Dear Members,

Fall is in the air, and with it the fresh, crisp autumn air combined with the cozy togetherness of harvest spices, Thanksgiving, and the winter holidays just around the corner. October through December at the Club are truly special months. Every time I walk into our Club during this wonderful time of year, I feel truly honored and blessed to be a part of such a warm and vibrant community.

October brings with it not just pumpkin spice and other things nice, but also our Annual Meeting. This is the one time of the year that we all gather together to look back at our fiscal year and to go over our plans and aspirations for the future. I very strongly encourage everyone to attend. All members are invited. This is your Club, and this is THE big meeting to attend to stay informed and involved. What is more, this is THE evening to meet almost all of your fellow members, mingle, connect, and celebrate together. I hope you will all stay for the complimentary reception after as well. A reminder that dinner reservations for the evening are separate and space for dinner is limited. RSVP soon! (This evening is for UClub members and your spouses/ partners only – no guests at the Annual Meeting or dinner this evening. The Annual Meeting evening is truly a UClub members’ occasion!)

October is also Halloween and this year I know Sarah and her team have something special planned for us every Friday evening with the Voodoo lounge in the bar area and leading up to the big Halloween party on October 28! November and December are equally

Fall is one of my favorite times of the year in Santa Barbara. Our beautiful weather and often times Indian Summers keep us outside well into October and even November. Here at the Club autumn also signals the start of our new fiscal year, kicked off with our Annual Meeting. This is the seminal event of our year, where we go over all of our important Club business, give core updates, and review the previous year’s financials. We also go over plans for

magical at the Club, with Friendsgiving and our wonderful holiday traditions. I can’t wait for my whole family, and especially the kids, to hang out with Mr. Santa and Mrs. Cookie Claus again this year! (I wonder what gifts they will be bringing with them.)

Of course, we also have a plethora of other activities and opportunities to look forward to, with yet another full calendar of events, classes, and more this quarter. Be sure to take a look at the online calendar and reserve your places soon! As always, thank you to everyone for all of your wonderful ideas and all of the great speakers and presentations you help bring to our Club. Finally, I would once again like to encourage everyone to participate in our UClub holiday tradition of thanking our hourly staff for all of their hard work during the holidays and throughout the year. When the Club is closed for the holidays, our hourly-wage staff does not get paid. Every year our members generously contribute to the UClub Holiday Staff Fund to help us ensure our staff have the holiday they deserve. Let’s shower them with our appreciation once again this year! (See page 15 for details on how we can contribute!).

I look forward to sharing these special times with you all, and especially to making ever more connections and great memories together these coming months. Let the celebrations begin!

You really do not want to miss this important and also festive evening, full of information, connections, and celebration.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to Wine Dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests.

Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

Don’t Forget - You May Bring Guests!

We keep getting asked, “May I bring a guest to this?” The answer is YES! UClub members have guest privileges and may invite guests to join them for meals and member functions (including most member events, activities, lectures, demos, and member social clubs and societies). The number of guests each member may bring varies depending on the parameters of each event or activity.

• Non-member guests must be invited and accompanied by a member at all times to dine or attend member functions at the Club. Members must register themselves and their guests for meals, events, and activities ahead of time.

• For regular meals - you are welcome to add your guests to your member account for payment, or you can have each guest pay for themselves at the conclusion of your meal. Our servers can ring them up with cash or credit card.

• For member events and activities - your guests will be added to your account for billing.

As a member of The UClub of Santa Barbara you enjoy exquisite, private dining at your Club. The UClub offers a variety of meal services with member pricing for you and your guests, including weekly meals, monthly culinary events, and special offerings each month.

DINING REMINDERS & ANNOUNCEMENTS:

Walk-Ins For Regular Lunch & Dinner Service

While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you!), walk-ins are also ok for regular meals!

*RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. There are no walk-ins for special events and meals requiring reservations - see also next point below.

No Regular Dinner During Special Dinners

A reminder that there is no regular dinner available on evenings on which there is a special culinary event, and walk-ins are not possible for special dinners (such as 1st Thursday wine dinner, Oktoberfest, Opera Dinner, Lobster Fest, Holiday Dinner, and similar). Reservations are always required ahead of time for special culinary evenings; food and seating are prepped according to the reservation lists. Cuttoffs for reservations for special culinary evenings are several days before the event. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.

