MILESTONES

“Remember to celebrate milestones as you prepare for the road ahead.”

Like a lot of kids, I could hardly wait to grow up. By the time I was 11-years-old I had a part time job modeling. And, by the time I was 15-years-old it was my full time job. But, I retired when I was 18 to go to college alongside other peers my age—and that’s were I studied Graphic Design, Advertising and Journalism. With the constant support of my parents, many of the milestones of my youth were a bit out of the ordinary, but still meant to measure progress toward an ultimate goal. While milestones mark critical points in our lives that are celebrated, they also motivate us to bravely face the unknown road that lies before each of us. I’m having a milestone celebration year... I will turn 50, my twins turn 16, my daughter turns 8, and Society Life Magazine has just celebrated 18 years in print. So many reasons to celebrate!

In this issue, we are celebrating moms—strong moms raising strong daughters. I have always referred to my mom as the “Wind Beneath My Wings.” I still give her so much credit for letting me fly so high. As a mom myself now of three—two being teenagers—I realize how hard it must have been for her and my dad to both watch me fly and also fall hard in the often cruel world of modeling. Moms do a lot of that—knowing when to hold on and when to let go. Moms are so important in the development of their children’s lives. We talked to mother-daughter duo, Dede and Sophia, who beautifully grace our cover of this milestone issue. These two strong women have a special bond like so many mothers and daughters. Their confidence and love of life and each other is contagious! Check out our cover story starting on page 22 of this issue. It’s also our 18th annual Women in Business issue. We have featured 30 local business women and their stories of success (page 28). And last but not least, we hear from local mom, Kim Slowik, about her mission to help her son through not one, but two open heart surgeries in ‘Mom on a Mission” in our Society Kids Special Quarterly section (page 48)

I realize that every single year on this planet calls for celebration—not just milestone years. I celebrate all the moms who guide us like milestone markers along the road of life. They lead us with their unconditional love and support to reach our full potential... and soar. Thanks Mom!

Women on a Mission

“A Gracious Woman Retains Honor.”

— Proverbs 11:16

Thomas Hardy once said, “The perfect woman, you see [is] a working woman; not an idler; not a fine lady; but one who [uses] her hands and her head and her heart for the good of others.” I agree.

When I think of “The perfect woman,” I think of the Proverbs 31 woman. She did it all! She honored her husband, nurtured her children, handled her business, and most importantly—she reverenced her God. She rose up early, went to bed late—she cooked, she negotiated, she prayed, she exercised, she volunteered, and she sewed (Proverbs 31:11-28). Whew! She was on a mission! And though many female missionaries are noted in the Bible, not all of them were as busy and balanced as the woman described in Proverbs 31. Their “to-do list” may have been shorter, but their role was just as significant. One of those women was named Phoebe. She made her lone appearance in Romans 16:1-2. We don’t know much about Phoebe, but we do know the Apostle Paul recognized her as exceptional and worthy of acknowledgment. He said, “Now I introduce and commend to you our sister Phoebe, a deaconess (servant) of the church at Cenchrea, that you may receive her in the Lord [with love and hospitality], as God’s people ought to receive one another. And that you may help her in whatever matter she may require assistance from you, for she has been a helper of many, including myself.”

We learn from Paul that Phoebe had great influence, even though she didn’t have a social media page. God provided her with a platform because she used her gift to bless others. Proverbs 11:25 promises that “the one who blesses others is abundantly blessed; those who help others are helped.” 1 Peter 4:10 encourages us to “use whatever gift we’ve received to serve others, faithfully administering God's grace in its various forms.” And that’s exactly what

Phoebe did. There aren’t many writings about Phoebe; there’s no mention of a husband or children. Some may assume she had lots of free time and was able to serve diligently because she didn’t have anything else to do. Whatever the case— she served wholeheartedly. As the only deaconess ever mentioned in the Bible, Phoebe understood her assignment, and she executed it with a spirit of excellence. Paul commended her, and he encouraged others to do the same. He noticed how she took every opportunity to do good to everyone—especially to those in the family

of faith (Galatians 6:10). She didn’t have to “toot her own horn” …Paul did.

Some women are multitaskers like the Proverbs 31 woman. Others focus on one task at a time. Either way, God will bless the work of our hands when we work heartily as unto the Lord (Colossians 3:23-24). Our job is to serve the Lord with zeal (Romans 12:11) and “stir up” the gift God placed within us, individually (2 Timothy 1:6).

1 Corinthians 12:4-6 teaches that “there are diversities of gifts, but the same Spirit. And there are differences of administrations, but the same Lord. And there are diversities of operations, but it is the same God which worketh all in all.” Therefore, we should never covet someone else’s gift.

God has equipped every woman with everything she needs to live a life of fulfillment and joy. We all are able to manage any role, and tackle any task, because of His sufficient grace (2 Corinthians 12:9). It is God’s desire that we become the best version of the person He called us to be. Nothing more, nothing less. We don’t have to be a superwoman. We just need to be a woman who serves the supernatural God.

Phoebe may have not been the most popular woman mentioned in the Bible. But having a heart to serve God and His people proved to be extremely profitable to the Kingdom of God.

God left us with a multitude of godly women to pattern our lives after. It is my prayer that we each decide in our heart to imitate those, who through faith and patience, inherit what He promised (Hebrews 6:12). In hopes that the generations of women to come will continue to spread the gospel and share stories of our Lord and Savior (Mark 16:15, Psalms 145:4).

The Malachi Covenant

“The Malachi Covenant” by Dee Kelly, Jr., carries the reader from Rome to Vermont to Moscow and its time settings span the fourth century AD to present day. Characters range from a Russian mobster to the first Black pope. It’s quite a journey.

Archeologist Maggie Shepherd assists her mentor Professor Sizel Bruscoli in extracting a relic from the tomb of Saint Nicholas at the Basilica di San Nicola in Bari, Italy. After a blinding flash of light, Bruscoli ends up in the hospital lacking the brain tumor doctors had previously diagnosed. As a devout Catholic Maggie sometimes struggles against Bruscoli’s lack of faith, but this incident baffles the both of them.

Nikolai Todorov, known as the Butcher of Moscow, hires former operative Malachi Popov to steal the relic from Maggie’s lab. Todorov also experiences a healing from his cancer in the presence of the relic. The theft throws into jeopardy a trip planned by newly elected Pope Peter Kwofi Owusu of Ghana to carry the relic of St. Nicholas to Moscow as a gift to the faithful there and to unite the Eastern and Western schisms of the church.

In the fairly long cast of characters, each one stands out. We learn how Todorov’s family of gangsters each has served his family and become wrapped up in the evil Todorov has done over the years.

The plot moves along very quickly, propelled by a major incident in almost every chapter. Popov thought he had escaped his life of crime years earlier, but Todorov persuades him to undertake this dangerous mission through a mixture of threats and promises. Popov has also experienced a renewed faith that appears in danger from his criminal connections. Maggie, of course, searches desperately for answers that it seems no one can provide.

Throughout the story run occasional trips back to the time of the original Saint Nicholas of Myra. Readers learn where the stories about him started through vignettes showcasing his sacrificial love for others.

