The Edinburgh Grand Relaunches as Scotland’s First Luxury Collection Hotel, Part of Marriott International

Following a phased refurbishment, the landmark residence has joined Marriott lnternational’s luxury Collection as Scotland’s first property under the brand

The Edinburgh Grand, a landmark residence on St Andrew Square, has reopened as Scotland’s first Luxury Collection Hotel, becoming part of its portfolio of over 130 distinctive properties worldwide. The opening marks The Luxury Collection’s Scottish debut and its fourth outpost in the UK, alongside celebrated hotels in London, Buckinghamshire and Manchester.

Owned and operated by Chris Stewart Group, the property has undergone a light refurbishment and repositioning to target the luxury extended-stay and leisure markets. Set within a restored neo-classical former bank, the hotel offers 50 spacious one-, two- and three-bedroom rooms and suites, each with a fully equipped kitchen, living and dining area, and original architectural features such as high ceilings, sash windows and sweeping staircases. Interiors, styled by Karen Brown, head of interior design at Chris Stewart Group, have been shaped by the building’s 1940s

origins, and blended with the rich colours and textures of Scotland.

The relaunch follows a phased refurbishment programme aimed at elevating the property’s luxury positioning. Phase one, now complete, includes refreshed interiors across 33 rooms, an updated front foyer, enhancements to the executive lounge and retail space, plus new furnishings and upgraded equipment in the fitness centre and The Register Club. Phase two, set for completion later this year, will see the final room upgrades completed alongside a reimagined spa offering.

As part of its entry into The Luxury Collection, the hotel has introduced a new suite of curated guest touchpoints that celebrate local culture and heritage. These include in-room omelette breakfast service, whisky nightcaps, bedtime poems and tartan pyjamas for young guests, plus a 24-hour concierge offering personalised

itineraries across the city. The hotel also welcomes dogs, offering a pet pack complete with blanket, towel, water bowl, treats, and a personalised Edinburgh Grand dog tag.

“The Edinburgh Grand has long been distinguished for its unique history as the former headquarters of the Royal Bank of Scotland,” said Emre Pasli, General Manager, The Edinburgh Grand.

“Becoming part of Marriott’s Luxury Collection allows us to honour that legacy through thoughtful experiences, exceptional service and a sense of place that seamlessly blends timeless charm with the unique essence of Scotland.”

The hotel is also home to a range of celebrated dining and social venues:

• The Register Club - a heritage-style lounge serving breakfast, afternoon tea and cocktails

• Lady Libertine - a two-level cafe and bar with coffee, cocktails and live music

• Hawksmoor Edinburgh - a destination steak and seafood restaurant

• The Vault - a restored bank vault reimagined for private events and whisky tastings

Situated just moments from Waverley Station and a short walk from Edinburgh Castle, Princes Street and the Royal Mile, The Edinburgh Grand is well-positioned to appeal to leisure travellers, long-stay guests and business travellers alike.

A Season to Savour: The Art of Celebration at Montcalm Mayfair Where Festive Luxury Meets

Garden-Inspired Serenity

in the heart of London

This winter, a new kind of celebration is glowing in Mayfair

At the recently opened Montcalm Mayfair, the festive season is not just celebrated but beautifully reimagined. Nestled within one of London’s most distinguished addresses, the hotel offers a collection of elegantly curated experiences that promise to transform winter gatherings into lasting memories.

Following a meticulous two-year restoration, Montcalm Mayfair opened its doors this spring as a redefinition of five-star hospitality. Celebrated for its philosophy of sensitive luxury, the hotel invites guests to engage with the season through moments that are intentional, immersive, and inspired by the quiet beauty of nature.

At the heart of Montcalm Mayfair’s festive offering is “A Season to Savour” - a collection of celebrations shaped by craftsmanship, culinary excellence, and a reverence for meaningful connection. Whether it’s an opulent gala or an intimate dinner with friends, each event is presented as a bespoke expression of the season’s spirit.

