From Our Desks To You:

Dear Members,

How time flies. It feels like only yesterday that I started my second term as President of our beloved UClub. Now, here we are, already almost at the end of that term, with just one more quarter to go. I am forever grateful that I was allowed this second term, as my first time around was spent almost entirely working together with Sarah and the Board to shepherd the Club through the trials and challenges presented by Covid. Looking back, I would be remiss to not say this again: I am, and forever will be, so proud of how we all – staff and members alike – pulled together during those extraordinary times. Our UClub spirit shines through every day here at the Club in all that we do, but we can truly take pride in how much it shows during the tough times as well.

Speaking of UClub spirit – if you have not been at the Club at all these past months you are truly missing out. Every time I walk through the doors of our Club I am greeted by warmth, camaraderie, and a vibrant, buzzing hub of activities. Every day during opening hours our clubhouse is filled with members making connections – members dining together, meetings over lunch or a drink, playing

This quarter Sarah and her team have once again put together a terrific line-up of special events and activities. I for one am looking forward to our annual End of The Summer Soirée. If you have not been yet, this is our big annual bash that you do not want to miss! Other Club (and my!) favorites this quarter are our very popular Fiesta Dinner and our Oktoberfest Beer Hall Dinner (held in September – don’t miss it!). Take a look at the full calendar and event listings in this magazine and online. There is something there for everyone.

Looking ahead to the fall, a reminder to mark October 20th on your calendar for our Annual Meeting. My time at the helm will come to an end after the Meeting, but not my time at the Club. I look forward to spending these summer months, and many, many more to come, with you all here at our UClub, and to raising many, many more glasses with you all in the years to come.

watching the spectacular sunsets over the park with friends. Summer also means the perfect conditions for Mah Jongg play on the front patio and our Wednesday Night Live music during dinner on the Sola Patio. Our special culinary events in the evenings are also truly magical during summer, not to mention our incredible End of The Summer Soirée party. In short, your UClub is the place to be this summer – you don’t want to miss out!

This year our Annual Meeting will be held on October 20th. Be sure to save the date! This is our big, annual gathering of all of our members. You do not want to miss this special member evening. Stay tuned for more details and information.

LOIs & Reservations for Reciprocal Visits Ahead of Time - Mandatory

A reminder that you must get a Letter of Recommendation (LOI) from us for each and every Reciprocal Club visit, no matter the duration. Please do try to give us 2-3 business days to prepare and send your LOIs. A reminder also that you are responsible for making and managing any and all reservations with our reciprocal partners yourselves. Per our signed Reciprocal Agreements with our partner clubs, please do not show up to a Reciprocal Club unannounced/without reservations or without the required LOI from us.

How you represent us while on your visits to our reciprocal partners –from making the required arrangements ahead of time, to having your LOI in hand, and treating their staff and club spaces as you would ours here at home– impacts the ongoing renewal of our agreements with them. We thank you all for doing your part to help keep these wonderful benefits going strong.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to special menu dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

HOW-TO: Reciprocal Club Visits

UClub of Santa Barbara Members enjoy reciprocal access to over 200 private clubs in the US and worldwide.

• A full list of current reciprocal clubs can be found in the members area of the website.

• To access a reciprocal club, be it just for a meal or golf, or for an extended stay:

1. Members please first contact the club(s) you wish to visit to check availability*.

2. Once you have confirmed availability with the reciprocal club(s), email Member Services for the required Letter of Introduction (LOI).

3. Please allow 2-3 business days for us to email your LOI out. You will receive a copy as well.

* UClub members are responsible for making any and all arrangements and reservations directly with the reciprocal clubs they wish to visit, and must settle any and all bills directly with the reciprocal clubs before they leave. The UClub is not responsible for any outstanding member bills with reciprocal clubs. *Each of our reciprocal club partners has their own rules, regulations, pricing, and amenities for visiting reciprocal members. Meet Our UClub Staff

Alena Gleich - Food & Beverage Manager

One face many of our members are familiar with is our ever-delightful, everaccommodating Food & Beverage Manager, and front-of-house guru, Alena Gleich. Whether you have attended a special event here at the Club or have come in for dinner or drinks, you will almost certainly have had the pleasure of meeting Alena and seeing her in action.

Born and raised in Phoenix, Arizona, Alena found her way to Santa Barbara for college, pursuing a business degree at Santa Barbara City College while working in hospitality.

