Serenbe and Organic Life Push The Environmental Envelope With A Sustainable Showhouse

T

hough nature is just outside everyone’s back door at Serenbe, health begins at home and is the foundation upon which the entire community was founded. Long before the sustainability trend took off, Serenbe was driving innovation in 2004 as the first EarthCraft Community with all homes certified. In 2005, the Blue Eyed Daisy Bakeshop became the smallest silver LEED-certified building in the United States. And now, Serenbe continues to push the environmental envelope by partnering with Rodale’s Organic Life to create the Organic Life House, which was the first home to break ground in Mado, Serenbe’s newest hamlet focused on wellbeing. The Organic Life House is the first of its kind and a gorgeous blueprint for home building and healthier living.

“The Organic Life House at Serenbe is a physical embodiment of a growing movement towards a sustainable way of living in harmony with nature,” said Jeff Tkach,VP/ Managing Director, Rodale’s Organic Life. “[It’s] an exciting opportunity for us to bring our brand to life in a way that will inspire and enable more people to make more organic, eco-friendly and healthy lifestyle choices in their own homes all across America.” Designed by architect J.P. Curran of Curran & Co. and built by Bobby Webb of BCC Construction, the 6,000 square foot, 4-bedroom, 4.5-bath home features multiple porches and a saltwater lap pool. “There was a clear commitment by the whole team from the beginning to create a house that embodies wellness and a quality of life that embraces Serenbe in

holistic ways,” Curran said. “It is equally important to make responsible choices from the stain on the flooring to window treatments and everything in-between that creates a healthy indoor environment.” The house also features a yoga and meditation studio that will be put to good use by homeowner and yoga instructor Jeny Mathis. “This is an opportunity to think of all aspects of living well, from the design, build and space-planning of the structure to the furnishings and the life that will be lived in that home,” she said. “I love the idea behind Rodale’s Organic Life that ‘… an organic life goes beyond the fridge. CLEAN SLATE IN 2017 Serenbe & Mrs. Meyer’s Composting Partnership

S

erenbe values the natural world and believes people can live more fully when connected to the wonders of nature. One wonder you may never have considered? Your trash. It might contain treasure. The treasure of nutrients for future meals, that is. A nutrient rich process called composting, or mixing food waste with soil to create a humus that aids future plant growth. “We have been composting since I was a child and before my parents had even thought of Serenbe,” said Quinn Nygren, Steve and Marie’s youngest daughter. “When we lived in Atlanta, we always had an organic vegetable garden and my mom always kept our food scraps to create garden compost.” The Nygrens continued to compost when they moved to Chatt Hills and as they formed Serenbe, composting became a natural part of the community’s waste management plan. As the community has grown, however, fewer residents were utilizing the option as part of their trash removal service. Enter, Mrs. Meyer’s Clean Day and their Design Sprint team. “In conjunction with an Organic Life story dedicated to composting, we are focused on raising awareness and building participation in composting at Serenbe, and

the first step was to research who was composting, who was not and why.” said Sherry Eckholm, part of the Mrs. Meyer’s Design Sprint team that visited Serenbe this past November. And focus they did. In four days, their team toured the community and the Organic Life House, interviewed residents, developed a framework for composting barriers and motivations, brainstormed concepts and created a value proposition on how to get Serenbe residents composting. “Through our interviews, we learned that the WHY and HOW could not be separated – that they were implicitly tied together,” said Sherry. “Our solution needed to live within the Serenbe promise and brand.” The solution? Reintroduce the community to composting with workshops at the Organic Life House, then use Earth Day 2017 as a spring board to fully re-launch composting at Serenbe. Earth Day, Saturday, April 22nd, will begin at the Serenbe Farmers Market, where guests can shop for organic produce, meats and more from Serenbe Farms and surrounding Chattahoochee Hills farmers. Children and children-at-heart will also be able to participate in Earth Day-focused activities that will teach the benefits of giving back to the environment.

