QUARTERLY TASTING NOTES

HOW LONG DOES AN OPEN BOTTLE OF WINE LAST?

How long does wine last after it’s opened and… does wine go bad? After opening, most wines last for about 3–5 days before they start to go bad but this greatly depends on the type of wine!

SPARKLING WINE

1–3 DAYS in the fridge with a wine stopper

Sparkling wines lose their carbonation quickly after opening. A traditional method sparkling wine, such as Champagne, will last a little longer than a tank method sparkling wine like Prosecco. This is because the traditional method wines have more atmospheres of pressure (more bubbles) in them when they’re bottled.

LIGHT WHITE, SWEET WHITE AND ROSÉ WINE

5–7 DAYS in the fridge

Most light white and rosé wines will be drinkable for up to a week when stored in the fridge. You’ll notice the taste will change subtly after the first day, as the wine oxidizes. The overall fruit character of the wine will often become less vibrant.

FULL-BODIED WHITE WINE

3–5 DAYS in the fridge

Full-bodied white wines, like oaked Chardonnay and Viognier, tend to oxidize more quickly because they saw more oxygen during their pre-bottling aging process.

RED WINE

DAYS in a cool dark place

The more tannin and acidity the red wine has, the longer it tends to last after opening. A soft red with very little tannin, such as Pinot Noir, won’t last open as long as a rich red like Malbec. Some wines will even improve after the first day open. Store open red wines in a wine fridge or a dark cool place after opening them. If you don't have a wine fridge, storing them in your normal fridge is better than out in the Australian Summer heat!

In short, wines stored after opening can go bad in two ways. The first is when acetic acid bacteria consumes the alcohol in wine and metabolizes it into acetic acid and acetaldehyde. This causes the wine to have a vinegar-like smell.

The alcohol can also oxidize, causing a bruised fruit taste, that robs the wine of fresh, fruity flavours. These are both chemical reactions, meaning the lower the temperature you keep a wine, the more slowly this will happen.

NOSE:

Fragrance of white florals and ripe pineapple.

SIRROMET 2023 Verdelho NEWRELEASE

PALATE:

This Verdelho displays notes of tropical fruit characters - typical of this Portuguese variety. Perfectly integrated characteristics of grapefruit, melon and passionfruit with a crisp, lemon zest finish come through on the palate. Aged briefly over yeast lees for a subtle creamy texture.

WINEMAKING COMMENTS:

Sirromet's vineyards are family owned and located in the Granite Belt. The region is a unique strip of land with mineral rich soil and cool, elevated climate.

FOOD MATCHING:

Chilled prawns & bug, seasonal vegetable salsa, avocado, fennel & spiked cocktail sauce.

2015 Pinot Noir Chardonnay

NOSE: Sophisticated aromas of honeysuckle and nougat interlude with a back drop of shortbread biscuit, creamy green apple and wild strawberry.

PALATE:

Combined flavours of Pinot Noir and Chardonnay deliver finesse and charm that underpins a remarkable balance and textural mouthfeel.

WINEMAKING COMMENTS: Made in the hand-crafted methode traditionnelle style, this Pinot Noir dominant blend spent 5 years

SIRROMET 2022 Pinot Grigio

NOSE:

Lifted fragrance of pear drops, honeysuckle and tangerine.

PALATE:

On the palate, zesty yellow peach and touches of mandarin and exotic spice, soft-textured and balanced with a deliciously savoury finish.

WINEMAKING COMMENTS:

Pinot Grigio is harvested from our Ballandean property, Night Sky, 250 million year old soils deliver the uniqueness required for delicious flavours being harvested from the vineyard and sculptured into a wine of prominence.

SIGNATURE COLLECTION

GRANIT 2022 Vermentino

NOSE: Bright aromas of grapefruit, green apple and almond notes shine through lifted green florals.

PALATE:

Zesty, fresh citrus fruits abound on the palate, with touches of white peach supported by crisp acidity and textural pith.

