Dear Friends,

The April cover of Bay Window features members raising a glass in celebration of good friends gathering and welcoming Spring. “Celebration” is the operative word. We celebrate the great life at our clubs. The world outside does not cross the threshold. Members Only!

Our spring issue explores a broad spectrum of interesting events enjoyed by members both longstanding and new to club life. Meet respected attorney Bob Callahan and share his love of golf in our Member Profile by writer Matt Morrison. From golf to pro football, sports columnist Ryan Cook remembers legendary club member Paul Salata, founder of the NFL’s Irrelevant Week at the BBC some three decades past. An interesting connection is made between the BBC, Salata and Irrelevant Week honoree Brock Purdy, QB for the San Francisco 49ers at the recent Super Bowl. A fun read.

On the subject of fun, Oscar Night was a hoot at both clubs, especially when the production number “I’m Just Ken” starring Ryan Gosling, recreated from the screen version of Barbie, sent the club crowd into overdrive.

NBCC members were impressed by an address from Navy Seal Veteran Brent Gleeson fronting the latest Speaker Series at the club. Great fun was enjoyed by all at Family Night Bingo bringing together young and old competing for prizes.

Be sure and read Alex Chazen’s member benefits column this month on the reciprocal clubs at your service when you travel. We feature West Coast locations in the April issue, and will list others around the nation and beyond in future issues. Dining columnist Lana Sills meets with Chef Prathapan and reviews the new dinner menu for Members Grill.

Celebrate, appreciate, and participate; it is all here to enjoy at your clubs.

The BBC Yachting Community Grieves

MICHELLE LOUISE KERR (1976-2024) GREATLY LOVED, DEEPLY MISSED

Shambhala in Tibetan Buddhism is a spiritual kingdom, where every citizen has reached enlightenment. It is also the name of the superyacht that Michelle has always called “an oldie, but a goodie.” In her words, it meant that even with the passing of time, a dependable boat will never age, as it will continue to bring harmony to its crew members. We wish to honor Michelle Louise Kerr as she has transitioned onward to her version of Shambhala. She was a mother, a daughter, a sister, and a friend and her loss has been felt. She will be buried in our hearts and minds for years to come.

Michelle was born in 1976 in Manchester, England to Lynn and Robert Tandy. She spent her childhood along with her younger sister Leighan in Edinburgh, Scotland where her mother was originally from, and she would have an extended family from both Scotland and England. At an early age, Michelle displayed a strong

personality which many gravitated toward, earning her much respect and love from her peers.

“To me she was always a brilliant ray of sunshine. Got your back kinda lady.” Andrea Bill stated. Because even when the skies turned grey, Michelle shone ever bright, for she knew how to bring everyone’s spirits high, reminding them to never remain low.

She was fearless and took charge of her life, as she immigrated to the United States at the age of twenty-one. Michelle worked in the hospitality business and through her charisma created new friendships that have lasted for over twentysix years, from across the globe. Her absence will leave a significant impact on the yachting community.

“A game changer. There will never be anyone like her,” Dustin Duvoe expressed. She was a giver and always put others before

herself, a champion of the patrons that she served and a lover of the sea. This was on full display at a busy catering event. When everyone around was losing their heads, and the workstation was a mess, she remained even keeled. She would slip a cheeky joke here and there for her staff members to enjoy as they worked diligently to turn the tide of the event into a successful one. Now imagine doing that for the next thirty years, she was extremely passionate about her work and never considered herself above others and under no circumstance considered herself less. She treated everyone equally.

When not attending to the service of others, Michelle would seek solace from the sea. She found it to be her happy spot when she watched the ebb and flow of the waves and the occasional visits from a pod of dolphins or orcas. She would sit quietly watching the sunset over the ocean as it was a reminder to her that life was a gift and it felt delightful to be alive.

Michelle was the head of her family. She gave birth to her beautiful daughter Tylin in 2005, whom she loved deeply. She also cared for her niece Olivia, who she wanted nothing but the best for. She is survived by her mother Lynn, her father Robert, her sister Leighan who was her best friend and sidekick, her sister Samantha, daughter Tylin, her niece Olivia, her loving mother-in-law Tookie, and her husband Eitty.

The love she shared, the laughs she gave and the light she emitted will forever be missed. Her memories and the hearts she affected will not dissipate. Though not a fan of the Irish farewell, she would be the first to tell you to not shed a tear, but to raise a glass of beer to better things.

Her absence has already left a rippling effect on the wide reaches of communities around the world. It has been a privilege to have worked with her and an honor to have known a compassionate soul like Michelle. She will be on her way to her next adventure sailing onward to the pale beyond.

“Well, Michelle you weren’t an oldie, but you were a goodie. You are the Shambhala in our hearts. May your loving memory remain a beacon of light for the rest of us to share.”

