“He’s a competitor. He wants to win as much as I do.” Emily Esau Williams and her partner, Dandy, are winning. They’re clearing fivefoot jumps and challenging their Grand Prix competitors with grit, grace and style.

Emily, owner of EE Show Stable, competes at the Grand Prix level, which is the highest national level for hunter/jumpers. Emily also trains horses and gives riding lessons to junior and amateur riders. In fact, just before we went to press, Emily and her business partner, Dayle Fischer, announced they are opening their barn doors on new soil. EE Show Stable is relocating to Dove Hollow in Olivenhain. Emily has 35 horses in training and a clientele of about 70% kids and 30% adults. The new barn,

1. Be bold in your resolve and in the world.

It is imperative for you to step up and define what is important to you. If you don’t step up, just know that others will.

2. Consume less. Create more. It’s impor-

tant for all of us to try to consume less from others and create more gifts to give the world.

They are written down and reflected upon regularly, not so much for when things are going great, but when we face certain difficulty.

You don’t have to know “the how,” but get clear on “the purpose” and surround yourself with people who amplify you and you will find your way.

4. Be willing to ask big questions. Big

My mom passed after a 12-year battle with dementia at the same time I left a glamorous PR career to start a senior care placement agency. Although scary at first, it gave me immense purpose and satisfaction helping families navigate through one of the most complex and chaotic times in their lives.

Here are the five most common mistakes I see people make when considering care options: 1. FOLLOWING A FRIEND – Taking a friend or neighbor’s recommendation for restaurants is fine -- it’s a terrible idea for senior care. We wouldn’t take the same medication as a friend because it works for them -- the same holds true for assisted living and memory care. One size does not fit all.

Communities also change when staff changes.

2. UNDERESTIMATING YOUR NEEDS - Families downplay or are in denial of the level of care their loved one needs, or that it is no longer safe to stay home.

3. WAITING TOO LONG - Families don’t act soon enough and a parent injures themselves. Falls are the #1 risk that creates a decline in quality of life and often leads to an earlier death.

4. JUDGING A COMMUNITY BY ITS LOOKS - Don’t choose a community based on how nice the décor is and put the quality or appropriateness of care in second place.

5. NAVIGATING OPTIONS ALONE – This is a complicated web of government regulations requiring immense knowledge of healthcare, the law, financial planning, and aging – there’s no more important a decision than the care of a loved one. I have 7 years of credentials, stay current on every-changing state regulations, continuously visit communities, and have 1000’s of hours circumnavigating the Medicare and healthcare system. Professional help is no cost to you and could literally be a matter of life and death.

Hugging on to Hope “We must embrace pain

The death of a child is the deepest pain a parent could possibly endure. Olivenhain parents, Marcella and Matt Johnson know that pain. In 1999, their fourth child, their son George, passed away on the same day he was born.

Upon George’s passing, Marcella experienced Takotsubo cardiomyopathy or ‘Broken Heart Syndrome.’

Marcella learned that holding onto a weighted object could possibly ease her pain. It worked. She thought if it worked for her it might help other grieving parents. In an effort to honor George, and to help ease the suffering of others, Marcella founded The Comfort Cub, a non-profit organization that delivers weighted teddy bears to victims of grief, trauma and depression.

The Comfort Cub has delivered more than 20,000 cubs and touched more than 60,000 lives. Marcella says, “As soon as we started to realize the science behind the weight of The Comfort Cub and how deep touch pressure can help to reduce anxiety and stress we started branching out into different areas. Our first outreach was to the victim’s families of Sandy Hook. The cubs were so well received that the school contacted us for more Comfort Cubs for their teachers who had lost stu-

dents and for the parents of the two young teachers who were also killed.”

The Comfort Cub partners with the San Diego Police Department, Palomar Hospital and the San Diego District Attorney’s office to help victims experiencing trauma. The cubs are also used at several elementary, middle, and high schools in the counseling and nurse’s offices.

The Comfort Cub is also receiving more requests due to the isolation, loneliness, and depression brought on

by COVID-19. Marcella says, “It seems most people are now familiar with the science and physical benefits behind a weighted blanket which reduces stress by causing the body to release dopamine, serotonin, and oxytocin. We like to say that The Comfort Cub is like a weighted blanket that you can take with you wherever you go!”

Q: WHAT INSPIRED YOU TO START THE BUSINESS? A: My children and their peers inspired and clarified the purpose. After facing my own health issues, I discovered one in two children today will face a chronic health condition by the time they reach sixteen.

