Recipe of the Month- Chicken with Creamy Leeks CHICKEN WITH CREAMY LEEKS

Serves 4 - half a syn per serving and ready in 30 minutes 4 skinless & boneless chicken breasts 2 leeks, thinly sliced 1 tbsp fresh thyme leaves, plus sprigs to garnish 300g fat-free natural fromage frais 2 level tbsp freshly grated parmesan cheese Preheat oven to 200C/fan180C/gas 6 Spray a non-stick roasting tin with low-calorie cooking spray, add the chicken breasts and season lightly. Cook in the oven for 20-25 minutes or until cooked through, turning halfway. Meanwhile spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the leeks, thyme and 150ml boiling water and cook for 10-12 minutes. Reduce the heat to as low as possible, stir in the fromage frais and most of the Parmesan and cook for 1-2 minutes or until just heated through, stir & season. Spoon the creamy leeks into shallow bowls and top with the chicken breasts. Sprinkle with the remaining Parmesan and garnish with thyme sprigs to serve.