Dear BBC Members,

Thank you to all our members that joined us at this year’s Hoag Classic. There is no better way to enjoy PGA Champions golf than at Newport Beach Country Club with all our BBC members. Once again, the Hoag Classic lived up to its rich history of providing some exciting golf and we couldn’t be happier about the turnout of great golfers and golf fans.

As we spring into April, the fun for members continues with fun events like our kid’s movie night and ladies’ bunco. On the food and beverage front, thank you for your great comments on the new dinner menu in Members Grill. If you haven’t had a chance to experience it, I encourage you to make a reservation to join us for dinner and experience this new innovative menu by Executive Chef Prabeen Prathapan along with Chef de Cuisine, Chad Zbikowski, and your entire Members Grill team.

I would also like to remind you to update your email profile online as this month marks the change to “green” statements for the club. Beginning with this month’s statement, we are going green and switching to electronic delivery of your member statement.

We look forward to some great weather this month and to welcoming all our members to enjoy the club and all it has to offer. For those of you looking for some rest and relaxation, I encourage you to book a massage or facial as we recently debuted our new line of products and services from Sothys, Paris. Lastly, please join me in congratulating Tracey Mines as she transitions from leasing to her new role at the Club as our new Membership Coordinator. Tracey is excited about her new role in membership and looks forward to connecting with members throughout the year and helping to make new members feel welcome.

We look forward to welcoming you at the club!

A Fond Farwell

My dear Balboa Bay Club friends, I’d like to start by thanking everyone for such a warm welcome back. It is remarkable how very much like a dear friend the Bay Club is… one can step away for an extended period of time, but it always feels like a warm hug when you return and as if no time has passed at all. I truly missed the energy and atmosphere of this iconic institution. It is with heartfelt regret, however, that I must share I have submitted my resignation. After deep reflection, my husband and I have decided the best thing for our family at this time is for me is to transition into staying at home with our children. The decision is not without heartache as I genuinely feel as though I am giving up a piece of me and saying goodbye to my home away from home. Over the past seven+ years, I have had the most wonderful experiences here interacting with our members and taken great pride in being a part of such a terrific and devoted team. I am lucky indeed that this was a difficult decision to make, and I do not take that for granted. It has been my absolute pleasure to help curate the exceptional experience that is Balboa Bay Club membership. With deep sincerity I wish each and everyone of you the best and encourage you one last time to find a moment to reflect on the value Balboa Bay Club adds to your life. I know it added a whole lot to mine.

“Don’t cry because it’s over, smile because it happened.”

News from the Chef’s Kitchen

NEW WAY FORWARD FOR MEMBERS GRILL WITH MENU SELECTIONS OFFERING

CREATIVE AND ELEVATED CUISINE

Get ready for new taste sensations. Members Grill is the perfect spot for steakhouse-style specialties featuring Executive Chef Prabeen’s new eclectic menu with so many must-orders!

You’ll want to check out the 8-ounce Black Angus Filet Mignon, with its exceptional tenderness and the premium cut 8-ounce Manhattan Cut Ribeye, thick and juicy with extensive marbling and cooked to your satisfaction, and oh, the Herb Roasted Rack of Lamb. The lamb is a scrumptious, wellseasoned double-cut and it’s tender and juicy, and beautifully complimented by Chef’s vibrant and herbaceous Chimichurri sauce. Meat lovers can choose from six sides and three sauces for the new hearty specialties.

But don’t overlook the Seared U10 Scallops, Linguine Bolognese, or the delectable Chilean Sea Bass over Forbidden Rice. The scallops are sourced from the pristine waters of Spain and perfectly seared. The Bolognese is made from the classic blend of beef and pork and a beautifully nourishing sauce made with Italy’s

best San Marzano tomatoes all tossed with fresh linguine pasta.

The new Winemaker’s Salad is a colorful, shareable salad to kick off these new plates, or consider the salad as a main course topped with protein-packed chicken, shrimp, salmon or flat iron steak.

Marvelous appetizers grace the menu… Coconut Fried shrimp, the perfection of deep frying (not greasy!); the batter is light and crisp and memorable and I love the compliment of the Mango Dipping Sauce and Asian Slaw. You’ll find new Meatballs topped with tangy Goat Cheese atop crispy, buttery, garlicky bread. Short Rib Taquitos served with guacamole, pico de gallo, sour cream and queso fresco are sure to be a hit and the Vegetable Tarte Tatin with sweet potato, carrots, celery root, onion and eggplant dip enrobed in puff pastry is truly delightful.

A festival dish that’s brought people together for centuries at longer tables is the spotlight of the new Members Grill menu. In true Spanish style, you’ll find Octopus with Bravas Potato, pickled shallots, and Calabrian Chile Aioli…

one of my favorite dishes in the world. This very famous dish of octopus and potatoes has tremendous historical reference; foods were transported from region to region bringing seafood toward Madrid along with olive oil and the amazing smoked paprika. This is how some of the most incredible dishes are created, for the traditions and celebrations that bring people together. I know a lot of people don’t like to eat octopus and I don’t judge, but it is the best of Spain and you might want to try it. If you’re curious about octopus but shy away from cooking it at home, it does take finesse to prepare; it is light and healthy and the mild flavor of the tentacle is best served with chorizo, fingerling potatoes and caviar mayo, in my opinion!