FOOD MATCHING:

Lemon & pepper sea salted squid, baby gem, radish & tomato salsa.

SIGNATURE COLLECTION 2019 Chardonnay

NOSE:

Beautifully integrated nose of ripe peach, grapefruit, rockmelon and touches of pineapple with creamy French oak and toasted nuts.

PALATE: A dry, sophisticated style with rich layers of white peach, melon, waxy citrus and ripe green apple. Long finish with a fine backbone of acidity and supported by subtle vanilla oak.

WINEMAKING COMMENTS: Fruit was picked a little early to retain freshness and good acidity in the warm 2019 vintage. Crushing and light pressing produced excellent quality juice which was

run directly to French oak barriques after cold settling. Fermentation commenced spontaneously allowing expression of flavours from the wild yeasts unique to our vineyards, with a cultured yeast added mid-way to ensure fermentation completed safely. 30% of barrels underwent malolactic conversion adding creaminess and touches of fresh butter. 12 months over yeast lees in oak has resulted in a rounded wine with layers of pastry texture and intense flavours of lemon curd, juicy peach, apple and toasted hazelnuts.

Homemade fresh gnocchi with wild mushroom ragu.

VEGANSUSTAINABLE

2021 Fortified Sweet Verdelho

NOSE: Baked pear, ripe apricots and touches of sweet pineapple and honey.

PALATE:

A delicate palate of honeyed stone-fruits with tropical overtones, a little citrus acidity to balance the sweetness, toffee apple and sweet spices delivering a silky mouth feel and fresh finish.

WINEMAKING COMMENTS:

Verdelho was late harvested to encourage extra ripeness and complexity of both fresh and dried stone-fruit and tropical fruit favours. The grapes were crushed and

minimal fermentation permitted before fortification to the lower alcohol range of a fortified style, ensuring that the spirit does not overpower the fruit. The wine was matured in stainless steel with some exposure to oxygen to allow development of honeyed and toffee-apple notes, then bottled early to preserve freshness. It is recommended that this wine is consumed within a day of opening, to enjoy at its best.

FOOD MATCHING: Citrus infused crème caramel with compote of blood orange.

SIGNATURE COLLECTION 2016 Sparkling Red

NOSE:

Lifted aromas of dark cherry, ripe black mulberry with a hint of liquorice and fine dark chocolate.

PALATE:

A unique medium-bodied sparkling red with excellent structural acidity, broody tannins and balanced sweetness. A luscious, premium sparkling wine laden with rich, ripe blue and black fruits, cassis and Cherry Ripe florals.

WINEMAKING COMMENTS:

Made in the methode traditionnelle style with aging on lees for a

minimum of 2.5 years, this vintage shows great texture, with dense black Petit Verdot fruit, balanced by beautiful acidity and firm tannins. Careful ripening in the vineyard has ensured intense fruit flavours, toasty mature tannins, and a slightly lower acidity. A fruit-driven style that will also age well over time.

NEWVINTAGE THE IVY

SIRROMET

2019 Cabernet Sauvignon

NOSE: Cassis, bramble fruits and touches of mint and toasty oak spices.

PALATE:

An elegant, medium-bodied style with expressive notes of red and black currants, blueberry, forest floor and spice. Bright acidity keeps the fruit fresh through to the finish with smooth ripe tannins adding structure with touches of cedary French oak.

WINEMAKING COMMENTS: 2019 was warm and dry with many red varieties ripening early,

GRANIT 2019 Nebbiolo

NOSE:

Lifted, feminine aromas of potpurrie, dried Turkish figs, red cherries, pretty rose petals and rosehip with hints of savoury dried herbs.