While “The Malachi Covenant” can easily be compared to “The DaVinci Code” and other thrillers by Dan Brown, it can be noted that it has both more heart and more faith.

A stolen religious relic drives the action in author Dee Kelly’s globe-trotting thriller.

ABOUT THE AUTHOR: Kelly’s fascination with the intersection of events in history and characters in the contemporary world began in his early days as an undergraduate student at the University of Texas. After law school, Kelly became a prominent Texas attorney, but he never lost his overriding love for books and storytelling. “The Malachi Covenant” is the first novel released under his own name, following a successful series of novels published under a pseudonym. When he’s not writing, Kelly continues to advise prominent companies and business leaders in his law practice. He serves on the boards of a number of arts and philanthropic organizations. Kelly lives in Fort Worth with his wife, Dana, and the center of their universe, dog Scout. The Kelly’s have three beloved daughters. You can purchase “The Malachi Covenant” wherever books are sold.

NEW YORK TIMES AUTHOR JAMES PONTI COMING JULY 10 EDGAR-AWARD WINNING AUTHOR FOR HIS “FRAMED” SERIES

The Library Foundation of Southlake (LFOS) is excited to bring New York Times middle-grades author James Ponti to the Southlake Public Library on July 10, 2024. The Edgar-award winning author for his “Framed” series as well as popular “City Spies” collection will speak to attendees and hold two hour-long writing workshops with students. The visit is being brought to you by the Southlake Public Library and the generous sponsors and donors of the LFOS. To help young readers get excited for Ponti’s visit, LFOS has created a game inviting readers to join the “Southlake City Spies” team. Visit the Southlake Public Library before July 10 to receive instructions on how to join the team. “Young readers love James Ponti’s books about an unlikely squad of kids who travel the world as part of an elite spy squad,” said Lori Burr, president of the Library Foundation of Southlake. “As an author, Ponti talks about how he loved writing as a child, but never felt like he was a strong reader so he intentionally started writing books where he felt readers could really immerse themselves into the story. We’re so excited that he’s coming to Southlake, and that he’ll be giving our young writers a chance to learn from a master storyteller.”

In addition to the writing seminars offered by Ponti, LFOS is sponsoring a twoweek writing camp this summer for students ages 8 to 14 in June. The camp is designed to introduce budding authors to different creative writing styles and allow them an opportunity to write and receive feedback. At the end of the session, their work will be published in a junior literary magazine available at the library. “This is our first year to host a writing camp, and we are delighted that it filled up so quickly,” said Burr. “We’re going to monitor the program closely to see how we can improve upon it in future years.”

This is LFOS’s third major initiative. An earlier fundraiser led to the donation of two AWE Children’s Learning Stations to the library. Valued at about $11,000—these Early Literacy Stations deliver award-winning content through a safe environment to help prepare students for school readiness. In winter 2023, LFOS hosted a reading challenge called “Funopoly” that helped motivate young readers with games and prizes throughout the holiday break season. The Library Foundation of Southlake is a 501c3 non-profit committed to the support and success of the Southlake Public Library through advocacy, fundraising, and engagement that delights and benefits the community. The efforts of the LFOS are guided by an extensive library survey conducted in 2021, feedback generated through community discussions, and the expert guidance of the dedicated library staff. Donations to LFOS are tax deductible. Anyone donating $100 or more will be listed on the LFOS website. Individuals donating $500 or more will receive a yard sign in recognition of being a Champion of the Library Foundation of Southlake. Donations of $1,000 or more will also receive a tote bag. LFOS also raises money for programs by selling t-shirts at its non-profit store. Dede’s journey in the business world began with a simple, yet profound belief that every challenge is an opportunity waiting to be seized. Armed with this mindset, she ventured into the restaurant landscape, facing obstacles with courage and tenacity. Through perseverance, alongside her husband Evandro Caregnato, they built a Brazilian-style pizza concept called Delucca Gaucho Pizza and Wine from the ground up while raising Sophia and their son Lucca. Their first location in Southlake was more than well-received and Dede and Evandro went on to open several other locations. Yet, the dynamic duo longed to get back to the OG gaucho concept where they got their start — steak. SL: What values do you believe are crucial to instill in young girls to help them grow into strong, confident individuals? All girls should be taught the importance of self-respect and self-love ... to understand that their worth isn’t tied to anyone else’s opinions or expectations. Empathy would be another key value — being capable of understanding and connecting with others on a deeper level is crucial to strong relationships.

SL: How do you navigate balance between fostering independence and giving guidance for your daughter as she develops her own identity? I try to strike a balance between letting her explore and make her own decisions while still being there to offer guidance and support when she needs it. I encourage her to try new things, make mistakes, and learn from them — all while letting her know that I’m here to help her navigate any challenges that come her way. It’s about giving her the space to grow and develop her own identity while also being a helping hand she can rely on for advice and encouragement.

SL: Share what you've found effective in promoting self-esteem — especially in the face of societal pressures? One way I boost my daughter’s confidence is by cheering her on for achievements — big or small. Our home is a safe space where she can be herself. I make sure she knows her feelings are understood. I remind her what makes her unique and how much I love her!

SL: How does open communication play into nurturing a strong parent-daughter relationship, and how do you encourage it? Open communication is everything in building a strong bond! I make sure she knows she can talk to me about anything — dreams, fears, or just gossip. We share thoughts and feelings without judgment. I encourage her to speak her mind and I listen to what she has to say. It’s about creating a trusting, supportive environment where she’s comfortable being herself and knows she can rely on me for guidance and understanding.

SL: What values do you feel you have taken away from growing up with your mom, especially now that you ‘re out of the nest? My mom was a powerhouse of confidence and charisma. She could walk into any room and light it up with her presence — which is something I have always admired about her. Now that I’m in college, I can see pieces of her in me. I’ve taken her boldness and her way of owning who she is, and I carry that with me on campus. Whether it’s speaking up in class, making new friends, or even just walking my stuff down the sidewalk, I feel her influence in everything I do.

SL: What is your dream job? I've got a lot of interests, and honestly, I’m still piecing together what my future looks like. I'm leaning towards a double major in PR and Advertising, but the idea of running a restaurant sparks a certain excitement in me. Watching my parents work in the industry, they both have so much passion for it and I think it would be truly lovely to take after what they have worked so hard to create.

SL: Is there one specific lesson that your mom has taught you that stands out the most? It may sound cheesy, but my mom taught me how to love others. She has this ability to make everyone feel super loved, even people she’s just met. She has so much empathy and kindness for others, and it's something I really admire and want to emulate. She’s always working so hard to make sure everyone in her life feels appreciated and loved. When it comes to Steakyard, she always greets every employee with a bright smile and a warm hug. Everyone feels so much happier after talking with my mom, and that is something I hope I have learned from her.

SL: What are your favorite memories of being at home with mom? Some include binge watching some of our favorite shows (like Sex and The City, House and Monk), cooking meals together, and going on walks. We could spend the entire day just catching up on Netflix, and it would be the best day ever in my book! Another fond memory of mine would be cooking together. Both my parents have always been amazing cooks, and memories in the kitchen are definitely some of my fondest memories as a child. We would all hangout in the kitchen, laugh together, and make delicious meals. Lastly, we are fortunate to live in an area with a beautiful neighborhood, which meant we constantly go on walks around the beautiful nature surrounding us. It was always the best time to get in some exercise with the woman I admire the most!