In the hotel’s magnificent Grand Ballroom, winter grandeur is reimagined with the botanical poise that has become Montcalm Mayfair’s signature. Here, guests are welcomed with a green-carpet arrival

before being led into a world of seasonal elegance - antique mirrors, candlelit tablescapes, and floral installations inspired by the frost-kissed geometry of the Georgian garden. A three-course menu by Michelin-starred chef Akira Back becomes the centrepiece, showcasing his distinctive fusion of Korean heritage and modern British ingredients. Sparkling wines flow, a curated DJ sets the tone, and the evening dances onward in style.

For those seeking a quieter kind of festivity, the hotel offers a series of more intimate experiences. In The Library, inspired by 18th-century salon culture and lined with curated literature and art, the Cocktails & Conversations experience brings a touch of glamour to the traditional holiday reception. Here, a dedicated mixologist serves seasonal, botanical cocktails to small gatherings in a setting that feels more private residence than hotel.

Bloom, Montcalm Mayfair’s serene private dining room, welcomes up to 14 guests for festive feasting in a setting as tranquil as a winter garden. With a menu helmed by Akira Back, each dish becomes a celebration of craft, character, and the season’s most cherished ingredients. The atmosphere invites conversation and connection, with delicate natural finishes and warm ambient

lighting designed to make time stretch a little slower.

For a more dynamic dining experience, Lilli by Akira Back - the hotel’s charismatic signature restaurant — offers private festive celebrations for up to 60 guests. Known for its bold fusion of East and West, the restaurant combines Back’s Michelin-star pedigree with seasonal flair, delivering dishes that surprise, delight, and linger on the palate. Dramatic interiors, including a bespoke hand-crafted chandelier, provide a constantly evolving backdrop from afternoon to nightfall.

To complete the experience, guests are invited to linger a little longer with preferential festive rates for overnight stays. Montcalm Mayfair’s 151 guestrooms and signature suites - each layered with tactile materials, Frette linens, and Penhaligon’s amenities - offer a restorative contrast to the season’s bustle. For a truly memorable retreat, the Botanical Suite stands alone as London’s only fully private hotel suite with its own entrance and immersive artist-inresidence experience by Camille Rousseau.

For those desiring absolute privacy, Montcalm Marble Arch Townhouse, located just moments away, is available for exclusive hire. With 13 individually designed bedrooms and Montcalm’s signature service, it offers the charm of a private Mayfair residence with the refinement of five-star hospitality.

With a considered blend of heritage and innovation, nature and nuance, Montcalm Mayfair invites guests to reimagine what festive luxury can feel like - a celebration of stillness and sparkle, memory and meaning, indulgence and intent.

HRC Announces Bold New Evolution for 2026

HRC, the trade event for hospitality and foodservice professionals, has unveiled a significant new direction for its 2026 edition, promising a completely transformed experience when it returns on 30 March - 01 April at Excel London

Based on detailed feedback from exhibitors, partners and visitors, and shaped by independent industry research, HRC is undergoing a thoughtful and ambitious transformation.

The show will be moving into Excel London’s South Hall for 2026 alongside The Pub Show and new hospitality tech event Hospitality Tech360, reflecting a broader shift in focus, with a redesigned layout and new features aimed at fostering genuine connection, showcasing innovation, and supporting the business needs of the fastmoving hospitality industry.

“This is so much more than a refresh,” comments Jo Farish, Event Manager for HRC. “We’ve taken a deep dive into what the industry really wants from its dedicated trade show. The result is a bold reinvention of HRC; one that celebrates creativity, drives innovation, and creates opportunities to connect in ways that feel natural and impactful. The energy building for 2026 is electric, and I can’t wait to welcome everyone to this new era.”

What’s new for 2026?

New show sections at HRC next year include Bar, Pastry, Street Food and Pizza & Pasta, which will showcase immersive, trend-led experiences and a diverse range of suppliers ready to elevate hospitality offerings. The introduction of Pastry HQ, which expands on the popular Chef HQ feature, curated by Chef Publishing, and the Future of Drinks Stage alongside the ever-popular Vision Stage will add further depth to HRC’s already powerful content programme, combining high-energy panels with practical insight and live demos.