PALATE:

Softer, fragrant and more approachable than many Nebbiolo's, with typical tannin taking on a more powdery and supportive role rather than dominating in this wine. Lovely open florals, dried figs, both sour and red cherries and baking spices cover the palate.

and excellent quality of Cabernet Sauvignon produced on the Granite Belt. Selected parcels were fermented with gentle extraction, followed by careful ageing in older French oak barrels to soften tannins and integrate the lovely intense fruit.

FOOD MATCHING: Handmade pasta with slow cooked lamb ragu.

WINEMAKING COMMENTS:

Careful handling and extraction was kept light to avoid tannic grip. Hand-plunged and matured in tank with a small portion matured in old oak for softness. Released at the perfect time, with lovely integration of florals, fruit and structure. In classic Italian style, this is a beautiful food wine.

FOOD MATCHING:

Duck pancakes, triple cooked whole duck, shaved & pickled Asian vegetables, fresh garden herbs, warm duck pancakes & Peking Duck sauce.

VEGANSUSTAINABLE

NOSE:

Aromas of red and black berry fruits -raspberry, red currant, black cherry, black currant and hints of mulberry and boysenberry. Savoury notes of black olives as well as charry oak, vanilla and dark chocolate.

PALATE:

Fruit, acid and tannin are woven together to provide a long, satisfying finish with characteristics of raspberry, mulberry, dark chocolate, black olives and a hint of vanilla from oak peering through and typical dried Italian herbs.

WINEMAKING COMMENTS:

The fruit for this Lagrein is from

Riverland, SA. Picked perfectly ripe, the winemaking team let this cold soak for three days to enhance colour and flavour before hand-plunging for five-six days. This technique allows for careful extraction for balanced tannins. Old oak was used for maturation, not flavour. Made with minimal intervention and filtration, and un-fined, this wine can be drunk now but will be happy for five years cellaring.

FOOD MATCHING:

Slow braised lamb shoulder, crispy baby potatoes, zesty baby roasted vegetables with rosemary jus & green olive salsa

SIGNATURE COLLECTION 2019 Merlot

NOSE:

Intense aromas of fruitcake, red plums, blackberry and anise.

PALATE:

Deep, intense blood plum, red and black cherries, touches of rhubarb and baking spices, so expressive of this well- known variety. Maturation in French oak barriques has added subtle notes of vanilla, cloves and toast. Released at three years old, this wine show beautifully developing fruit complexity supported by soft, silky tannins and a long, satisfying finish.

WINEMAKING COMMENTS:

The name Merlot is thought to be a diminutive of merle, the French name for the blackbird, referring to the color of the grape. Australian Merlot is enjoyed for its roundness and soft expression and popular for its combination of berry and vivid plumlike flavours and silky mid palate.

FOOD MATCHING:

Enjoy with oven-roasted pork & spiced apple and blueberry sauce.

WINTER WOMEN’S WINE LUNCH

Our Winter Women’s Wednesday Wine Lunch –14 June – was spectacular, as we wined and dined our way through decoding an Italian Wine Label with our Director Nadine Delahunty and rising star Patrice Lorimer.

The theme of this Winter lunch was to become more familiar with reading international wine labels - in this instance we focused on decoding an Italian wine label. To keep with the Italian theme, the three-course menu was paired with Sirromet's Italian style wines - 2022 Sirromet Pinot Grigio, 2022 granit Vermentino & 2019 granit Nebbiolo.

The Women's Wednesday Wine Club offers a unique opportunity to learn the intricacies of wine, in a fun, casual way, whilst meeting likeminded lovers of wine.

THE EDWARD CLUB LUNCH

Our men’s wine society luncheon – The Edward Club - was another great success this Winter. Wine & food was tasted, discussed and certainly enjoyed! The focus was all about Merlot, learning to appreciate how beautiful and bold this wine can be.

A three course meal and wine pairing was enjoyed, whilst featuring a special interview with Sirromet founder, Terry Morris. The history of Sirromet was experienced by all, as Mr Morris and Winemaker, Glen Eaton, highlighted the vision behind the business.
