MAKING Your own salads... Making your own salads with pulses, grains and beans All the supermarket shelves groan with a vast assortment of ready-made salads from couscous (giant and regular just to make choosing simpler!) to Quinoa Nuts and fruits to beans and grains. Its hard to choose and sometimes when you add up the cost of these, on the whole, pretty small packets its not hard to work out that making your own must surely reduce the costs? We use many of these items in our Salads at Tea beside the Sea and we are always being asked how we make them as many people seem unconfident making their own. First and foremost work out what grains, pulses and beans you enjoy and then remember that in the main all of them have little or no flavour, they are all prepared in a very similar way and with them all you need to work on introducing as many layers of flavour as possible. Couscous – is an easy place to start – buy a pack from the supermarket and measure out the grainsand liquid (we always use vegetable stock as that is the first opportunity to introduce flavour to the grains) and always, always remember to season these grains can take a lot of punch. Once you have added the liquid leave to stand and then fork quite vigorously. People often say to me suppose I don’t add enough water or too much well the answer is simple all of these grains are most forgiving add more water or stock or more grains. The only way to learn is to experiment. Then add your chosen flavours, make sure that you have an assortment of fresh herbs, lemons, olive oil and crushed garlic (nothing worse than a chunk of uncooked garlic!). For example: if you like Moroccan flavours then remember to use dried cinnamon, spices to your taste, chopped dried fruits and nuts if you really prefer Italian flavours then its garlic,

tomatoes, basil, olive oil and balsamic vinegars with baby mozzarella or slivers of Italian meats. Or you can add nuts and seeds and handfull’s of your favourite herbs and top with crunchy fried croutons. You can experiment with as many, or as few flavours as take your fancy and let’s be honest in today’s supermarkets the sky really is your limit!

Beans are available ready soaked or should be soaked in accordance with the packaging and once they are prepared again it’s all about the layering of the flavours. Beans can be mashed and served warm as an accompaniment to Mexican dishes or used cold alone or combined with grains and pulses and again pile on the flavours! These salads are great as an accompaniment to a meal or as a snack lunch or part of a picnic they are very versatile. Don’t reach for a ready made salad reach for a pack of grains or beans which will probably make a few weeks worth of salads for the same price!

gardening advice for FEBRUARY Welcome to February’s edition of our gardening advice column. At last Winter has finally arrived in the form of hard frost and beautiful sunny skies, here’s hoping the warm wet weather and torrential rain has now passed. The garden has become extremely confused with early flowering shrubs and extremely long grass, tempting mowers to come out – not yet! You will do more damage than good compacting the soil and causing problems later in the year. Much better to be getting on with some good old fashioned maintenance.

Signs of Spring

We will see signs of Spring this month with bulbs peeping through the soil, Violas, Primroses, Heathers and Pansies are all available to plant and brighten a pot or border. If you didn’t manage to plant any bulbs back in the Autumn then plant pot grown ones – no one will ever know!

General Maintenance

The weather will dictate the amount and type of jobs you can get done – don’t worry if you can’t get out much due to inclement weather there will be plenty of time to catch up • Keep removing the last of the fallen leaves especially from lawns as they will kill the grass very quickly. • I f the ground isn’t frozen dig over the beds and borders incorporating organic matter. This will help to break down any clay. • P rotect any plants from frost or snow with fleece or apply a dry mulch (chipped bark is good) around their roots to prevent freezing. • T ool and shed maintenance – sharpening blades on secateurs, loppers and shears and having your lawn mower serviced ready for next month. •R e-edge existing lawns with an edging iron (not a strimmer!) it will provide a much

nicer finish. Towards the end of the month if it has been particularly dry the grass may need its first cut. • Cut new borders – use a marking spray, again to provide a nice finish. • Attend to overgrown hardy evergreens, straggly hedges and wisteria. • Lastly, prune roses by taking out all dead, weak and crossing stems. Cut hybrid tea roses back to about 8” to an outward facing bud and cut floribundas (those with flowers in clusters) down to 10-12”.

A PHOTOGRAPHERS VIEW – doing the rest

In 1888 George Eastman simplified photography with a camera preloaded with film and the slogan, “You Press the Button, We Do the Rest”. His Kodak Brownie was probably the most important camera ever manufactured. It was produced so cheaply that anyone, not just professionals or people of means, could own it. It was so simple to use, it could be operated out of the box and take photographs without, as Mr Eastman observed, a “pack-horse load of equipment”. Photography would never be the same again. Today, digital cameras have a few more features than the Kodak Brownie that will help anyone produce good results with a minimum of intervention. If we think we can improve on “good” we can take control, and I suspect that some hardened purists may go as far as calculating Circles of Confusion, (so called, as trying to explain it can confuse anyone), for some photographs. It takes all sorts. By all means let the camera “…Do the Rest”, but understand what is going on so that you can change the camera settings, if you want

to. The easiest way to do that is simply to use the camera in its manual mode, and observe what happens. To take it further, for a small outlay, older manual film cameras are surprisingly affordable, (providing you don’t insist on mint condition), fun to use, and will do no harm to your photography credentials. With patience, as you apply the lessons from using these older cameras to your day to day photography, creativity will blossom from the confidence of knowing when to take control, or let go. Sometimes, to go forwards, we have to take a step back and “do the rest” ourselves.

