The Mills likes to surprise its visitors with a new look from time to time; likewise, we have launched an all-new design for this issue of The Mills Paper. Not only is The Mills an experiential retail space and a cultural hotspot, it also inspires us in unexpected and refreshing ways.

T: Not only did our first Hong Kong shop in Causeway Bay become a success, but our second shop at The Mills also received an overwhelming response. Although matcha is often viewed as a centuries-old tradition, we appeal to the youth market by emphasizing its trendiness and health benefits it is not just a bitter beverage enjoyed by elderly people.

T: The colours, interior design and decorations at our Tsuen Wan shop resemble those at our Omotesando shop. Our employees were trained by the staff at our headquarters as well. Water temperature is the most crucial element in a good cup of matcha as bitterness comes from tannin. The higher the water temperature, the more tannin is released. Water that is hotter than 80°C, or even boiling water, will make matcha bitter; which is why our pots are alway s kept at around 80°C. To bring our customers the authentic taste of Japan, all whisks, scoops, pots and matcha powder containers at our shop were shipped directly to Hong Kong.

T: THE MATCHA TOKYO has its own tea gardens in Uji, Kyoto and Kagoshima. Planted in unpolluted soil and irrigated with water from natural springs, the tea trees are shielded from direct sunlight to ensure thinner and softer leaves. We use 100% organic Japanese matcha which has a full-bodied flavour. Among our four premium quality matcha blends, the TOKYO RICH blend is exclusively available in Hong Kong. It is perfect for Hongkongers who enjoy a stronger, more bitter flavour. On the contrary, the JAPAN PREMIUM blend has a umami aftertaste, which shows that high-quality matcha does not have to be bitter and thick.

T: Tsuen Wan is a mixing pot of old and new cultures. As our target customers are mostly trendy and health-conscious youths, it is the perfect location for our second shop. Apart from adding a dining area in the shop, we have brought a bigger selection of light meals that pairs well with the rich flavours of matcha, roasted tea, coffee and more. Our shop is a cozy haven for customers to take a break and experience the serenity of matcha under the artistic atmosphere of The Mills.

T: Like coffee, matcha represents a certain lifestyle. We want to create a relaxing environment for our customers as they enjoy their beverages. Matcha is a superfood that offers numerous health benefits. Filled with antioxidants, matcha is a health product that enhances metabolism and calms our minds.

抹茶工作坊體驗一杯抹茶的誕生:茶師面授日本茶道 Matcha Experience Workshop The birth of a cup of matcha: learning the art of Japanese tea ceremony from a tea master 來到 THE MATCHA TOKYO 除了可品茶之外,還可進一 Further to sipping an aromatic cup of matcha at THE MATCHA TOKYO, visitors are invited to further explore the art of matcha by taking part in a tea ceremony workshop hosted by a young tea master, in which participants will experience the beauty of the Japanese tea culture and learn how to make a perfect cup of matcha. All participants will be given a certificate with the signature of THE MATCHA TOKYO CEO after completing the workshop. 1)茶師逐一將抹茶粉加入茶碗內。 2)將120cc(約1/3碗)的80度熱水直接加入茶碗內,等待抹茶粉在加入熱水後慢慢 融化。 3)利用茶筅把抹茶粉和熱水攪拌。一手扶著碗邊,一手以「 Z 」形沏茶,茶筅不可 碰到碗底,20秒內逐步加快頻率令抹茶涮至起泡,直至抹茶表面形成一層泡沫。 4)厚泡形成後,將茶筅輕微地拉高至接近水面,幅度不要太大,最後輕力把表面的 泡抹攪拌至完美的狀態。 1) Matcha powder is added to each matcha bowl by the tea master. 2) Pour 120cc (about 1/3 of a bowl) of 80 C water into the bowl and wait for the matcha powder to melt. 3) Mix the matcha powder and water with a whisk. Hold the edge of the bowl with one hand, and use the other hand to whisk in a zig-zag motion without touching the bottom of the bowl. 串燒 日本人使用筷子有不少禁忌,不可隨便亂用,例如不 可用筷子直插食物來吃、不可將筷子插在飯碗上、不 可用筷子移動餐具、不可用同一隻手同時拿著筷子及 其他餐具。 In Japanese culture, there are many rules and taboos surrounding the use of chopsticks. For instance, spearing your food with chopsticks or standing your chopsticks up vertically in your bowl is highly frowned upon. SakeRamen Soup 酒拉麵 湯品 你有否發現,享用味噌湯時沒有湯匙?日本人只會直 接雙手托著飲用,甚或用筷子夾起材料吃。至於茶碗 蒸原本屬於湯品,正式吃法是用筷子將碗內的材料充 分攪拌後,當成湯品一同飲用,或者可用放在旁邊的 小湯匙攪拌後享用。 Have you noticed that miso soup is often served without spoons? Japanese people tend to drink miso soup holding the bowl with both hands, and fish out the solid pieces with chopsticks. Japanese people are big fans of alcohol. It is considered rude to pour a drink for yourself. Instead, pour drinks for others and they will reciprocate. When pouring a drink, remember to keep the label on the bottle pointing upwards. Hold the bottom of the bottle from above with your right hand, and gently support the top of the bottle with your left hand. When someone is pouring you a drink, do not leave your glass on the table. Show courtesy by holding the glass upright with both your hands until the person is finished. Japanese culture, slurping ramen noodles is a sign of respect for the ramen chefs. However, remember not to take more than you can chew in one bite as biting off noodles is not only a sign of disrespect, but may cause soup to spill, resulting in unnecessary embarrassment.

