MESSAGES FROM OUR PRESIDENT: Dear Members, Welcome back! I am so excited to return to the Club for patio lunches (Mon.-Fri.), Bistro Dinners (Fridays), and Social Hours (Wednesdays, starting July 29th).

I was happy to see so many smiling faces on our exclusive Sola Patio for our grand opening on July 6th. Unfortunately, we had a minor setback, and for the safety of our staff and members, we made the difficult decision to shut down the Club for several days while we had the entire staff tested. Only after the entire staff tested negative and no symptoms were being reported did we make the decision to re-open. I am pleased at the efficiency in which this situation was handled by Sarah and I feel very safe knowing she is at the helm.

Chef, Sarah, and our new front of house manager Lisa, have done a wonderful job getting the club ready for its members in the safest way possible. If you haven’t come in for lunch, I hope you get a chance to join us soon, or for Bistro Dinner starting on July 24th and Social Hours starting July 29th. Face masks are required, and hand sanitizing stations are set up throughout. When you come in, I hope you take the opportunity to look around and check out all that has happened while you were away. I am especially excited about the new library

lounge — I can’t wait to have a drink and some bar bites in the new library once indoor service is allowed to resume.

I also want to take this opportunity to thank all of our members for being so understanding during such a difficult time.

I know this was not easy for all of you, just as it was not easy for us at the Club. I was so proud of the way our members came together to support the Club — whether it was through a generous donation, or just continuing to pay your dues during the mandated closure. Every little bit is greatly appreciated and put to the best possible use.

As we begin to open and transition into the next phase, please understand we are not yet out of the woods. With increased restrictions, the potential for future closures, and limits on large gatherings, these next few months will likely prove to be just as difficult. With that said, I am incredibly optimistic about the future of our great Club. Rather than getting knocked down by the pandemic, the UClub is using this trying time as an opportunity to do some much needed repairs and to rework the Club from the ground up. Some fantastic changes have already taken place, and some will be rolled out soon. Stay tuned…

As always, I welcome your ideas and comments, both positive and constructive.

MESSAGES FROM OUR GM: Dear Members, As you all know, just as we were getting ready to go to press with this edition of our Club newsletter, we got word that two individuals who were at the Club the week of July 6th later tested positive for the virus.

Neither individual had any symptoms while at the Club and both adhered to all of our health and safety protocols at all times while on the premises. As we have said throughout this ongoing pandemic, our top priority is, and always has been, the wellbeing and safety of you – our members – and our staff. With this in mind, we did opt for the most cautious course of action, even at the risk of seeming extreme.

We immediately sent out a notification to all of you to let you know and, out of an abundance of caution, also opted to briefly shut down all Club operations until we were able to have all staff members tested and cleared.

We are very happy to report that all of the returned tests have come back negative. We do believe that everyone’s use of masks, stringent hand-washing, and proper distancing has made the difference and helped stop those cases from spreading any further here. I want to personally thank our wonderful staff as well as everyone who dined with us for doing your part in following the health and safety guidelines. These measures really do help us significantly mitigate 4 THE 1919 MAGAZINE | JULY 2020

any exposures at the Club and help us to keep our doors open to you now.

We are also continuing to do our part. In addition to following all strict protocols for staff, our external cleaning service has been in every night and has been doing a detailed cleaning with a specialized fog treatment once a week. We also continue to monitor all state and county health and safety directives and will update our protocols and plans as needed. Ultimately, our goal is to continue to make the UClub a beautiful, welcoming haven in these strange times for you and your guests to safely and exclusively enjoy.

We are so grateful for the understanding and supportive response from all of you throughout these unprecedented times. Like many of you, we look forward to reopening again on July 21st, for lunches, bistro dinners (July 24th), social hours (July 29th), and to-go orders. You have all been wonderful in adhering to the health and wellness protocols and guidelines in place and helping us to make the Club a safe place for everyone to dine. We are truly blessed to be part of this caring and resilient UClub family and appreciate each and every one of you – in normal times, and all the more now.

As I had started to write before our brief shutdown, it was wonderful seeing so many of you during our first few days back open, enjoying the beautiful weather and the delicious UClub lunch menu on our very own

private, secluded Sola Patio! It is truly special that we have such an idyllic, exclusive space in which to host you all, together at safe distances.

Thank you also to everyone’s positive feedback on the Club’s fresh look! As many of you know, we used the statemandated shutdown time to make some necessary improvements around the Club. These include improvements to the bar area, giving the library a makeover into a more memberfriendly lounge, giving the Club a fresh coat of paint and refinishing the wood, as well as moving the patio fountain to its permanent placement, helping to create even more space and a truly tranquil ambiance. We are excited for you to see and enjoy the upgraded spaces when you are next in.

We do hope to be able to move forward with the rest of our reopening plans as well and are excited to add Friday Bistros and Wednesday Social Hours back into the mix. We are monitoring all state and county announcements closely and will update you via the members area of the website and through email communications should there be any changes. You can see our full tentative reopening schedule on page 6, and the most up-to-date, real-time schedule at any time by logging in to the website.