Do you spend your time saying “yes” to every request? Perhaps it’s simply easier than saying no? Perhaps you fear upsetting or offending the other person? Or perhaps you can’t say no because you want people to think well of you? If this sounds like you then you had better read on. If you’ve always felt the need to meet the needs of others before your own, the chances are that you are what psychologists term “people pleasers.” It’s often hard to imagine being different, because pleasing others is not only what you do, but is the identity you have taken on. In other words, it’s who you believe you are. Wanting to please others is not a bad quality, its just that continually putting others needs before your own can make your life harder as you put your own needs and priorities second. It takes practice, but you need to be less sensitive to other people, attend to your own needs first and that way you will have more balance and less stress in your life. Have you ever said yes to a social invitation and spent the next 24 hours thinking how

you can get out of it or what excuse you can make? This can create so much stress and worry. As if you didn’t have enough stress in your life already. Learning how to say “no” is a powerful skill and one that really will make a positive difference to your life. The first thing to remember is that when you say no you are saying no to the “request”, not the person. You don’t have to make excuses or even tell white lies. You just don’t. Learn to politely say no. Thank the other person for thinking of you. You can thank them for asking. “How” you say no is more important than the no itself. Make sure your no’s are kind, considerate, and as helpful as possible. “Thank you, but no thank you, “ is a phrase well worth learning. Until next time.

WHAT CAN UK BUSINESSES EXPECT IN 2016/17? In the Autumn statement last year, George Osborne believed it was his priority to rebuild Britain. He conceded that world growth forecasts had been revised, in part because of ongoing problems in the Eurozone. In the UK, the economy is expected to grow a little faster than originally predicted over the next two years, before slowing down somewhat towards the end of the decade. Higher than expected tax revenues and lower interest payments on government debt handed the Chancellor more flexibility than many analysts expected. Business, enterprise and employment in 2016/17 In a boost for SMEs, the Chancellor confirmed that the small business rate relief scheme would be extended for another year. Around 600,000 firms are expected to benefit as a result. The apprenticeship levy is expected to raise £3billion a year. This will be set at 0.5 per cent of the payroll bill, although the Chancellor has claimed that only two per cent of employers will be eligible to pay. Pushing ahead with his plans to devolve greater spending powers to local authorities, Mr Osborne said that 26 new or extended enterprise zones were being created around the country. The Government will be doing away with uniform business rates and devolving power to set the rates to local councils. The local authorities will soon also be able to keep this revenue, rather than having to hand over money for ministers to reallocate. The continuing economic recovery is expected to facilitate the creation of “more than a million” extra jobs during the next five years. There is, however, likely to be concern that the Department for Business budget is to be slashed by 17 per cent. Tax A new, increased rate of stamp duty land tax is to be introduced for buy-to-let and second homes. This will be three per cent higher than the normal rate and takes effect from April 2016.

The Chancellor said this will raise £1billion by 2021, although there are concerns it will have a significant impact on the buy-to-let sector. There will also be a con-sultation on accelerating the stamp duty land tax on transactions from 30 days to 14. From 2019, Mr Osborne announced that Capital Gains Tax (CGT) will need to be paid within 30 days of selling a residential property. Following intense criticism, some of which came from his own MPs, Mr Osborne announced that plans to cut tax credits by £4.4billion would be scrapped altogether. The Chancellor said he had listened to people’s concerns and would be abandoning the policy. He said the change in tack had been made possible by an improvement in public finances. The climb-down means that the welfare cap will be breached in the early years of this Parliament, but Mr Osborne is confident that it will be met before the next General Election. The Welsh Assembly is to be handed powers to set its own rates of income tax without the need for a national referendum. Tax evasion, avoidance and aggressive tax planning Mr Osborne pledged to tackle tax avoidance and announced that the Government would work to create one of the most “digitally advanced” tax systems on the planet. By the end of this Parliament, everyone in the UK will have digital tax accounts. The reduction in administration costs form part of £1.9billion savings for HMRC.

Not married couples’ Inheritance Tax Planning We all have as individuals a Nil Rate Band (NRB) of £325K before the inheritance tax is applied on our estate on death. However, married couples benefit from twice the Nil Rate Band (£650K), but that doesn’t apply to unmarried couples!