After the farmers market is Serenbe Farms’ Spring Plant Sale, where you can tour the farm and purchase organic veggie and herb plants. And across the street from Serenbe Farms in Grange, The Children’s House Montessori will host Bloomfest, their annual fundraising event with art, music, food, flowers and compost. Leading up to Earth Day, there will be workshops on how to compost, sustainable tours and author book signings. Organic Life will also host Sip n’ Sift events for residents for hands-on and DIY composting, and Mrs. Meyer’s Clean Day will be planting herb gardens around the community for all to enjoy. “For Serenbe residents who are eco-curious and ecocommitted, the relaunch of composting will entice and encourage participation through community activities and communication tools that will make composting impossible to resist and fun to do!” according to Tammy at Organic Life magazine. [KIT] KAT’S OUT OF THE BAG Serenbe Playhouse’s 2017 Season Promises To Rebel

S

erenbe Playhouse is used to making headlines both in the Atlanta and national theatre scene. That tends to happen when you have the only outdoor, site-specific theatre in the Southeast; have a budget rivaling the biggest arts organizations in Atlanta; receive national accolades such as the American Theatre Wing Grant, clean-up during the 2016 Atlanta award season by taking home 6 Suzi Bass Awards and, of course, landing a Huey Helicopter during 19 live performances of Miss Saigon. You might wonder: “How they could top that?” Well, Founder and Executive Artistic Director Brian Clowdus is just getting started. Brian knew for the past year that Cabaret would be the anchor of the 2017 season, it’s his favorite show and he has a personal connection to it. But what is the theme? What shows would round out the rest of the season? “[2016] has been an incredible, record-breaking season, and in thinking of how we could top it I realized we just couldn’t. So instead, we will REBEL!” said Brian. Rebel indeed.The 2017 Serenbe Playhouse season will have greasers, gallantry, witchcraft and wiles, and a 2017 budget of more than $1 million dollars. Quite a change from the $40,000 budget during their 2008 inaugural season.

“This is a season near and dear to my rebellious heart, and one that promises a variety of laughs, tears and gasps fit for everyone from a Pink Lady to Sally Bowles.” Have you guessed the other shows? Don’t worry, the [Kit] Kat’s out of the bag! First up is the title that was hardest for Serenbe Playhouse to get a hold of, Grease. You’re in for an exceptional treat, though, because Brian Clowdus has the rights not only to the stage show but also to the movie songs! Head to the drive-in as “Danny and Sandy lead Rydell High’s spirited class of gum-chewing, hub-cap stealing, wise-cracking students in a rollicking musical that salutes the rock n’ roll era.” Grease runs March 23-April 16, 2017. Serenbe Playhouse’s all-ages show has become a highlight each summer, and 2017 will be no different. Take to the woods and into the air in an immersive zip-line experience with Robin Hood as he robs from the rich and gives to the poor. Robin Hood runs June 2-August 13, 2017. The “most ruthless rebel of all” is a Scottish general who will steal the throne within Serenbe’s woods full of rocks and deep water reminiscent of Scottish landscape. Theatre lore says not to speak the general’s name while

inside a theatre, but luckily Serenbe Playhouse is outdoors and changes locations so we’ll rebel as well! Macbeth runs June 22-July 9, 2017. Brian Clowdus leads the playhouse both behind the scenes and on the stage when he portrays the Master of Ceremonies at The Kit Kat Klub in Serenbe Playhouse’s summer musical Cabaret. Based on nightlife at the seedy club, American writer Cliff Bradshaw rebels from propriety and forms a relationship with a young performer in Berlin. Cabaret runs August 3-August 27, 2017. Serenbe Playhouse ends their season with holiday favorites The Sleepy Hollow Experience and The Snow Queen. Following four sold-out seasons and recognition as one of the “top 5 Halloween plays in the country” by American Theatre Magazine, 2017 will bring a fresh adaption of Sleepy Hollow by Brian Clowdus himself. Lighting up the wintry Serenbe woods is The Snow Queen, a whimsical story of love’s sovereign power over evil beloved by kids 1 to 101. The Sleepy Hollow Experience runs September 28-November 5, 2017 and The Snow Queen runs November 30-December 30, 2017. More info and tickets at serenbeplayhouse.com

