BLUEBERRY BASIL COCKTAIL

INGREDIENTS

½ lime, juiced

2 shots of vodka or gin

½ cup blueberries, fresh

5-6 basil leaves, stemmed and whole

Club soda

Ice

Pinch of sugar (optional)

Low-bush blueberries are in season during the month of September. This blueberry basil cocktail is a crisp and refreshing sip. If you don't have basil, mint is a great alternative.

METHOD

Place lime, blueberries, basil and liquor in a jar, glass or cocktail shaker. Gently muddle or crush the ingredients together to let the juices and basil mingle together.

Pour the ingredients over ice in a serving glass. Top with club soda.

INGREDIENTS

6 cloves garlic

1 onion any color

3-4 stalks celery

2 tbsp olive oil

4-5 large carrots

2 turnips or 3-4 parsnips or 1 rutabaga

2-3 packed cups kale or leafy greens of choice

4 cups vegetable broth

1 tsp Italian seasoning

¼ tsp crushed red pepper flakes

1 tsp kosher salt split

½ tsp pepper

METHOD

Wash and chop all the vegetables. Place a large cast iron Dutch oven or heavybottomed soup pot on the stove top and heat to mediumhigh. Once heated, add two tablespoons of olive oil to the pot.

After the oil has heated, add the minced garlic, onions, and celery to the pot and sauté for five to six minutes, stirring often.

Add the diced carrots and turnips to the Dutch oven, along with a half teaspoon each of kosher salt and pepper. Sauté for seven to eight minutes, stirring often.

Add four cups of vegetable broth to the Dutch oven and bring the soup to a boil. Once boiling, reduce to a low boil, cover, and cook for 15 minutes.

After cooking for 15 minutes on a low boil, remove the cover and add one teaspoon of Italian seasoning, a pinch of crushed red pepper flakes, a half teaspoon of kosher salt, and two to three packed cups of chopped kale (or hearty greens of choice). Cook for five - ten minutes and serve.

INGREDIENTS

FOR THE HONEY SYRUP: 1/4 cup honey

1/4 cup hot water

FOR THE COCKTAIL:

2 oz. gin

1 oz. honey syrup

1 oz. lemon juice

Edible flowers or a lemon twist

METHOD

For the honey syrup: In a liquid measuring cup, combine the honey and hot water. Whisk to combine. Set aside to cool to room temperature. Refrigerate until ready to use.

For the cocktail: In a cocktail shaker, combine the gin, honey syrup, and lemon juice with ice. Cover and shake vigorously for about 10 seconds. Strain into a chilled coupe glass and serve with a lemon twist or edible flower.

This blueberry crumble is incredibly easy and absolutely delicious, requiring just 10 minutes of handson prep. Juicy blueberries bake to perfection beneath a buttery oat topping—truly out of this world!

BLUEBERRY CRUMBLE

8 Servings | 289 Calories

INGREDIENTS

BLUEBERRY FILLING

2 pints fresh blueberries

2 tbs sugar, or more to taste

2 tbs all-purpose flour

1 tbs fresh lemon juice or water

Pinch fine sea salt

CRUMBLE TOPPING

3/4 cup all-purpose flour

3/4 cup old-fashioned rolled oats

1/2 cup sugar, try a mix of brown sugar and granulated sugar

1/2 cup butter, melted 1/8 teaspoon fine sea salt

METHOD

Preheat the oven to 375°F (190°C).

Add the blueberries, lemon juice, two tablespoons of flour, two tablespoons of sugar, and a pinch of salt to a 9-inch pie dish (or use a two-quart baking dish). Toss well until combined.

In a medium bowl, combine the flour, rolled oats, 1/2 cup of sugar, and 1/8 teaspoon of salt in a medium bowl. Add the melted butter, then stir until the butter has moistened all the flour and the topping is crumbly.

Sprinkle the crumble topping over the blueberry filling. You can use your hands to do this. As you sprinkle, press the crumbles together to create larger clumps of topping.

Bake until the juices thicken, and the topping turns light golden brown, 25 to 35 minutes. Cool for 10 minutes, top with whipped cream or ice cream and then serve.