Another new addition, the Chef’s Table, will offer a curated space where top chefs cook live using products from the show, creating an engaging, real-time showcase of innovation and quality. Designed with senior buyers and multi-site operators in mind, it’s a setting that encourages meaningful dialogue, product discovery, and valuable brand exposure, all in an environment that feels more like a conversation than a pitch.

New digital tools and event features will elevate networking across the three days. A new matchmaking app, a Meet the Buyer programme, and a buzzing calendar of social and networking events mean more face time, better leads, and meaningful conversations.

Scott Duncan, Managing Director of exhibiting brand UNOX, comments: “The UNOX team are greatly looking forward to taking part in HRC 2026. HRC is a key event in the UK’s hospitality and catering calendar, bringing together senior leaders from across the industry to exchange ideas and discover new professional kitchen solutions. We can’t wait to showcase the latest developments from UNOX at the show and connect with chefs and operators from across the sector.”

Stuart Jeffrey, Marketing Director, Unilever Food Solutions UKI-ANZ, says: “HRC 2025 was the perfect platform to launch our Future Menus Volume 3 report on the Vision Stage. It allowed us to connect with forward-thinking hospitality leaders and share insights shaping the future of food. The added brand exposure and access to HRC’s audience also extended our reach beyond the event. We were proud to partner with HRC in driving innovation and helping operators stay ahead of evolving diner expectations.”

Tom Holloway, Head Chef, The Pig at Harlyn Bay, adds: “HRC is exceptional, an amazing celebration of hospitality, food, and drink, showcasing creativity and passion in our industry.”

With a revitalised atmosphere, re-energised format, and an engaged audience hungry for what’s next, HRC 2026 promises to be the UK’s most exciting hospitality trade event revival.

De Nadas & Tommi’s Create the Burgernada & Tommi’s Tango Burger for National Burger Day on 21st August

The Burgernada & the ‘T.T.B’ will be available in London from 11th to 31st August 2025

Love burgers and empanadas? DE NADAS, the UK’s first empanadería specialising in Argentinian hand-shaped empanadas and cult-burger brand Tommi’s Burger Joint, are partnering to create the Burgernada alongside a very special Argentinian-style burger: the T.T.B (Tommi’s Tango Burger).

Launching on the 11th August to celebrate National Burger Day on 21st August, and available until the 31st, the partnership will celebrate a shared love of the world’s most popular dishes – burgers and empanadas. The specials also reflect Tommi Tómasson’s, the founder of Tommi’s, obsession with tango after he made a six-month trip to Buenos Aires in the early 2000s to learn the iconic dance.

The hand-shaped and freshly baked Burgernada will be available at all De Nadas shops for £4 and Tommi’s in Marylebone will feature a Tommi’s Tango Burger (T.T.B), which will be served with a deep-fried mini Burgernada with every order for £14.

The Burgernada has been created with Tommi’s exclusive burger blend with aged Hereford beef, melted American cheese, chopped US-style pickles and Tommi’s signature burger sauce, encased in De Nadas pastry and hand-shaped in the

traditional Argentinian repulgue method. The Tommi’s Tango Burger (T.T.B) will feature a thick Argentinian-style beef patty, De Nadas chimichurri, which is home-made with oregano, garlic and chilli, as well as melted provolone, the Italian cheese popular in Argentina, and topped with a mini deep-fried Burgernada.

DE NADAS was created to give Argentinian empanadas the cult-like status they deserve in the UK. Opening in August 2022 in Notting Hill’s Golborne Road, De Nadas has gone on to open a further three empanaderías in London: Shoreditch, Stoke Newington and Bethnal Green (where all its 15 different hand-shaped empanadas are made).

Tommi’s Burger Joint was created by Tommi Tómasson in Reykjavík in 2004. It has nine burger joints in Iceland, its flagship London restaurant in Marylebone and burger joints across Germany and Denmark. Tommi’s is known for championing premium ingredients with a focus on provenance and simplicity. In a world of Tik Tok burgers, instabrands and smash burgers, Tommi’s is dedicated to keeping the classics alive.

