A new year brings a chance for a reset

As we turn the page on another year, it’s normal to take stock and refocus our efforts around selfimprovement. There’s a reason that weight loss companies and fitness studios spend the majority of their marketing budgets in January. It’s a fresh start and most of us want to feel better, look more attractive, and use our time more effectively as we begin a newchapter in our lives.

In this issue we take a deep dive in to various aspects of what that looks like here in Jupiter. You’ll find articles on today’s popular fitness hot spots, a look back at the evolution of the local fitness scene over the last few decades, alongside a local psychologist’s advice about the calming power of being in nature and embracing mindfulness. Our food writer provides a guide to some of the local restaurants and farms that focus on healthy eating, and we offer an expert’s advice on the best ways to use your paddleboard for a full-body workout.

Cheers to 100 Years: Jupiter’s Centennial Celebration in 2025! town centennial

Grab your party hats and sunscreen because the town of Jupiter is hosting a once-in-a-lifetime celebration! In 2025, Jupiter will mark 100 years of history, growth, and bliss with a Centennial Celebration that promises to be as vibrant and unique as the town itself. Events are planned throughout 2025 to help celebrate this time in our history.

A Little Slice of History

Jupiter’s journey began on February 9, 1925, when it was officially incorporated as a town. Known for its iconic red lighthouse, pristine beaches, and small-town feel, Jupiter has grown from a quaint fishing village into a thriving community that attracts families, adventurers, and sun-seekers alike. But even as it has evolved, Jupiter has never lost its small-town charm or deep-rooted connection to nature and the water.

What’s on Tap for the Big Year?

The Centennial Celebration festivities are shaping up to be an unforgettable mix of nostalgia, community spirit, and just the right amount of Jupiter flair. Here’s a sneak peek at what’s in store:

1. Celebrate at Jupiter Jubilee

Jupiter’s hometown celebration returns better than ever on Saturday, February 8, from 11 a.m. until 4 p.m. This year’s Jubilee, which will be held at the Municipal Complex (210 Military Trail), will feature live music, food trucks, local vendors at the business expo, and fun for all ages.

2. Eat Your Way Around Town

Jupiter restaurants and businesses are getting in on the fun by offering discounts and special food items throughout the year. Pick up a Business Partner map, which offers discounts from participating businesses, at Town Hall, Roger Dean Chevrolet Stadium, the Jupiter Branch Library or participating businesses.

3. Walk or Ride, Through Jupiter’s History

History lovers will have plenty of opportunities to learn more about Jupiter throughout the year. Sign up for one of the History Bus Tours, attend history panel discussions at Town Hall or the Jupiter Branch Library, find interactive maps and history videos on the Town website, or stroll through the history displays at Town Hall.

4. Get Out Into Nature

Participate in this year’s Centennial-themed Turtle Trot, bring more beauty to our beaches at the Jupiter Beach Clean-Up, or learn more about Jupiter’s waterways on a paddleboard tour as we highlight Jupiter’s nature and open spaces.

From Stress to Mindfulness: Finding Peace in Nature

In our fast-paced, digital world, taking time to disconnect and focus on finding inner balance is essential to living healthy lives. As a psychologist who has practiced in Jupiter for over fifteen years, it has become increasingly evident to me that chronic stress, burnout, and anxiety rates are on the rise among residents of all ages.

These conditions, left untreated, can lead to a variety of medical issues, such as high blood pressure, gastrointestinal illnesses, chronic headaches/migraines, hormonal imbalances, weakened immune systems, and can make us more prone to life threatening diseases. A common complaint of many of my clients is how their overuse of technology can leave them feeling lonely, unfulfilled, and at times even depressed and anxious.

While there are some benefits of using technology, people tend to spend hours a day mindlessly scrolling, causing them to be less productive or present in their daily lives. I advise my clients to aim for reduced screen time and to practice the ancient technique of mindfulness as an essential tool to combat this chronic cycle of stress and anxiety fueled by excessive screen time and a lack of connection.