Lunch or Dinner After Events - Not Included

Unless explicitly stated, lunch or dinner after an event or activity at the Club is not usually included with your event/ activity reservation. If you plan to stay for lunch or dinner after an event/activity, you will need to make a separate lunch/dinner reservation.

We do, however, often have communal tables set up for those who attended an event or activity and wish to dine together afterward. If you would like a lunch or dinner reservation after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let Activities@uclubsb.org know.

No Corkage Thursdays & Free Wine Fridays

You are always welcome to bring your own bottle(s) of wine when you dine at the UClub. Corkage fees are waived every Thursday at dinner. Enjoy a free glass of wine with your lunch every Friday.

A Dish Best Served...

We serve our meat - steaks, burgers, etc. - medium rare. If you would like yours prepared a different way, please let your server know. The same goes for any of our dishes - help us ensure you are satisfied by letting us know your preferences. Your servers are happy to answer any questions you may have.

COOKING WITH CHEF DAVID

Apple Cider Chicken

INGREDIENTS:

4 chicken thighs and drumstick

1 1/2 teaspoons kosher salt

1/2 teaspoon freshly ground black pepper

1/4 cup plus 1 teaspoon country-style Dijon mustard

3 tablespoons vegetable oil

2 pink-skinned apples, cut into 1/2” wedges

1/2 medium red onion, cut into 1/2” wedges

1 cup dry white wine

1 1/2 cups fresh apple cider

DIRECTIONS:

• Arrange rack in upper third of oven; preheat to 450°F. Season chicken all over with 1 tsp. salt and 1/2 tsp. pepper, then rub with 1/4 cup mustard, making sure to get mustard under skin.

• Transfer chicken, apples, and onion to plates with a slotted spoon. Heat liquid in skillet over high heat. Add remaining 1 tsp. mustard and bring to a boil. Cook, whisking constantly, until sauce is thickened, about 5 minutes.

Remove from heat and stir in lemon juice.

Two Weddings, A Funeral, and a Pair of Anniversaries: A Trip Down Memory Lane with Emeritus Member Robert Monk

When we named this section of our UClub magazine ‘If These Walls Could Talk’ we immediately knew that we would one day have to interview the one man who could plausibly make that happen: Mr. Robert L. Monk. Mr. Monk is one of just a handful of current UClub Emeritus* Members, and his connection to the Club actually goes back even further than his membership.

Mr. Monk has been an official member of the University Club of Santa Barbara for 51 years to date. His father, Mr. Lloyd Monk, joined the University Club soon after the Second World War and, like his son after him, served as President of the Club. Mr. Monk senior was, in fact, responsible for writing up a comprehensive history of the Club from inception through the 1980s – an invaluable resource and wealth of information. The younger Mr. Monk remembers coming to the Club back in the late 40s and early 50s as a preteen: “I remember coming to Sunday morning Easter breakfast with the Easter egg hunt on the lawn,” he smiles. [A tradition the Club still enjoys to this day.]

When Mr. Monk was about 30 years old and just starting his own private law practice he was encouraged to join the University Club “because in those days that was where the movers and shakers were – bank presidents, doctors, lawyers, etc. met here at the Club.”

“My office,” Mr. Monk recalls, “was on Victoria Street. There were no bushes then – I could just walk right over.” Back then, Mr. Monk notes, the Club was still very much an old-boys-club, mostly used for business connections. “It was a coat-and-tie club in those days,” he says. “If you brought a guest, the manager brought out a coat and tie for them. Usually, it didn’t fit so well. There were no women allowed then, even as guests.”

There were other rules that seem archaic now as well. Mr. Monk remembers when smoking was allowed, “but no pipes or cigars, except in the card room. They had a sign up.” Back in the day there were also tenants living upstairs where the offices are now. “[The late] Dr. Hugh Snyder, a dear friend of mine for over 40 years, first moved to town in the 60s,” Mr. Monk shares. “He joined the Club because there were cheap rooms to rent. He was also a client of mine and later on he loved to come to my office because it used to be his room!” Living at the Club did have its perks. As Mr. Monk noted with a mischievous glimmer in his eye: “When it was late and they got hungry they would go down to the kitchen and help themselves.”