Work-Home-Life Balance

| Work-life balance is always a struggle. You would think that since I travel most of the time that I would be able to relax and enjoy all of the places I visit. However, when I am traveling, I’m planning, writing, capturing photos, exploring the details of each location, along with many other aspects of my business. It can be a bit chaotic, so my husband and I try to plan one or two days in between trips to stay home and just relax, or spend time with family. Putting down the phone and stepping away from technology is the key.

Challenges | One of the challenges I have experienced is showing how we are valuable— establishing the fact that while we get to travel, it

is still a lot of work to provide high quality content and run it as a legitimate business. We have built a strong brand with multi-media outputs and diverse products, as well as built a team who get to work remotely and complete work on their own schedule—while getting to travel as well.

Giving Back | Some of my favorite charities are Vickery Meadows and their Eagle Scholars program which helps youth in Dallas go to college. Bonton Farms is another favorite. They do a lot of community outreach providing food and homes for people experiencing homelessness.

Dream Vacation | My dream vacation would be anywhere by the water where we can relax— staying at hotels with spas and fun activities. I love to travel to Mexico and South America, learning the cultures and expanding my Spanishspeaking ability.

Defining Success | A lot of people might say I’d define success as my cookbook or major brand deals, like when Disney sponsored my channel, but to me success comes from wanting to do something and having it turn out exactly as it did in my mind. Social media is a tricky business. You’re at the mercy of the algorithm. But when I dream up something crazy, like how to host a Jurassic Park party with dinosaurs and it turns out even better than I could have imagined, that’s a win.

Challenges | I’m a one woman show! When people watch episodes of The Rose Table, I don’t think they realize that I’m directing, filming, cooking, and hosting all at once. I edit all of the content. I photograph all of my recipes. I do every part of it—and it’s exhausting!

Greatest Professional Accomplishment | As a lifelong Disney lover, my greatest accomplishment has to be partnering with Disney. When I started Disney Dinners, The Rose Table only had 10,000 fans. When my very first episode—Frozen—got 10,000 views, I knew I had something special. My Alice in Wonderland episode went viral on Facebook and I ended up getting a video contract with Meta that changed my life. A month after I finished the year-long series, Disney reached out to me and has since sponsored three episodes: Mary Poppins Returns, Captain Marvel, and Maleficent Mistress of Evil. The Rose Table now has over 300,000 fans across platforms and over 40 million video views last year alone.

Work-Home-Life Balance | It’s difficult when you work from home. In addition to running The Rose Table, I also own a PR company. I work a lot of 12-15 hour days. I’m admittedly a workaholic, but I love what I do so I’m kind of always working. I think the key is to do something you’re so passionate about, you never feel like you’re working. I also make time to be outside every single day. I walk my dog, garden, play with my horses… being outside really grounds me and gets my eyes away from screens. I feel like a new woman after an hour with my horse!

Giving Back | I’m a huge patron of the arts and there are so many wonderful organizations like Dallas Symphony Orchestra and Shakespeare Dallas that do so much to introduce children to the arts.

My Last Meal | Probably my grilled lobster tails with ginger lime beurre blanc, roasted potatoes, and filet mignon—and we can’t forget dessert! A big slice of my Chocolate Lavender Dream Cake. Mmm. Now that’s a perfect meal in my book!

Work-Home-Life Balance | To be honest, the edges are very blurred. I set boundaries although they are not set in stone. Part of my life surrounds dog rescue and I’m a ‘special needs and hospice’ foster for various rescues in the U.S. By it’s very nature, that role is not 9-5 and sometimes I travel long distances to bring a dog back for care. By the same token, photography commitments are not always 9-5. I pride myself on being very flexible in accommodating client needs. My day starts

early but even days I don’t need to be up, I enjoy that extra hour or two spending time with my wonderful dogs. They give me so much joy and love that it sets me up for my day—and with my 7 dogs plus two fosters that’s a whole lotta love!

Challenges | Many challenges starting anew in a foreign land. I’m British and when I moved here from England almost two decades ago I was on a visa with my (also British) husband so I was allowed to live here, but not work. The first few months I could go nowhere nor do anything. It was tough, but I had my camera so it was put to good use and saved my sanity!

Giving Back | I support many dog rescues, by fostering, donating (money or my photography skills for fundraising events and calendars). My husband and I also have a small beekeeping business and 25% of all proceeds goes to various local dog rescues.

Words To Live By | Life is like a camera. Just focus on what’s important and capture the good times, develop from the negatives and if things don’t work out, just take another shot.

What Clients Can Expect | First meeting is a fact finding exercise about what the client wants, expectations and goals. It’s a friendly, very relaxed meeting in person, or by phone. Then a follow up written communication outlining and agreeing to the shoot plan (date, time, location, costs, contingencies). It’s very fluid and efficient, and completely stressfree. I communicate well with my clients so there are no surprises. Shoots themselves are typically relaxed and most clients think they’re even fun!

At The End of a Long Day… I have all the fun I need doing my photo shoots and activities with my dogs. But if I have an hour at the end of the day, I practice my violin. A skill I’ve been trying to master for years. Progress is slow, but I enjoy using a different part of my brain. My deaf fosters commonly sit with me as I tickle the strings—I guess they won’t mind if I’m off key!

At the Heart of the Mission is a Mother’s Love

MOM ON A MISSION

It was July 2017, and it was a very trying time for our family. I had been dreading it for years and now the time had arrived. You see...14 years prior, I gave birth to my first child. A precious baby boy. We were told that he was born with a heart murmur like more than 66% of newborns and that we shouldn’t be concerned. More than likely it was harmless and should go away with time. The pediatrician informed us that an appointment with a pediatric cardiologist had been scheduled for us to confirm it was nothing out of the ordinary. Due to the assuring tone of the doctor’s voice and also the fact that we were naive first time parents, we didn’t give it a second thought. They released us from the hospital and off we went to be parents.

Back then, I prided myself on being super organized. My claim to fame was that I had a plan and then a backup plan for everything. Our family and friends weren’t phased to receive baby announcements just days after our son’s birth. Everyone knew I was the person that always sent thank you notes immediately—and our Christmas cards were always addressed and ready to be mailed the day after Thanksgiving. I loved the satisfaction of being on top of everything—and the feeling of always being in control!

I can still remember that Friday morning. Confident that it was going to be a quick appointment just up the street, we left the tv on, grabbed the diaper bag, and the three of us hit the road. I recall being so happy—a little bit sleep deprived, but nothing I couldn’t handle. Becoming a mom was something I was groomed to do, afterall I helped raise my four younger brothers! I was ecstatic and everything was going just as planned.

We checked in at the front desk of the pediatric cardiologist’s office, followed by several tests performed on my son. Then we waited, and waited, and waited. My son started getting fussy—but not nearly as fussy as my husband who was ready to go ask if they had forgotten about us.

