu from 11:00 to 15:00 and is available for a conversation. The entire series can be viewed on Sun 22 June between 13:00 and 17:00.www.steffridael.com | info@steffridael.nl

Burst your Bubble
SO, I WENT ALONE
‘To a place where I didn’t know anyone. But as soon as I stepped into the room, everything changed. I was welcomed with such warmth and openness - the kind that melts away your fears and makes you feel like you belong before you even say a word. Strangers turned into familiar faces within minutes. I felt connected, seen and safe. What happened next still exceeds my expectations. At the end of the evening, a microphone was offered to anyone who wanted to share something. The screen read: Care to share? At first, there was silence. We all looked around a bit. And after a while, with a pounding heart, I decided to do it. I stood up and walked forward. For the first time in my life, I was speaking in public. I shared my thoughts and asked for help: I asked people to share their hobbies with me, because I was in the process of rediscovering myself and my interests. The response? Pure magic. People came up to me, shared their stories, encouraged me and supported me.
THAT
WAS THE BEGINNING
I’ve been going back to Burst Your Bubble ever since, each time with new people by my side. And every time, it feels like I’m visiting family. I’ve met beautiful people there, souls I instantly connected with, whether it was their first time or their tenth. This event has given me more than I can put into words: confidence, community, and a place where authenticity is not only welcomed, but celebrated. If you’re reading this and wondering whether to go, go! Whether you’re alone, shy, curious, or unsure, just be there, you might just find a piece of yourself there.’
What happens when you step out of your own bubble? Burst your Bubble brings together Eindhoven internationals and locals. Eindless collects the stories that emerge from this. This time the personal story of Maha Albana. ‘I remember it well: the very first time I visited Burst Your Bubble. I was shy, insecure and preferred to hide in the background than to speak in front of a group. But I had promised myself something: that I would step out of my comfort zone, try new things and no longer wait for the right moment.’
To Ineke Hurkmans and all the great organizers behind this event, thank you.
Thank you
for that very first session, and for every single one since. For the people I was there for, and the people I couldn’t be there for, because I was away or life threw something unexpected in my way.
Thank you for the next one, and the next one after that, and all the ones that are yet to come. I hope Burst Your Bubble continues to grow and touch many more people. Just goals it touched me.
Burst your Bubble is a Jump Movement Foundation scheme developed by Ineke Hurkmans. Eindless is an Uit in Eindhoven Foundation publication. Together they let you look at the city and its inhabitants in a new way, so that you yourself see opportunities to learn more, make contacts and contribute to an inclusive city where everyone is welcome.

