If you’ve ever looked at a lineup of the same wine from different years and thought, “What’s the difference?” — you’re ready for a vertical tasting. It’s one of the most fascinating (and fun!) ways to explore wine, and we’re here to tell you why every wine lover should try it at least once.

WHAT IS A VERTICAL TASTING?

In a nutshell: a vertical tasting is when you taste multiple vintages of the same wine from the same producer — like three or four years of Sirromet’s Signature Collection Cabernet Sauvignon or Chardonnay. It’s a deep dive into how the wine changes year by year, revealing everything from vintage variation to how beautifully wine evolves with age.

HOW TO HOST A VERTICAL TASTING

• Pick Your Wine: choose a varietal you love that has a few vintages available. Reds with ageing potential are a great start

• Set the Scene: line the wines up oldest to youngest. This helps you taste the evolution from aged to fresh

• Take Notes & Chat: what aromas stand out? Is one more vibrant, another more mellow? Compare colour, nose, and palate

• Keep It Consistent: same glassware, similar pour sizes, and a clean palate (crackers or bread between sips help)

Oaked Chardonnay 2023 Signature Collection Chardonnay

Style: Rich, creamy & full-bodied

Flavours: Vanilla, ripe stone fruit, butterscotch, toasted nuts

Texture: Smooth, buttery, luxurious

Perfect Pairings: Roast chicken, creamy pasta, soft cheeses

Fun Fact: Aged in french oak barrels — brings out complexity and warmth.

Think of it as the Winter white that feels like a warm hug.

SIGNATURE COLLECTION

2009 Rare Release Pinot Noir Chardonnay

TASTING NOTES:

We invite you to experience this old and rare, late disgorged sparkling wine. Long, slow ageing over the yeast lees produces a sparkling wine of incredibly fine and soft mousse, layered textures of biscuit and sourdough revealing gentle honeyed notes of baked apple, lemon curd with touches of savoury plum from the Pinot Noir.

WINEMAKING COMMENTS:

This wine has spent a long time on lees, developing a richness of

flavours from yeast in the bottle. This richness and rounded palate add both weight and body to the wine. There is a lot of delicacy to the fruit in this wine which compliments the soft mousse. In a glass, the tiny and tight bubbles indicate this wine has been made in the traditional method.

FOOD MATCHING:

Braised beetroot, fennel, squash, roasted pumpkin, salad leaves, champagne and honey dressing.

SIGNATURE COLLECTION

2016 Sparkling Red

TASTING NOTES:

Lifted aromas of dark cherry, ripe black mulberry with a hint of liquorice and fine dark chocolate. A unique medium-bodied sparkling red with excellent structural acidity, broody tannins and balanced sweetness. A luscious, premium sparkling wine laden with rich, ripe florals.

WINEMAKING COMMENTS:

Made in the methode traditionnelle style with aging on lees for a minimum of 2 1⁄2 years, this vintage shows great texture, with dense black Petit Verdot fruit, balanced by beautiful acidity and

firm tannins. Careful ripening in the vineyard has ensured intense fruit flavours, toasty mature tannins, and a slightly lower acidity. A fruit-driven style that will also age well over time.

FOOD MATCHING:

Spiced duck breast with a cherry-port reduction.

GRANIT

2023 Fiano

TASTING NOTES:

Lifted fragrance of honeysuckle and juicy yellow peach - classic aromas for this varietal. Handcrafted by our winemaking team, this wine delivers a fresh, balanced palate of fresh cut pear with notes of honeysuckle, white peach and grapefruit. A mediumbodied palate bursting with citrus supported by a clean, mineral texture and time spent 'sur lie'.

WINEMAKING COMMENTS:

Winemaking comments: The 2023 vintage in the Granite Belt was marked by a cool, extended ripening season, allowing for

excellent flavour development while preserving natural acidity — ideal conditions for Fiano. Aged on fine lees for 3–4 months with periodic stirring to build texture and mid-palate weight. Maintained a clean, fruit-driven profile highlighting Fiano’s natural complexity.

FOOD MATCHING:

Market Fish served with saffron fondant potatoes, seasonal greens, beetroot creme fraiche & Salsa Verde.

SEVEN SCENES

2024 Chardonnay

TASTING NOTES:

A dry, crisp, clean Chardonnay, with a fresh palate of tropical white fruits, white peach, green apple and citrus characters.

WINEMAKING COMMENTS:

Elegant, ripe Chardonnay from our Night Sky vineyard -crushed, pressed and cool fermented in tank with aromatic yeast. Fruitdriven style with a short period of ageing over yeast lees.