Suddenly the doctor appeared with a stoic look on his face. He pulled up two chairs for us to sit down. So we did and we listened closely to find out what news he was about to tell us. Our son had a congenital heart defect called ‘Tetralogy of Fallot’ which meant that he needed open heart surgery immediately... it was literally a matter of life or death.

My heart dropped. From that point forward my life would be forever changed.

The upcoming days, weeks, and months were surreal. Living in the hospital, crib side, was my new normal. My husband continued working and going to school to get his masters degree, coming to the hospital every spare second he had.

Eventually, my maternity leave was up and we really needed for me to get back to work. Daycare was not an option for my son—we couldn’t risk him getting sick. I began to work from our home which was on the East Coast at that time. I would be recruiting for West Coast clients at night and caring for my son during the day. Honestly, neither job had a beginning or an end time.

With time, my son grew stronger. He was healthy and had no restrictions. With time, our family and friends were able to put this in the past and move on.

However, my husband and I knew our future would consist of a second open heart surgery for our son. He was still missing a pulmonary valve. He would be able to function without the valve to a certain point then surgery would be mandatory. The doctor explained there was no need to put in a valve now that he would outgrow, then have to replace that with a bigger valve later. Our son would be monitored extremely closely throughout his life and when the perfect time presented itself, we would then move forward with the second surgery.

I had been slapped in the face by reality—and I had zero control. I had struggled everyday knowing we would have to go through the agony of a second open heart surgery for our son. Even more of a struggle was not knowing when it would take place. I tucked this information deep inside me and tried to live my life.

At the point when my son was almost three and I was pregnant with my daughter, the economy took a turn and I was laid off. It turned out to be a blessing. I would have my daughter and then right after I would be pregnant again with our second son.

We had our family. We found happiness in life’s simple joys. Money was always tight—and we felt the stress of the fast paced, “living to work” East Coast! After what we had been through, we were exhausted and ready to move to a more relaxed, family friendly area of the country where we could raise our family on my husband’s salary alone without any financial burden. We had to give up a lot of materialistic things and vacations without our dual income in exchange for me being able to stay home and raise our children. What was even more challenging was the reality of having no family nearby. We would be on our own. No emergency contacts. We made the decision and we made the move.

My oldest son has been a die-hard Red Sox fan since birth. Born in Massachusetts with a baseball in his hand and a Sox cap on his head. He’s really good, too! And I’m not just saying that because I’m his mom. From the first time he was on the field, people would find me after the games to tell me how they love watching him play. “He plays big” is something I’d constantly hear. And I couldn’t be prouder.

My son was always small in comparison to the other players. I could look out on the field and spot him in an instant—a foot shorter than the others. Natural talent, always practicing, and the genuine love of the game is what makes him such a good player. In my opinion, it’s the one aspect of his life where he exudes confidence. Something special happens to him the minute he steps out there, he’s a different person.

It was only natural that when the time came for his second open heart surgery he insisted that we strategically schedule it for the day after his baseball season ended. He didn’t want to take any time away from the field. This plan would give him plenty of time to have the surgery and recover before starting high school. Then, he’d be able to get back on the baseball field with more energy than he had ever had before. He lived for baseball.

The time leading up to the surgery was exactly what you would expect it to be. The first surgery we didn’t have time to process and we were in shock. But, this time seemed like we had all the time in the world. But both times I was very humbled—and equally as terrified. Naturally, children look to their parents for protection and assurance that everything will be alright. All I could do was have faith that God had a plan and He was looking out for us.

WHAT ELSE COULD I DO?

All of a sudden it hit me, just as I was laying on my son’s bedroom carpet, admiring all of his Red Sox paraphernalia: pennants of championships they won, pictures of Fenway Park and the infamous “Green Monsta,” posters of his idol, Red Sox second baseman, Dustin Pedroia.

I started daydreaming… Dustin Pedroia, small in stature but plays big, a second baseman, just like my son! Dustin was someone my son could relate to, someone who had to play through injuries and had come back even stronger and better than ever before!

I knew exactly what would inspire my son to keep his spirits up before surgery and motivate him throughout his recovery. I would convince Dustin Pedroia to meet with him!

HOW WOULD I MAKE THIS HAPPEN?

I had no idea. I didn’t know Dustin Pedroia. And, I didn’t know anyone that knew Dustin. I didn’t even have social media at the time—those things didn’t matter to me. I was going to make this happen—I had to. I was a mom on a mission and there was no stopping me. Adrenaline pumping, I just remember thinking, I’ve got this!

This meeting between my son and Dustin would have to take place where we lived now in Texas. I immediately looked up the Red Sox game schedule. Unbelievable timing! The Red Sox had a few away games lined up against the Texas Rangers— conveniently taking place at the stadium just 30 minutes from our house. Those games were scheduled for less than two days away. The clock was ticking...

In the back of my head, I kept hearing my friend Jennifer’s voice saying, “God made you his Mom for a reason.” I was inspired!

It was right then that I knew exactly what I had to do. I would make this happen by relying on nothing more than my Godgiven talents. I have always been able to make special connections with people—establishing rapport and lasting relationships comes effortlessly to me. I never really thought much of it. To me it was more of a family trait—my four brothers and I

have always been able to connect with anyone. This “family trait” is what has made me successful in both my professional and personal life. It was clear to me what I needed to do.

Without wasting even a second, I got on my phone and called everyone I knew... and I mean everyone! If you had ever had a conversation with me and I got a hold of your phone number, you got a call. If I didn’t have a phone number, but I had your email address, you got an email.

I simply explained my compelling situation. I needed help. It was the only way I could make this happen. It was for my son. It was beyond important to me. It was a very emotional time and this is exactly what he needed. It was what I needed, it was all I could do.

I was brought to tears! I pictured my Aunt Linda telling me, ”Ever since I moved out of Jersey I’d gone soft!” I wiped away my tears and let out a big laugh! Everyone had offered to help me! Honestly, I had no idea I had such influential friends of friends, of friends, of friends! I was able to secure the meeting with Dustin Pedroia within the record time of one day and a half—thank you very much!

I was so proud of myself, not only did I secure a meeting with Dustin Pedroia, I was given free tickets and field passes for our entire family. My son met his idol and I made that happen. All because I had an idea and I went for it!

As for my son, he made a full recovery. He’s still playing baseball. As for me, I sleep a lot better these days. I learned life happens to all of us... we are all faced with challenging situations. Sometimes, we need to look deep inside ourselves, find our talents and make the best of every situation. Afterall, that’s about the only thing we can control.

HIS PERSPECTIVE:

As summer creeps closer, I can’t help but compare my younger brother, Daniel’s, summer as an 11-year-old in the mid-1980s with the summer that his 11-year-old daughter, JuJu, will experience this year. Though the experiences are similar in name, they are as different as night and day. Daniel’s are more representative of the night.

The essence of summer is camp. JuJu likes horses. JuJu will attend a horse camp where she will, as advertised, ride horses. As a child, Daniel also liked horses. He too attended a horse camp. It was run by the YMCA.

I remember vividly the day we dropped him off at the muster point for the bus ride to the camp. It was in front of a drab governmental-looking building surrounded by an extremely high metal fence. It was the type of fence that a kid knew better than to climb. The camp bus idled just outside the fence. The bus was not yellow. It was barn red. The chicken wire that covered the windows was a strange touch, but it fit the farm theme. I could tell by our mother’s slow drag from the Doral cigarette that hung from her pursed lips that the lavish nature of the bus gave her a sense of pride.

