UPDATE: AROUND THE BAR
Thank you to all of our wonderful members - some old and new - who attended Around the Bar on Thursday 29 August at Cellar Door. It was another great night had by all!
Some new and some pre-loved wines were tasted on the evening whilst members enjoyed a beautiful grazing board put together by our Head Chef, Michael, and his team.

Seven Scenes
Cuvée Blanc:
Our new look NV Cuvée - this sparkling wine is fruity, floral and citrusy with a lovely balanced sweetness. This collection design embodies the natural beauty and atmospheric changes of the Granite Belt region throughout the day. Each bottle in the range offers a unique glimpse into the captivating landscape, appreciating the diverse and picturesque scenes that unfold from sunrise to sunset. With its focus on both the tranquility of dawn and warmth of dusk, the Seven Scenes range provides an immersive experience that celebrates the rich tapestry of nature found in this stunning locale.
2023 Signature Collection Merlot:
A young wine, but a classic - our new vintage Signature Collection Merlot had it's first appearance at Around the Bar. Some members will have received this in their Spring delivery. With 2023 being a slightly cooler vintage in the Granite Belt with long dry Autumn days, this provided perfect conditions to allow slow ripening. This has led to a wonderful concentration and complexity of aromas and flavours indicating great ageing potential for this young Merlot.
2023 Le Sauvage Syrah:
Another young red to add to the mix, but a completely different style to follow our Merlot. A beautiful European style Syrah, much different to your typical Australian Shiraz, made from fruit grown at our Seven Scenes vineyard. A powerful wine with a soft finish, drinking beautifully now and has potential to age with grace.

2012 The Marriage:
A very special addition to the evening was tasting The Marriage Merlot Petit Verdot. This wine was requested by our Founders, Terry and Lurleen Morris, to honour the marriage of their only granddaughter, Stacey. This wine is a joining of the Noble Bordeaux varietals Merlot and Petit Verdot. A special wine to be kept for a significant occasion.



SEVEN SCENES
Cuvée
Blanc
TASTING NOTES:
Lifted aromas, very delicate, fresh, peach, floral and citrus tones. Handcrafted to deliver a pretty balanced palate of citrus and green apple with touches of grapefruit and pear enhanced by the delicate bubbly mousse.
WINEMAKING COMMENTS:
Young, fresh fruit, soft and delicate, a very lively style. Fermented at low temps to help with clean aromatic aromas, all the citrus family and a mixture of peach and floral notes.
FOOD MATCHING:
Enjoy with fresh local oysters or scallops.

GRANIT
2023 Vermentino
TASTING NOTES:
Vibrant aromas of white grapefruit, crisp green apple and white florals fill the senses. Touches of fresh green herbs on the palate with hints of lemon and a clean citrus finish.
WINEMAKING COMMENTS:
Early harvest from a warmer region to produce a lighter, food-friendly style. Fermented and matured for a brief period in stainless steel. Bottled early for drinking now or within the next 18 months.
FOOD MATCHING:
Queensland prawns dressed in lime juice and ginger.

SIRROMET
2023 Pinot Grigio
TASTING NOTES:
Lifted fragrance of fresh pear, honeysuckle and lemon. On the palate, zesty white peach and touches of quince and exotic spice, crisp-textured and balanced with a delicious citrus finish.
WINEMAKING COMMENTS:
Pinot Grigio is harvested from our Ballandean property, Night Sky, 250 million year old soils deliver the uniqueness required for delicious flavours being harvested from the vineyard and sculptured into a wine of prominence.
FOOD MATCHING:
Beer battered zucchini flowers stuffed with whipped minted feta, Salsa Verde & seasonal flowers.

SIRROMET
2023 Sauvignon Blanc
TASTING NOTES:
Scented wild gooseberries and passionfruit with hints of green pea. Our Sauvignon Blanc is handcrafted to deliver a fresh, crisp balance of zesty passionfruit, gooseberry and elderflower with a clean citrus finish.
WINEMAKING COMMENTS:
King Valley is one of Australia's most picturesque and unspoilt valleys. The region benefits from a cool climate, with extremely varied terrain. A fresh, bright style made to be drunk young.
FOOD MATCHING:
Chilled prawns & bug, seasonal vegetable salsa, avocado, fennel & spiked cocktail sauce.

SIGNATURE COLLECTION
2021 Chardonnay
TASTING NOTES:
A savoury style of Chardonnay, displaying aromas of white peach, pear, cashew nut , cedar y oak and bursting with fresh citrus from yellow grapefruit. On the palate, subtle supporting oak adding texture, and light skin contact during fermentation giving hints of almonds with a crisp, citrus finish.
WINEMAKING COMMENTS:
2021 was a cool vintage following the drought year meaning yields were still low due to the vines recovering. Fruit was picked early to maintain freshness. 40% of the
harvest was fermented and matured in older French oak barrels. The balance was made in stainless steel with ageing over yeast lees. Fruit was delicate from this vintage resulting in the oak being used in a more supporting role.
FOOD MATCHING:
Baked snapper with lemon burnt butter sauce and steamed greens.