Members and their guests are always happy with the warm ambience of the Grill and Chef Prabeen’s new offerings delight. His delicious new dinner innovations deliver the perfect night out. This newly designed menu includes fan favorite dishes and seasonal favorites, so plan a night to indulge.

Your Club at Your Service

MEMBERS ENJOY RECIPROCAL PRIVILEGES AT SISTER CLUBS WORLD-WIDE

We all love the feeling of being at home at our club. But many members don’t realize that they can obtain this same feeling when they’re traveling. One of the first things I do when I know I need to go out of town (for work or with my family) is check the list of reciprocal clubs on the member website. There are clubs on this list that provide reciprocal benefits to our membership literally around the world. This means that the benefits of club membership do not need to stop when you leave the Bay Club.

Just like our own Balboa Bay Club, many of these clubs also have accommodations so that you can stay on property. In some cases, the hotel portion of the club is only available to members, meaning you will get a more boutique feel than at a mega-hotel, while also having the feel of being at a home away from home.

Two such clubs, the New York Athletic Club in New York City and the Washington Athletic Club in Seattle, have members-only restaurants and accommodations that are available to Bay Club members through the reciprocal club program. Like many of the other clubs where there are reciprocal privileges, they have a location that only the finest institutions in a city can offer. They make business meetings or family vacations equally easy by being close to everywhere you need to go, but also provide the service that you expect from a club setting.

Even when you’re in paradise, a reciprocal club might be nearby. In Diamond Head on Oahu, one of the best beaches in Honolulu, sits the Outrigger Canoe Club. There, you can enjoy the beauty of the Hawaiian surf, paddle out in an outrigger canoe, and enjoy the wonderful food and cocktails, with your Bay Club membership providing you the benefits as though you were a member of that historic club.

Whether you are looking for a hotel for a vacation, a gym to work out in on the road, a quiet spot to take a call, or a place that feels just like our club here in Newport Beach, make sure that you check the reciprocal club list any time you are leaving town – you never know what hidden gem might await you.

Please review the attached column detailing reciprocal clubs on the West Coast. In future issues of Bay Window, the total list of both national and international reciprocal clubs will be offered.

When you find the club that might work for you, simply contact our Club Desk at 949.630.4120 or email memberrelations@ balboabayclub.com to get a letter of introduction which you will present when you arrive at the club to obtain entrance.

The BBC Sports Connection with the NFL

REMEMBERING MEMBER PAUL SALATA, CREATOR OF IRRELEVANT WEEK, AND BROCK PURDY, 2024 SUPER BOWL QUARTERBACK FOR THE 49ERS WHO BEGAN HIS CAREER RISE AT THE BBC AS MR. IRRELEVANT 2022

Mr. Irrelevant, a term coined for the last pick in each NFL draft, bestowed upon 49ers quarterback Brock Purdy in 2022, finds its origins in the visionary idea of the late former USC and NFL receiver, Paul Salata. Salata aimed to honor the underdog, giving significance to the ultimate selection. The tradition began in 1976 with Steelers’ draft pick Kelvin Kirk assuming the inaugural title. Salata’s legacy extends beyond mere recognition; he established “Irrelevant Week” through his nonprofit organization, where the final pick receives an invitation to the Balboa Bay Club

in Newport Beach, California. Festivities abound, including trips to Disneyland and golf outings, culminating in the presentation of the Lowsman Trophy, humorously depicting a player fumbling. Until 2013, Salata personally announced the Mr. Irrelevant pick, thereafter, succeeded by his daughter. Regrettably, Salata passed away in 2021, prior to meeting Purdy, who has swiftly emerged as perhaps the most distinguished Mr. Irrelevant to date. Despite his humble beginnings as the last pick in the draft, Purdy defied expectations, ascending from third string to the coveted starting position for the 49ers in the 2024 Super Bowl. His

remarkable journey, overcoming the odds and the stigma of Mr. Irrelevant, underscores his exceptional talent and the value he has brought to San Francisco.

In December, Purdy assumed the starting position after Jimmy Garoppolo, who had stepped in Week 2 for the injured Trey Lance, suffered a season-ending foot injury himself. Purdy swiftly embarked on an impressive streak, currently boasting a flawless 7-0 starting record, demonstrating composure, minimizing mistakes and orchestrating plays to capitalize on the talents of Deebo Samuel, George Kittle and Christian McCaffrey. The prospect of a rookie quarterback leading his team to a Super Bowl appearance is unprecedented, let alone one labeled as “Mr. Irrelevant.” The notion is almost too extraordinary to believe. When questioned about his Mr. Irrelevant status at the Super Bowl, Purdy gracefully responded, “I don’t harbor any disdain for the term or anything like that. The individuals we met through that experience were exceptional. We still maintain communication with them. Their contributions to various organizations and fundraising efforts serve noble causes. I’m profoundly grateful for how everything unfolded.”

