In summer, the midnight sun bathes the city in a surreal, golden glow. Fjords glisten beneath the light, and Arctic wildlife, from puffins to orcas, comes into view on tailored yacht charters or curated photography safaris. Nature here is not just seen; it is intimately experienced.
Despite its remote location, Tromsø is culturally rich. The Arctic Cathedral, with its modernist architecture and stained-glass majesty, stands as a luminous beacon amid snow. Intimate galleries, Michelin-recommended restaurants, and boutique Nordic design stores lend the city a cosmopolitan charm that defies its latitude.
Culinary experiences are rooted in the region’s seafaring soul, such as the king crab, Arctic char, and wild herbs foraged from the tundra appear on plates curated by chefs who fuse Nordic tradition with contemporary finesse. Meals are often enjoyed in candlelit lodges or panoramic dining rooms overlooking the icy fjords.
Tromsø is not merely a destination; it is an awakening of the soul. A place where luxury is defined by silence, space, and the sublime, where the elegance of nature meets curated indulgence. For those seeking meaningful experiences far from the conventional, Tromsø offers a retreat that is as poetic as it is profound.

In an era where elegance meets efficiency, the gastronomic landscape is experiencing a quiet revolution ushered in by the discreet allure of the cloud kitchen. Also known as ghost kitchens or virtual restaurants, these exclusive culinary ateliers redefine the epicurean experience, one artfully packaged dish at a time.
Cloud kitchens exist without a storefront, yet they offer the finesse of a five-star establishment. Operating from state-of-the-art culinary suites, often nestled in urban enclaves or bespoke quarters, these kitchens focus solely on crafting food for delivery. The result? A seamless symphony of gastronomy, precision, and discretion without the trappings of a traditional restaurant.
For discerning culinary aficionados, cloud kitchens provide something beyond mere convenience. They are a curated indulgence. Imagine ordering a saffron-laced lobster risotto or a truffle-infused miso ramen with each dish prepared by acclaimed chefs who once helmed Michelin-starred dining rooms, now liberated from the confines of actual bricks and mortar.
Luxury cloud kitchens embrace cutting-edge technology to ensure perfection at every stage: from AI-driven inventory management to temperature-controlled packaging that ensures your foie gras or aged wagyu arrives as exquisite as when it left the pan. The elegance and focus lie purely in the cuisine and the orchestration behind it.
This model is also becoming a sanctuary for culinary artisans. Freed from décor, staffing, and real estate constraints, chefs can focus on pure creation. Menus evolve fluidly, ingredients are sourced with obsessive precision, and every detail is designed to delight the palate without compromise.
In this rarefied realm, cloud kitchens are no longer just a byword for efficiency. They are the new temples of taste, private, poised, and profoundly personal. For the modern gourmand, luxury is no longer confined to the dining room. It floats above us, in the cloud, unseen, but unmistakably sublime.