Sadly, those times came to an end. “We had an elderly gentleman back in the 70s, early 80s,” Mr. Monk recounts, “who fell asleep with a lit cigarette. He was fine and the damage was somehow minimal, but because of that, for safety and insurance reasons, we decided it was no longer a good idea to have tenants.”

When Mr. Monk says ‘we’ he really does mean it. At the time, Mr. Monk was very much involved with Club affairs. In 1980 he went from being a junior member to senior member status. He was asked by a fellow member, Overton Gentry, to join the Board. “He brought me to my first Board meeting,” Mr. Monk recalls. “The Club President at the time was Robert Svoboda. He had great plans for expanding the Club and wanted to add an expansion and other

ideas that were contrary to those of some of the older members, particularly one of the oldest members at the time. They got into a verbal spat over some issue – I forget what exactly – and one of them called the other a horse’s ass. I leaned over to Gentry and said ‘What the hell have you gotten me into?’”

Luckily for the Club, Mr. Monk was not scared off. He continued to serve on the Board through the 80s, including as Club President from 1985-1987. (In 2011 he came back on the Board again, lending his wealth of knowledge and insights to help continue to steer the Club.) The most eventful time of his tenure on the Board was undoubtedly the integration of women into the Club for the first time in the early 1980s.

It was right around that time that the Club kitchen was found to be not up to code. An extensive remodeling was needed to pass inspection, for which the Club did not have the funds. As chance would have it, a pioneering group of local women had just formed the Santa Barbara Associates (SBA) “to serve the needs of women who had achieved a level of professionalism in their field” [Lloyd Monk, The University Club Timeline]. The women were looking for a facility for social and business purposes and approached the University Club.

Mr. Monk remembers some of what went on behind the scenes at the time: “A lot of the older male members, many on the Board, did not want women to have the same rights. But a number of us knew we were in trouble being an all-male club, and as I lawyer I knew that we could lose our liquor license. We entered into serious negotiations. Some wanted the women to be allowed only as ‘associate’ members, and one Board member (I won’t mention names) even resigned over it. In the end the women were let in as full members. Just one sentence added to the bylaws in 1983 [“Any words in these By-Laws referring to the masculine gender shall include the feminine.”] changed us from all-male to co-ed.”

Even so, Mr. Monk recounts, the Club was still not fully integrated. The Alumni Room was reserved for the Associates and the men could only use the room with permission. Similarly, when Mr. Monk first joined the Club there used to be two round tables for dinning – one for the senior members and one for juniors. “There was not any hard rule, but in general contemporaries sat with contemporaries,” he remembers. “If a young, brand new 30-year-old sat with the big wheels they wondered why we were there.” Eventually those two tables merged into one large “men’s round” table, which “endured until quite recently.” Mr. Monk recalls once in the 90s when there was “a bit of friction with some of the women with regard to the round table. One day a female Board member sat with us, but she ended up saying ‘you guys are really boring!’”

While Mr. Monk surely has many more UClub stories and history to tell (we are still hoping he will pick up where his father left off on writing up the history of the Club!), for the moment he reflects on how much the culture of the Club has changed: “Having gone through various stages, and aged a bit myself, I’ve watched the culture change from an all-male, coat-and-tie place for conducting business to a more family oriented, casual in dress, and more social club that works to suit current members’ desires.”

Mr. Monk has come of age alongside the University Club to which he has belonged for so many years. In fact, he was married here back in the 70s, hosted his step-daughter’s wedding here in the 80s, hosted his parents’ 50th anniversary here in 1988, his father’s celebration of life in 2006, and his own 40th high school reunion in 1998!

“I’m happy that some of the people from my era are still around,” he notes. “But I feel good about where the Club is today, and where it is going. Without young blood we would cease to be.”

You can catch Mr. Monk most Tuesdays and Fridays enjoying lunch on the Sola Patio and sharing good times with friends old and new at many of our Club events and special meals.