FOOD MATCHING:

Pesto linguine, cherry tomatoes, toasted pinenuts and stracciatella

SIGNATURE COLLECTION

2023 Chardonnay

TASTING NOTES:

Concentrated fruit aromas of white and yellow grapefruit, white peach and ripe lemon with notes of flint and wet stone. Hints of rockmelon and fresh pineapple abound the palate with touches of vanilla and subtle creamy texture from French oak - a beautiful medium-bodied Chardonnay.

WINEMAKING COMMENTS:

65% of this harvest was placed in French oak Hogs Heads for fermentation and maturation, with 20% going through malolactic fermentation. The balance was fermented and matured in

stainless steel with extended lees ageing. This adds creaminess, body and notes of flakey pastry and brioche. This Chardonnay was made with fruit from Blk 7 at our Seven Scenes vineyard. The vines at Seven Scenes are closeplanted to encourage low yields and concentrate flavour. 2023 was a late and long growing season, allowing time for the fruit to develop complexity and an array of flavours.

FOOD MATCHING:

Homemade gnocchi with creamy mushroom ragu.

LE SAUVAGE

2018 Viognier

TASTING NOTES:

Rich apricot and zesty tangerine flavours combine with a subtle perfume of honeysuckle in this wild fermented Viognier. Touches of ginger, vanilla and a hint of toasty oak compliment the textured palate with a lovely citrus finish.

WINEMAKING COMMENTS:

Winemaking comments: The 2018 season delivered a warm, dry Summer in the Granite Belt, promoting full ripeness and rich aromatics — ideal for Viognier, a variety that thrives with extended hang time. Predominantly

fermented in stainless steel to retain freshness and lift, using the natural, wild yeasts that sit on the skins of the grape. A portion was fermented in older French oak barrels, adding subtle complexity and roundness. Fermented at moderate temperatures (15–17°C) to preserve stone fruit aromatics while building mouthfeel.

FOOD MATCHING:

Thai green curry with chicken or prawns.

SEVEN SCENES

2024 Rosé

TASTING NOTES:

Pretty in pink, this Rosé offers an intensely fragrant nose of ripe strawberry, raspberry, briar rose and a hint of violets. Beautifully ripe, red fruits with crisp citrus acidity adding texture to the palate with a fresh, dry finish.

WINEMAKING COMMENTS:

Granite Belt Merlot from Blk 3 on our Seven Scenes vineyard, picked early for pretty florals and red berry fruit flavours. A few hours skin contact was achieved through crush and gentle pressing only, to give a deep, pink juice. Long, cool

fermentation in stainless steel with an aromatic yeast, and just a touch of residual sugar left in the wine (5g/L). Minimal fining and filtration to keep the bright, pretty pink colour, bottled early. A very fresh and fruity Rosé that is delightful drinking in our warm Queensland weather.

FOOD MATCHING:

A lovely match with south-east Asian such as Thai or Vietnamese stir-fries and salads.

SIRROMET

2019 Cabernet Sauvignon

TASTING NOTES:

Cassis, bramble fruits and touches of mint and toasty oak spices. An elegant, medium-bodied style with expressive notes of red and black currants, blueberry, forest floor and spice. Bright acidity keeps the fruit fresh through to the finish with smooth ripe tannins adding structure with touches of cedary French oak.

WINEMAKING COMMENTS:

2019 was warm and dry with many red varieties ripening early, and excellent quality of Cabernet Sauvignon produced on the Granite Belt. Selected parcels were

fermented with gentle extraction, followed by careful ageing in older French oak barrels to soften tannins and integrate the lovely intense fruit.

FOOD MATCHING:

Handmade pasta with slow cooked lamb ragu.

2019 Cabernets

TASTING NOTES:

An intense perfume of violets, cassis, plum and blackberry. Cabernet Sauvignon and friendsexpressive Cabernet's intense cassis and fine tannin offers structure and elegance to the plush, plummy softness of Merlot. Just a dash of dark and brooding Petit Verdot with spice and chocolate tones completes this classic blend.

WINEMAKING COMMENTS: 2019 vintage was one of the best on record for red wines on the Granite Belt. It was a drought year however, so yields were definitely down with flavour

MUSEUM RELEASE

2013 Cabernets

TASTING NOTES:

A classic blend of Cabernet Sauvignon, Merlot and Petit Verdot, our Museum Release Cabernets displays aromas of rich fruitcake with intense ripe cassis and baked plums, supported by soft vanilla oak. Touches of cigar box, leather and savoury mushroom characters add complexity on the palate, showcasing the beautiful tertiary development of this elegant wine.