BTWEEN CULTURES ARGENTINIË
‘Adopt, don’t buy’ the gentle philosophy of a cat sitter Sophie Canil
Cultural differences not only bring challenges but also inspire new perspectives and fresh ideas. In the series Between Cultures, Eindhoven entrepreneurs talk about what it’s like to live, work and create between worlds. This time Sophie Canil, a 32-year-old animal lover from Buenos Aires who has lived in Eindhoven since 2018.
FILE-ALT AILÉN GAMBERONI: IMAGE SOPHIE CANILI
The holidays are beckoning, and suitcases are being packed, but who will look after the cats when you are away? In a city where people like to travel far and wide, Sophie is a familiar face. As a professional cat sitter, she takes care of other people’s pets with dedication and tenderness. Her philosophy is simple but powerful: adopt, don’t buy. A belief she brought with her from Argentina and weaves into her business and her life between two cultures.
Where does your love for animals come from?
‘Love for animals is in my DNA. My great-grandfather was a veterinarian, and my mother is a biology teacher. She showed me how to treat animals. For example, if we found an injured bird, we would take care of it until it got better and we rescued our first cat, Pepi, from the streets. After his recovery, he lived with us until he passed away. In 2021, I started as a pet sitter through a platform. Before that, I worked in retail, but I missed the contact with animals that I was used to in Argentina. After three years of dog walking, I decided to take a different path and started cat sitting. When my clientele grew, I made the switch to full-time pet sitting. I deliberately chose cats, to avoid getting exhausted from walking dogs in the climate.’
Is animal care very different here?
‘In Argentina, most people have mixed breed dogs, because it is common to adopt an animal there. Because of the large number of strays, people are used to taking in animals. Of course, it is nice that there are no stray dogs here, but that means there is less attention paid to adoption campaigns. Fortunately, awareness about this has been growing lately, probably thanks to social media and economic opportunities. If you find an injured animal here, you can call 24/7, which is fantastic. Wild animals, such as birds and bats, are also studied and protected, and there is a budget for that. In Argentina, that is not the case, but there are many movements that create awareness. For example, campaigns against fireworks which cause a lot of stress to both pets and wild animals. This topic is still relatively new here, because the Dutch love fireworks, but fortunately people are taking the initiative to educate others about animal welfare.’
What is it like to live and work in Eindhoven as an entrepreneur?
‘I like it and would not want to go back to a large organization. The freedom to choose who I work with, when and at what rate. I really appreciate it. I have always been a hard worker, and now I see that my efforts have direct results. The fact that I am an expat has helped me. Most of my clients are expats, so we share the experience of living in a new country with a different culture. I often ask why clients choose me, and many say it is because I am Argentinian or speak Spanish (among other reasons). This is an unexpected advantage. I am very happy that I am doing work that I love.
It gives meaning to my life and makes me happy, especially because I work with animals. In retail, I felt like I was wasting my time. Now I can help both people and animals.’
What do you say to people who think you only play with cats?
‘When I registered my company with the Chamber of Commerce, this function was not even listed. That is why I understand the misconception. But it is much more than playing - you are responsible for a living being and a home. If I am sick, I still have to work, because the cat is waiting for me. Sometimes I work for months without a day off, and during Christmas and New Year’s Eve, for example. In addition to caring for cats, I also do administrative work, tax returns, social media and scheduling appointments. A lot happens behind the scenes.’
Would you have been able to start your own business in Argentina, or would that have been more difficult?
‘It would have been possible, but much more complicated because of the unstable economy and high inflation. Also, there is no strong support system for starters like here. Pet sitting is more popular there now, mainly for security reasons. There are a lot of burglaries and robberies in Argentina, which makes people reluctant to give house keys to strangers.’
There are no stray cats here and a lot of focus on adoption. What do you think about that?
‘Great! Adopting animals is incredibly important, because many animals are looking for a loving home. All the animals I care for are adopted, and I recommend this to anyone looking for a furry friend. I strongly believe in the saying: ‘Adopt, don’t buy.’
‘There are many burglaries in Argentina, which is why people are reluctant to give house keys to strangers’
‘You have the responsibility for a living being and a home
SOPHIE’S TIP
‘My number one piece of advice: feed your cat wet food. This is essential for their health, but it’s not talked about enough. Cats come from the desert and get their moisture from their food, which is about 80% water. A diet of mostly dry food can lead to urinary tract problems and eventually kidney failure. I often hear people say, ‘My cat drinks a lot of water,’ and that’s something to worry about.’

for Midsummer or St. John’s Day
Saturday 21 June
The summer solstice has been celebrated for centuries, from the vast Swedish forests to the Brabant heath. Fires are lit, flower wreaths are woven, and tables are filled with summer delicacies. Midsummer focuses on the power of the sun, the fertility of nature. In the Netherlands, it is the time of new harvest and fresh summer fruit and the St. John’s fire. Traditionally, people eat new herring with fresh dill and onions around this day. In Scandinavia, crisp potatoes and a glass of aquavit are served with it.
FIRE
On St. John’s Day, people jumped over fires to drive away evil and bring good fortune and fertility for the rest of the year.
HERRING
In the Netherlands, the ‘Hollandse Nieuwe’ is at its best around June 21. In the past, the arrival of the new herring was celebrated with fires and village festivals.
BERRIES
Around Midsummer the first wild berries are picked. In old traditions it was believed that berries with the solstice had magical and medicinal properties.
were ldsm aken &tra dities Herring with dill & berry crumble
Ingredients
(for 4 persons)
4 new herrings, cleaned 4 red onions, thinly sliced 1 bunch of fresh dill
2 tablespoons apple cider vinegar 1 tablespoon sugar black pepper to taste
How to make it
Celebrate the longest day, taste the sun!
Cut the onion into rings & marinate in apple cider vinegar with sugar & pepper. Place the herrings on a platter, sprinkle generously with dill & the onions. Serve with boiled new potatoes & crème fraiche.
How to make a berry crumble: Preheat the oven to 180°C. Spoon 300g mixed berries (raspberry, blueberry, blackberry, elderberry) mixed with 50g sugar into an ovenproof dish. Make crumbs from 75g flour, 50g cold butter, sugar and 25g oats and divide over the fruit. Bake for 25 minutes until golden brown. Serve warm with a spoonful of whipped cream or vanilla custard.