INSIDE THE RARIFIED WORLD OF NEWPORT BEACH COUNTRY CLUB

Newport Beach Country Club

Dear NBCC Members,

Do you remember the phrase, “There’s an app for that”?

Apple created the phrase in its 2009 (Wow! Where has the time gone?) iPhone 3G commercial, and it stuck.

If you think about it, it’s true. If you can think of a need you might have on your smartphone or tablet, there’s most likely an app that can do it for you—and if there’s not, there might be some money in it for you if you can create it.

The original App Store launched with 500 apps, meaning there is no true first app. Around 2014, there was a shift in app usage, from fun games and social media to entire lifestyles.

According to buildfire.com, the Apple App Store has 1.96 million apps available for download while there are 2.87 million apps available for download on the Google Play Store.

One of the best apps that can be used to enhance your lifestyle is the Newport Beach Country Club app, available in App Store. This month, in April, we’ll offer promotions and discounts to members for using the app. We’ll send push notifications, Monday Minutes and emails about ways to use the app to your benefit. We believe in the power of the app; we even provide detailed information about usage below.

I hope you’ll use the app a little more this month to book training sessions or golf lessons, order food to go and improve pace of play.

One more fun fact—the phrase “there’s an app for that” is copyrighted by Apple.

All the best, Robin Shelton

Hello members,

On behalf of the entire Newport Beach Country Club, it is our utmost pleasure to extend a warm welcome to the following new members of the NBCC family. We are delighted to have them join our esteemed community, and we look forward to creating unforgettable experiences together at our prestigious club.

Spring is in the air at NBCC, and we can’t wait to welcome you with plenty of exciting activities this season. This April, do not miss our Medieval Knights event, back by popular demand to showcase jousting skills and allow families to mingle with the heroic knights. We will also be hosting a dinner with Hartford Family Winery, a murder mystery night and a kid’s spring camp.

Please help me welcome our newest members to the NBCC family:

STEVE & CINDA CHURM

Steve is a communications consultant and Cinda is a multifamily real estate investor and property manager. The Lido Island residents are both active travelers, hikers and book enthusiasts. Cinda is an avid tennis player and community volunteer while Steve cycles, loves to cook and can often be found paddleboarding. But the couple’s five grandchildren are the stars in their universe. The couple hopes NBCC will be a fun new adventure for the entire Churm family.

THE OLLISON FAMILY

Fitz is a communications consultant and has worked in professional sports for over 25 years. Kilian works part time as a teacher at St. Mark Community Preschool in Newport Beach. The Ollisons live in the Port Streets with their two girls, Lily, 8, and Kingsley, 7. They enjoy traveling, going to sporting events, and spending time with their family and friends.

THE GORDON FAMILY

Robin, an Orange County native, has spent the last 17 years building various food and beverage companies; he is currently an area sales manager for the beverage company Lemon Perfect. He is also an avid golfer and snowboarder. Tatum actively contributes to the success of her family’s construction business, Hakes Sash and Door. She also enjoys traveling and fitness. Robin and Tatum live in Corona del Mar with their two daughters, London, 3, and Surrey, 1, plus their pug, Calvin. As a family, the Gordons enjoy attending concerts, going out on their Duffy boat and spending time with loved ones.

THE WEHBI FAMILY

Dr. Elias Wehbi and Lauren Wehbi, along with their two daughters—Gigi, 4 and Evelyn, 3—are delighted to have recently joined NBCC. Elias is a pediatric urologist at Children’s Hospital of Orange County (CHOC) while Lauren is a behavior analyst and stay-at-home mom. They are looking forward to using the fabulous amenities at the club and meeting new families.

Kimberly is involved with several philanthropic organizations and also loves to play tennis or spend quality time with family and friends. They moved to Newport Coast almost five years ago with their two daughters, Emma, 7, and Tessa, 5. Emma is passionate about theater while Tessa enjoys gymnastics and art. As a family, they love to travel and have movie nights together.

In Trouble

CARLO BORUNDA, DIRECTOR OF INSTRUCTION AT NEWPORT BEACH COUNTRY CLUB, REVEALS HOW YOU CAN OVERCOME TROUBLESOME SPOTS ON THE GOLF COURSE.

For many, hitting long distances is the focus of their golf practice—if they can hit far, they can land the ball on the green and everything is easy. However, that is not the only thing to think about when practicing your golf game. Balls hit at length can still encounter trouble from things like divots, sand bunkers, trees or thick rough. But it’s this complexity that makes things interesting.