A Meeting of Icons: The Pot Luck Club Pops Up at The Waldorf Hilton, London

Cape Town’s coolest restaurant lands in London

This summer, The Waldorf Hilton, London is opening its doors to one of Cape Town’s most influential restaurants. From 13 August, The Pot Luck Club, long hailed as the “coolest place to eat in Cape Town”, will take over the hotel’s flagship dining room, Homage, for a three-month London residency.

A meeting of two icons: The Pot Luck Club, famed for its fearless flavour and inventive small plates, and The Waldorf, a landmark London hotel steeped in Edwardian grandeur. Built in 1908 by William Waldorf Astor, it was one of the first to offer not just rooms, but a full social experience, from afternoon teas to elegant dinners. More than a century on, it remains at the centre of London’s cultural life. This residency brings that original vision full circle: a dynamic dining experience in a grand setting.

The Pot Luck Club is the brainchild of Britishborn chef Luke Dale Roberts, one of the most celebrated names in South African cuisine. Perched at the top of Cape Town’s Old Biscuit Mill, the restaurant draws nightly crowds for its eclectic, flavour-led menu and skyline views. Luke Dale Roberts and his Cape Town operations team will personally oversee the London launch, with Sous Chef Rachel Maroun staying on to lead the team during the residency.

“We’ve talked about bringing The Pot Luck Club to London for years, and it was

always the city that made sense,” says Luke Dale Roberts. “As a Brit, there’s something meaningful about returning in this way, partnering with one of London’s landmark hotels and sharing what we’ve built in Cape Town with a new audience. We’ve been fortunate to grow an international following at home, and this feels like the natural next step.”

The menu is built around globally inspired small plates: smoked beef fillet with truffle café au lait sauce; springbok tataki with mandarin gastrique; and Cape Malay-spiced vegetarian dishes, all underpinned by a celebration of British produce and seasonal ingredients.

The cocktail programme is just as bold, developed in collaboration with The Waldorf’s bar team and led by Head Bartender Abby Long as the residency gets underway. Served in The Wild Monkey bar, the drinks list features house-infused cordials, seasonal ingredients and flavours that echo the energy of the kitchen. For the first time, a dedicated bar snacks menu will also be introduced, curated by Luke Dale Roberts to complement the cocktails. The bar will run Monday to Wednesday from 4pm until late, and Thursday to Sunday from 12pm until late.

It’s not just the menu making the move. Service and setting have been carefully reworked too. The tone will echo the Cape

Town original: relaxed but sharp, with a focus on precision. The dining room, meanwhile, will be reimagined to reflect The Pot Luck Club’s edge within The Waldorf’s unmistakable character.

“I’m thrilled to announce the exciting collaboration between The Pot Luck Club and The Waldorf, coming 13th August for 3 months” says Guy Hilton, Area General Manager. “This partnership is a perfect match — bringing together one of London’s landmark hotels and one of South Africa’s most celebrated restaurants. We eagerly look forward to welcoming Luke and his talented team to join forces with our Food & Drink heroes, as we present an innovative menu that promises to delight our guests.”

Dinner will be served daily from 5pm, with the final sitting at 10pm. Alongside the à la carte menu, guests can choose a timefriendly Lite prix fixe or settle in for the full Loaded tasting menu. Whether stopping in before a show or staying for the evening, this is one residency not to miss.

Grease Tech Ltd: The Kitchen’s Silent Hero

How GreaseShield® is stopping blockages, cutting downtime, and keeping chefs in control

Picture the scene: it’s Friday night, and your restaurant is buzzing. The kitchen’s a welloiled machine—until it isn’t. Somewhere under the floor, unseen but unmistakable, the drains start to choke. The culprit? Fats, oils, and grease. The sudden smell creeps in, the sinks slow, and suddenly you’re facing downtime, repair bills, and unhappy diners.

This is the nightmare scenario Grease Tech Ltd has been solving for kitchens across the UK for years. With over 4,500 sites under their care, they’ve built a reputation for tackling grease at its source—before it has a chance to ruin a busy service or rack up costly repairs.

At the heart of their solution is a quietly brilliant invention: the GreaseShield®.

