Announced at Arabian Travel Market 2025, this blockchain-powered initiative aims to attract global, techforward travellers by offering personalised, immersive digital experiences and blockchainbased reward tokens. The MoU marks a strategic step in RAKTDA’s mission to redefine

The new loyalty programme will facilitate secure digital transactions and offer access to curated events and offers, enhancing visitor engagement and destination appeal. With its diverse landscapes—from beaches to mountains—Ras Al Khaimah is now evolving into a digital playground. AIR INDIA IS SET to enhance connectivity between India and Japan by launching daily nonstop flights between Delhi and Tokyo Haneda, starting 15 June 2025. This marks a significant upgrade from the current four-times-weekly service. The move follows Air India’s strategic shift from Tokyo Narita to the more centrally located Haneda Airport, effective 31 March 2025. Haneda’s proximity to downtown Tokyo is just 18 km or 30 minutes to Tokyo Station, offering travellers faster and more convenient access to the city’s heart. The new daily service will be operated by Air India’s Boeing 787-8 Dreamliner, known for its comfort and efficiency. The change is part of the airline’s broader effort to expand its international network and improve passenger experience. The expanded codeshare agreement with ANA will allow seamless connections to six major Japanese cities, including Osaka, Nagoya, and Sapporo. Passengers can also enjoy convenient onward links to major Indian cities and global destinations across Asia and Europe.
VIETNAM AIRLINES HAS officially launched widebody its Mumbai–Hanoi route, introducing the Boeing 787 Dreamliner and Airbus A350 to the sector. As the 125-foot-tall, nine-story rajagopuram (gateway tower) of the Arulmigu Adi Kumbeswarar— the largest Shiva temple in Kumbakonam—faded behind me, I found myself navigating through a packed vendor lane that marked the end of the temple road. Brass utensils gleamed from shops lining both sides, their polished surfaces catching the morning light as local vendors called out to passing pilgrims and tourists alike. My destination, however, lay beyond these mercantile distractions—I was on a quest to experience what locals had repeatedly described as the quintessential Kumbakonam ritual—savouring a cup of authentic
Degree Coffee. Spurred by their recommendations, I made my way to Sri Mangalambika Vilas Coffee Hotel, where morning light filtered through latticed windows between pink columns, as I settled into a steel chair with a wooden seat pulled up to a steel table, for this South Indian tradition.
Around me, conversations flowed in melodic Tamil, underscored by the soft, syncopated taps of brass on brass. In this 111-year-old establishment, time seemed suspended in the caramel-toned brew served before me. I wrapped my fingers around the still-hot brass tumbler, feeling the weight of tradition it carried. Long before Seattle birthed coffee chains on every corner and before Melbourne turned latte art into Instagram fodder, this small temple town in Tamil Nadu had
perfected the art of coffee brewing to a scientific precision. Here, in the cradle of South Indian coffee culture, I was about to experience the legendary ‘degree coffee’—a brew that predates the modern coffee renaissance by centuries.
Sri Mangalambika Vilas Coffee Hotel was founded in 1914 by Thaiyu Patti and VG Harihara Iyer, initially serving traditional South Indian tiffin items. The legacy continues with Harihara Iyer’s son, Rajagopalan, affectionately known as Ramani, now at the helm. As the third-generation owner, Ramani underscores the significance of every step in the brewing process, stating, “The first pour is always the most important.” His wife, Neela, skilfully demonstrates the traditional “pulling” technique— lifting the tumbler high above the davarha and pouring the coffee in a silky stream that forms a perfect froth. “This aerates the coffee and brings out its soul,” she explains, carrying forward a ritual that has defined their family’s commitment to coffee for generations.

The most widely accepted explanation refers to the precise temperature at which the coffee reaches its perfect state—180 degrees Fahrenheit. At this exact temperature, the coffee’s volatile compounds harmonise to create a flavour profile impossible to replicate at other temperatures. Another theory suggests the name derives from the milk used in the preparation—boiled to its ‘first degree’ or the moment it rises to a boil for the first time. The coffee traditionally uses the fresh, unadulterated cow’s milk, often sourced directly from local farms, and is reduced by approximately onethird through slow boiling, concentrating its richness. Yet another explanation connects the name to the purity standard of the milk, historically tested with a lactometer that measured in degrees.
Only milk that reached a certain degree of purity would be deemed worthy of the brew. “All three explanations are true,” Ramani tells me, as he stirs a small pot of freshly ground coffee powder mixed with chicory. “Degree coffee is a precise science, an exacting art, and a cultural touchstone.”