As a single mother, she was thrilled that she could give her youngest child such a special experience. We watched Daniel board the bus and take a seat by a window. In bewilderment, he gazed out the window and into what the next week would hold. His gaze was filled with ruffian youths from Detroit-area Future Felons of America (FFA) chapters and flying manure. As the bus departed, I noticed “Young Men’s Correctional Adventures” printed on its side. It was a reasonable misunderstanding on the part of our dear mother, so I didn’t bring it to her attention. Each night of the weeklong camp, Daniel sent letters home. According to the letters, only counselors rode on horseback. The campers hiked or as they called it “marched” next to the horses. When they weren’t on marches, they cleaned horse stalls, and ate tasteless high calorie meals.

Within each letter, he described an ever-growing level of despair and pled for our mother to come get him. We received the letters three days after he returned from camp. It was perfect timing, because he spent the first two days after he returned from camp in the emergency room. The weeklong diet of high calorie foods and his innate fear of outhouses were not a good combination.

With nothing more than a head nod, fitting of a mob boss, my mother gave Henry Ford Hospital’s team of medical interns the green light to light up Daniel with a series of disimpaction procedures that lasted nearly 48 hours.

After JuJu’s horse camp ends, she’ll take a four-week vacation to Wisconsin and Michigan. She will spend countless hours on lakes where she will fish, tube behind a speedboat, and encounter wildlife. When Daniel was 11, he took a road trip from Detroit, Michigan to Syracuse, New York. Most of the road trip was by car. Some of it was on foot. Our mother did the best she could. As kids, we wished she could do 35 percent better. Thirty-five percent represented the price difference between name brand and generic brand foods. Most of the time, the difference didn’t bother us. Our bodies acclimated to the generic, but it was problematic on road trips when meals typically involved McDonald’s. Our bodies did not easily adjust to the shock caused by eating food from the preeminent fast-food restaurant.

At a particular stop, I gobbled down a meal deal. An hour later, as we drove through Hamilton, Ontario, which is about halfway to Syracuse, my body began to react in a strange, uncomfortable, and unappealing way. I did not want to bear the wrath of our mother’s displeasure, so I transferred it to Daniel. I preemptively accused Daniel of offensive and unseemly behavior. I lectured him on the importance of managing himself while in the presence of others and to speak up if he needed a rest stop. Despite my lecture and his adamant denials, his alleged behavior continued for miles until my mother eventually pulled off the rural Canadian highway. She forcibly removed Daniel from the car, pointed him toward Syracuse and made him walk on the shoulder of the highway as we drove slowly behind him. If a Mountie had pulled us over, our mother’s only defense would have been that she was “a crazy American.” When I felt that Daniel had enough time to reflect upon his behavior, I suggested that we welcome him back into the car. Daniel rejoined us and, as was a common event that summer, gazed dejectedly out the window.

At the end of summer, JuJu will have about a month of pure freedom when she is not on a trip or at camp. She plans to spend her time relaxing and not thinking about school. As an 11-year-old, at the end of summer, Daniel also had about a month of pure freedom. He spent the first 29 days freely running from the torment that I imposed. Much of the torment was psychological. In a few cases, it was physical such as the time I pile-drove him on our front porch. A passerby witnessed the horror and inquired as to his wellbeing. I assured them that he was fine and then placed my brother in a full nelson as the good Samaritan departed to the sounds of Daniel’s girlish shrills. Call it Karma, but on the last day of pure freedom, the tide shifted in Daniel’s favor.

Like all days, I planned for a full day of provocation that would go unanswered much like Daniel’s letters from camp. This day was different. With each provocation, another one of Daniel’s misfit friends arrived in our backyard to play Dungeons and Dragons, eat paste, and to

peruse a back-of-the-rack magazine that they pulled from a dumpster behind a 7-Eleven. Hidden in plain sight, my brother’s minions grew in number. Upon a final provocation, they went on a hunt. They chased me up a birch tree. It was not enough that I was treed and was no longer a menace. Daniel wanted me out of the tree. He, Lord of the Flies, found a long stick and sharpened it on the sidewalk. It was unthinkable that he would launch the prehistoric weapon in my direction... until he did.

The first couple throws missed me. They were warmups. Our mother was right. D&D was a bad influence. The third throw struck me above the eye. I tumbled out of the tree and into the same ER examination bay of Daniel’s disimpaction. While I was being stitched-up, Daniel sang and waltzed to a tune that he titled “All Hail Lord of the Flies.” If that was not insulting enough, in true Bollywood style, the ER staff joined him in chorus.

Thankfully, my daughter, Revi, does not have a sibling.

In this issue of Society Life’s Mom’s column, we asked local Pre-School teacher, Samantha Stetson to answer 20 questions about her experiences both in becoming and being a mom. Samantha has three children: Ainsley, 13 years old, Avery (deceased), and Ashlyn 9. Samantha lives with her husband, Adam and their girls in Grapevine. Here’s what she had to say…

SOCIETY LIFE: What’s one of your earliest memories you have of your Mom? SAMANTHA STETSON: Growing up, we lived in a quad. It’s similar to a duplex here in Texas, but it has four residents—two upstairs, two downstairs. And, there was a swimming pool at our complex. I’d swim all day at the pool with my mom. When it was time to cook dinner, we’d go home, she’d start dinner and I’d wait for my dad. Very soon after, dad would arrive home and he and I would head back down to the pool and we would swim until dinner was ready. Those are very precious memories to me.

SL: What is something you thought about Motherhood that was totally wrong? SS: I thought motherhood would be easy. I thought I would have a better relationship with my teen daughter than I had with my parents when I was a teenager. I never dreamed my relationship with my teen daughter would be very similar to the relationship I had with my parents as a teen. But Ainsley (my oldest) and I are like the very same person at different ages, so it’s literally like looking at me when I was 13, so that explains a lot! LOL! On another note, I sometimes hear other moms complain about the newborn stage and how hard it is. I loved having newborns. I never minded getting up during the middle of the night to care for them, even when I was sleep deprived. Snuggling with them and caring for them brought me all the energy I needed. It was such a special time with my girls that I’ll never forget.

SL: What’s something you always wanted to do but didn’t... and why didn’t you? SS: My biggest regret was not going to college. One of my parents went to college and one did not. I didn’t focus on school when I was younger. I didn’t get the grades I should have in my youth. This is exactly why I’m very tough on my girls as it relates to school. They both know they had better bring home good grades or there will be consequences. My standards for them are very high and they know it. If I could change one thing, that’s the only thing I would change. I did return to school later to obtain my associate’s degree.

SL: Was there something your Mom did when you were a kid that you swore you’d never do as a parent? SS: This is a tough question. My mom was the best. When I started having kids, she began having conversations with me about some of her regrets. My mom is known for being a neat freak. She didn’t get in the floor and play with us a lot. While I’m still working on it, and the apple didn’t fall far from the tree, I’ve learned that a house is supposed to be lived in and look like someone lives there. I did things a little differently and spent a lot of time playing with my kids and getting to know them. But, that neat house still gnaws at me often!

