HOW LONG HAVE YOU BEEN AT SIRROMET?

I started at Sirromet in August of 2013, with my first vintage year being 2014. So over 12 years now in the winery.

WHAT DO YOU LIKE DOING IN YOUR SPARE TIME?

Other than kayaking/outrigging, and the odd mountain bike ride (weather permitting), I enjoy whipping out the odd tune on guitar. Oh, and I might dabble in photography every now and then... (was my prior career!)

WHAT IS YOUR FAVOURITE VARIETAL OF WINE?

Always a tough question as each varietal has its own characteristics that make each wine special in its own way. I must admit though, usually a wine of choice is Pinot Noir, as its such a wonderful wine for expressing its terroir and winemaking style in a glass. I also favour a Riesling too!

IF YOU COULD LIVE ANYWHERE IN THE WORLD, WHERE WOULD IT BE AND WHY?

Having lived there in the past, Italy has a soft spot in my heart, probably due to the food! Always happy to go back when I get the chance. But the Valais region in Switzerland is amazing! Would love to live up there with the snow capped mountains as your backdrop. Everywhere you look is a postcard. If Australia was the only choice, would happily live in Tasmania. Its spectacular.

DESCRIBE YOUR PERFECT FOOD AND WINE BREAK.

Tripping around the countryside of Tuscany, sampling the ample offerings of local Sangiovese and Super Tuscan wines, whilst scofffing down far too much delicious food!

WHAT FOOD AND WINE MATCH CAN YOU RECOMMEND?

So many options from creamy chicken dishes with our Signature Collection Chardonnay, to spicy Thai with our Seven Scenes Sauvignon Blanc. However, I do like to keep it pretty simplequality aged cheddar with a Merlot always works a treat for me!

Port & Honey Ham Glaze

Sweet, sticky and irresistibly golden, this honey-glazed ham is a festive favourite. It caramelises beautifully in the oven, creating a glossy crust and tender, flavourpacked slices perfect for Christmas lunch or effortless entertaining.

Ingredients:

1 cup Sirromet The Clyde NV Tawny

½ cup honey

¼ cup brown sugar

2 tbsp Dijon mustard

2 tbsp unsalted butter

1 tbsp apple cider vinegar

1 tsp ground cinnamon

½ tsp ground cloves (or 4–5 whole cloves, removed later)

½ tsp black pepper

Method:

1.In a small saucepan, bring the port to a gentle boil. Reduce to medium heat & simmer for 5–7 minutes, until slightly reduced

2.Stir in honey, brown sugar, Dijon mustard, butter, vinegar, cinnamon, cloves & pepper

3 Continue simmering for 8–10 minutes, stirring occasionally, until thickened & glossy. It should coat the back of a spoon. Remove whole cloves

4.Brush a layer of glaze over the ham during the last 45–60 minutes of baking. Reglaze every 10–15 minutes for a deep, lacquered finish.