More Than Just a Grease Trap

A lot of kitchens still rely on old-fashioned grease traps, essentially big metal boxes where grease floats to the top, waiting for someone to clean it out. It works… until it doesn’t. Grease solidifies, smells worsen, blockages happen, and manual cleaning becomes a messy, unpleasant chore. GreaseShield® takes a completely different approach. Instead of waiting for grease to settle, it actively separates it from wastewater, using clever engineering to keep things moving smoothly. It even tackles one of the biggest headaches in commercial kitchens—emulsified animal fats that stay in the water long enough to cause havoc down the line.

By using the natural thermal energy from kitchen wastewater, plus smartly designed internal baffles and a rotating drum, GreaseShield® strips fats, oils, and grease out of the equation before they can solidify. The waste solids? Filtered and dewatered automatically. The separated grease? Collected for easy recycling. The unit even cleans itself.

For chefs and managers, that means fewer plumbing disasters, fewer emergency callouts, and kitchens that smell like kitchens— not blocked drains.

A Service, Not Just a Product

Of course, a great machine is only half the story. Grease Tech prides itself on being a

full-service partner. They don’t just deliver the unit and disappear; they install, maintain, repair, and even help businesses navigate environmental compliance.

Their engineers are directly employed, no subcontracting roulette, so service quality is consistent from Cornwall to the Highlands. And because they operate 24/7, they’re there when things go wrong, not just during office hours. That reliability has made them a trusted name in pubs, hotels, restaurants, and other high-volume kitchens nationwide.

Why This Matters More Than You Think

Grease in drainage systems isn’t just an inconvenience, it’s an environmental and legal issue. UK water companies and environmental agencies are increasingly strict about how businesses handle fats, oils, and grease. Non-compliance can mean fines, negative publicity, or even forced closures.

By preventing grease from entering the drainage system in the first place, Grease Tech’s solutions don’t just keep kitchens running—they help businesses avoid costly legal trouble and show commitment to sustainable, responsible operations.

The Quiet Hero of the Kitchen

The best thing about GreaseShield® is that once it’s in place, most people forget it’s there. It just works. No nasty smells, no grim weekend cleaning jobs, no phone calls to the emergency plumber at 10 p.m. on a Saturday.

And for the hospitality industry, where margins are tight, and reputations are built on seamless service, that kind of reliability is gold.

In the end, Grease Tech Ltd isn’t just selling a product. They’re giving chefs, managers, and business owners peace of mind. In the constant dance of a busy kitchen, where every second and every plate counts, knowing your grease problem is handled means you can focus on what you do best, serving great food to happy customers.

Travel the World in a Cocktail Glass This Season with a Globetrotting New Bar Menu From Grand Hotel Fasano, Lake Garda

Head Mixologist and Bar Manager Rami Redzepi presents seven new cocktails for seven countries

Grand Hotel Fasano, the five-star familyowned hotel nestled on the shores of Lake Garda, is delighted to unveil a brand-new cocktail menu for the high Summer/Autumn 2025 season. Masterminded by awardwinning Bar Manager Rama Redzepi, the new menu is available at both hotel bars and features seven original cocktail creations inspired by the cultures, customs and histories of seven different countries.

‘Our new cocktail menu is a true passion project based on a love of travel and the celebration of diverse cultures, customs and history’, commented Bar Manager Rama Redzepi. ‘Each drink is dedicated to a different territory, starring a ‘native’ distillate – such as bourbon whiskey from the USA or gin from the United Kingdom – and unearthing historical treasures and cultural anecdotes from across the globe.’

The new menu provides cocktail-lovers with the chance to travel the world from the al-fresco comfort Grand Hotel Fasano’s La Terrazza - with its stunning terrace overlooking Lake Garda - or while holed up at the atmospheric Rama’s Lounge Bar, which evokes the immortal charm of the legendary bars of Havana and the vibrant energy of New York’s lounge bars.