SL: What did you think you wanted to be when you grew up? SS: I always loved animals and, like many young girls, I wanted to be a veterinarian. I grew up around horses because my family owned racehorses. We got to see “behind the scenes” in the horseracing industry. We spent tons of time around the horses, the jockeys, the trainers, etc. We also became like family with the other families who worked with the horses. I soon realized my sensitivity to the animals when they were injured or sick wasn’t conducive for a career as a veterinarian.

SL: How have your notions of what it means to be a Mom changed over your lifetime? SS: I think I always knew what being a mom would be, but, it’s certainly gotten harder as they get older—because they’re getting their own personalities and feelings. Tweens and teens are no joke! As I mentioned earlier, looking at Ainsely is like looking at me when I was her age, and I’m getting my pay back (laughing)! She’s impulsive like I was and she tends to take things out on me if she’s had a hard day. She’s the typical first-born who’s extremely driven and very hard on herself. She amazes me with her patience and grace for people. And my Ashey—she is a tornado coming through the door, flying by the seat of her pants—a true spitfire. But she’s also the happiest kid I know who beams rainbows and sunshine all day long. She has such a kind spirit. Having girls who are completely opposite, and who need such

different types of parenting is tough at times. But these girls of mine are such good souls who are truly better than me in many ways. I could not be more proud of them!

SL: What’s the best family vacation you’ve ever taken? SS: We love Port Aransas. We are beach people and we have made so many happy memories there. We almost never miss an annual trip to Port A. Sometimes we go twice a year! However, we took a trip to Disney World last year and it was a blast! Both my kids were old enough to enjoy it and they’ll always remember it. We enjoyed all things Disney and had so much fun together as a family.

SL: Is there a moment or event that radically changed the way you saw Motherhood? SS: Most definitely it was the death of my daughter, Avery. This is a hard one to answer because it’s a full circle sort of answer. I thought losing a baby would make me such a better mom because I’d be so grateful, so patient—I’d be the perfect mom after losing her. But truly, in the grand scheme of things, I’m just a normal mom—even after the death of my baby, Avery. Twelve years later, I’ve finally learned that it’s okay to be a normal mom. I get frustrated with my kids. I’m impatient with them. I get tired and grumpy, I yell, if you know me, you know I sometimes say a few cuss words, too. But at the end of the day, I’m just a normal mom—raw and real—and not beating myself up for it.

SL: When did you know you were ready to have kids? SS: I never really thought about having kids. I wasn’t the one who sat around dreaming about my wedding day or baby carriages. It wasn’t until I met my husband, Adam, that I considered the “married with kids” lifestyle. He already had a son from a previous relationship and after we got serious, I knew that I was ready. As soon as we got married, we started trying to have a family, but it took us a little longer than we expected.

SL: What’s your favorite photo of your family or kids? SS: One of my favorites is a photo of us in Port Aransas, arm-in-arm, all lined up in a row. All four of us were looking out at the water and the photo is taken from behind us. It captures a moment in time, yet us, in our element, and in this place we love so much.

SL: What was the first year of motherhood like for you? SS: It was fantastic, but quite lonely at times. We were living in Arizona, away from both of our families. But, it was one of the very best years of my life. Ainsley was a very easy baby. I was able to stay home and enjoy all the firsts. I loved every holiday. I loved introducing

her to my family when we traveled. We were able to travel a lot to see them since I wasn’t working.

SL: What do you want or wish most for your kids? SS: I want them to be fulfilled. I want them to know and have a relationship with God. I want them to be kind and hardworking people who make a difference. Not everyone would agree with this, but I want them to have a higher education because that’s my biggest regret. I don’t want them to have the same regret. I want them to be able to experience it. Being young women—I think it’s important for them to be able to take care of themselves. If they go to college and later decide they want to do something totally different, that’s great. But at least they will have more options than I did.

SL: What are some of your biggest struggles as a Mom? SS: One of my biggest struggles is splitting my time between my two very active girls. I hate missing their things, whether they’re important events or just a regular, weekly type of event—all of their activities all important to me. Many weekends Adam and I must split up because they both have tournaments or games at the same time. I can’t be in two places at once, but I wish I could. Adam hates it, too. He’d love to be at all their events all the time. Those are tough struggles for us as parents.

SL: What would your perfect day off be like? Describe it. SS: My perfect day off would be to wake up to an immediate cup of coffee in my favorite mug, with no kids arguing and no dogs barking. Then, we’d be off to have a wonderful brunch or lunch. My family loves movies, so then we’d head over to our favorite movie theatre and take in a matinee together. The evening would be spent playing games and enjoying our time as a family. I recently had a milestone birthday and it caused me to do a lot of reflection and served as a reminder of how much I cherish time with my family.

SL: What’s the one song that means the most to you? SS: The one song that means that most to me is, “I will carry you,” by Selah. I fell in love with this song after Avery died. I was searching for songs for comfort and to play at her funeral. I can’t always listen to it because it’s still so painful. After she died, I started working with the Miss Foundation that helps families deal with grief for the death of a child under the age of 18. At some point later, they asked me to speak at one of their conferences. After I spoke, I had them play this song. It will always mean so much to me.

SL: What advice would you give to your younger self about Motherhood? SS: The advice I’d give my younger self would be to chill

out about the housekeeping and laundry routine. When I was younger, I was extremely unwavering about my housekeeping schedule. Do you see a theme here?! I have gotten better over the years, but I wish when they were younger, that I would have let them make more messes, and build more forts. I said no to them much more than I should have. My house can be clean when they are grown and gone, but for now, I am learning to appreciate the messy.

SL: Is there a quote, saying, words of advice or scripture you consider words to live by? SS: “Be the light in a sea of darkness.” This world can be mean-spirited and it’s an “all about me” society. I’m trying to teach my children to be kind, supportive, respectful, etc., to everyone—friends, teachers, family. I’ve taught them since they were young to “be the light.”

SL: If you could share a meal with any woman past, present or future who would it be? Why? SS: I would have dinner with my dad’s mom—my grandma. I would ask her about being a mom. She was the kindest, most patient, God-loving woman I knew. I feel that I’m not as patient as I want to be. I think she could teach me a lot. She had “life” down to a science. She was the best mom, the best grandma, kept a clean house, worked hard and I don’t recall her ever raising her voice or being angry. I would call her weekly to ask for advice about parenting.

SL: What Mom from real-life or even TV/movies do you admire most? SS: Many will laugh at my answer, but I admire Rosanne Bar from the Rosanne Bar Show. I feel like I’m a lot like her for some reason. In that show, it’s very much how I grew up. According to my mom, we were a very low-mid income level family. I’d say we were salt-of-the-earth, hardworking people. She’s always very supportive of her kids, but in a funny way. She worked hard and laughed hard. She made all the holidays very special. She was always looking for a way to make ends meet. It’s a feel-good show to me and I could watch it every week.

SL: At the end of a long day, what do you do for fun or relaxation? SS: I enjoy lying in my bed and scrolling through my “Like to Know It” (LTK) app. They offer fashion, recipes, home goods and all kinds of items with the links to purchase the items directly. It is my guiltypleasure activity I do at bedtime. It’s a nice way to wind down from a busy day.