“Being able to navigate the complexity of the golf course is essential to a good round of golf,” says Carlo Borunda, the director of instruction at Newport Beach Country Club. “The golf

course is intended to test you mentally, technically and physically.”

Here, Borunda shares his tips for navigating troublesome spots and finding success on the course.

BAY WINDOW: How can the more complicated lies in golf impact your game?

CARLO BORUNDA: Making a consistent golf swing merely represents one aspect of the game. It becomes substantially more difficult to play after the tee shot if your golf ball ends up in a divot, thick rough, burried lie in a sand bunker or behind trees. These conditions will

heavily influence your club selection and the type of swing you need to make.

BW: Why is it important to overcome these obstacles to flourish?

CB: It is critical that you are prepared to confront a challenging scenario when it arises. Ultimately, a good score is determined by your ability to adapt to these complicated conditions.

BW: What makes trouble shots from an uneven lie (uphill/downhill and sidehill) so difficult to deal with?

CB: Your setup, swing and posture are all affected when your balance is shifted. When playing from an uphill or downhill lie, your balance will either shift more to your right or left foot. Adjust the tilt of your spine angle and shoulders to match the slope of the hill. Try to maintain your balance on the foot where the hill is influencing your weight to shift. The golf club you use must account for the increased (uphill) or decreased (downhill) loft caused by the hill—sometimes this means selecting a club that is two or three clubs different from what you would use from a level stance.

When your golf ball rests on a sidehill lie, you may need to increase or decrease the amount of knee flex as you address the ball. A ball above your feet requires less knee flex, whereas one below requires more. A sidehill lie also exaggerates the curve of the golf ball while in flight. The simplest way to understand how a sidehill affects the curvature of the golf ball’s flight is to visualize a plane’s wings as they turn in the air. If the right wing is higher (with the ball above your feet, for a right-handed golfer), the plane will fly to the left, and vice versa.

BW: What tips do you have for when the flight of your golf ball is affected by the limbs of a tree?

CB: When an errant shot sends the golf ball between or behind some trees, it is critical to consider more than one option for your next shot. As you prepare for the shot, consider the flight of the golf ball, the distance it will travel

When selecting a golf club, you should consider the density of the grass surrounding your ball. If your club has too little loft, you might not be able to hit the ball back into the fairway.

in the air and the amount of roll it will have after landing. In most circumstances, the wisest option is to take the simplest shot available. This frequently requires the golfer to hit a shorter, less heroic shot where the tree limbs present the least interference. There are instances when it is appropriate or necessary to accept greater risk. This could happen at a vital point in your round where you need the lowest potential score. In these cases, be confident in your final decision and maintain focus in order to minimize the possibility of a poorly executed swing.

BW: How much of tackling these shots is mental and how much is physical?

CB: Your strength will certainly come into play when the golf ball is buried in the sand or deep rough. But, in most cases, your mental preparation is tested far more than your physical. It is important to stay calm and look for the optimal solution. Far too often, the less experienced golfer will make quick decisions that prove costly. Your pre-shot routine should help you in preparing and executing a calm and confident golf swing.

BW: How important is setup, swing and posture when attempting a shot from an uneven lie?

CB: The fundamentals of your setup should stay in place with some minor adjustments as

you face more severe situations. I recommend that you place the ball slightly back in your stance when the ball rests on an uneven lie. This improves the potential for solid contact, which is more important than the overall flight of the golf ball. As your balance is affected, so should the speed and overall look of your swing. The general idea is that you should shorten and swing smoother so you can maintain your balance when faced with a shot from an uneven lie.

BW: What are some drills that golfers can use to practice these shots when they’re not on the course?

CB: Dedicate some of your time in each practice session to developing the skills needed for shots that come to rest in difficult conditions. Occasionally, place your golf ball in a divot or plugged lie in the sand. Get comfortable making swings with clubs that have more loft from these lies. Place your golf ball at a tee height similar to that of your driver to simulate an uphill lie. Focus on how much the golf ball curves and where you should aim in order to land it on your target.

For shots that end up in the trees, the most useful technique to learn is the punch shot. This shot is similar to a low-flighted pitch that you might use around the putting green. Place the golf ball back in your stance and maintain

your balance on your lead side. In order to master the punch shot, it is important to focus on where you want the golf ball to land, just like in pitching. Once you are comfortable with a shorter swing, introduce different golf clubs. You will immediately recognize that the loft of the golf club will help you manage the trajectory of the shot. Resist the temptation to manipulate the club face with your hands or arms, as this can quickly change the direction of the ball and cause more problems than originally faced.

BW: Anything else to add?

CB: A golfer must make two crucial considerations before attempting to execute a swing: selecting the appropriate golf club and determining the kind of shot they wish to play. The golf ball’s flight and distance will be impacted by uneven ground. The dense growth of grass lining the fairways, the branches of trees and other challenges on the golf course add additional layers of difficulty to the game, aside from the distance of the hole being played. The best players can control their emotions, manage these obstacles with confidence and execute their technique with precision. Schedule a lesson with a PGA golf coach. During this session, they will be able to share more information about the skills required to handle these and other troublesome predicaments.