SPACES: LIVE/WORK PROFILE WITH SEI

ABOUT THE BUILDING

he best reason to live here is the life here, and that includes the ability to work where you live. There are the obvious benefits of no commute that equals found time for that morning run, and the intangible reasons like seeing the woods from your desk or enjoying a lunch fresh from your neighborhood farm. Chad and Teresa Epple and Southeastern Engineering, Inc. (SEI) are no strangers to the life here at Serenbe. They’ve been the civil engineers for Serenbe for the last 10 years doing all the site plans, land grading and topography. So when they decided to move SEI’s main office to Serenbe, the intangibles took hold and they built a two-story home above it. “We love working with Steve and The Nygrens, and there’s a level of service they deserve that couldn’t be provided when we lived in Marietta,” said Chad, who appreciates the business benefits of living close to work. “There’s an awareness you get about Serenbe when you’re here, a sense of place. That’s probably what Teresa loves most.” These two views encompass exactly what Serenbe is: the intersection between the tranquility of nature and the science of developing the land in a mindful way. Chad & Teresa believe being in Serenbe allows for better service and a closer builder relationship.

The SEI Live/Work, is located in the Selborne neighborhood and was designed and built by friends of The Epples. The building, the first modern structure for both architect Michael Landry and builder Stonecrest Homes, is a glass and powder coated metal panel box “system.” Imposing yet warm, the structure exudes a dramatic intimacy. All the overhangs are clad in natural cypress, adding a soft warm aspect when viewed from below. The SEI office interiors, designed to echo the color of the raw concrete flooring, feature furniture made to the specificity of the civil engineering firm. The residential 2nd and 3rd floor is a 3 bedroom 2.5 bath “split level” floor plan with interiors by Smith Hanes Studio, in his signature “soft industrial style.” Custom features include metal and glass bi-fold doors to the master bedroom, a see through kitchen pantry made of steel and glass walls, and custom bunk beds in the kids’ room. At the very top of the building rests an expansive private patio outfitted with a kitchen and grill; perfect for evening cookouts with friends and family. The high vantage point allows for an uninterrupted view of the surrounding Serenbe community.

FIELDS OF VISION Kali Foley and Matt Clayton Put Down Roots At Serenbe Farms

J

ust like the seeds they plant, farmers grow, change and seek new places to put down roots. In July 2016, the husband and wife team of Matt Clayton and Kali Foley settled in at Serenbe Farms. “Getting to plug into a community that celebrates and supports our farming goals and personal philosophies was a dream come true,” Matt said. “We get to work on a farm, then play in the woods with our kids in a safe community. It’s the best of both worlds.” Matt knows a thing or two about vegetables: He comes from five generations of vegetable farmers. He’s had his hands in the dirt since he was a kid, and farmed for markets and Community-Supported Agriculture programs with Kali for six years in Montana and his home state of Wisconsin before moving to Georgia. Matt sees CSA as a way to create connections both between people and locally-grown produce, and between members and farmers. “Farming can be isolating as we’re often out on large pieces of land. We enjoy the CSA model because we get to connect directly with the families eating the food we grow every week,” Matt said. “CSA members can come to the farm every Saturday morning and choose their produce from the farm produce stand. Serenbe Farms produce is also available for purchase at the Serenbe Farmers Market and the Peachtree Road Farmers Market in Atlanta. All eateries within Serenbe use our produce as well.” When he’s in the field, one of the many things Matt