Specifically, Alena started her career at the Ritz-Carlton Bacara, working as a hostess. From there, the diligent and quick learner moved her way up to fine dining food runner and then expeditor (responsible for ensuring efficient order flow between waitstaff and kitchen), followed by time spent as a server working with a very exigent, vocal French chef. “All of these positions helped me learn how to serve in a fine dining environment. I learned all of the steps for proper service,” she notes. Alena then also began working at Enterprise Fish Company as a cocktail waitress during the “crazy 4-8pm happy hour! There were 100 open seats and just 2 cocktail waitresses. It was the opposite of Bacara –fast-paced, multi-tasking, and chaotic. But I loved it. I thrive when I am busy.” For Alena, this combination of very different roles was ideal, preparing her for her responsibilities here at the UClub. “It really rounded out my hospitality skills well,” she says with a characteristic smile. When Covid hit Enterprise closed and her former manager recommended her for an open server role here at the UClub. After just six months as a server, and recognizing her background and potential, she was promoted to the Food & Beverage Manager position.

“I love working here, and especially the people,” Alena relates. “It has been so nice to work somewhere that is not open to the public. I have the opportunity to get to know our members better and to build relationships, getting to know what they like and being able to better serve them. And also our staff – we have such an amazing staff and all of our servers are so great to work with.” On that note, Alena wants members to know that she enjoys getting feedback: “Please do not hesitate to let me know if you have any questions about your food, your drinks, or our service. I am always happy to hear from you!”

One of Alena’s favorite events here at the UClub is our 1st Thursday Wine Maker’s Dinner, not only because of the elevated service aspect of it (“The glasses, the silverware, and table-settings – it all brings me back to my fine-dining days at Bacara”), but also because of the challenge of hosting such an evening, something Alena revels in. “I also love the Wine Maker Dinners because we get to meet the wine makers and I get to learn about the wines and wineries alongside our members.”

When not working, Alena can be found enjoying nature –hiking, going to the beach, or riding her bike– with her dog, Ziggy. “He’s a Beagle-Jack Russel mix, but he is very chill. He is a rescue from the pound and he is almost fully blind.” Alena has an adventurous side as well. During her college years she did a semester of work-study on a farm in the middle of the jungle in Hawaii, walking a quarter mile each way to a little shed –the only place with wi-fi– to attend her online classes and take proctored exams. “It was always really funny when the person giving the exam would see my background and ask where I was.”

So what does the future hold for this modest yet capable and industrious lady? “In ten years? I would maybe like to own my own restaurant... or I could see myself someday as a restaurant/bar rescue consultant.”

DINING REMINDERS & ANNOUNCEMENTS:

Walk-Ins For Regular Lunch & Dinner Service

While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you!), walk-ins are also ok for regular meals!

*RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. There are no walk-ins for special events and meals requiring reservations - see also next point below.

No Regular Dinner During Special ‘Gold’ Dinners

A reminder that there is no regular dinner available on UClub ‘Gold’ evenings - culinary evenings held in lieu of regular dinner. Walk-ins are also not possible on ‘Gold’ evenings (such as 1st Thursday wine dinner, Oktoberfest, Opera Dinner, Lobster Fest, Holiday Dinner, and similar). Reservations are always required several days ahead of time for special culinary evenings; food and seating are prepped ahead of time according to the reservation lists. We do have a 72-hour cancellation policy for these same reasons. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.

Communal Tables

The University Club is all about forging lasting connections, celebrating and growing together. To this end we often have communal tables set up for those who attended an event or activity and wish to dine together before or afterward. If you would like a lunch or dinner reservation before or after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let Activities@uclubsb.org know.

No Corkage Thursdays & Free Wine Fridays

You are always welcome to bring your own bottle(s) of wine when you dine at the UClub. Corkage fees are waived every Thursday at dinner. Enjoy a free glass of wine with your lunch every Friday.

A Dish Best Served...

We serve our meat - steaks, burgers, etc. - medium rare. If you would like yours prepared a different way, please let your server know. The same goes for any of our dishes - help us ensure you are satisfied by letting us know your preferences. Your servers are happy to answer any questions you may have.

Cooking with Chef David

Yellow Corn Veloute

“I really enjoy corn this time of year. This recipe is very versatile and can be used in different ways and delicious for both hot and cold preparations. It can be a hot or chilled soup, a sauce for a cold crab salad, as a sauce for a hot fish entrée.”

INGREDIENTS:

4 ears yellow corn shucked save the cob

1 ea white onions thinly sliced

2 stalks celery thinly sliced

1 ea leeks thinly sliced

3 ea garlic cloves thinly sliced

1 ea Yukon gold potato small diced

DIRECTIONS:

• In a large pot boil the cobs in 4 quarts of water until a strong flavor of corn is extracted and strain into a container.

• In the same pot coat bottom of the pan with oil and sweat onions, celery, leeks, garlic, for 5 mins on low heat, stirring to not create color on the vegetables.