Introducing the High Summer/Autumn 2025 Cocktail List by Rama Redzepi:

Independiente | The Philippines

A heady yet sweet blend of Don Papa Baroko rum, almond milk, red fruit tea, lime, black cherry liqueur and fava tonka syrup, Independiente is Redzepi’s tribute to the struggle and determination of the Philippine Revolution of 1896-98. Inspired by Filipino patriot Dionisio Magbuelas – who played a fundamental role in the independence movement – each ingredient within represents a crucial element in the history of the struggle. Just like the revolution itself, the cocktail is a careful fusion of strength and sweetness, of resistance and hope.

Sunset on the Lake | Lake Garda, Italy

An ode to the setting Grand Hotel Fasano calls home, Sunset on the Lake celebrates the most breath-takingly beautiful time of day on Lake Garda. An innovative twist on quintessentially Italian flavours, the cocktail fuses chamomile-infused Campari with green apple, orange peel, oleo saccharum, fresh lime juice and Cedrata Tassoni soda. With every ingredient playing homage to the flavours of the lake, each sip is like a walk at sunset, when the skies blaze overhead with shades of red and gold.

Duchess’ Decree | United Kingdom

A cocktail fit for royalty, Duchess’ Decree plays tribute to Anna, the seventh Duchess of Bedford, who revolutionised English social habits by introducing the tradition of Afternoon Tea. A veritable party in a teacup, this innovative blend combines Portobello Road butter gin with red fruit black tea, cookie syrup, Poire Williams cognac and fresh lemon juice. Mixing classic and creative ingredients to evoke a true aristocratic salon experience, this afternoon tea with a twist invites guests to toast to conviviality, tradition and the sweetness of a bygone era.

Zimowy Duch | Poland

Zimowy Duch is Redzepi’s twist on Grzaniec, a traditional Polish mulled wine. While traditional Grzaniec is served hot, providing spicy warmth on cold evenings, Redzepi’s reinterpretation is served cold and celebrates the colder months with elegance and modernity. Combining red wine with Polugar vodka – banned in 1917 by Russia and a symbol of the rebirth of the Polish distilling tradition – juniper, cinnamon, cloves, star anise, citrus, peach liqueur, nutmeg and sugar, it is a tribute to the soul and cultural richness of Poland.

Midori No Sakura | Japan

Crafted to evoke the ancient ritual of Hanami – the Japanese custom of enjoying the transient beauty of Sakura, or Cherry Blossom season – Midori No Sakura is

a delicate balance of Japanese whisky, milk-infused matcha tea, vanilla, lemon and cherry soda. Combining the flavours and colours of Japanese spring, each sip is an invitation to stop, be present and contemplate the ephemeral beauty of life – a toast to life, fragile but wonderfully beautiful.

Swing Maison | USA by way of France

Swing Maison is a soulful cocktail born and raised between the vibrant jazz and swing clubs of New Orleans, Louisiana and Montmartre, Paris, the beating heart of the French art and music scene. A blend of Rye whiskey infused with caramel tea, grappa Evo Fumo, vermouth, Grand Marnier, old fashioned bitters, Peychaud’s bitters, orange and cinnamon, it is a journey between continents and tells the story of the two cities’ ocean-crossing bond and shared passion for music.

Catrina’s Embrace | Mexico

Named after Catrina, the symbolic figurehead for Mexico’s Día de los Muertos (Day of the Dead), Catrina’s Embrace is an intoxicating mix of two of the most iconic drinks in Mexican culture – mezcal and tequila – with vanilla syrup, fresh lime and pineapple soda, served in a decorated skull shaped glass. Elegant, smiling and dressed in flowers and jewels, Catrina is an icon that celebrates memory, joy and death as a natural part of life. This cocktail is a perfect meeting of tradition and invitation, and a vibrant celebration of life for all who drink it.

The new cocktail menu is the latest gourmet news from Grand Hotel Fasano, which recently announced the appointment of Co-Executive Chef, Claudio Santini, new menus across the property’s restaurants and a Michelin star for restaurant Il Fagiano,

Grand Hotel Fasano has long enjoyed a reputation as one of the finest gastronomic destinations in Northern Italy, with four distinct dining options overseen by the property’s two Executive Chefs, Michelinstarred Maurizio Bufi and as of April, the highly renowned Claudio Santini.