Additionally, its superior heat conductivity ensures even heat distribution during the decoction process, preventing bitter compounds from overwhelming the brew.
The preparation of degree coffee is nothing short of ritualistic. In Sri Mangalambika Vilas, I watched the process unfold with reverent precision: First, finely ground coffee powder (typically mixed with chicory in a 60:40 ratio) is placed in the upper chamber of a traditional South Indian filter. Boiling water is added, and the decoction slowly drips into the lower chamber over 15-20 minutes, a process that cannot be rushed. Meanwhile, fresh milk from the morning’s first milking is slowly reduced over a wood fire, concentrating its flavours. At precisely the moment it reaches its ‘first degree’ boil, it’s removed from the heat. The coffee decoction, dense and potent, is then mixed with the prepared milk and jaggery (unrefined cane sugar) in specific proportions that vary slightly between establishments but are guarded like family secrets. The final temperature must reach just beyond 180°F or 82°C—hot enough to meld the flavours but
not so hot that it scalds the delicate compounds. This temperature has been determined through generations of experience, long before digital thermometers appeared in kitchens. The culmination is the pulling process—pouring the coffee between the tumbler and davarha from increasing heights, cooling it to drinking temperature while simultaneously aerating it to create the characteristic silky texture and frothy crown. “It takes an apprentice at least three years to master just this pouring technique,” Neela notes as she demonstrates the hypnotic back-and-forth.
Degree coffee transcends its status as a beverage to become the social nucleus of Tamil Nadu’s daily life. In homes across the region, coffee preparation marks the rhythms of the day—morning, afternoon, and evening. Offering coffee to guests is not merely hospitality but an expression of respect and welcome. “In Tamil culture, every household will offer you their best coffee,” explains Shiva MC, the local guide of Mantra Koodam, who accompanied me to the coffee house. “When you enter a Tamil home and they ask ‘Coffee sāppidringalā?’ (Would you like coffee?), refusing is almost an insult to their hospitality.” This reverence for coffee extends to Kumbakonam’s spiritual life. The town, home to over 188 temples within a 40-kilometre radius, integrates coffee into its religious fabric. After morning prayers, devotees often complete their spiritual practice with a visit to a nearby coffee establishment. Even the Mahamaham Tank, a sacred water body where thousands gather every 12 years for ritual bathing, is surrounded by coffee stalls that have served pilgrims
for generations.
Degree Coffee, however, merely scratches the surface of Kumbakonam’s cultural wealth. The region’s spiritual landscape unfolds with extraordinary temples. At Thirunageswaram, the Raagu Temple captivates visitors with its mystical sanctum where milk poured over the idol undergoes an inexplicable transformation of colour—a phenomenon that has drawn pilgrims for centuries. Nearby stands Suryanar Kovil, one of India’s rare temples dedicated to the Sun God, surrounded by shrines honouring all nine celestial bodies of Hindu astrology. Further along, Darasuram’s magnificent Patteeswaram Temple, a UNESCO World Heritage site, surprises with its
breathtaking Chola craftsmanship, intricate stone carvings and graceful, pillared halls.
For the culinary explorer, no visit is complete without experiencing the legendary Maharaja Thali at Mantra Koodam. This elaborate spread features over twenty dishes served on a banana leaf—showcasing the diverse flavours of Tamil cuisine—that perfectly enhances the post-dining degree coffee ritual at their Tea Kadai stand. “The Maharaja Thali and degree coffee represent two aspects of our culinary heritage,” says Harish Venkat, General Manager at Mantra Koodam pointing, “One is elaborate and expansive, the other precise and focused—together they show the range of our food traditions.”
While tourists flock to established coffee houses, locals directed me to Mohan Coffee—a 30-yearold small shop on Kamatchi Josier Street—where
the town’s residents buy their coffee powder and chicory. Upon placing your order, they freshly roast coffee beans in limited quantities, grind them to exact measurements, and blend them with premium chicory. “For the authentic degree coffee experience at home, you need the right blend,” advises Venkatesh Raj, the owner. “We adjust the chicory percentage based on water quality in different neighbourhoods. That’s something the big commercial brands can’t offer.”
As I departed Kumbakonam, my luggage heavier with packets of freshly ground coffee from Mohan’s, I realised—I was taking with me a fragment of living history. In this small Tamil Nadu town, where time seems to move at its own deliberate pace, the ritual of degree coffee offers a counterpoint to our rushed, modern existence. The meticulous process represents a philosophy as much as a beverage. While third-wave coffee shops in metropolises worldwide experiment with nitrogen infusions and laboratory-precise pour-overs, Kumbakonam’s coffee masters maintain their steadfast devotion to a method perfected generations ago, using equipment that has remained essentially unchanged for over a century.
The full-bodied richness of degree coffee, with its characteristic caramelised notes and velvety mouthfeel, needs no artisanal rebranding or marketing strategy. In an era where coffee has been industrialised, commercialised, and globalised, Degree Coffee stands on its own merits.