Mindfulness, a practice that can be traced back thousands of years, is a technique that involves focusing our attention on the present moment of our inner and outer worlds without judgment. Instead of being critical and negative, mindfulness teaches us to approach thoughts, feelings, and the external world with a sense of curiosity, gratitude, and compassion.

Consistent mindfulness practice has been shown to have the ability to lower blood pressure, boost the immune system, improve focus and attention, reduce symptoms of depression, decrease chronic pain, improve sleep and brain function, help us exhibit less emotional reactivity, and it can reduce stress and anxiety.

One example of a beneficial mindfulness practice is called “nature bathing,” and no, it doesn’t actually involve taking a bath. This Japanese practice, also known as shinrin-yoku, aims to promote relaxation by immersing yourself in the beauty of nature while activating all five senses to help you connect with the environment. Jupiter is home to many stunning beaches and natural

trails that can be enjoyed year-round so there is no shortage of options to practice nature bathing. Some of my favorite spots include (1) Blowing Rocks Preserve, (2) The Jupiter Inlet Lighthouse Outstanding Natural Area Trails, (3) Riverbend Park, and (4) Jonathan Dickinson State Park.

Nature Bathing Steps

• Carve out at least 30-60 minutes, free from distractions (phones, air pods)

• Bring your focus to the environment and let the chatter of your brain go

• Use the 5-4-3-2-1 method: Describe in detail in your mind five things that you see, four things that you can touch, three things that you hear, two things that you smell, and one thing that you can taste

• Bonus…Find a spot to sit down and practice deep breathing for 10-15 minutes: inhale through your nostrils for 3 counts, hold your breath for 4 counts, exhale gently through your lips for 5 counts (3-4-5 breathing).

Healthier Dining Options in Jupiter, Tequesta

MOOD Vegan in Tequesta features restaurant staples, but they are all made from plants. Meat substitutes include cauliflower for wings, housemade nut cheeses on a cheese board, jackfruit in the barbecue, and shiitake mushroom “bacon” for the BLT.

Resolving to live a healthier lifestyle is a time-honored tradition as each new year begins. Making better choices at the table tops most lists.

It’s tough. While no one diet fits all, most of us know the basics - limiting unnatural, processed foods and balance in all others.

But too many options abound to lure us off the paths of righteous eating. The food landscape is beset with sirens of sinful pleasures — the donut shops, pizzerias, and steakhouses popping up on every corner.

But in among them are havens of reprieve. Some restaurants with a dedicated menu aimed at healthier foods; others dishes that are choices among many.

Few vegan restaurants exists, but Tequesta boasts one with a full menu as well as a bar with a happy hour.

MOOD is a bistro with mainstream diners in mind. Familiar foods, nachos, wings, burgers, and barbecue pepper the menu — yet all are made from plants. Meat substitutes include cauliflower for wings, housemade nut cheeses on a cheese board, jackfruit in the barbecue, and shiitake mushroom “bacon” for the BLT. The parmesan is actually made of pumpkin seeds.

Several cuisines are represented. The dinner menu includes an alternative bahn mi, a Reuben sandwich, an

Indian curry and an Asian no-sushi roll.

Gluten-free and nut-free items are available as well. Specials are listed during Happy Hour. Cocktails include fresh organic cane simple syrup, fruit juices and coconut cream. Alcohol from common brands, plus organic wines, is served.

Open for dinner, Tuesday through Saturday, and lunch Saturday, with happy hour 4-6 p.m.

NiMo is a young restaurant in Jupiter, a Coastal Mediterranean brought to concept by Chef Niven Patel (known for Ghee in Miami), and his business partner, Mohamed “Mo” Alkassar.

Not a plant-based restaurant, it has several dishes that elevate the meatless meal and offers choices for pescatarians and carnivores as well – something for everyone.

The crispy eggplant with burrata and a pomodoro sauce is an example. A meal for some; appetizer for others. Veggie pizzas, the mezzeh platter and penne ala vodka are other choices for those going meatless.

Kai-Kai Farm Kai-Kai Farm grows vegetables with organic practices. You can buy vegetables and dairy products at their farm stand and indoor greenmarket on Saturdays from 9 a.m. to 1 p.m. Top area restaurants get their produce here, so you know it’s good.

Juice bars abound, but 3Natives, the home of the fresh juice bar and acai bowls made with all organic and rainforest-friendly acai, is native to Tequesta.

Started as a juice bar by local Anthony Bambino, the little cafe that inspired many copycats now has outlets in five states.

The food is the same: Acai bowls star. Made with acai, granola, fresh fruits, nut butters and seeds, they can be boosted with a protein powder. Smoothies are made with nut butters, protein powders and all fresh fruits.

Large bowl salads, wraps, melts and breakfast toasts round out the menu. Also available are bottled juice shots.

Go straight to the source for raw milk, other fresh dairy products, meats, and lessons in quality dairy farming at Jupiter Creamery

Instead of the owner’s self profiles, the cows have their photos and breeds listed on their website.

The small farm practices sustainable farming, with the animals fed grain free diets, and shares educational farm tours - a great place for kids to see where food really comes from.

Open to the public Wednesdays; products are limited. Check the website for information about workshops and volunteer opportunities.

There’s “no BS” on the Kai-Kai Farm, as farmer Diane Cordeau says. Vegetables sold there are grown in sight, and with organic practices. Organic certification is difficult to obtain in Florida, thus nomenclature. “It’s organic, but we can’t call it certified,” she said.

If you’re not sure about quality, consider that top restaurants in the area buy their produce from Cordeau, who makes box deliveries to her customers on Mondays.

The public can buy myriad vegetables, dairy products and more at their farm stand and indoor greenmarket on Saturdays, 9 a.m. to 1 p.m. Farm tours are by appointment.

Also here are special “dinners on the farm,” open to the public. They’re put on by top chefs using the farm products. Their website lists these and more.

Fitness Through the Decades: How Jupiter’s Fitness Scene Has Evolved

The fitness scene in Jupiter has transformed dramatically over the decades. In the 1980s, fitness was synonymous with high-impact aerobics, jazzercise, and step classes, fueled by Jane Fonda and Richard Simmons’ workout tapes. Arnold Schwarzenegger dominated bodybuilding culture, and gyms were filled with primarily fitness machines and weightlifting equipment. This era was marked by a growing awareness of the importance of physical fitness, spurred on by societal concerns about health and wellness.

I enjoyed reminiscing about it with former Jupiter Fitness founder and friend Dan Amero.”In the beginning, there was Better Bodies, which Richard Levine owned. Members Health & Fitness was in the old Woods Plaza, but they moved to where the movie theater is now,” Dan explains. “I opened Jupiter Gym in 1991 in Commerce Park, and we were there for 8.5 years. Then, I bought the 10,000 sq. ft. building on Indiantown Road and rebranded it as Jupiter Fitness Center.” As demand grew, so did the gym, doubling its size to accommodate more members. There he stayed for 24 years. Dan recalled the days when trainers moved machines out of the way to make room for aerobics classes and how the instructors brought in their own “boom boxes” for music. The new millennium brought yet another shift. Fitness preferences changed, and Yoga and Pilates surged in popularity as members wanted more emphasis on mental wellness, balance, and longevity. The instructors wanted more just as quickly as local gyms adapted to these trends: more classes, more affordability, and more space. Boutique studios catering to yoga and Pilates flourished, reflecting a broader trend toward holistic health. Simultaneously, fitness studios focusing on strength training, like HEW, CrossFit, and Orange Theory, began appearing along Indiantown Road. This created a community-oriented culture where fitness became more than exercise—a lifestyle. These spaces evolved into hubs for socialization, support, and personal growth.

Binky Malone, owner of Real Fitness, has been a staple of Jupiter’s fitness scene for over 35 years, teaching at Better Bodies, Gold’s Gym, and Jupiter Fitness. In 2016, she opened her trainer-based boutique gym to meet the growing demand for personalized, non-membership-based options. “People didn’t want big-box gyms anymore; they wanted smaller communities with specialty options,” Malone explained. She noted that while basics like personal training, Pilates, and yoga remain staples, there is a growing interest in tailored experiences, including mindset coaching and recovery-focused services. “Fitness studios now offer sports-specific training, mental health support, meditation, and recovery options like flotation tanks,” she added.

In 2020, the COVID-19 pandemic brought another dramatic shift to the fitness landscape. As gyms tempo-

rarily shut down, virtual workouts, wellness apps, and mobile training became essential. Portable equipment like TRX suspension systems, BOSU balls, and kettlebells gained popularity among trainers offering in-home sessions. This period of adaptation and innovation highlighted the resilience of the fitness community in Jupiter, as it found new ways to stay active and connected during challenging times.

In August 2022, the opening of Lifetime Fitness in Palm Beach Gardens marked another turning point. Offering high-end amenities and health benefits, it attracted both members and trainers, leading to the closure of several smaller boutique gyms in Jupiter. Despite this, Amero believes boutique gyms still have a future in Jupiter due to limited real estate for more extensive facilities.

Jupiter’s fitness culture thrives today, embracing outdoor activities like pickleball and stand-up paddleboarding. These activities not only promote health but also foster community connections. As fitness evolves, local gyms remain more than places to exercise - they are spaces for self-improvement, camaraderie, and personal growth. With so many of us in the Jupiter area being eco-conscious consumers, we are increasingly choosing hardwood floors made from sustainably sourced or reclaimed wood.

Wood floors are the most environmentally friendly flooring option available. Unlike other flooring materials, the raw materials used to make them – trees – can regrow after they are cut down, which replaces the material that is harvested. In the United States, the hardwood forests that provide flooring products are growing more than twice as fast as they are being harvested.

Although it usually takes hardwood trees about 40 to 60 years to mature (depending on the species), wood flooring can last well beyond 100 years in service when properly maintained. Wood also stores carbon during its service life. This means any manufactured wood product – furniture, cabinets, wood floors, or even picture frames – continues to store carbon as a manufactured end-product. That’s why wood flooring is classified by the U.S.

Paddleboards Offer a Full-Body Workout; Know Your Gear for Best Results

Start the new year strong with a workout designed by nature! Paddleboarding is a full body workout engaging your core for balance while your arms, legs and hips propel you forward. There are several types of boards to choose from, all offering unique challenges:

• Race boards: Long and narrow, they demand more effort to balance.

• Touring boards: Shorter and wider, they require more effort to gain speed.

• Inflatable boards: Convenient for transport but can be trickier to balance and winds make them tougher to maneuver.

• Hard boards: Provide a dual workout - paddling and transporting them.

A workout paddle provides natural interval training, taking you both with and against the wind and tide. Ideally, you paddle against the stronger of the wind and/ or tide first, making for an easier paddle on the return. I offer workout paddles in addition to tours and lessons, join me and learn firsthand or use the information below to plan one.

First, knowing whether the tide is incoming or outgo-

ing as well as the strength of the current, or tidal coefficient, is essential. The tidal coefficient is the difference between the highest high tide and the lowest low tide of the day. The bigger the difference, the greater the volume of water that is moving, providing more resistance. The tidal coefficient ranges from 20-120, new moon and full moon bring a high tidal coefficient of 80 and above providing a great core workout.

Next, check the wind on an app that provides wind data on the water as well as land.

Nautide is a great app that gives all weather condition information in one app. Windy and WindFinder apps are great for visual maps showing the wind direction and speed as well as a future wind forecast. Wind speeds of 10-20 miles per hour provide a great workout to paddle against; winds higher than that would merit a one way paddle or a paddle around mangrove islands to find a little reprieve from the wind and keep the workout an enjoyable challenge.

Your body responds better to workouts you enjoy. When you look forward to it, it is more likely you will stay consistent. If an interval training paddle of any distance is not your style, try yoga on the water. Known as SUP Yoga, it combines a leisurely paddle to a calm location where you float and flow. Classes are geared for all

levels, no need to be a yogi. A few local yoga studios like Breathe Salt Yoga, Native Yoga and Jupiter Yoga offer SUP Yoga in collaboration with paddle outfitters. Whether you use your board for an intense workout or a leisurely float, the mental health benefit of paddling is just as significant as the physical ones. Known as Blue Mind Theory, it is the concept that being on, in or near water can improve mental health and well-being and reconnect people with nature. Backed by scientific research and relatable to all of us that head seaside for solace, it is no wonder this idea has gained widespread popularity. Paddling our area is especially therapeutic when the high tide brings in the clear blue waters of the Atlantic Ocean. A manatee swimming past you as you glide over a giant cushion sea star below you helps you leave your worries behind.

It’s in Her Roots: Chef, Mixologist Aims to Take Your Culinary Experience to the Next Level

Nicole Roberts’ mother is Colombian and loves to cook. Her dad is Jewish and is from Long Island. He loves to eat. In other words, their daughter was almost preordained to be a chef.

The 27-year-old Roberts now aims to set the world on fire in the crowded field of social media chefs and mixologists by providing a healthy, curated experience whether it be for a cocktail party or your everyday meal.

When she comes to your home or event to provide mixology, Roberts packs her homemade syrups. She also offers a meal plan service, making ready-to-eat entrees. And she advertises it all on her Instagram page, Chefnikeats.

“All the ingredients that I use are freshly sourced. I actually have a garden at my mom’s house, and so a lot of the herbs that I use for my beverages come from my personal garden,” she said during a reprieve in her busy holiday schedule.

Roberts’ parents would send her and her sister, Hillary, to Colombia every summer when they were kids. There she learned the importance of fresh foods.

“There’s no additives, there’s no extracts, there’s no preservatives. It’s just natural. I mean, my grandma’s literally in the tree, grabbing the mango, going into the kitchen and juicing it.” Roberts said.

Roberts grew up in Jupiter, graduating from Dwyer High School. Her home was always filled with the aroma of food. Her mother went to culinary school.

“I grew up in a household where every day there was new food in the kitchen,” she recalled.

Eventually, mom pointed her daughter toward the stove and said if she was hungry, then cook. Soon Roberts was baking and asking for recipe books as gifts.

Still, Roberts thought her path might be through criminal justice when she

is a personal chef and master mixologist. Her love for food is derived from growing up in a home where meals were celebrated.

landed a lacrosse scholarship to Point University on the border of Georgia and Alabama. She saw her future as a criminal defense attorney.

Roberts eventually ended up in Atlanta where she applied to the police department.

“I realized then that I had a passion for hospitality, and I have a passion for cooking and feeding people and making drinks for people,” she said.

And so in 2018, Roberts started her brand Chef Nik Eats, at first as a hobby and then as a profession. She enrolled in Auguste Escoffier School of Culinary Arts and migrated back home.

She learned the art of the craft cocktail as a mixologist at the fivestar Four Seasons Resort Palm Beach before striking out on her own. She advertises her business as Christian faith-based. You don’t hire Nicole Roberts to

“It’s an elite experience. It’s a luxurious experience. It’s not a typical bar experience,” she explained. “It’s definitely elevated and taken to a different level.”

Maren McRoberts, an event planner, said she hires Roberts regularly. She explained what Roberts brought to a Christmas party to benefit the women’s shelter Hannah’s Home of South Florida.

“She made a jingle bell martini and she used an ornament and she filled it up with edible glitter and vodka and a spiced cranberry apple syrup,” McRoberts said.

“The mixed drink was inside the ornament and you poured the ornament into the martini glass with a sprig of rosemary garnish.”

‘She just puts so much heart and love into her drinks. And it shows.’

Another of the four signature cocktails for the event involved Roberts melting cookies with boiled cinnamon sticks for a Biscoff espresso martini.

“She’s just good at what she does,” McRoberts said. “She just puts so much heart and love into her drinks. And it shows.”

Roberts also provides an array of mocktails, as well.

These days she is branching out into meal plans, showing off what she can bring literally to your table on her Instagram page. One post shows mouth-watering garlic steak and roasted broccoli.

“People sometimes think that they’re only paying for

food, or they think that they’re only paying for a drink. If people hear that my mixology rate starts at $100 an hour, they ask, ‘Does that include the alcohol?’” she explains.

“No, that includes me.”

Food Mission: Help Others Grow Their Own

Jupiter and the surrounding area are home to numerous incredible nonprofits deeply committed to their community and making a meaningful difference. One such organization is Nourishing Food for Thought, founded in 2017 by Suzie Dudas, affectionately known as Farmer Suzie. “My sole purpose in starting a farm was for my children, Zale and Saxon,” Suzie shares. “I wanted to feed them right and give them this incredible outdoor experience, away from TV and electronic devices.”

Suzie envisioned her children developing a connection to their food, learning responsibility, and enjoying time outdoors.

What began as a personal mission quickly grew into something more. “They would milk the cow, and their friends would watch me. Soon, those friends wanted to be involved on the farm and spend time outdoors,” Suzie recalls. “It really began organically.”

Driven by her desire to feed her family clean, nutritionally dense, soy-free, and non-GMO foods, Suzie struggled to find such items locally. “Where did that glass bottle of milk go? What happened to local dairies where you could trust where your food came from and how it was raised?” With ten acres of land, she bought a cow and began producing milk for her family. This eventually expanded to friends, neighbors, and the larger community. Over time, the farm’s offerings grew to include eggs, butter, soap, and other natural products.

As interest in the farm flourished, Suzie recognized an opportunity to make a broader impact. She established Nourishing Food for Thought to empower people to grow their own food by providing the resources and skills needed to transition from consumers to producers.

One standout initiative of the nonprofit is a program designed for parents seeking an educational experience for their children

on a working farm. This program introduces kids to the profound connection between their food and the environment, offering unique opportunities for hands-on learning and personal growth.

Through this program, children gain a deeper understanding of the food chain by learning about food sources and sustainability. They also develop an appreciation for healthy eating. Caring for animals fosters empathy, patience, and respect for living beings, while witnessing the life cycles of plants and animals—from seeds to crops and from birth to adulthood—provides invaluable lessons in biology and the natural world. The benefits of exposing children to a working farm are immeasurable, from building responsibility to cultivating an enduring connection to nature.

Tragically, Suzie’s children, Zale and Saxon, lost their lives in a heartbreaking accident. This loss has given even deeper meaning to her mission. Creating an educational farming experience for other children and families is Suzie’s way of honoring her children’s memory.

“I hope that eventually, the nonprofit grows enough and becomes successful enough to buy my farm from me so that when I’m too old to farm, this land stays in Palm Beach County as an education center for generations to come,” she says. Hopefully we are all waking up with a sense of excitement and anticipation for the new year ahead of us, possibly thinking about the things that we want to accomplish and making some plans to possibly change some things up.

Speaking of making plans, so many people want to either enjoy taking their dog for a walk, the beach, or going big and bold, and taking your dog on vacation with you/or with the family.

However, upon immediate reflection, you remember the last time that you tried any of those things, and they did not pan out the way you envisioned in your mind.

I get calls, every day from people, who have stopped inviting friends over because of their dog’s behaviors; and from those who will only walk their dogs at odd hours, because of their dogs reactivity or pulling in every direction, and from those who took their dog with them away for the weekend, and then became the unwelcome guests for future visits with their dog.

Nicole Roberts is a personal chef, master mixologist, and the owner of Chef Nik Eats LLC.

Ingredients:

1.5 oz Dark Rum

.5 oz charred pineapple syrup*

.25 oz lemon juice

2 dashes orange blossom

Splash of Prosecco (optional)

Recipe: Mix all ingredients together in shaker and strain into champagne flute. Top with bubbles.

*In a grill pan char a few pineapple slices. Heat a small sauce pan, add water, pineapple, brown sugar, bring to a boil, and strain. Store in glass container.