enjoys is creating food that looks as good as it tastes. “We love to grow delicious and beautiful food that excites the mind and mouth with every bite,” he said. But what’s a beautiful bunch of black radishes if no one knows what to do with it? “We don’t want to overwhelm our members with vegetables they need to Google prior to consuming,” he said.“Our focus is on providing staple fruits and vegetables everyone will actually eat.” In the fall, that meant winter squash, sweet potatoes, ginger, turmeric and sunchokes, plus tomatoes, melons and peppers from the tail end of summer crops. “This season also provided us with a bumper crop of muscadines that Serenbe Foods used to create a beautiful jelly for our CSA members,” Matt said. “As the cooler weather sets in, we’re able to produce greens and brassicas like broccoli, cauliflower and kale.” Like any farmer worth his sprinkling of sea salt, Matt is always thinking a season ahead: Spring CSAs will include early tomatoes, cucumbers, carrots, edible flowers, strawberries and edible hanging baskets. He and Kali also have plans for a gourd tunnel visitors can enjoy during tours of the farm, plus bonfires, their annual greenhouse plant sale and pop-up dinners with celebrity chef surprises. Every bit of, ahem, “cabbage” that comes in from the CSA and other fundraisers go directly back to support the farm. “All income is re-invested into operating costs, covering everything from tractor fuel to cucumber seeds,” Matt says.

POOL YOUR RESOURCES Mado Plans for a Pool, Wellness Center and Medicinal Gardens

L

Like the community itself, Serenbe’s hamlets were created with intention. Selborne is focused on the arts. Grange is alive with agriculture. And Mado, Serenbe’s newest neighborhood, is centered around health and wellbeing. Buzzwords to some, health and wellbeing is a lifestyle at Mado. As noted in a recent Fast Company article, Serenbe co-founder Steve Nygren “envisioned it as an intentionally multi-generational village — an idea with precedents in Europe, but not so much here … ‘It’s like old towns used to be. There’s every size house, which allows for age and economic diversity.’” Mado, a Creek Indian word for “life in balance,” currently has more than 30 homes, with plans for another 60-75 to be built in 2017. And that’s just the beginning. DIVE IN Scheduled for completion in 2017, Mado will have an all-seasons, resort-style pool modeled after the Caliza pool at Florida’s Alys Beach. It will feature three separate saltwater pools: a 100-foot main elliptical pool with a 12foot relaxing ledge; a 20-foot wading pool with splash features; and a heated, 25-meter lap pool with adjacent water features. The Serenbe Swim Club will also have his and her locker rooms with private changing areas and decking with extensive lounge furniture and umbrellas.

“This newest amenity will provide not only social but health benefits,” Nygren said.“Children and adults will have a cool place to play, especially during the hotter months in Atlanta. Water is an essential cornerstone to Serenbe’s vision of biophilic building.” Later phases of the Serenbe Swim Club pool complex will include two spa whirlpools, an outdoor fireplace, a community center and an open-air restaurant and bar. HEALTH HAPPENS HERE Mado’s first commercial building will be a three-story, 30,000-square-foot wellness center with an Andrew Crawford sculptural staircase and water feature in the central open-air atrium. The top two floors will have both eastern and western medical offices from general practitioners and dentists to nutritionists, therapists and acupuncture. The ground floor will house a gym, pilates and yoga studio, plus residents will also be able to walk to Mado’s first restaurant, a tea café/juice bar and a restaurant focused on grains and seasonal vegetables. ROOTS OF MEDICINE Plantings in Selborne are ornamental in celebration of the arts. Plantings in Grange are edible. Mado’s plantings will be medicinal. The first medicinal garden in Mado will have a small cluster of two bedroom Garden Cottage homes positioned

around it along with multiple outdoor rooms. Classes on how to harvest the medicinal plantings and use them will be held in these outdoor garden rooms. Designed by University of Georgia professor, registered landscape architect and LEED fellow Alfie Vick, Mado’s medicinal garden will be full of grasses, herbs, shrubs, trees and vines from ginseng to Solomon’s seal. “Alfie has been a friend for years and was the natural choice to design the medicinal garden,” Nygren says. “I’m most excited about having turmeric accessible. Marie and I cook with it a lot. It’s great for inflammation.” SHAPING UP To encourage further cross-generational interaction, Mado will be home to The Children’s House Montessori School, which will move from Grange and be located across from the future assisted living building. Seniors and students will share a library and art room. “The bookends of society are so important to learn from,” Nygren says. “Children teach us to be open, creative and remember to play and these qualities energize and inspire our elders, whose years of experience we can all benefit from. When the ages are segregated, physically and socially, we all miss out.” Future plans for Mado also include a world-class destination spa and 60-room resort.