SIRROMET
2019 Cabernet Sauvignon
TASTING NOTES:
Cassis, bramble fruits and touches of mint and toasty oak spices. An elegant, medium-bodied style with expressive notes of red and black currants, blueberry, forest floor and spice. Bright acidity keeps the fruit fresh through to the finish with smooth ripe tannins adding structure with touches of cedary French oak.
WINEMAKING COMMENTS:
2019 was warm and dry with many red varieties ripening early, and excellent quality of Cabernet Sauvignon produced on the Granite Belt. Selected parcels were
fermented with gentle extraction, followed by careful ageing in older French oak barrels to soften tannins and integrate the lovely intense fruit.
FOOD MATCHING:
Handmade pasta with slow cooked lamb ragu.

GRANIT
2023 Montepulciano
TASTING NOTES:
Gorgeously fragrant, blueberry notes and crushed red berries with soft, sweet spices. Soft and rich, fresh red and black berries, and dark plum crushed with soft spices and just a hint of vanilla. Inky purple toned with black cherry and cassis, against a backdrop of soft, powdery tannins.
WINEMAKING COMMENTS: Montepulciano (“mon-ta-pullchanno”) is a medium-bodied red wine grape originating in central Italy and the 2nd most planted red grape in Italy (after Sangiovese)..
FOOD MATCHING:
Try with herb and garlic marinated lamb.

GSIGNATURE COLLECTION
2023 Merlot
TASTING NOTES:
Intense aromas of dark berries, briar, damson plums with delicate dark florals and fruitcake spice. Complex and powerful flavours of ripe blood plum, blueberry and black cherries, with sweet baking spice and touches of toast and vanilla. 8 months ageing in older French oak barriques has resulted in a plush, velvety texture that combines with the luscious freshness of the fruit. Elegant, finegrained tannins provide structure for a long, distinctive finish. While drinking beautifully now, this Merlot has excellent cellaring potential and can be enjoyed up until 2030.
WINEMAKING COMMENTS:
2023 was a cooler vintage in the Granite Belt with the long, extended dry autumn days providing perfect conditions to allow slow ripening and concentration and complexity of aromas and flavours. The deep intense colour and purity of fruit of the reds this vintage is particularly notable.
FOOD MATCHING:
Enjoy with oven-roasted pork & spiced apple and blueberry sauce.

SIGNATURE COLLECTION
2019 Cabernets
TASTING NOTES:
An intense perfume of violets, cassis, plum and blackberry. Cabernet Sauvignon and friendsexpressive Cabernet's intense cassis and fine tannin offers structure and elegance to the plush, plummy softness of Merlot. Just a dash of dark and brooding Petit Verdot with spice and chocolate tones completes this classic blend.
WINEMAKING COMMENTS:
F2019 vintage was one of the best on record for red wines on the Granite Belt. It was a drought year however, so yields were definitely down with flavour and concentration
up. Around 9 months in oak and bottled in February 2021, so almost 18 months maturation in bottle prior to release. Cabernet yields were down due to the drought - it is usually the last variety harvested so it was more vulnerable to these drought conditions. We produced some of the best Merlot we have had in years in 2019 - so we decided to go with a Cabernet / Merlot blend.
FOOD MATCHING:
Enjoy with chargrilled beef fillet, potato gratin, seasonal greens, truffle butter and jus.

LE SAUVAGE
2023 Syrah
TASTING NOTES:
Intense nose with blackberry, bramble, black cherry fragrances and notes of pepper and mocha - an extraordinary year for Syrah in the Granite Belt. A powerful intensity of fruit, rich, ripe tannin and subtle spicy oak come together to create a soft, velvety texture and long finish.
WINEMAKING COMMENTS:
A 100% wild fermented with minimal intervention. This mediumbodied, European style Syrah was made from a select parcel of fruit from the best block on our Seven
Scenes vineyard. Kept separate from the rest, this was hand-plunged for gentle extraction to balance fruit concentration. Released after two years in bottle, the age will ensure the wine is perfectly ready for you to enjoy. Beautiful and graceful.
FOOD MATCHING:
Charcuterie platter and aged hard cheeses.

I would want to live in Switzerland for the diverse scenery and beautiful food.

Home-cooked roast lamb paired with Sirromet's 2023 Le Sauvage Syrah is a perfect match.

Red Wine And Grape Chutney

Ingredients

Red onion, diced
Red wine vinegar
Orange, peel
Port
Red wine
Red grapes
Cinnamon stick
Star anise
Thyme
Bay leaves
Method
• Heat pan, cook onions and set aside

• Add vinegar and reduce down by 80% add in sugar, orange peel. Cook for 5 minutes
• Add in grapes, cinnamon stick star anise and red wine. Cook until thick and then remove from heat
• Add in thyme, bay leaves and rest for 30min
• Then remove spices and herbs and ready to serve
