“Lugovskaya Sloboda”, the true taste of Russian traditions Luxury of traditional merchant cuisine During my trips I always try to get acquainted with the local traditional dishes, so in Omsk the obligatory point for me was the acquaintance with Russian cuisine. The ideal place for this was the restaurant “Lugovskaya Sloboda”. From now on I recommend it to all those who travel to this city! Interior: It is the only establishment of traditional Russian merchant cuisine in the region located in a thematic place for this, the former house of Omsk merchant. The design of the restaurant amazes with its magnificence: furniture made of expensive wood, many interesting decor items, old things, photographs, traditional nesting dolls, samovars, etc. Embroidered

and starched tablecloths and dishes made of English porcelain deeply immerse into the epoch of that time. Chef: Julia Trakhmanova, modest and charming “prima ballerina” of the restaurant, showed the highest level and true mastery in the performance of all served dishes, from beautiful decoration to their incredible taste. Menu card: First of all, the menu itself impresses, a real book in binding with a large selection of dishes of merchant cuisine and a detailed historical tour to each “chapter”. One of my obligatory recommendations on the menu is the delicious pickles. Salted cucumbers and tomatoes, sour cabbage, pickled pepper, soaked milk mushrooms with sour cream, it is worth to try to every foreign guest! My favorite appetizer was “Aspic of white mushrooms” with exquisite serving and delicate taste, as well as incredibly tender and juicy “Rabbit and beef rolls with the addition of liver”. Appetizers are served with traditional Russian kvas, the refreshing effect of which awakens appetite.

The signature dish of the restaurant is, perhaps, “Sterlet of cold and hot smoking”. Having tried it, you understand why this fish is so appreciated in Russia, because only for this one dish it is already worth coming here. It will forever remain in my memory. One more fish delicacy that delighted me was “Soft-salted nelma”. And, of course, red caviar in abundance with pancakes. It is logical that due to the low temperatures that hold on the territory of Russia for most of the year soups are preferred here to warm up. In the restaurant they are for any taste: daily shchi with buckwheat, shchi with sorrel and pies, boyar shchi with fried meat pies, pea soup with smoked meat in a loaf of bread, spicy soup with giblets with sour cream, borsch, ukha of sterlet... I have never and anywhere tried so many soups at one time! But now I can tell everyone with confidence that traditional Russian soups are the most delicious in the world! The main part of the menu is completed by meat dishes: lamb, hare, beef, pork, the choice is huge and for any taste. I also liked freshly baked bread, delicious and very aromatic. For a dessert there is an assortment of sweets and home pastries testifying a high confectionery mastery. Wine card: An excellent selection of wines, including French and Italian wines. As also a wide assortment of traditional Russian vodka and the strongest samogon in iced shot glasses are presented here. Features: The service is amazing in this restaurant. I did not see before more elegant and skilled service: beautiful waitresses dressed in Russian merchant dresses serve dishes as if floating above the stage dancers. Everything here is done for the client to make him feel like a welcome guest. It is worth going to Omsk city only for visiting the restaurant “Lugovskaya Sloboda” to try traditional merchant cuisine and experience a real Russian hospitality! Antonio Marqueríe Tamayo.