Low-quality, processed, commercial food and environmental toxins led to my autoimmune disease in my 30’s. It was affecting the next generation even earlier. This is unacceptable.

Q: WHAT IS THE BOLDEST MOVE YOU’VE MADE IN YOUR BUSINESS?

A: The boldest thing that I’ve done as an entrepreneur is trading comfort and stability as a full-time mom with a working husband to start a manufacturing company, risking everything to build a better future for generations to come. I believe our actions create a ripple effect.

PERFECTLY pumpkin

Fill your home with the aroma of fall with warm slices of this Pumpkin Loaf dolloped with butter.

PUMPKIN LOAF

Heat oven to 350 F. Prepare loaf and muffin pans with nonstick cooking spray.

In a bowl, whisk eggs. Set aside.

Nonstick cooking spray 4 eggs 3 1/2 cups flour 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon nutmeg 1 teaspoon salt 2 sticks butter 2 cups sugar 1 can (15 ounces) pumpkin puree 1 cup chocolate chips 1 cup walnuts, chopped

In a separate bowl, sift flour, baking soda, cinnamon, nutmeg and salt together. Set aside.

In another bowl, cream butter and sugar. Add whisked eggs and mix until blended.

Alternately add flour mixture and pumpkin puree to egg mixture, beating until blended.

Fold in chocolate chips and walnuts.

Pour batter into loaf and muffin pans. Bake 40-45 minutes or until a toothpick inserted into the center comes out clean Cool 10 minutes before removing from the pans —Recipe courtesy of Culinary.net—

CRANBERRY-ORANGE PORK LOIN Nonstick cooking spray 4 eggs 3 1/2 cups flour 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon nutmeg 1 teaspoon salt 2 sticks butter

What do you do when 90% of your business disappears overnight? You get creative and go collective!

Lynette Meyers, founder of Cyndi and Sofi Designs, and Cathy Hall, founder of Sweet Spot Toffee & Treats, were both happily running their respective business – both of which relied heavily on events and farmer’s markets – when COVID-19 hit and shut down their main sales channels.

Meyers, a longtime Carlsbad resident, started her custom event and card business in 2006, and garnered a reputation for beautiful holiday cards, wedding and party invitations, menus, custom party favors, and more.

Hall, a longtime Encinitas resident who had formerly run a children’s resale shop and managed several Nothing Bundt Cake locations, had just started her business after 20 years of making toffee and sweets for friends.

After getting her Cottage Food license in March, her plan to secure a spot at a local Farmer’s Market went awry when Farmer’s Markets closed down. Even though markets eventually reopened for essentials only, their space was limited, leaving no room for new vendors.

Where do two creative Makers go with great products and nowhere to sell them? Enter collective retail! Adore Boutique Collective opened a location at The Forum in Carlsbad – Meyers and Hall heard about it and quickly jumped on the opportunity to rent a small section designed for local makers. Adore houses 50+ micro-boutiques. Cathy sells and samples her toffee daily. Lynette sells notecards and other non-personalized items, although the bulk of her business is still from custom orders.

Chocolatiers, Sandra Bedoya and David Mejia, are finding success one “nibble” at a time. The local parents started Nibble Chocolate from their small apartment kitchen and are now taking a big bite out of the bean-to-bar chocolate business.

BEAN-TO-BAR CHOCOLATE Bean-to-bar means chocolate artisans process the cocoa beans inhouse, roasting the beans, grinding the nibs into a smooth paste, mixing in sugar and other ingredients, tempering the chocolate and the end product is a wrapped chocolate bar.

The US bean-to-bar chocolate business is worth an estimated $75m-to-$100m —Vreeland & Associates

Sandra and David started the business while craving chocolate and trying to find a healthy option. The ingredients in commercially produced chocolate caused them to lose their appetites.

They started making their own chocolate from scratch and decided to test their product at a farmers’ market.

They sold out! Quickly, the production spilled beyond their home kitchen.

They now operate a small chocolate factory. Every “Nibble” is still made by hand.

GROWING A QUALITY BUSINESS Quality and ethically sourced ingredients are important to Sandra and David. They take pride in working directly with the farmers that provide them with cocoa beans. TOTALBODYWORKOUT DO YOU HAVE A JOGGING STROLLER BUT DON’T REALLY JOG? OR ARE YOU MISSING YOUR WORKOUTS NOW THAT YOU HAVE A BABY IN TOW? NO WORRIES. YOUR STROLLER CAN BE YOUR FAVORITE NEW PIECE OF EXERCISE EQUIPMENT! SO, GET YOUR BABY AND YOUR STROLLER AND LET’S GET STARTED!