In the meantime, we are also continuing to offer the To-Go Meals service we started during the extended shut-down period. You are very welcome to join us for dine-in

meals, but can also opt to order meals for pickup, Tuesdays-Fridays, with two pickup windows available: 121pm and 5-6pm. See page 15 for more information and instructions.

Our main goal throughout these unprecedented times has been, and continues to be, to offer you, our members, continued services and support to the best of our ability.

We truly appreciate your patience, understanding, and support as we continue to navigate the constantly changing landscape. As in the past, the UClub and its members are proving to be impressively creative and resilient. This is, of course, not the first storm the UClub family will have weathered together, and we are so pleased to have our doors open to you once again.

We can’t predict when this global pandemic will pass, or what the next few weeks and even months might bring, but we take much comfort now in seeing you all at the Club again and being able to enjoy delicious meals together. We are here to serve you, and to help you create ever more lasting memories and cherished moments at our beloved UClub.

MEMBERS SUPPORT THE CLUB: The past months have been nothing short of unprecedented and have truly challenged us in ways we never could have imagined. Here at the UClub we are grateful for our generous and caring membership. So many of you have already contributed to the UClub Pledge Drive. As you all know, our Club still cannot rely on our usual sources of income the weddings and private events which normally pay the lion’s share of our bills. It will be quite some time yet until these types of large events are allowed again and back at their full capacities. In the interim, we have implemented many difficult cuts, applied for and accepted a PPP loan, and taken other measures. In addition, many of you have stepped up as well to help see us through these difficult times. Together, we can weather this storm and even come out stronger. Thank you for the integral part you all play, for your dedication to the UClub family, and to ensuring our wonderful oasis in the heart of downtown remains a Santa Barbara staple for another 100 years (at least!), for your families and ours.

MEET THE UCLUB TEAM: Lisa Delanty - Our New Front of House Manager Born and raised in San Clemente, CA, Lisa Delanty’s family used to take road trips to Santa Barbara over the summer to revisit her father’s alma matter - UCSB. Now, she has come full circle, joining the dedicated UClub team as our new Front of House Manager.

Lisa is an accomplished and energetic fitness enthusiast. She is a graduate of Concordia University, Irvine, California with a major in exercise and sport science and has taught physical education at the Mission Basilica School in San Juan Capistrano. Lisa’s passion for nutrition and overall wellness sprung from a love of dance at an early age. At just 9 years old she was dancing with The Paris Opera Ballet and at the age of 13 she was accepted into American Ballet Theatre, School of American Ballet, and Pacific Northwest Ballet summer intensives. Along with a love of fitness and health came an ever-growing love of cooking and creating unique recipes to help properly fuel her body. She even majored in Nutrition at Cal Poly San Luis Obispo while continuing to dance in the Orchesis Dance Company. Lisa also has a 200-hour Yoga Instructor Certificate.

In the summer of 2014, Lisa had the privilege of teaching both physical education and English in Shenzhen, China at the Buena Vista Concordia International school. She lived in China for two years and says it is one of her favorite places that she has traveled to.

“I cannot begin to explain how gracious the locals were and how many friendships I developed and continue to cherish today,” she relates.

And it is precisely this sort of gracious hospitality that Lisa hopes to bring to her role here at the UClub. “The UClub truly is the gem of Santa Barbara and I am very excited for this new position as Front of House Manager!” Lisa says. “I look forward to bringing an attention to detail, a fresh and artistic perspective, and a pure love for hospitality to the UClub. I cannot wait to meet all the members!”

Lisa is excited by the many recent enhancements and improvements made to the Club and is eager to provide the highest level of “personal service and finesse” to go with it.

She is also delighted with “the innovative and exquisite seasonal menus from our very own Chef David Rosner” and looks forward to sharing this new chapter with all of you.

Cooking with Chef David PEACH COBBLER

UClub Chef David Rosner

INGREDIENTS: 5 peaches (about 1½lb.)

2 Tbsp. dark brown sugar 1 tsp. ground cinnamon 1/2 tsp. ground mace 2 cups (400 g) granulated sugar, divided 1 cup (2 sticks) unsalted butter 2 cups (250 g) all-purpose flour 1 Tbsp. baking powder 1 tsp. salt 2 cups whole milk 1 Tbsp. vanilla extract

DIRECTIONS: • Place a rack in middle of oven; preheat to 375°. Peel skins from 2 peaches. Halve and remove pits from all of the peaches. Slice 1/4” thick. Transfer to a large bowl; add brown sugar, cinnamon, mace, and 1/4 cup granulated sugar and toss to combine. Let sit while you prepare the topping (at least 20 minutes).

• Cook butter in a small skillet over medium heat, stirring often, until it foams, then browns, 5–7 minutes. Pour brown butter into a 13x9” baking dish. Whisk flour, baking powder, salt, and remaining 1¾3/4 cups sugar in a medium bowl. Whisk in milk and vanilla, then pour batter into baking dish by the ladle-full so butter swirls and mixes into batter. Top with peaches.

• Bake cobbler until golden brown and bubbling around the edges, about 1 hour. Let cool slightly before serving.
