S ummer Delights

Summer Orzo Salad

Ingredients: 16 oz orzo pasta, 1/4 cup water, 1-1/2 cups fresh or frozen corn, 24 cherry tomatoes (halved), 2 cups crumbled feta cheese, 1 medium cucumber (seeded, chopped), 1 small red onion (finely chopped), 1/4 cup minced fresh mint, 2 tbsp capers, 1/2 cup olive oil, 1/4 cup lemon juice, 1 tbsp lemon zest, 1-1/2 tsp salt, 1 tsp pepper, 1 cup toasted sliced almonds.

Cook orzo per package instructions, drain, and cool. In a large bowl, mix corn, tomatoes, feta, cucumber, onion, mint, and capers. Whisk olive oil, lemon juice, zest, salt, and pepper for the dressing. Toss with orzo mixture and top with almonds. This zesty salad, with its bright veggies and tangy feta, is a refreshing standalone dish for hot days, easily prepped ahead.

Grilled Corn in the Husk

Ingredients: 4 large ears sweet corn (in husks), 1/4 cup softened butter, 2 tbsp minced fresh parsley, 1/4 cup grated Parmesan cheese.

Gently peel back corn husks without detaching, remove silk, and spread a blend of butter and parsley over kernels. Pull husks back up, tie with twine, and grill over medium heat for 15-20 minutes, turning occasionally. Peel husks back and sprinkle with Parmesan. The husks trap steam, yielding juicy, smoky corn with a cheesy kick. Serve as a simple, flavorful side or snack that captures summer’s essence.

Baby Back Ribs

Ingredients: Baby back ribs, marinade (chicken broth, soy sauce, sugar, cider vinegar, olive oil, garlic cloves), spice rub (salt, paprika, chili powder, pepper, garlic powder, cayenne pepper).

Marinate ribs overnight in a mix of chicken broth, soy sauce, sugar, cider vinegar, olive oil, and minced garlic (adjust to taste). Pat dry, then apply a rub of salt, paprika, chili powder, pepper, garlic powder, and a pinch of cayenne. Grill over indirect heat at 275°F for 2-3 hours, basting with marinade, until tender and caramelized. These ribs, with their sweettangy glaze and subtle heat, are a showstopper for any summer feast, perfect for meat lovers.