I don’t know about you, but I couldn’t be more excited about the new season of Bridgerton. It’s just such a Rose Table show! To celebrate the latest season, I hosted the Bridgerton garden party of my dreams. And yes, I arrived in the episode via carriage driving my Friesian horse Wendy. What a dream! Here are the recipes from when I hosted my Bridgerton party.

INGREDIENTS

(1) Toss bibb lettuce with strawberries, blueberries, blackberries, goat cheese, pistachios, and raspberry vinaigrette.

(2) Top with edible flowers such as pansies, marigolds, hibiscus, or dianthus.

This might be my favorite party menu to date! Even though this wasn’t technically a tea party, tea is so prevalent in the show that I decided to serve an array of tea time treats and eats. I am thrilled with how this gorgeous dish came out! What could be more extra and more Bridgerton than a salad with berries, pistachios, goat cheese, and edible flowers? It’s as delicious as it is beautiful and truly the ultimate garden party salad. What flowers are edible, you ask? Pansies, marigolds, hibiscus, and dianthus are a few edible flowers that are easy to find. To prepare edible flowers, you’ll want to snip the blooms off and dunk them ice water to remove any bugs or dirt. You can get a bunch of fabulous varieties of dianthus from my friends at Jackson & Perkins. Use the code ROSETABLE15 on 15% off your purchase. Roses are technically edible, but rather ironically, I don’t love the taste of roses. However, they’re perfectly safe to use here and also make for stunning cake decorations. Probably goes without saying, but never eat flowers that have been treated with pesticides!

INGREDIENTS

1/2 cup sugar

1/2 cup water

1 cup cubed pineapple

2 green tea bags

1/4 cup elderflower liquor

3/4 cup amaretto

2 bottles champagne

Orange bitters

Optional: gold prism powder for sparkle

(1) Make the pineapple syrup: Bring sugar and water to a boil in a small sauce pan until sugar is completely dissolved. Pour over pineapple cubes in a heatproof bowl, cover, and refrigerate for 8 hours or overnight. .....................................................................................................................

(2) To make the green tea: Bring two cups of water to a boil. Turn off heat and add 2 green tea bags. Steep for 2-3 minutes, then remove and let cool. Chill well.

(3) Strain pineapple syrup from solids, then add syrup to a pitcher along with chilled green tea, elderflower liquor, and amaretto. Just before serving, add a bottle of champagne and a few dashes of orange bitters. If desired, add a bit of gold prism powder for a sparkling diamond effect. .....................................................................................................................

I did hours and hours of research on regency era punch recipes so that you don’t have to. I found that most were a combination of green tea (crazy, right?!), fruits, dark liquor, and champagne. Fun fact: pineapple was all the rage in the Regency Era. In fact, a pineapple would cost you about $8,000 in today’s money and was therefore the chicest fruit you could be seen with—it was such a feather in one’s cap that people even strolled around carrying a pineapple! Can you even?! Google it. I’m not kidding! If you’ve never made a simple syrup before, don’t panic. It’s easier to make than noodles are to boil. Just combine water and sugar in a pot and cook over medium heat until it looks like water. Pour over pineapple and refrigerate. Ta da! Now you have delicious pineapple syrup to use in cocktails all month.

Diamond of the Season Punch

INGREDIENTS

8 oz cream cheese

3 Tbsp honey

1/8 tsp cayenne (or to taste)

Crackers for serving

Optional: fresh honeycomb

(1) Set cream cheese on a small serving plate.

(2) Warm honey with 1/8-1/4 tsp ground cayenne pepper (depending on how spicy you want it) over medium heat, whisking until slightly warmed.

(3) Pour spiced honey over cream cheese. Garnish with honeycomb and a sprig of mint. Serve with crackers.

INGREDIENTS

Honey wheat bread

White bread

Phyllo cups

English cucumber

Boursin cheese

Whipped cream cheese

Lox

Lemon

Tarragon chicken salad (below)

(1) To make Lemon Lox: cut crusts off of honey wheat bread. Spread with whipped cream cheese, pile on lox, and add a bit of lemon zest. Cut sandwiches into triangles.

(2) To make Cucumber Boursin

Sandwiches: cut crusts off of white bread. Spread with Boursin cheese, add four thinly cut slices of cucumber, then cut sandwiches in half.

(3) Bake phyllo cups according to package, then fill with tarragon chicken salad.

TARRAGON CHICKEN SALAD INGREDIENTS

2 lbs chicken breast

Paprika, garlic powder, herbs de Provence, salt, pepper for chicken

1 cup plain Greek yogurt

1 small lemon (zest and juice)

1 tsp Dijon mustard

1 Tbsp fresh tarragon leaves, chopped

1 tsp salt

1/2 tsp freshly ground black pepper

1 1/2 cups red grapes, washed, dried, and chopped

1/2 cup slivered almonds

(1) To grill the chicken: Preheat grill to about 350-375 degrees. Slice breasts in half for chicken cutlets. Season cutlets well on both sides with paprika, garlic powder, sea salt, freshly ground pepper, and herbs de Provence. Drizzle with olive oil on both sides, rubbing the spices in. Grill cutlets for 5 minutes per side or until internal temperature reaches 165 degrees. Cool completely before making chicken salad.

(2) Whisk together Greek yogurt, zest from one lemon, juice from one lemon, Dijon mustard, sea salt, ground black pepper, and fresh tarragon in a large bowl.

(3) Chop chicken breast and add to bowl along with grapes, and almonds. Stir until combined and chill until ready to serve.

I made three tea sandwiches served together on a tiered serving platter: Lemon Lox (lox, whipped cream cheese, and a bit of lemon zest on white bread), Cucumber Boursin (thinly sliced cucumber and Boursin cheese on honeywheat), and Tarragon Chicken Salad served in adorable phyllo cups.

Lemon Lavender

Shortbread Cookies

INGREDIENTS

For the Cupcakes:

2 cups sugar

3 1/4 cups flour

2 1/2 tsp baking powder

1 teaspoon salt

INGREDIENTS

12 Tbsp unsalted butter, at room temperature

2/3 cup dark brown sugar

1 egg, at room temperature

1 tsp vanilla extract

2 cups + 2 Tbsp all-purpose flour

2 tsp food grade lavender buds

1/4 tsp salt

Zest from 1/2 lemon

1 Tbsp lemon juice

Coarse sugar for rolling

(1) In a stand mixer, beat butter until smooth and creamy. Add brown sugar and beat on medium speed until well incorporated. Beat in egg and vanilla, then scrape down the sides of the bowl.

(2) Slowly mix in flour, dried lavender and salt. Beat in fresh lemon zest and juice, . Divide cookie dough in half and roll into two logs. Wrap in plastic wrap and refrigerate for 4 hours or overnight.

(3) When ready to bake, preheat oven to 350 degrees Fahrenheit. Roll logs in coarse sugar, then slice into about 34-36 cookies. Place two inches apart on cookie sheets and bake for 10-12 minutes or until starting to brown on edges. Cool five minutes on sheet before transferring to a cooling rack.

