THE GUIDE TO DECANTING WINE

Decanting wine to allow some time for the wine to 'breathe' may improve the overall taste, particularly for red wines. But people always want to know how long to wait before you can start drinking.

RED WINES

The majority of red wines can benefit from decanting. Both exposure to oxygen and a period of time for the flavours to begin to evaporate (so we can smell the aromas) can make red wines taste fruitier and smoother after decantation.

At around 15–20 minutes, any reductive traits (reductive means starved of oxygen) such as faint aromas of 'struck match', hard-boiled egg or rubber (when first poured) in red wines should taper off. Reduction is quite common in young red wines, particularly Shiraz. At around 30-45 minutes, any sharp aromas from low levels of volatile acidity (VA) in red wines are less detectable. At around 60 minutes, you will notice the tannins start to mellow out due to exposure to oxygen. The longer you decant your wine for, the less astringent the tannins will taste (the wine will be softer and smoother in the mouth). 60 minutes decanting time is reserved for big, bold red wines.

Drinking Time After Decantation

If you are drinking your wines within a few hours of being decanted, they will be fine. Of course, there are a few exceptions to this general rule:

- Older wines (more than 12 years old) may be more fragile and sensitive to oxygen; very old wines can sometimes 'fade' rapidly after being opened, so in general will need less decanting time

- Delicate white wines with intense aromas of florals, grapefruit or passionfruit (for example) may lose their aromas and look dull, if left in the decanter for too long

WHITE AND ROSÉ WINES

You can decant white and rosé wines for up to 30 minutes, if the wine shows any signs of reduction (struck match character, with not much fruit on the nose initially). However, most of these styles of wine don't need to be decanted. Some aromatic compounds in a wine, like the white stone fruit from a Pinot Grigio, tend to become less prominent with too much exposure to air. For most white wines, just pouring the wine into your desired glass and waiting 10-15 minutes should allow sufficient breathing, leaving you with a wine that's full of beautiful aromatics!

SPARKLING WINES

There are only a few very rare cases where you can decant your Champagne as usually you would pour just before drinking to avoid losing the bubbles. Some Champagnes can show slight reduction and may improve with decanting. A Champagne/sparkling wine decanter has much less surface area to preserve the bead of the bubble.

OTHER WINES

You can also use your decanter on 'fun' wines! Natural and biodynamic wines may often show signs of reduction. This is believed to be caused by a nitrogen imbalance in the vineyard soils.

2023 Pinot Grigio

TASTING NOTES:

A classic Pinot Grigio style with lashings of ripe pear, crisp lemon acidity and textured minerality. Hints of green apple, grapefruit and mandarin round out the palate of this refreshing white, perfect for warm Summer evenings.

WINEMAKING COMMENTS:

The Alpine Valleys is a well-known Australian wine region located on the western slopes of the Victorian Alps. This region benefits from a cool climate and varied terrain. Made in tank with little lees ageing for a textural mouthfeel, this wine is made to be drunk young.

FOOD MATCHING:

Beer brined free range chicken, hazelnut dukkha, tahini mayo, lettuce, pickled radish & a chicken roasting jus

TASTING NOTES:

Sophisticated aromas of honeysuckle and nougat interlude with a back drop of shortbread biscuit, creamy green apple and wild strawberry. Combined flavours of Pinot Noir and Chardonnay deliver finesse and charm that underpins a remarkable balance and textural mouthfeel.

WINEMAKING COMMENTS:

Made in the hand-crafted methode traditionnelle style, this Pinot Noir dominant blend spent 5 years on lees to develop an elegant complexity and richness.

Escabeche of Ruby Creek mushrooms with ricotta.

2023 Sauvignon Blanc

TASTING NOTES:

Scented wild gooseberries and passionfruit with hints of green pea. Our Sauvignon Blanc is handcrafted to deliver a fresh, crisp balance of zesty passionfruit, gooseberry and elderflower with a clean citrus finish.

WINEMAKING COMMENTS:

King Valley is one of Australia's most picturesque and unspoilt valleys. The region benefits from a cool climate, with extremely varied terrain. A fresh, bright style made to be drunk young.

FOOD MATCHING:

Chilled prawns & bug, seasonal vegetable salsa, avocado, fennel & spiked cocktail sauce.

Fiano

TASTING NOTES:

Lifted fragrance of honeysuckle and juicy yellow peach - classic aromas for this varietal. Handcrafted by our winemaking team, using the second batch of fruit from our Granite Belt Fiano vines.

WINEMAKING COMMENTS:

This wine delivers a fresh, balanced palate of honeyed pear, bright citrus characters of grapefruit with subtle lemon pith, fuzzy peach skin and nutty texture, and a soft, rounded finish enhanced by extended yeast lees contact.

FOOD MATCHING:

Market Fish served with saffron fondant potatoes, seasonal greens, beetroot creme fraiche & Salsa Verde

LE SAUVAGE

2017 Chardonnay

TASTING NOTES:

Ripe fig and rockmelon infused with delicate toasted butterscotch and nutty vanilla oak. Richly textured and delightfully balanced with a flinty vein of zesty grapefruit acidity.

