Pure white icing on a wedding cake is called “royal icing” for a reason: Queen Victoria was the first to have it. “That classic design is especially popular for wedding cake trends this winter,” said Hetty Arts, owner of Hetty Arts Pastry. She broke down some of the most popular cake trends for winter weddings this year.

KEEP IT SIMPLE Winter wedding cakes in 2020 are pretty and simplistic. Icing is lightly feathered or ruffled ivory buttercream, or some skip the icing all together and opt for a layer of crumb coat buttercream so thin the cake still shows. “Simple decorating designs are made complete with fresh florals and hearty little decorations like berries or small pine cones,” Arts said, adding that simplistic designs are timeless. “Pretty shades of white and ivory never go out of style and have been wedding cake icons since the beginning of time.”

DEEP COLORS AND PALE GRAY Many couples opt for cakes with dark red berries and flowers and wintery greens for their winter wedding cakes. Arts also receives orders for cakes that are off white or pale slate gray, as well as cakes that include a touch of icy blue. These color choices don’t have any big pop of color. 20

RICH FLAVORS

Arts is receiving winter wedding cake orders calling for decadent flavors: rich chocolate cake with dark chocolate ganache filling and spice cakes with cinnamon whipped cream or brown butter cream filling.