LESSONS LEARNED New Energy At The Children’s House Is Music To Everyone’s Ears

M

uch like Serenbe itself, The Children’s House at Serenbe started with a vision. They believe in building the whole child, not just a student. In learning over memorization. In giving kids time to breathe, and room to grow. And also like Serenbe, The Children’s House has grown and adapted over the years. What started as five kids and one teacher in 2009 has become a seven-teacher community with a new, active board that believes in setting everyone up for success. “The Children’s House is a high-touch small school that’s integrated into the community,” said consultant-turned-board member Chris Gray. “Montessori and Serenbe share a similar ethos of thinking outside the box, going at your own pace, exploring the outdoors and being hands-on.” While the teachers teach and children learn, Gray and the other board members have been working hard behind the scenes. Positive changes include establishing monthly morning coffees with guest speakers, to honestly and objectively evaluate financials, creating a growth plan, retooling the leadership team and rewriting policies to enhance communication between the staff, parents and the community. “The one thing that struck me immediately and continues to make me the most proud is the dedicated staff,” said Gray, who’s a father of three. “They’ve been here a long time and love the kids.” That love is evident in the connections they create both in and outside the classroom. A recent collaboration between The Children’s House and Chatt Hills Music has brought new sounds to the school. “Music helps the soul develop,” said Gail Murphy, teacher and leader of the elementary community. “Since the beginning of the elementary program, we’ve wanted to inspire children through music, which led to a connection with Ron Simblist of Chatt Hills Music.

Ron loves children and invited artists in his music network to share their talents with us.The children love it and have learned about instruments and different styles of music.” Just a few feet away, Serenbe Farms also provides an endless, ever-changing landscape for kids to experience the world.“Helping on the farm brings us out into the fresh air and closer to the earth,” said Gail, who takes kids to Serenbe Farms on Fridays. “We talk about water and the soil, seeds, harvesting and bugs. We help plant, weed and follow the process through to harvest. Classes on the farm bring the children together to collaborate and cooperate. Learning how to garden and take care of plants teaches them respect for their surroundings and helps them display compassion.” Farm-to-Table is another Serenbe concept The Children’s House has adopted. As part of their commitment to promote health and wellness, they’ve partnered with local chef Lane Barton to offer seasonal, locally sourced and kid-friendly meals twice a week. Meals are served family-style to encourage sharing and the development of social skills. Choices include fruit kabobs, grilled cheese and tomato soup, shell-shaped pasta salad and honey-lime chicken on rice. Just the thing to bust parents out of the PB&J rut. The new year brings new opportunities for The Children’s House to grow, including building off the success of neighbors, families and friends pledging $60,000 through the Apogee Tax Dollar Program. Proceeds from the tax-directed dollars go directly to building scholarship funds to help eligible students who otherwise would not be able to afford full tuition. “One of our main objectives is to build diversity ethnically and socio-economically to ensure a well-rounded environment,” Gray said. “There’s a new energy at The Children’s House. Art Farm Combines Community and Craft

A

t Serenbe Farms, seeds are planted and sprouts are nurtured. Food is grown, picked and passed on to nourish others. It’s hard but worthy work. The process is much the same at Serenbe’s Art Farm. The seed of an idea is planted and takes root. Artists are nurtured and given room to create and grow. Art is created and shared to nourish others. It’s hard but worthy work. “The Art Farm’s mission is to create a place to bring people together in support of the arts with the belief that art in everyday life can create a greater understanding of the world,” said Serenbe Founder Steve Nygren. “We’re a facilitator. A platform for artists to engage with Serenbe. A conduit for artists to speak about their art and mission. We connect people with the arts.” Just as Serenbe Farms has a farmers market and a Community-Supported Agriculture program, the Art Farm spreads its message through workshops, demonstrations, and annual series Art Hour and Art Over Dinner. Art Hour is a semi-monthly cultural happy hour with artists who share their work with supporters and interested patrons. Art Over Dinner is just that: An intimate monthly gathering of chefs, farmers, brewers, winemakers and artists who share food and ideas at the dinner table bringing a bit of art into everyday life. It’s one meal that can grow into so much more.

