A Q&A with Chris Zachwieja - The Soak Head Chef Chris Zachwieja has been appointed head chef of The Soak, the latest arrival on London Victoria’s growing bar and restaurant scene. On the menu, you will find meats, fish, vegetables, fruits, cakes and drinks built around fermenting, pickling, brining and steeping techniques. Taking inspiration from the Grade II listed building it is adjoined to, the design is influenced by the richness of a Parisian chateau - mixed with the vibrancy of the city that surrounds it. With The Soak set to open its doors at the end of April, Chris talks about his passion for pickles and why 2019 will see foodies ‘soaking’ up the latest trend that not only tastes great but has health benefits too.

1. What is your background in the hospitality industry?

2. What attracted you to this particular project?

I first became a chef in my native Poland, where I learned my trade in hotel kitchens. After I moved to the UK, I progressed from cooking in gastro pubs to Michelin starred restaurants, including a stint under Tom Aikens.

Nothing tastes more like Polish homecooking than soaked, pickled, or fermented food. Brining and fermenting are the techniques that I was brought up on, and I’ve used this style of cooking ever since I began working in kitchens in my native Poland.

I was then appointed as a development chef for one of the most famous hotels in London, The Ritz and for the last three years I have worked at Boisdale of Belgravia, a stone’s throw away from The Soak.

The seasonal menu I am developing will include delicious signature dishes that have been enhanced through brining, steeping, fermenting and soaking, I am excited to start sharing these flavours with our customers.

3. Why is the menu focused on brining, steeping, fermenting and soaking? We wanted to come up with a concept that was unique to the area of Victoria. I believe steeping and preserving are the best ways to develop deep, bold and strong flavours, whether it be with meats or vegetables or preparing fruit for use in desserts. The soaking techniques allow flavour to absorb deep into the foods and enhance tenderness. It’s all about creating taste through longer periods of time, using methods that soak and steep food and drink with long-lasting flavour. Not only are we enriching flavour but we are also using techniques that provide many health benefits, for example kefir, a fermented milk, can aid digestion.

What meal times will be available?

The venue will be open from 7am, with extended opening hours until 2am on Thursdays, Fridays & Saturdays, offering a new late-night experience to the area. Breakfast will be served from 7-10.30am, Monday-Friday and from 8am on a Saturday. We will also be offering an all-day Sunday brunch served from 10am-4pm. Lunch and dinner will be served every day of the week, with late night nibbles available on Thursday, Friday and Saturday. The food and drink menus will have specialist dishes tailored to different times of the day, so our guests can experience ‘soaked’ food and drink all day.

5. Can you explain more about the thinking behind the signature Rum Baba and the dish itself? This is one of my favourite items on our menu. The Rum Baba is a traditional dessert soaked in fermented rum, topped with juicy, roasted pineapple, it’s a special dish which guests will be able to enjoy as a punchy afternoon treat or from our dessert menu. What better way to represent the concept behind The Soak than with our very own signature ‘soaked’ Rum Baba? I can’t wait for everyone to try it.

What dishes are you most excited

The menu will be seasonal, and the dishes will be regularly rotated to reflect the changing seasons, the team is also working hard to source our food and drink from local suppliers to help reduce our carbon footprint.

The dish I’m most excited about is the cured venison tartare, for this dish we will be using the haunch muscle, which is a beautiful cut of meat, and is perfectly prepared through soaking techniques. The result is similar to a bresaola, but with a twist because we’ll use an array of beautiful delicate spices.

