Henry David Thoreau once said, "October is the month of painted leaves. Their rich glow now flashes round the world. As fruits and leaves and the day itself acquire a bright tint just before they fall, so the year near its setting. October is its sunset sky; November the later twilight." Sadly, fall does seem to only last as briefly as a sunset before the long night of winter.
Therefore, we need to make the most of autumn before it vanishes. Take a break from Halloween decorating or winterizing around the house and stop in the Center for some fun activities. We are having a Spaghetti Dinner Fundraiser on October 19th 5 7PM. With homemade spaghetti and desserts, live music, and raffles, this promises to be a wonderful evening. On November 11th, we will once again hold our annual Veterans Chili Cook off. Come help us honor our veterans with chili tasting, a picnic lunch, a salute to our armed forces, and a live band. We are also still looking for chili cooks. If you think your secret recipe has what it takes to win, be sure to sign up for your chance to snag one of four $100 prizes.

The Center at the Mall is a program of the Lutheran Service Society. It is operated in cooperation with the Beaver County Office on Aging.

Technology Tips
Acts Cancer Care Support Group
Every Tuesday from 10 - 11AM. Biblically based support group for those impacted by cancer with Cliff Hutchison, creator ofActs Cancer Care Support.
12PM, meet with other members to work on art projects you bring from home or enjoy provided paints, pencils, canvases, etc. All skills levels are welcome.
11AM, join Paul Kamzelski to study and discuss the Bible.
1:45PM we host Bingo! Cards are 25¢ each and can be used for all 11 games. Games include 8 regular games, 2 specials, and a coverall (additional 25¢). Please note: No bingo on Casino Trip day.
3PM bridge club meets. Always looking for new members.
Coffee, tea, and water available daily. Donation of $1 is appreciated.
12PM. All skill levels welcome. Chessboards are provided.
Computers with internet access available free of charge. Printing available at 15¢ per page.

Upcoming Events
Veterans Chili Cook-off
On Friday, November 11th from 12 2pm, the Center will once again host a Chili Cook off in honor of our local veterans. We invite all ages to come celebrate those who served our country. Enjoy a variety of chili, a picnic lunch, an honor guard salute, and live entertainment. Tickets to attend are $3. Veterans attend for free! We are still looking for chili cooks. If you think your secret recipe has what it takes to win the day, don’t hesitate to stop by the Center and sign up. Judges will give out prizes of $100 to the top four entrants. The Center would like to thank Humana for being a premiere sponsor of the event, as well as Gallagher Home Health, VFW Chapter 128, and VVA Chapter 862 for their participation and support in organizing this event. The Center’s staff would also like to thank all of our members who have served our country and hope to see them at this wonderful event.

Microwave Spaghetti Squash
INGREDIENTS
1 spaghetti squash small
2 tablespoons olive oil extra virgin or avocado oil
2 cloves garlic finely minced
2 tomatoes chopped
2 tablespoons minced fresh basil
1 teaspoon balsamic vinegar
1/4 cup grated pecorino or parmesan cheese
salt and pepper to taste
INSTRUCTIONS
1. Using a sharp paring knife, carefully pierce (I really mean stab) the spaghetti squash in a few places (about 6 slashes is good). Place squash on plate. Microwave on high for 10 15 minutes, turning/rotating the squash halfway during cooking. .
2. The squash is done when a fork very easily pierces through the squash, if there is resistance microwave for an additional 1 2 minutes.
3. Carefully (the squash will be steaming hot!), use a chef's knife to cut the squash in half, lengthwise. The squash should be soft and easy to cut. Remove and discard the seeds. Use two forks to scrape apart the strands of the squash. For this recipe, we'll only use half of the spaghetti squash, about 4 cups.
4. Heat a large sauté pan over medium heat with the olive or avocado oil. Add in the garlic and cook for 1 minute. Add in the tomatoes and basil and cook for another minute. Turn heat to medium high and add in the spaghetti squash and toss. Season with salt and pepper and drizzle in the balsamic vinegar. Taste the squash adjust seasoning. If the squash still needs a bit more time to cook through, cover and cook for 2 minutes. If the squash texture is perfect, toss in the grated cheese and serve immediately.

Spaghetti Dinner Fundraiser
Dinner, raffles, and entertainment! Don’t miss out on the Center’s Spaghetti Dinner
Benefit on Wednesday, October 19th . Dinner will be served from 5 - 7PM, take-out orders start at 4:30PM. Tickets are $10/adult or $5/kids 6 and under and include a house salad, bread, spaghetti with meatballs, homemade dessert, and a beverage. There will also be raffle baskets and a 50/50 drawing.
