One Pot Chicken Piccata Pasta
• 2 tbsp extra-virgin olive oil
• 1 1/3 lbs chicken breast tenders, cut into 1-inch pieces
• Salt and pepper (to taste)
• 1 1/2 tbsp butter
• 4 cloves garlic, chopped
• 2 shallots, chopped
• 2 tbsp all-purpose flour
• 1/2 cup white wine
• 1 lemon, juiced
• 1 cup chicken broth or stock
Start by heating up a deep nonstick skillet over medium-high heat. Drizzle in 1 tablespoon of olive oil, then toss in the chicken pieces. Season with salt and pepper, and cook until the chicken is beautifully golden on all sides, about 5 to 6 minutes. Once the chicken is ready, take it out of the pan and set it aside.
Next, reduce the heat to medium, and add the remaining tablespoon of olive oil and a tablespoon of butter to the skillet. Toss in the garlic and shallots and sauté for about 3 minutes, until they’re soft and fragrant. Now, sprinkle in the flour and cook for 2 more minutes—this is what’ll help thicken up that saucy goodness.
Time for the magic! Whisk in the white wine and let it reduce for about a minute. Then, squeeze in that fresh lemon juice and add the chicken broth.
• 3 tbsp capers, drained
• 1/2 cup fresh flat-leaf parsley, chopped
• 1 lb spaghetti pasta, cooked to al dente
• Chopped chives (for garnish)
flavor really comes together. When the sauce starts to bubble, toss in the last half-tablespoon of butter to give it that silky finish.
Add the chicken back to the pan and let everything heat through for another 1 to 2 minutes. Now, it’s time to toss that chicken and sauce with your perfectly cooked spaghetti pasta. Give it a good mix, and season with a little more salt and pepper if needed.
Finish off with a sprinkle of fresh chives for that extra pop of color and flavor. Voila! You’ve got yourself a restaurant-quality meal, made right at home.