I was immersed in an evening of refined indulgence with a specially curated dinner menu by the chef, artfully paired with select white and red wines to complement every note
of flavour. I began with a Broad Bean Pie reimagined with seasonal finesse, a silky Goose Mousse, golden Fish & Chips with a gourmet twist, and a pillowy Cheddar Pancake that offered a rich, savoury prelude. I progressed to savour the comforting depth of a Charred Leek & Potato Soup, followed by the sweet, succulent complexity of Alaskan

For the main act, I luxuriated in the deep umami richness of Kagoshima Wagyu, perfect and exquisitely tender. A refreshing interlude came in the form of a playful Gin & Tonic, reinterpreted with elegance, before a decadent finale: a lush, layered Chocolate Cake served alongside a perfectly pulled Espresso, bringing my gastronomic journey to an unparalleled close.

I started my meal with a comforting bowl of hot and sour seafood soup - rich, tangy, and full of flavours. Then came the highlight, fragrant fried prawns served in a sizzling clay pot with vermicelli and ginger. The aroma alone was mouthwatering. A side of seasonal vegetables added a refreshing balance, while the fried crispy rice with beetroot, crab meat, and spring onion brought colour and texture to the table. I sipped on a chilled Chinese beer throughout, which paired perfectly with the bold flavours. To finish, I enjoyed a calming cup of jasmine tea, light, floral, and the perfect way to round off such a satisfying and thoughtfully prepared meal. The symphony of tastes left me completely satiated.

I had the pleasure of experiencing the specially curated chef’s tasting menu at Man Ho Chinese Restaurant, and it was truly a journey through refined Cantonese flavours. The evening began with their signature barbecued pork loin glazed in honey, succulent and perfectly balanced, followed by a delicate steamed dumpling filled with minced garoupa and shrimp. One of the standout dishes was the baked South African dried abalone puff with wild mushrooms, rich and luxurious. The pan-fried scallop with spring onion in ginger foam was light yet flavourful, and the hot and sour soup with crab meat offered comforting warmth. From the steamed yellow croaker in sansho pepper sauce to the tender baked French lamb belly, each course impressed. I ended with a sweet pistachio cream, red date puff, and a bold espresso.

For mains, the rich and creamy black dal paired beautifully with soft tandoori rotis, while the dry bitter gourd added a unique, pleasantly tangy crunch. A glass of red wine tied everything together with smooth elegance. To end, I indulged in a decadent chocolate mud cake - moist, dense, and deeply satisfying - alongside a perfectly brewed cappuccino. The balance of flavours, elegant presentation, and warm ambience made this dining experience both memorable and comforting.

Located on the ground floor of a building that previously housed a Korean restaurant off the sleepy centre in Madrid, a main hall with bursts of colour and antique tables decorated with fresh produce, welcomes the vista of an elegant kitchen through glass floors of the hall, and a wine cellar par excellence.
Alongside his two companions, Coco Montes carefully plates little masterpieces, enveloping a concept of purity of ingredients and championing micro-seasonal cuisine that changes daily, in line with provisions from his suppliers. Coco is highly focused on vegetables, with small protein elements, delicate textures and oodles of personality which come to life in the menu.
The familial and convivial nature of the restaurant is an ode to his heritage and upbringing, which is so cleverly incorporated throughout the ethos of the restaurant. The
name “PABÚ” is an amalgamation of the colloquial names of his parents, Pate and Bubú, the antique furniture sought at auctions over the years and the logo that was designed by his nephew when he was all of four.
Rita, his mother and the artist, an industrial engineer by occupation, coverts the dining room into a warm fuzzy feeling, not only in terms of service but by accentuating the menu with illustrations, and the walls with beautiful paintings created by her, making sure everything is in congruence with her son’s artistry in the kitchen.
So, walk into a world of enchantment and warmth, as every visit is a first, for nothing here is ever the same. No dish, nor experience today, is the same as tomorrow.