Collaborative dance platform glo first visited Serenbe for an Art Over Dinner event, then returned for a collaboration with Atlanta Symphony Orchestra music director Robert Spano. Another former Art Over Dinner guest, Atlanta arts non-profit Dashboard Co-op, created a connection between Serenbe and Detroit-based artist Scott Hocking, who is collaborating with Steve Nygren on a land art piece in Mado. “Our vision is to be a nationally recognized forum for dialogue around arts and culture,” Nygren said. “One way we’ll do that is by continuing to build a vibrant community with cultural events, artist cottages and workspace that provides a serene and stimulating environment for engagement.” There are two Rural Studio artist cottages at the Art Farm with plans for more, plus more artist studios and additional buildings. Proceeds from Serenbe’s annual May Day festival, Atlanta Homes & Lifestyles Designer Showhouse and other events throughout the year will help fund those projects. SUSHI IS COMING Yumi Sushi Honors Family & Tradition

A

mericans aren’t doing sushi right, at least according to Mark Nelson.“When I would have lunch at school, kids would be like ‘EWW,” said Mark. “Now you can get it at the grocery store or the mall, and this is not what it’s supposed to be. Sushi is made to be something that, when you decide to go and get it, that’s the night. It’s about the chef, it’s about the experience. It’s about the sushi.” According to Mark, sushi is very special in Japanese culture. Sushi bars in Japan are small, cozy and highly social, and usually enjoyed only by adults who have the money and occasion to do so, which he didn’t growing up. Instead of going out to eat sushi as a child Mark enjoyed his mother’s delectable, traditional home cooking. So when he set out to bring the authentic sushi experience to Atlanta, Mark decided to name the restaurant Yumiko after his mother and in her honor. The only thing left to do was find a place to build Yumi Sushi. Mark wanted the restaurant to be in a destination location where guests would be able to enjoy sushi then stay, and where he could invite chefs from across the country to bring their families for an extended, residency-style working experience. Mark found the community atmosphere at Serenbe to be perfectly in keeping with the social aspect of traditional sushi bars. In fact, every step of his journey with Yumi Sushi seems to be touched by fate. When he began the restaurant build out, he was told there needed to be another sink. The builders readied themselves for a difficult task only to find, when they took out the sheet rock, that the pipes were already there. He came across weathered-zinc roofing another builder was using for the first time and it ended up matching the original structure’s roof perfectly. None of the ceiling lights needed to be moved. “If you’re in construction for 100 years, these things never happen,” said Mark. “We’ve had a lot of strange stuff like that happen with Yumiko.” The strangest thing to happen was who moved into the apartment above Yumi. Mark needed inspiration to get out of his rut of designing for the colonial American style, so his neighbor mentioned her father was an architect and she had some Japanese architecture books she could lend. By the way, “she” is Kari Pei, a leading design consultant in the textiles industry and her father-in-law is the award-winning architect I.M. Pei. “Kari was a big help not only with textiles but with getting other materials that I would

not know where to go to find,” said Mark. “She was excellent in getting me references and being the person to help filter what interior finishes should and shouldn’t go into Yumi.” In keeping with the Japanese tradition, Mark has not gone out for sushi while putting everything he has into the creation of Yumiko. In his words, he’s “giving up sushi for sushi.” But it’s worth the wait. Yumiko doesn’t yet know that the restaurant is named for her, and that will be the best part of opening. Coming early 2017.