Realising consumers may not see home decor as a necessity, Joey turned half of her store into a restaurant, offering European and Asian gourmet dishes for customers to grab a bite before taking a look around the shop. The uniek was fortunate enough to have survived the challenging times. Although the restaurant is now the cash cow of her business, Joey insists on keeping her concept store.

Come visit The uniek and decorate your home with a dash of European finesse. 閒逛歐陸設計小店:體驗獨一無二的選物樂趣 Stroll around the European concept store and indulge in the‘one-of-a-kind’shopping experience 本是網店的 The uniek 專門搜羅歐洲設計師自家品牌,一 直希望開設實體店,讓客人親身接觸實物,直至今年初終 於登陸南豐紗廠。主理人 Joey 說:「 uniek 是荷蘭語,有 特別、唯一的意思,我希望我們的產品都是這樣獨特,而 且能夠進駐南豐紗廠,感覺也很獨特。」她有感香港不少 商場都是倒模式設計,來來去去都是那些店舖,所以特別 欣賞南豐紗廠文創地標的定位,認為與 The uniek 的理念 相近,所以雙方一拍即合。 獨特的代價是生存不易,尤其在疫情下大家消費較為審 慎。 Joey 明白消費者容易覺得家居選物並非必需品,因 此積極開拓餐飲生意,提供歐陸及亞洲美食,讓客人來到 The uniek 先填飽肚子,之後順道參觀一下選物店,最終 成功捱過最艱難的日子。雖然餐飲業務比零售業務收入更 高,但她依然沒有放棄開選物店的初衷。 The uniek 堅持提供獨特的歐洲設計家品給客人,當中有 幾個買貨準則。「第一是獨特性強,設計感強;第二是適 合香港家居,始終不能太大件;第三是性價比高,第四 是常用程度高。」她透露店內陳列了逾 20 個來自歐洲的 品牌,八成產品都是獨家發售,很多貨品數量都只有兩、 三件,相當稀有,因此客人來到 The uniek 有點尋寶的感 覺,就像去旅行到小店一樣,能否遇上心水貨品,都是緣 份使然。

Started as an online shop featuring designer brands from Europe, The uniek had always wanted a physical outlet for customers to touch and feel the products in person. This goal was finally realised in the beginning of this year when the brand’ s first physical store opened at The Mills. Joey says,“ ‘Uniek’is a Dutch word that means‘one-of-a-kind’– a quality I want for our products. Being a part of The Mills is also very unique.”Given that most shopping malls in Hong Kong have similar designs and consist of the same shop mix, she admires The Mills as a cultural landmark and appreciates that The uniek and The Mills share similar visions, thus resulting in such a great

There are usually only two or three pieces of the same product available, resembling that of the little stores in Europe where hidden treasures await, and bringing home an item that is close to one

Q: How was“The Store In Time”created?

While we are still unable to freely explore the globe, let’ s draw our attention to the local life stories that we have neglected and reconsider our relationship with the world. The Mills launched “ The Store In Time ” in June to collaborate with different artists under the theme of “ In Time Of Food ” and show us the beautiful corners of the world from the dining table. To travel the world again, we must first cherish it.

T: In Time Of is a community project by Nan Fung Group with sustainable development, community design, and art and culture as the main focus; “The Store In time”is one of its many programmes. This year, we launched a daily life story concept store at The Mills to touch the hearts of people from all walks of life through themed events such as“Ritual of Dining” , featuring local ceramist Yiu Chun Wa (Yiu Wa) and bamboo art group TAKENEKO and their art pieces made of local soil and bamboo.

T: We live in an ever-changing world, and the continuous advancements of humanity are leading to our growing disconnection from nature. By exploring the city with different organisations, the In Time Of programme inspires people to give back to nature and craft a more sustainable future. Events like“Nice to meet you, Kapok!”and“A Date with Seeds”were organised to advocate sustainable living and bridge humanity and the world through time, soil, temperature, wind, rain, and humidity.

T: Rather than providing space for discussion and reflection, shopping malls in Hong Kong are purely for recreational purposes. The buildings making up The Mills have been in Tsuen Wan for decades, from a textile mill to now a revitalised cultural landmark filled with community stories. We decided to open a concept store named The Store In Time to not only promote the textile culture but also bring people, especially our visitors, together through shared stories. It is our vision to spark conversations by collaborating with different artists, as well as present more relatable community stories in Hong Kong through workshops and other events.

The pandemic has forced many people to stay in Hong Kong, including artists. The time has allowed them to explore the possibilities of this city. One such example is art group TAKENEKO, who used Hong Kong bamboo near their homes in Mui Wo for bamboo weaving. As they dived into the process of bamboo weaving, they discovered that Hong Kong bamboo is more fragile than other bamboo varieties. With simple but practical designs, TAKENEKO were able to emphasise the unique characteristics of this local material. By extending the typically short lives of Hong Kong bamboo by transforming them into bamboo products, TAKENEKO aims to tell the life stories of islanders in Mui Wo and local bamboo.

Exploring local cultures – Yiu Wa

While we often stress the importance of local consciousness, have we paid enough attention to local soil? Through the lens of an artist, we can reflect on the importance of the soil.“Ritual of Dining”has invited local ceramist Yiu Chun Wa (Yiu Wa) to collect soil from local fields, shores and pond edges, then mix it with clay to create various utensils. The quality of the soil close to the sea is different from that near the mountains; hence, they create utensils of various colours and textures. COLUMN 南豐紡織於 1954 年由陳廷驊博士成立,是香港當時產量最高 的紗廠之一。南豐紡織原有六座廠房,其中一至三廠已於 90 年代重新發展。其餘三座於 1960 至 1970 年間落成,名為南 豐紡織四、五、六廠,現已活化成為嶄新的南豐紗廠( The Mills),佔地約260,000平方呎。三大支柱分別為南豐作坊、 南豐店堂、CHAT六廠。 Nan Fung Textiles was founded in 1954 by Dr. D. H. Chen and grew to become a cornerstone of the territory s dominant textile industry in the booming manufacturing era of the 1950s. Nan Fung Textiles initially comprised 6 factory buildings named Mills 1 through 6 respectively. While Mills 1, 2 and 3 were redeveloped in the 1990s, Mills 4, 5 and 6, completed between 196070, are the buildings that have been transformed to become The Mills today. ISSUE 11 打卡背後 這次有幸參與新一期的 The Mills Paper ,真正有機會重新認識南豐 紗廠是怎樣的一個地方。早已知道,南豐紗廠是近年本地流行熱 點,籌備刊物期間,親身發現這裡除了吸引不少文青外,原來更多 的足印來自毛孩,包括狗狗、貓貓、兔子、烏龜、鸚鵡等等,難怪 吸引了不少售賣寵物用品的店舖進駐這裡。飼養寵物的主人,特別 重視家中毛孩的健康,會選購不損害生態環境、人畜無害的生活用 品。這個出發點,正好與南豐紗廠的理念相近。

the building was revitalised to become a historical and cultural landmark, the Nan Fung Group has taken an active role in advocating sustainable development through different projects promoting sustainability, including In Time Of , Nice to meet you, Kapok! and A Date with Seeds , promoting the concepts of coexisting with nature and nurturing healthy habits. Examples include“The Store in Time”on the ground floor which was open a month ago, and the Green Wall on the third floor, inviting visitors to broaden their horizons towards the world as they go shopping or photo snapping. It is my pleasure to contribute to the new edition of The Mills Paper, which offers me the opportunity to discover The Mills in depth. While The Mills is a well-known hotspot in town, it was not until I worked on this publication that I realised it not only attracts young enthusiasts of art and culture but also furry friends, including dogs, cats, rabbits, turtles and parrots.