Tea company, teapigs, first tea company to be awarded Plastic-Free Trust Mark Teapigs Consumers have recently learned that many of the UK’s teabags contain plastic. Since the news broke earlier this year, we have learned that major teabag companies are pledging to eliminate plastic from their teabags within the coming year. Pioneering tea brand, teapigs’ range of whole leaf tea temples are ALREADY plastic free and they are the first tea brand to be awarded the Plastic-Free Trust Mark by A Plastic Planet. “Our tea temples have always been biodegradable. They’re made from cornstarch and you can put them in your council food waste bins. Our temples are packaged in a clear inner bag to keep them fresh: late last year, we switched from a plastic inner bag to a material called Natureflex – it’s made from wood pulp so it’s 100% plant-based and compostable. It’s great!” says Louise Cheadle, teapigs’ tea taster. “We’ve always tried to do the right thing and made these greener changes to our

packaging as soon as they were available to us despite the increased cost. The recent news that most teabags contain plastic has really surprised consumers and we’ve had a big wave of concerned customers asking us for more information.” It was recently announced that 96% of the nation’s teabags contain plastic. “We’re really pleased to have been accredited with A Plastic Planet’s Plastic-Free Trust Mark – it’ll make it easier for consumers to make the right decisions about the products they buy – there are so many logos on packaging these days and it can be confusing to know what they actually mean”. The A Plastic Planet Trust Mark was launched on 16th May 2018. Designed to sit clearly on the front of the pack, the Trust Mark will instantly inform and empower consumers to make plastic-free choices. The confusion around different logos and abundance of plastic packaging in the supermarkets means that those with innovative packaging will be

nice and easy to spot. Trust Mark-accredited packaging will include materials such as carton board, wood pulp, glass, metal and certified-compostable biomaterials. Taste of London to go Wild in the City as the food festival takes over Regents Park from 19th – 23rd June 2019 Taste of London From 19 – 23 June, Taste of London will celebrate the great and the good from London’s internationally renowned restaurant scene in Regent’s Park. For five days, the people and places that have propelled London’s culinary landscape into the global limelight will take part in a series of exclusive dining experiences, masterclasses and cook up a menu of never seen before dishes. The festival will be centred around a ‘Wild in the City’ theme, exploring concepts including sustainability and championing craftsmanship in food, drink, atmosphere and music in an urban environment. The Stafford London to open Sicilian-inspired restaurant Norma this summer The Stafford London will be launching its first independent restaurant project this summer under the direction of The Stafford’s Culinary Director Ben Tish. Norma will be inspired by the food and culture of Sicily with particular emphasis on the Moorish influences on the Island’s cuisine. Norma will be contemporary and provocative, whilst embodying the celebrated old-school Italian hospitality and charm. It will take inspiration from the grand café culture found in Sicily, the largest island in the Mediterranean Sea and celebrate the richly influenced cuisine of the Island. This includes Moorish ingredients and produce, a style of cuisine in which Ben is well versed following his time with the Salt Yard group. The new restaurant will be housed in a converted characterful townhouse on Charlotte Street, split across three floors: the bottom two will be dedicated to the restaurant and a first-floor cocktail bar with

the top floor a private dining space. There will also be a crudo bar at the entrance of Norma, serving up the freshest seasonal raw seafood, dressed in delicious olive oils and other flavourings. The main menu will feature modern Sicilianinspired dishes using seasonal Italian and British produce, from a selection of anti-pasti and pastas, to larger grilled meat and fish dishes. Upstairs in the private dining room, guests can order large family-style sharing dishes including whole fish and platters of seasonal vegetables. The restaurant will offer all day dining, serving food until 10.30pm. New look for Metropolitan Police Headquarters as The Deluxe Group completes £5.50M project The Deluxe Group Bespoke Joinery Company , The Deluxe Group, has completed a major project at the former Metropolitan Police Headquarters in London’s Whitehall. The historic landmark building which was developed by Galliard Construction, has been transformed into the Great Scotland Yard Hotel, a 153-key luxury lifestyle hotel featuring several sophisticated food and beverage outlets. Working in association with HBA, and EPR Architects, The Deluxe Group was appointed to manufacture and fit all front of house areas, for the high-end hotel, including

double height vestibule, grand entrance lounge, concierge, main cocktail bar, palm court style lounge, whiskey bar/clubroom, signature restaurant, library, gymnasium, 120 seater main conference room/ballroom, meeting rooms and function/private dining rooms. The firm also produced the luxury hotel’s sample bedroom, as part of the multi-million-pound development, which is expected to open later this year. The bespoke joinery project, which was worth £5.5 million was completed in just six months, with all work completed on schedule and within budget.