WARM UP (3 - 5 MINUTES)

STROLLER ROW (2 MINUTES)

Start with an easy walk, gradually warming up your body and your muscles. The most common postural dysfunction when pushing a stroller is hunching forward, so be sure to keep your shoulders down and back throughout your walk. Don’t wait for the abs portion of the workout to draw in your belly button and engage that core!

The movements of motherhood pull us forward. So, we want to focus on our back side.

For this exercise, have the baby facing downhill.

Let the stroller roll forward and then use upper back muscles to row it back in towards you. You are standing with legs about hips width apart.

Engage your core and row, row row! . Do about 3 sets of about 10 – 15 repetitions.

STROLLER SQUAT (2 MINUTES)

LUNGE WALKING (2 MINUTES)

The squat is one of the best exercises for the lower body. Stand behind your stroller with the brake off, hands about shoulder width apart on the handlebars. Your feet and knees should face forward with your legs about hips width apart. Sit your bottom way back, and put your weight in your heels. Push your stroller out in front of you as you squat down, and pull it back in as you pull yourself up to a standing position.

When squatting back, keep your spine long and strong, with your upper body only slightly tilted forward. A common mistake during this exercise is to bend too much from the upper body, when it should be the lower body that is reaching back. For all of the strength “stations”, do 3 sets of approximately 10 – 15 repetitions.

The lunge is by far one of the most effective exercises a mom can do to tone and strengthen her lower body. It’s a compound exercise, which basically means it works a lot of muscles in just one move! A good lunge will effectively work your quadriceps (front of your thighs), hamstrings (back of your thighs) and gluteus maximus (your bottom). This exercise will be part of your walk. Lunge walk by taking really long strides and lowering your upper body down until your front thigh is almost parallel to the ground. Your front knee should not go farther forward than your toes. Lower your body slowly and squeeze your thighs and glutes as you come back up.

Between each exercise, go for a STROLLER WALK (3 MINUTES) Walk for 30 seconds as hard and fast as you can, then recover by slowing your pace a little for 30 seconds. Repeat this sequence until your time is up. Try to walk towards a hill for the next exercise.

Stroller Bicep Curl (2 MINUTES) For this exercise, the break is off and the baby is facing downhill. Hold stroller with palms facing up. Just like we did with the row, let the stroller roll forward. Then use your biceps to pull the

stroller back in towards you. Even when doing an arm movement, you want to keep your abs engaged. Want to make it harder. Do one hand at a time. Just make sure that you always have your safety strap on!

SAFETY TIPS

▪ Always use a safety strap with a stroller.

STROLLER CRUNCH (2 MINUTES)

▪ Always keep your stroller a hand’s reach away from you if you’re working out beside your stroller.

Put your break on and lay a blanket in front of your stroller. Lay down directly in front of your stroller with your feet on either side of the wheel. With hands lightly behind your head, draw your belly button in and contract your abdominals, bring your shoulder blades a few inches off the ground. Exhale as you come up and inhale as you come down. Hold at the top of the movement for a moment, without pulling on your head. Your starting position should be where the abs start to engage; not at rest.

Safety is number one. Always be careful of cars and the environment when working out with your baby.

▪ We recommend that you wait at least six weeks after giving birth before starting this or any other kind of workout. Make sure to get your doctor’s clearance before starting any exercise program.

▪ Always make sure the stroller is stable. Do not ever hang on a stroller. Do not attach exercise tubing to the stroller.

STRETCH (5 MINUTES) Take time to stretch all the body parts we worked today. This is a great time to pull your baby out of the stroller and stretch next to her! You’ve now finished a workout comprised of strength, cardiovascular and flexibility exercises, and you’ve gotten to do it while spending quality time with your baby.

DELEGATE — There are loads of reasons why people don’t delegate, but unless you do, nothing will change. The first step is accepting that yes, others will most likely do it differently. Big deal. The aim here is not perfection—the aim is to save time.

For most of us, there have been times when we arrive at an intersection in life and need to make a life-altering decision. I arrived at those crossroads in my late twenties.

I had to decide if I would accept a job at the Drug Enforcement Agency, finish graduate school or take a different road and apply to law school. Turns out, sometimes the best decision is to go boldly in a completely different direction. I decided

to become a licensed clinical social worker instead. I never looked back. Helping children and families over the years has been extremely rewarding.

After my daughter was born, we moved to the North County and I decided to open my private practice. We also became close friends with our neighbors, the Balogh and Strang families. We would often joke about starting a podcast. Then COVID hit. We decided, why not?