WINEMAKING COMMENTS:

Le Sauvage wines are made in selected years when exceptional fruit parcels arrive from the vineyard. 'Le Sauvage' means 'the wild' which refers to the practice of wild fermentation, using only the native yeasts that live on the grape skins. Wild fermentations can produce unique flavour profiles that can't be reproduced with

cultured yeasts, increasing the complexity and intensity of the wine, This Chardonnay was wild fermented in 50% new, 50% older French oak barrels, with 25% malolactic conversion and 10 months ageing over yeast lees in the barrel. Careful selection of only the '5 star' barrels in the blend has produced a stunning wine with great ageing potential.

FOOD MATCHING:

Oven baked salmon or creamy fresh pasta.

2021 Shiraz

TASTING NOTES:

Opulent wild raspberry and licorice aromas dance through a window of silky spice and white pepper. Gorgeous flavours of ripe red fruits glide across the palate supported by a squeaky clean finish.

WINEMAKING COMMENTS:

The variety hails from Northern Rhone in France, here it is producing deliciously elegant mid weight wines of distinction. The Sirromet Shiraz is a fine example of this style, elegant yet powerful and quite different from the Australian Shiraz style at present throughout the country.

FOOD MATCHING:

14 hour Tuscan roasted lamb, black beans, mint and labna.

2022 Lagrein

TASTING NOTES:

Aromas of red and black berry fruits with savoury notes of black olives, charry oak, vanilla and dark chocolate. Raspberry, mulberry, a hint of vanilla from oak peering through and typical dried Italian herbs come togteher with structural acidity and powdery tannin.

WINEMAKING COMMENTS:

The fruit for this Lagrein is from Riverland, SA. Picked perfectly ripe, the winemaking team let this cold soak for three days to enhance colour and flavour before hand-plunging for five-six days. This technique allows for careful

extraction for balanced tannins. Old oak was used for maturation, not flavour. Made with minimal intervention and filtration, and un-fined, this wine can be drunk now but will be happy for five years cellaring.

Slow braised lamb shoulder, crispy baby potatoes, zesty baby roasted vegetables with rosemary jus & green olive salsa

2022 Montepulciano

TASTING NOTES:

Gorgeously fragrant, blueberry notes and jammy crushed red berries with soft subterranean spices. Soft and rich, jammy red and black berries crushed with soft spices and just a hint of vanilla. Inky purple toned with black cherry and cassis, against a backdrop of soft, powdery tannins.

WINEMAKING COMMENTS:

The 2022 vintage of this wine includes our very first harvest of Montepulciano from our Night Sky vineyard from our newly grafted vines. These home-grown grapes were crushed together with some fabulous fruit sourced from

premium Riverland vineyards, with fermentation occurring over around seven days with carefully managed extraction to balance the exuberant fruitiness of this variety with some big and powerful tannins. After pressing, the wine then 'mellowed out' in older French oak for six months to ensure a soft, velvety texture and some subtle vanilla and toast notes before being blended back to tank and prepared for bottling.

FOOD MATCHING:

Try with herb and garlic marinated lamb.

2019 Cabernet Shiraz

TASTING NOTES:

Lifted perfume of violets, wild blueberry and spice, wrapped in intense ripe cassis, cherry and blackberry with touches of mint and pepper. A sophisticated, vibrant palate of red and black fruits with a delicate graphite texture, soft oak touches and long tapered finish.

WINEMAKING COMMENTS:

From the outstanding 2019 vintage in the Granite Belt, the winemaking team has crafted a special Private Bin wine as an affectionate tribute to our Founder, Terry Edward Morris,

who loves this classic Australian style.

FOOD MATCHING:

Wagyu rump served with sourdough scubise, fondant, potato and red wine jus.

TASTING NOTES:

Sugar and spice and all things nice! Delightful baked and dried berry and plum with notes of toffee and roasted nuts. Lovely balance of fruit, spirit, acid and sweetness. Luscious palate of rich cassis, baked plum, fig and raisin with cigar, truffle and touches of mocha delivering a silky mouth feel and a rich, rounded finish.

WINEMAKING COMMENTS:

A rich dessert style of fortified, with very limited fermentation on the crushed grapes permitted before the addition of spirit to create a

sweet style. Long maturation in old French oak adds oxidative notes of butterscotch and walnuts.

FOOD MATCHING:

Plum pudding with crème anglaise, or try a glass with some fine dark chocolate.

It would probably be somewhere in the South-East of France, close to the Alps. I love the mountains, skiing and paragliding.

DESCRIBE YOUR PERFECT FOOD AND WINE BREAK.

Crispy skin salmon and zucchini, generously drizzled with lemon paired with a crisp, fresh white wine,

like Vermentino or Pinot Grigio. My second choice would be assorted cheese with a soft red like Nebbiolo or Pinot Noir. The perfect choice for a break outdoors.