An effective shot to play when your ball is surrounded by trees is a punch shot. Remember to choose the appropriate loft that will keep the flight of the golf ball below the branches and complete your swing with an abbreviated finish.

AFTER A DECADE AS A TEACHER, DANA DAVIS TRANSITIONED TO THE HOSPITALITY INDUSTRY, LANDING A POSITION AS NEWPORT BEACH COUNTRY CLUB’S BANQUET MANAGER.

It’s been about eight months since Dana Davis took the leap to working full time in hospitality.

After earning an associate degree in humanities and communication, a bachelor’s degree in child and adolescent development,

and a teaching credential, she spent her days as a kindergarten teacher. But her love for throwing special dinners and parties led her to enter the event world through a weekend job with a catering company, where she worked as a server, bartender, venue manager and, eventually, event manager.

“I did that for about seven years on the weekends while still teaching Monday through Friday,” Davis notes. After deciding to transition to the hospitality world for good, she says she interviewed at Newport Beach Country Club and instantly knew it was the perfect fit. “I am so happy I was given this opportunity to grow and be a part of NBCC and have not looked back,” she adds.

Once a BEO—or Banquet Event Order—is created, Davis sets out to make the event come to life. As the banquet manager, she handles day-to-day operations with her team while also overseeing things like scheduling, task delegation, menu and food signage, billing and more. She also works with the culinary team to make sure food service goes smoothly during each event.

“My extroverted self gets to … create memorable experiences that are guided through the interactions I share with the members and guests,” she explains. “… I believe great service and hospitality is led with empathy, warmth and a genuine desire to see that every moment and every person feels celebrated during the event. … This is what brings me so much joy working in my current role.”

Davis also says that the banquet staff has become like a family, giving her the feeling that NBCC is her home away from home. “NBCC

just has an amazing staff culture,” she adds. “Everyone is so friendly and helpful that it makes it a pleasure to come to work every day, because of all the wonderful individuals you get to work with throughout all the departments in the club.”

Her biggest challenge thus far has been navigating away from relying on a set schedule. “Every day and week is different,” Davis explains. But even as she adjusts to this, she says, “I wouldn’t change it for the world.”

Outside of work, Davis is a big foodie who enjoys traveling, hosting dinner parties, trying new restaurants, reading and spending time with her loved ones, including her family and her dog, Benji, who she says is her entire world. “Fill your life with experiences, not things,” Davis notes. “Have stories to tell, not stuff to show.”

Spring Fresh

SOUS CHEF DEVIN ENCISO SHARES WHICH MENU ITEMS AT SEAHORSE GRILLE HAVE BEEN UPDATED FOR THE SEASON.

It’s been roughly two and a half years since Devin Enciso started working for the Seahorse Grille’s pizza and salad station, and he was soon promoted to broiler cook. Now, he works as the restaurant’s sous chef, having earned two promotions already since he arrived at Newport Beach Country Club.

“Our club pushes for promotions within,” Enciso says. “… Hard work and dedication is definitely noticed.”

Because Enciso started working in the industry at a young age, he says he owes everything he has learned to the people around him. “Becoming the youngest chef on our team was very intimidating and the biggest leap of my career. I give all of my respect to my team for teaching me along the way and constantly helping me grow,” he explains, adding, “I owe my successes to Executive Sous Chef Aric Mattson for being my mentor since I started washing dishes at age 17. He has been the motivator for me these past three and a half years that I’ve worked in the industry. … Executive Chef Graeme Blair will go down as one of the best head chefs I’ve worked for.”

One of Enciso’s tasks is to collaborate on menu updates to ensure that the dishes presented at the grill feature fresh, seasonal ingredients—a joint effort with Chef de Cuisine Diego Velasco, line cooks Jed Willet and Frankie Guerrero, and other food and beverage team members.

“As we moved into spring and left winter, we began to utilize more in-season items that are in their prime right now,” Enciso notes of the changes that were put in place in March. Read on to discover what has changed on the Seahorse Grille menu this spring.

BEET SALAD

This new dish contains three different types of beets—red, golden and candy stripe—in addition to some citrus with cara cara navel oranges and blood oranges. “The vibrant pop from the in-season citrus provides a nice introduction to our spring season,” Enciso says.

BRAISED LAMB SHOULDER

As we transition into spring, this is the perfect comfort food dish to keep you warm on cool nights. This season’s dish is served with plenty of vibrant produce: peas, peewee potatoes, pearl onions and French green beans.

CRISPY-SKINNED SALMON

Served with baby squash, bulbous spring onions and African peri peri sauce—which is traditionally crafted with peri peri peppers— this dish is spicy, but the heat is balanced through the acidity.