Commenting on the significance of the project, Colm Connolly, Director of The Deluxe Group, said: “We are delighted to have been part of the team which has sympathetically developed this building to give a classic period interpretation, reflecting the immense history of such a landmark site. We used the highest quality, detailed joinery and luxury finishes throughout all front of house and public areas, with individually themed areas providing a stylish homage to the crime and policing history of the building.”

It later became the Ministry of Defence Library until 2004.

The famed landmark is known for its rich history, providing guests the opportunity to stay in the location where Metropolitan police pursued some of the country’s most notorious criminals, including Jack the Ripper and the 40 Elephants all-female crime syndicate. Reflecting on this, the distinct historical character of the building has been preserved throughout the renovation, including maintenance of its original façade.

The central-London hotel will be operated by Hyatt Hotels Corporation as part of its Unbound Collection by Hyatt brand. New DrainMinor from Pump Technology now with built-in carbon filter The new DrainMinor from specialist water, wastewater and sewage pumping system suppliers, Pump Technology Ltd., features some very useful developments. It is a self-contained, fully automatic, wastewater pumping system, suitable for domestic and commercial installations where gravity drainage is not possible. It is extremely compact – 380mm L x 290mm W x 322mm H - and will pump wastewater from locations such as sinks, wash basins, domestic dishwashers and washing machines. The rugged tank is manufactured from recyclable Polyethylene, and can be customised to suit the required installation pipe layout. The material also lends itself to shrugging off any internal grease to make cleaning much easier. The improved lid seal and fasteners mean that the latest version provides even easier access to the pump and tank interior for inspection and routine cleaning.

A great new feature is the activated carbon filter, which has now been incorporated into the lid, making the installation of the DrainMinor fast and simple, since a separate vent pipe is no longer required. Axel Hotel Madrid In the heart of “El Barrio de las Letras”, the design overlaps various references forming an explosive and complex tandem. The objective was to create a hotel where one could breathe a free and fun atmosphere with a disruptive touch, which would invite different types of the public to enjoy the public areas of the hotel. The design of the AXEL Hotel on Atocha Street in Madrid superposes a series of historic references forming a complex and explosive tandem. One of the starting points is the privileged location of the AXEL Hotel in the very midst of Madrid’s literary neighborhood, today the

epicenter of the city’s most cosmopolitan environment. Another starting point is the palatial 19th-century building in which the hotel is located, where its noble rooms still conserve elements of great patrimonial interest, lavishly decorated ceilings, intense colours on the walls and baroque decorative details. An important role in the design choices was also played by some of Madrid’s most traditional and popular characteristics as well as some of the most well-known visual elements such as those related to the bullfight, the “mantilla” or the gypsy esthetic in general.

And finally, closing this strange tandem is the explosive philosophy behind the AXEL Hotel chain, whose hotels are designed for the LGBTQ community creating free spaces where sexual diversity is welcome and promoted and where diversion is a priority. From the beginning, the design team was interested in creating an amusing dialogue among all these starting points and historic periods so important and antagonistic in the history of Madrid and to which Atocha Street has been a privileged witness. The principal objective was to create a hotel which exuded an atmosphere of liberty and

diversion with a certain disruptive touch which invited a varied clientele to enter the public areas of the hotel to enjoy the gastronomic offer.

In order to achieve this atmosphere, the most important strategy in the design is the use of colour, an element which accompanies us throughout all the areas of the hotel and which is applied with a different character and material nature in each zone.

The introduction of texts, words, and phrases in the form of bright lights and neon makes reference to the literary past of the neighborhood, but with more popular messages and winks/insinuations.