Honeybee Cupcakes

3/4 cup unsalted butter, soft

1 1/4 cups milk, at room temperature

1-1/2 tsp fiori di sicilia (orange vanilla) extract

4 large eggs

Honey Buttercream, recipe follows Bee cupcake toppers

(1) Preheat the oven to 350°F. Line two muffins pans with cupcake liners and spray with nonstick spray.

(2) In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.

(3) Add butter to the mixer and beat until it looks sandy.

(4) Combine the milk and fiori di sicilia and add to the mixer. Mix on low speed until incorporated. Don’t forget to scrape the bowl as you go!

(5) Crack eggs into a bowl. This way, you won’t accidentally get egg shells in your batter. With the mixer running on low, add eggs one at a time. Make sure each is incorporated before adding the next.

(6) Divide batter evenly amongst 24 cupcake liners. Bake 20-22 minutes or until toothpick inserted in center will come out clean. ............................................................................................

(7) Remove cupcakes from oven and cool for five minutes before removing them from the pan. Cool completely, then frost.

INGREDIENTS

For the Honey Buttercream:

2 cup butter

2 Tbsp honey

4 cups powdered sugar

1 tsp vanilla

(1) Cream butter and honey until light and fluffy — about 5 minutes.

Add powdered sugar 1-2 cups at a time.

Add vanilla and beat a few more minutes until creamy.

INGREDIENTS

1/4 cup powdered sugar

4 eggs, separated

1/2 cup granulated sugar plus 1/3 cup , divided

1 tsp vanilla extract

1/2 cup all-purpose flour

1/3 cup dark cocoa powder (I love Hershey’s special dark)

1/2 tsp ground cinnamon

1/2 tsp baking powder

1/4 tsp baking soda

1/8 tsp salt

1/3 cup water

Strawberry Cream Cheese Filling (recipe follows)

Powdered sugar for dusting

(1) Heat oven to 375°F. Grease a 15.5×10.5×1-inch jelly-roll pan, line with parchment paper, and grease paper. Spread a thin towel on the counter and sprinkle with a handful of powdered sugar.

(2) Carefully separate eggs. Beat egg whites in large bowl until soft peaks form.

Gradually add 1/2 cup of granulated sugar, beating until stiff peaks form. In a stand mixer, beat egg yolks and vanilla on medium speed about three minutes. Gradually add remaining 1/3 cup granulated sugar; continue beating for two more minutes.

(3) Whisk together flour, cocoa, cinnamon, baking powder, baking soda and salt in a small bowl. Add to egg yolk mixture alternately with water, beating on low speed just until batter is smooth. Gently fold beaten egg whites into mixture with a spatula just until the batter is uniform in color. Spread batter evenly in prepared pan.

(4) Bake 12 to 15 minutes or until top springs back when touched lightly in center. Immediately invert onto prepared towel or parchment paper and peel off paper. Carefully roll cake with towel away from you starting at one of the narrow ends. Transfer to rack and cool completely. ...................................................................................................

(5) Unroll cake, carefully spread Strawberry Cream Cheese Filling in the center, roll back up, and slice the ends off. Dust with powdered sugar. Store in the fridge or wrap tightly and freeze for later!

STRAWBERRY CREAM

CHEESE FILLING INGREDIENTS

8 oz block cream cheese

6 Tbsp unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla

1 cup fresh strawberries, rinsed and dried

(1) Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Gently fold in chopped strawberries.

Chocolate Strawberry Cake Roll

I thought a cake roll was terribly old fashioned and suited the time period! Frankly, I don’t know why I haven’t been making cake rolls for every party. I made this weeks ahead of time, popped it in the freezer, thawed it the night before. Then all I had to do was sprinkle some powdered sugar on top and serve it with berries. It was truly the star of the show. Everyone loved it!

We are in that perfect slice of the year between spring and summer in Texas where it’s not too chilly and it’s not as hot as the surface of the sun. It’s the best time to dine al fresco and I have found the latest and greatest patio spot to soak up this little bit of spring we get in North Texas. You already know that Roanoke boasts a vibrant culinary scene and now they’ve added another gem to the collection: Oak and Main. Though it’s only been open a few months, Oak and Main is already gaining a reputation for its inviting vibe, “polished” American cuisine and refreshing and unique craft cocktails.

As you step into this culinary haven, you’re greeted by the tantalizing aroma of sizzling burgers on the grill, and the comforting scent of freshly baked desserts, paired with the sound of ice jingling in the shakers as the bartenders sling out exciting craft cocktails. The ambiance is laid back, with warm wooden accents, cozy seating arrangements and an expansive patio that beckons patrons to unwind and savor the moment… and maybe do a little people watching along Roanoke’s main drag. At the heart of this culinary oasis

is its menu—a tribute to American comfort food elevated to new heights. From classic burgers dripping with melty cheese to hearty sandwiches stacked high, every dish is a celebration of flavor and freshness. Let’s dive in.

What I like about Oak and Main’s menu is that they denote items that they believe are unique to them. I used this, plus the help of my server Kennedy, when deciding what to order. The appetizers range from bold Pepita Pesto Meatballs and Crispy Smoked Wings to a refreshing Colossal Shrimp Cocktail. I decided on Crispy Brussel Sprouts—an Oak and Main signature. These delicately fried brussels are lightly basted with sriracha honey and honey balsamic with a sprinkling of smoked salt and lemon zest. It’s served with a sriracha ranch and it’s a good idea to go ahead and get two sides of that, especially if you are sharing.

For main courses, there are elevated favorites such as Beer Battered Fish and Chips and Steak Frites or more exotic offerings, such as the Peach Chutney Chicken and the French Kiss Burger topped with pesto, brie and raspberry preserves. I was torn be-

tween the Coconut Crusted Shrimp and the Glazed Meatloaf—ultimately deciding on the Meatloaf with a nudge from Kennedy. This baked meatloaf is brushed with a tangy sweet glaze and served with beautifully piped cream cheese mashed potatoes. It’s comforting and decadent without being overwhelming.

As far as desserts go, if you have room (and you should save room), we were a house divided. My husband loved the Four Layer Carrot Cake with caramel sauce, but I’m a firm believer that desserts must have chocolate. So for me, my not to be missed here is the Chocolate Eruption. It has white chocolate, milk chocolate and a rich chocolate ganache. It pairs perfectly with a cup of coffee or an espresso martini. Speaking of…

It’s not just the food that keeps diners coming back here for more—it’s the unique drinks. Craft cocktails take center stage at Oak and Main where skilled mixologists concoct innovative

libations that ignite the senses. From their take on a refreshing mojito to the classic dirty martini garnished with lemon garlic hummus olives, each cocktail is a work of art in its own right. I enjoyed the Berries Up. It’s a sweet and tangy refreshing mix of vodka, muddled strawberries and raspberries, lemon and balsamic The perfect spring cocktail, if you ask me.

In a city known for diverse dining options and rich culinary heritage, Oak and Main stands out as a shining example of everything that makes dining out in this vibrant community special. With its inviting ambiance, delectable cuisine, and refreshing cocktails, it’s a must-visit destination offering memorable meals for any occasion—where you can savor the flavors of a culinary journey.