WAGYU FLAP STEAK

This is the first grass-fed steak that has been added to the Seahorse menu, accompanied by compressed hash browns, shishito peppers and vibrant green Venezuelan guasacaca

sauce —“a flavorful sauce to accompany the components of the plate,” Enciso adds.

TAGLIATELLE PASTA

A couple changes were made to this classic pasta dish for spring, such as the inclusion of a pistachio-kale pesto, burrata cheese and lemon oil.

SEARED SCALLOPS

One of the most interesting updates is the latest version of the scallops. “The seared scallops are served with shirataki noodles, … picked up with pork belly, carrots and charred bok choy,” Enciso says. A coconut milk curry sauce and green curry cilantro oil are also incorporated, poured tableside so that members can see the “broken sauce” effect when the milk and oil mix.

Happy Campers

FIND OUT WHAT TO EXPECT FROM THIS YEAR’S SUMMER CAMP FOR KIDS AT NEWPORT BEACH COUNTRY CLUB.

During the summertime, when the kids are out of school, it can sometimes be difficult to keep them entertained and educated. But Newport Beach Country Club has its members covered with its annual summer camp, offered from June 10 to Aug. 16.

Running throughout the week—Monday through Friday—the club’s camp will serve children between the ages of 4 and 10, providing them with activities that are appropriate for their age group.

“We think it’s so important for our kids to experience a traditional summer

camp experience where they are building relationships, getting unplugged in a technology-free and active environment, and making memories that will be remembered for years to come,” says Veronica Alarcon, recreation supervisor at NBCC.

This year’s iteration is being revamped, Alarcon adds, noting that there will be a wider range of activities that will focus on what the children typically enjoy the most. The club’s goal is to present camp sessions that will be exciting for both the kids and their parents.

A DAY IN THE LIFE

Both half-day and full-day options are available, with kids registering for either 9 a.m. to noon or 9 a.m. to 3 p.m. sessions. The first half of the experience, all children will enjoy a mixture of games, arts and crafts, sports and other organized activities. The kids are also treated to a 10 a.m. snack (fruit, granola bars, chips and water) while full-day campers also eat lunch while watching a children’s movie at noon—when the others are heading home.

After lunch, the kids spend the afternoon at the on-site swimming pool. “If they are

staying [for the] full day, we ask that parents pack a swimsuit for campers to use the pool at the end of the day and an extra set of clothes to change into after the pool,” Alarcon says.

ABUNDANT ACTIVITIES

This year’s NBCC summer camp will be different than in the past, as the club is partnering with KE Camps, an organization that specializes in designing creative camps for country clubs. These experts help create the weekly agenda, replacing NBCC’s typical weeklong themes with themed days: Water Park Days, Super Science, World Records, Fun With Foods, Wacky Wednesdays (with outside entertainment), Thankful Thursdays (with community service projects) and Friday Fundays.

“In the heat of summer, the campers love nothing more than water activities, so the water park days are a huge hit and, of course, ending every day at the pool is so much fun,” Alarcon says. “We cannot wait to add more water-focused days this summer.”

Some other favorites include themed crafts for the littlest campers and sports like baseball, dodgeball, flag football and

soccer for the older kids. In addition, this year’s summer camp will feature icebreaker activities, science experiments, relay races and water activities on the lawn that range from miniature pools to inflatable misters and Slip ‘N Slides.

“No two days at camp are alike, so whether you come for one week or the whole summer, it is our goal to keep our campers entertained,” Alarcon reveals. “We strongly believe that children thrive with a schedule and routine. Each activity lasts anywhere from 30 to 45 minutes, and then we are on to something different.”

ALL THE RIGHT REASONS

There are a number of reasons that parents send their kids off to camp and, while it may be to keep them busy or get them out of the house, there are a lot of benefits to programs like these—especially here at NBCC. “The program will teach children how to socialize with other campers in and around their age group, develop leadership skills through organized sports and activities, and build up confidence by trying fun and new activities,” Alarcon says.

This year, camp leaders will be incorporating special SMILE bands, promoting sportsmanship, mindfulness, inclusion, leadership and enthusiasm. Kids can earn these throughout the week, with NBCC staff encouraging them to exhibit those traits and showcase them in a positive way.

For Alarcon, the best thing about leading summer camp is fostering relationships with both the kids and the parents. “I get to see the campers grow and become a more outgoing, brave and thoughtful version of themselves, and it is truly the most rewarding experience,” she says. She is also looking forward to working with KE Camps. “I am confident that we will put on the best summer camp yet and I so look forward to seeing it come to fruition and watching the kids benefit from it,” Alarcon adds.

Members’ children, grandchildren and guests are all welcome to attend NBCC’s summer camp. Be on the lookout for the date that registration will launch in the coming weeks. When it’s available, you can sign up in the NBCC app under the Kid’s Camp tab. Happy camping!