Enjoy with chargrilled beef fillet, potato gratin, seasonal greens, truffle butter and jus. SIGNATURE COLLECTION

WINEMAKING COMMENTS:

Around 9 months in oak (90% French oak, 10% American oak). All varietals were fermented and

and concentration up. Around 9 months in oak (90% French oak, 10% American oak) and bottled in February 2021, so almost 18 months maturation in bottle prior to release. This wine is still very youthful, reflecting the power and concentration of this vintage. Fruit flavours are still very fresh and bright and are yet to progress to cooked or dried fruit flavours. This indicates this wine has a long cellaring potential, but is also good to drink now.

FOOD MATCHING:

Beef Bourguignon with red wine jus

oak matured separately before the best individual barrels were carefully selected for blending. Merlot tends to compliments Cabernet by adding plush texture and more mid-palate weight to soften the tannins of Cabernet.

2023 Shiraz Viognier

TASTING NOTES:

Beautiful violet florals integrated with raspberry, blueberry and blackberry notes. Hints of pepper and star anise with touches of vanilla from oak. Excellent fruit concentration with dense ripe tannin carrying the fruit through on the palate.

WINEMAKING COMMENTS:

2023 was a great vintage. This Shiraz Viognier spent 6 months in oak. 90% French oak and 10 % American oak barrels that were between 2-4 years old. Using barrels that are a little older

provides the wine with structure and texture rather than charry oak coming through on the palate. The Shiraz was cold soaked for 24 hours to encourage good colour extraction. In this co-fermented wine, there's 96.1% Shiraz and 3.9% Viognier. Even though it's not much, the Viognier helps with extraction and stabilisation of the Shiraz and it's colour.

FOOD MATCHING:

Chargrilled Queensland beef, whipped potato, sautéed seasonal greens and red wine jus.

2023 Cabernet Shiraz

TASTING NOTES:

Lifted perfume of violets, wild blueberry and spice, wrapped in intense ripe cassis, cherry and blackberry with touches of mint and pepper. A sophisticated, vibrant palate of red and black fruits with a delicate graphite texture, soft oak touches and long tapered finish.

WINEMAKING COMMENTS:

The winemaking team has crafted a special Private Bin wine as an affectionate tribute to our Founder, Terry Edward Morris, who loves this classic Australian style.

FOOD MATCHING:

Chargrilled sirloin with peppercorn sauce and seasonal vegetables.

I started at Sirromet in February 2024 as a member of the Cellar Door Sales team.

WHAT DO YOU LIKE DOING IN YOUR SPARE TIME?

I spend a lot of my free time rehearsing my Bassoon as I have been a musician for over a decade, as well as reading the latest book to take my interest.

WHAT IS YOUR FAVOURITE VARIETAL OF WINE?

It's hard for me to choose a favourite but it has to be a toss up between Shiraz and left bank Bordeaux.

IF YOU COULD LIVE ANYWHERE IN THE WORLD, WHERE WOULD IT BE AND WHY?

Tasmania, one of the most beautiful areas of Australia and an excellent emerging wine region.

DESCRIBE YOUR PERFECT FOOD AND WINE BREAK.

One of my all time favourite meal and wine pairings is a filet mignon with a glass of Barossa Shiraz.

WHAT FOOD AND WINE MATCH CAN YOU RECOMMEND?

If you have a sweet tooth I always recommend a good Botrytis Semillon and a goats cheese cheesecake.

Sirromet’s Red Wine Winter Jus

As the cooler evenings settle in, there’s nothing more satisfying than a beautifully seared steak or roast lamb, served with a classic red wine jus. This month’s featured red, 2023 The Edward Cabernet Shiraz, with its robust tannins and elegant berry notes, makes it the perfect partner for this timeless sauce. A great jus is about balance: acidity from the wine, umami from the stock and just enough reduction to create that silky texture chefs obsess over. This one’s simple but delivers restaurant-quality flavour—ideal for your weekend table or special occasion.

Method:

1 pc. finely chopped 1 finely chopped 1 clove, crushed

dry red wine (like our featured Cabernet Shiraz)

rich beef stock

balsamic vinegar

thyme or rosemary

cold unsalted butter

Sea salt & cracked black pepper

1. Sauté onion carrot and garlic in olive oil over medium heat until softened, about 2–3 minutes.

2. Deglaze the pan with red wine. Simmer until reduced by half.

3. Add stock and herbs, then reduce again by half to intensify flavour.

4. Strain, whisk in cold butter, and season to taste. Ingredients:
