A deliciously tempting recipe, packed with protein to keep you fuller for longer, and bursting with chewy, chocolatey, nutty goodness!

I NG R E DIE NT S 130g self-raising flour 1/2 teaspoon baking powder 1/4 teaspoon salt 100g dark chocolate, broken into chunks 100g dates, pre-soaked, pitted and chopped 70g cocoa powder 200g Greek yoghurt (full or low fat) 75g chopped nuts (optional) 30g dark chocolate (to decorate) ME T HOD Preheat the oven to 175°C. Line a medium sized shell baking tray with baking paper.

In a large bowl, mix together all of the dry ingredients until blended.

Melt dark chocolate by placing in a glass bowl over hot water. Stir regularly until melted - it should be smooth and glossy.

Allow chocolate to cool slightly, and then blend in Greek yoghurt. Whip through until a light, fluffy texture is achieved.

Combine chocolate mixture with flour, add dates. Mix everything together.

Pour into a baking tray and decorate with chopped nuts if using them. As a nut-free alternative you could add dried fruit or chocolate chips.

Bake for 25-30 minutes and check with a knife. The brownie should be soft and slightly sticky, but firm to the touch.

Allow to cool before decorating with crumbled dark chocolate and cutting into portions.

Penkridge Market announced today that they had record numbers of people attend their annual Victorian Christmas Market on Sunday (25th November). Over ten thousand people flocked to the event, with organisers saying it was the busiest Christmas Market they had ever seen.

Matt Williams, Manager of Penkridge Market said: “We were absolutely amazed and delighted by the amount of people that came on Sunday. We have been running the event for 9 years now and it has become increasingly popular every year, but it has never been that busy before. Normally we get around 5,000 people to the event, but this year was incredible, with well over 10,000.”

The Christmas Market, which consisted of 125 independent stalls, was bursting with fresh local produce, as well as crafts, gifts and decorations.

There was also more entertainment than ever before with Donkey rides, a fun fair, magic show, Santa’s Grotto, Punch and Judy and even a fireeater. The event ran between 1pm and 7pm, and was completely free of charge, with no fee for admission or parking.

One of the regular stall holders, Alan Stephens from Brookside Farm said: “We have been coming to the event for the last 9 years and have never seen it this busy before. It’s a great way for us to showcase our products and for people to support small, local businesses too.”

As the event’s visitor numbers continue to grow, the owners are now looking for additional parking sites and possible solutions, to make the event even better for next year.

Matt Williams, Manager of Penkridge Market continued: “We had already allocated twice as much parking this year, with additional fields, car parking staff and had moved the fun fair to create extra space on the main car park, but unfortunately it still wasn’t enough to cope with the vast numbers. So we are now looking for additional parking sites for next year and may even look to run a park and ride system, to avoid any congestion in the town. We would like to thank everyone who attended for their patience and ensure them that we will have additional parking for next year, now that we know the visitor figures have increased to this level.”

If you missed this year’s event, you will be pleased to hear that there is a Fine Food and Craft Market on Saturday 15th December, where there will be a wide selection of craft stalls, plus tasty food and drink.

The market is located in the centre of Penkridge, which is just 7 miles from Stafford; 7 miles from Cannock and 10 miles from Wolverhampton and is easily accessible from the A449, A5 and M6 (junction 12).

Changing Lives O N E S T E P AT A T I M E Nordic Walking is the fastest growing activity in the UK. Initially designed for cross country skiers to continue training in the summer months but has been adapted to help develop everyone’s health be it physical or mental and regardless of current condition.

Chase Nordic Walking is owned and run by the lead instructor Simon Booth-Lyons. Simon left the Royal Air Force 2 years a go after serving 22 years in the military. Being qualified as a Physical Training Instructor and a specialist in Physical Rehabilitation has helped Simon and his team train over 200 local walkers who have all experienced the exciting benefits of Nordic Walking.

We have everything from wellbeing walks for those at the start of their fitness journey through to the more advanced classes that incorporate some of our fantastic hills and a variety of different training intensities.

We always like to offer optional fun challenges to maintain motivation but not surprisingly a cup of tea and a slice of cake in the café afterwards is always the best motivator!

Sunday 9th December saw over 400 Katharine House Hospice supporters visit the hospice for the annual Light Up a Life service. The 20ft tree forms the focal point of the appeal, which sees local people celebrating the life of someone special, as a light shines in their honour this Christmas.

Appeals Fundraiser, Amy Ratcliffe said “Each light represents two sides of a special story. On the one hand the life of a person no longer with us and on the other, through the people they knew, they are still helping us to ensure that patients and their families share the best Christmas possible."