In Service to Others

NBCC MEMBER ATTORNEY BOB CALLAHAN, RECENTLY INDUCTED INTO THE HOAG CHARITY SPORTS HALL OF FAME, SHARES HIS VERY PERSONAL CONNECTION TO HOAG HOSPITAL AND THE RECENT HOAG CLASSIC AT NEWPORT BEACH COUNTRY CLUB

Good karma has a way of coming back around in unexpected ways. When local attorney Bob Callahan found himself dazed on his office floor one day last October, he wondered where the knockdown punch came from. He only knew he needed to get back up.

Bob had suffered a debilitating stroke and it was time for his karma to kick in. The longtime Balboa Island resident in his early 70s was rushed to Hoag Hospital where the quick assessment of his condition and immediate treatment minimized the effects of the ruptured blood vessel in his brain.

It was a serious blow, yet by no means a knockout. Before too long Bob was back on his feet, a bit unsteady, and facing extensive rehab to cope with paralysis on one side and

his affected speech. It was the rehabilitation program at Hoag that mapped out his road to recovery; physical therapy to improve mobility, occupational therapy to work on functional motor skills, and speech therapy to find his voice again. When he looks back, Bob Callahan is thankful he’s banked lots of karma credits with the Newport Beach medical institution now essential to his recovery.

For almost 30 years, Callahan has served to help raise funds for the non-profit organization through various volunteer positions, mostly connected to the local professional golf tournament that has evolved into the Hoag Classic. Every spring, the PGA Champions event brings the older generation of the greatest names in golf to Orange County. A member of the Newport Beach Country Club and a

golfer himself, Callahan always looks forward to the event as his favorite volunteer gig on the calendar.

He was one of the starters introducing the players on the tee at the original Newport Classic. He held that coveted slot during transition years when Taco Bell was the title sponsor before it became the Toshiba Classic as the PGA Tour Champions entered the equation.

A board member of the Hoag Foundation’s 552 Club, Bob was asked to recruit corporate sponsors for the tournament and participants for the pro-am event when Hoag took over. With his wife Terry, the Callahans steered the committee organizing the annual holiday black tie fundraiser for the foundation. Among the close relationships they developed through volunteer work is Dr. Michael Brant-Zawadski,

Executive Director of the Pickup Family Neurosciences Institute at Hoag Hospital, the very unit that guided Bob’s recovery from his stroke. Good karma.

Bob wanted to stay on as a starter for the golf event and ultimately he would head that committee. His group of ambassadors are responsible for announcing each player as they begin play on the first or tenth tee on each day of the competition. It’s the best seat in the house for a week’s worth of fun.

“Being a starter, I would say that’s the best volunteer job out there,” he muses. “There are a lot of volunteer jobs that aren’t that much fun. Some people are out replacing divots at six o’clock in the morning. Being a starter is more fun than that.”

He is also proud of his involvement as Chair of the Veteran’s Appreciation Day celebration for the past six years. The tournament recognizes local service men and women and all veterans on the Saturday morning of tournament week. With an athlete’s fortitude (Bob played football and baseball at Costa Mesa High), he

worked diligently at his rehab at least three times a week in order to return to his spot on the first tee. He worked especially hard on his vocal recovery and presented as a starter throughout the tournament last month, just as he has every year in recent memory. As long as he was capable, there wasn’t much doubt he’d have his spot back. Callahan is himself the chairman of the starters committee.

“You get to see the legends of golf,” he explains. “Over the years, it’s been a chance to see Arnold Palmer, Jack Nicklaus, Gary Player, Lee Trevino. Right down to the current times, with Fred Couples, Ernie Els, Steve Stricker, Tom Lehman and so many others.”

Bob has maintained friendly acquaintances with almost all of them over the years. He recalls fondly how Fuzzy Zoeller once called out the starter himself on the first tee. The gregarious former Masters and US Open champ, a noted crowd-pleaser, made Bob take a tee shot in front to of the gallery while wearing his uniform coat and tie. Callahan made decent contact but the tee shot fizzled and the fun memory

remains indelible. Mostly Bob’s been impressed with how well the big-name pro golfers treat the many unheralded Hoag Classic volunteers with respect while making them feel genuinely appreciated.

When Bob’s wife Terry was diagnosed with ovarian cancer in 2013, it was the oncology treatment at Hoag that saved her life. Another case of good karma. Today, Terry is a thriving cancer survivor.

“We’ve benefitted from Hoag twice,” Bob reflects. “It’s just a wonderful organization from top to bottom. And there may not be a bottom, to tell you the truth.”

Callahan sums up the perspective on his long association with the hospital, the foundation, and his last year in particular by relating words expressed by his long-time friend and fellow Hoag Foundation board member Bill Thomson: “Whether it’s giving your time or some money to Hoag, when it’s your time, you’ll be really glad you did.”

In Bob Callahan’s case, truer words were never spoken.