BRINE OF THE TIMES Serenbe Foods’ Matt Adolfi

W

hen Matt Adolfi was a boy, his family had pickle parties. “My mom’s a fantastic cook and my dad loved to grow hot peppers. We’d have 20 paper grocery bags full of them,” Matt said. “I hated the sharp smell of vinegar at those pickle parties, but loved being together and preserving what we grew. It showed me how important food can be.” From culinary school in New England to coveted positions in Atlanta chef/restaurateur Anne Quatrano’s kitchens — Bacchanalia, Floataway Café and Star Provisions — Matt fell further in love with food.Then, when a food event brought him to Serenbe for the first time, he fell in love again — with Serenbe’s director of operations, Garnie Nygren. And what is he doing now? Hosting pickle parties. Funny how life comes full circle. Matt is now the chef-in-residence of Serenbe Foods — “a fancy title that means I’m a chef who lives here.” He hosts cooking classes and pop-up dinners, both public and customized to private groups, and has his hands in all Serenbe Foods products, from pickled carrots and dilly beans to blackberry jam. “Food is such a part of Serenbe,” Matt said. “Yes, we believe in sustainability and agriculture, but it doesn’t mean anything until we share it with others. Our jams, jellies and pickled items give us a chance to get a piece of Serenbe into every home, whether it’s in the next hamlet or on the other side of the country.” As part of that vision, the ingredients come from local and regional farmers. “All the fruit for our blueberry jam comes from a farm right down the street,” Matt said. “We got 300 pounds of peaches for peach butter from a farm four hours away.” That “we” includes his brother, Paddy, who Matt calls his “sous chef and right-hand man in the day to day.” When they’re not prepping for a dinner or cooking class, Matt and Paddy are the ones in the kitchen turning red onions into red onion jam.

Take a Right Off The Farm cooking class at the Bosch Experience Center. “During this 90-minute experience, Matt and Paddy provide participants with a seasonal menu and recipes, so they can recreate the meal at home,” said Serenbe experience manager Kirstin Brown. “The chefs divide up the menu into different stations and guests work on whichever dish interests them most.” Matt and Paddy teach, assist and get their hands dirty along with everyone else. And when they’re not elbow-deep in pickle brine, Matt and Paddy test, learn, dream and plan. “I’d love to start a bread program to supply fresh bread to The General Store, Farmhouse, Blue Eyed Daisy and other Serenbe restaurants,” Matt said. “I’d love to have a charcuterie program, too. Our own biscuit mix. And Paddy’s serious about kombucha. The possibilities are endless.” Though much has changed since the pickle parties of his youth, Matt still seeks inspiration in ingredients. “When perfect strawberries come through the door, all I can think about is how to share them with someone else and make them as excited about it as I am. BUTTERNUT SQUASH SOUP Serves 8-10

T

his is a very approachable seasonal recipe that can be used with different kinds of squash. Yes, it’s a little more labor intensive than a simple soup, but worth the extra work for great flavor. 3 Tablespoons extra virgin olive oil 2 medium carrots, peeled and cut into small 3 large cloves garlic, peeled dice 1 Tablespoon coriander seeds 5 cups low-sodium chicken or vegetable 1 ½ teaspoons fennel seeds broth 2 medium-sized (5 pounds) butternut 1 bay leaf squash, halved lengthwise and seeded 2 teaspoons fresh lemon juice 2 Tablespoons unsalted butter Salt to taste 1 large leek, white and light green parts only, halved lengthwise and thinly sliced Preheat oven to 400º F and line a heavy-duty rimmed baking sheet with parchment. In a mortar and pestle, pound the oil, garlic, coriander seeds and fennel seeds until they resemble a coarse paste. Rub the spice mixture on the flesh of the squash halves and set them cut side up on the sheet pan and roast until tender when pierced with a fork, approximately 1 hour. When cool enough to handle, scrape the flesh away from the rind and discard rind. Melt the butter in a 5- to 6-quart pot over medium heat. Add the leek, carrots and a big pinch of salt and cook, stirring occasionally, until the leek is softened, 8 to 10 minutes. Add the squash, broth, bay leaf, and 1 tsp. salt and bring to a boil over high heat. Reduce the heat to a low simmer, cover and cook for 30 minutes to develop flavor. Remove the bay leaf and allow the soup to cool slightly. Purée the soup in batches using a blender. Return the soup to the pot and add the lemon juice. Season to taste with salt and pepper.