John & Sandra are an unmarried couple with children. They have: • •

House in joint names: £400,000 John has personal savings and insurance: £125,000 • Sandra has personal savings and investments: £125,000 • Total assets on second death: £650,000 John is dying first and his estate is valued at £325,000 so there is no tax payable as it doesn’t go over the NRB. Having a standard Will, Sandra would inherit £125,000 of savings from John plus the full value of the house, with the Inheritance Tax bill on her death (£650K – NRB@£325K = £325K taxable @40% = £130K tax bill)!!

What’s the problem? When John dies,

Sandra inherits his wealth! Can we prevent this happening? Yes, we would Sever the Tenancy of the property so that it’s owned as Tenants in Common. Therefore, John can now re-direct his £325K (£200K of interest in the property, plus £125K of savings) away from Sandra through his Will). We do this by writing a Trust in his Will (Sandra does the same in case she is the first to die). On John’s death

£325K goes into the trust and if were any other assets these would pass to Sandra, through the Will, but would be taxable. The problem here is she wasn’t given the £125K by John in his Will, which she was going to use to live on! However our Trust provides a facility whereby Sandra can borrow the trust fund! She does this by providing an IOU* note for the value of the trust fund. The result is now the sole owner of the legal and beneficial interests in the property and also now owns his £125K. When Sandra dies: Her estate prior to death was worth £650K. However £325K is paid back to the trustees as a debt (debts are paid back before any valuation on an estate for inheritance tax calculation purposes). The result is now that on second death there is no inheritance tax liability as Sandra’s estate is only £325K and the children (or other beneficiaries) gain an increased inheritance of up to £130K. *IOU = Promissory Note (a written agreement to repay a debt)

Coping with... returning to exercise

The combination of Physiotherapy and Pilates provides a unique opportunity for individuals to improve a number of physical abilities including strength, balance and co-ordination. Pilates offers a safe avenue to educate the body on normal movement and provides individuals with the tools needed to identify weakness as well as general strengthening and toning. There is a lot of research supporting the efficacy of Pilates and I have found by using my knowledge as a physiotherapist it has allowed my students to improve and manage previous injuries. It has also allowed them to explore how far they can push their body…which is often a lot further than they anticipated! Pilates is a great low impact exercise class where a number of conditions can be managed from arthritis, chronic pain, hypermobility, balance problems and weakness. If you are able to get

on and off the floor then it is definitely an option worth exploring. If not, a Chair based Pilates class may be more suitable for you. A quote from one of my attendees perfectly surmises what Pilates has done for them “I have missed the last few classes and I have noticed it so much, everyday tasks feel so much harder!”

my children’s development 4 – 11-13yrs Knowing and Responding to my Children’s Development 4 – Stepping Away (Early Adolescence: 11-13years) Accepting and negotiating the challenges and changes that come with puberty and rampaging hormones becomes our task now! Research shows that people who have serious psychological difficulties in their thirties and forties most often came to their decision about how worthwhile life is during early adolescence. These kids desperately need parents and other adults who will enter their world and walk through this time with them. • At no other time is maleness and femaleness more different than during this stage: boys tend to be be incredibly physical – girls all romance. (Try to encourage supervised group activities, and steer clear of one-onone unsupervised dates, a disaster waiting to happen at this age.) • They rarely talk to parents and our questions meet with answers like “nothing” “don’t remember” “don’t know” (try openended questions rather than multi-choice! And less words!) • They are often very disorganised (just glance in their school bags at all the random papers and junk) and “out-to-lunch”, unable to keep up with the changes within themselves – life is suddenly so incredibly different and overwhelming they just can’t keep up the pace (discretely help them with structure, and empathise like mad). • They experience “ambivalence”, extreme contradictory feelings for the first time; love/hate (“The same people I really love sometimes make me so mad that I feel like I hate them”) scary/exciting (“I’m scared to death at starting secondary school, but at the same time I can’t wait”). • They need a lot of attention/acceptance/ approval/comfort just when they are at their

most revolting! It is a time for parents to help them overcome their insecurities and discover their uniqueness and “Who am I?”, as they begin to separate from you and become an individual. This separation might look like styles of clothing you hate/choices of hairstyle you find ridiculous/music preferences you find distasteful: as difficult as it may seem, allow your child some choices in these areas. Be careful to pick your battles – consider the “big issues” – and what you can let go. For instance, your teen might be allowed to choose to buy a CD you dislike with their own money (yes, a third of teens still buy CD’s!), but you might require it was one that didn’t endorse violence, suicide, sex or gang activity. And when your teen blows it this week – makes a mistake, disobeys, is incredibly rude – make sure you communicate real acceptance afterwards, that says “I’m glad I’m your Mum/Dad even when you mess up” (even if through gritted teeth!)