Unlocking your body’s natural repair power
Stem cells have emerged as a groundbreaking tool in the quest for rejuvenation and healing. These remarkable cells have the unique ability to develop into many different types of specialised cells, making them essential for growth, repair, and regeneration.
Using stem cells for rejuvenation aims to harness their power to replace damaged or aged cells, restore tissue function, and ultimately slow or even reverse aspects of ageing.
Every day, our bodies experience wear and tear. Cells get damaged, tissues weaken, and organs lose some of their youthful vitality. Normally, the
Adult stem cells, found in tissues like bone marrow, fat, and even blood, are more commonly used in therapies due to their ability to regenerate specific tissues and fewer ethical concerns
body’s natural repair mechanisms try to keep pace, but over time, these systems have become less efficient. This is where stem cells come in; they serve as an internal reserve, capable of renewing themselves and generating new cells to replace those that are damaged or lost. Stem cells exist in different types, primarily embryonic stem cells and adult stem cells. Embryonic stem cells have the potential to become any cell type in the body, but come with ethical and regulatory challenges.
Adult stem cells, found in tissues like bone marrow, fat, and even blood, are more commonly used in therapies due to their ability to regenerate specific tissues and fewer ethical concerns.
One promising area of rejuvenation involves stem cell therapy, where stem cells are harvested from a patient’s body, processed, and then reintroduced to target areas. This can stimulate healing in joints, skin, and organs, encouraging tissue regeneration. Stem cell injections are being studied for conditions like osteoarthritis, where they may help rebuild cartilage and reduce inflammation.
In the realm of anti-ageing, stem cells also offer exciting possibilities. As the skin ages, it loses collagen and elasticity, resulting in wrinkles and sagging. Stem cell treatments can promote the production of new collagen and regenerate skin cells, leading to firmer, more youthful-looking skin. Some cosmetic procedures now combine stem cell therapies with techniques like microneedling
or platelet-rich plasma (PRP) to enhance skin rejuvenation. Moreover, researchers are exploring stem cell exosomes, tiny vesicles released by stem cells that carry regenerative signals to other cells. Exosomes may provide many of the benefits of stem cells without the need to transplant whole cells, potentially making treatments safer and more accessible.
Despite the promise, stem cell therapies for rejuvenation remain an area of active research, with many treatments still considered experimental. Safety is a key concern, as improper use of stem
cells could lead to unwanted cell growth or immune reactions. It’s important to consult qualified medical professionals and rely on evidence-based treatments. Beyond direct therapy, lifestyle choices can influence the health and function of your body’s natural stem cells. A nutritious diet rich in antioxidants, regular exercise, adequate sleep, and stress management all support the environment in which stem cells thrive and function optimally. Stem cells represent a frontier in the science of rejuvenation. As research progresses, these therapies will help people live healthier, longer lives.

s the global travel landscape navigates through 2025, the hotel industry stands at a transformative crossroads: business travel is not just recovering - it’s evolving, and with it, the expectations of the modern traveller. With business travel spend expected to reach a staggering $1.64 trillion this year - up from $1.48 trillion in 2024corporate travellers are demanding seamless, personalised experiences as they face tighter budgets and heightened scrutiny on value.
Globally, 80% of consumers are more likely to do business with brands offering tailored experiences, and hotels leveraging personalisation see satisfaction scores climb up to 33% and retention rates rise by 20%. This trend is more than just digital check-ins and app controls. It demands thoughtful integration of technology - AI,
IoT, CRM, smart-room controls - into every guest touchpoint, delivering intuitive comfort while preserving the human warmth at hospitality’s core. For business travellers, frictionless power and connectivity are essential: mobile bookings, streamlined apps, seamless contactless payments, and high-capacity wifi now rank as baseline expectations.
Simultaneously, Forbes and Future Market Insights report that the personalised travel market will expand 17% annually, reaching $169 billion this year. And recent surveys indicate 89% of affluent and Gen Z travellers are loyal to hotels offering tailored services, and 93% are willing to trade data for personalisation.
For business travellers, frictionless power and connectivity are essential
At JW Marriott Marquis Dubai, we see this paradigm shift daily. Technology - smart rooms, CRMdriven guest profiles, AI-assisted recommendations - is woven into every stage of the stay, yet it remains invisible. A guest arriving after a redeye flight finds their room lights set to a preferred hue; the morning coffee is ready when they awake; and digital signage guides them effortlessly to a boardroom with presets for lighting and AV based on their agenda. In our 1,608-room property, supported by over 3,000 wifi access points and a 6,000-device capacity, these nuances mark the difference between convenience and delight. Storytelling brings strategy to life. During a leadership summit, a frequent business guest remarked, “It’s not the building or the lounge - it’s the way you remember me.” Her pillow choice, meal timing, and post-meeting smoothie were all personalised tokens of recognition. Globally, brands harnessing AI and personalisation platforms report unlocking 62% growth in loyalty. As corporate travel budgets stabilise, operators must maximise ROI through intelligent guest-facing tech, not just luxury finishes. Ultimately, personalisation and technology are not industry trends - they are an essential strategy for hospitality’s future. Today’s business traveller values time saved, stress avoided, and recognition delivered before it’s requested. At JW Marriott Marquis Dubai, we are committed to creating a sanctuary where invisible innovation meets heartfelt service because walking that tightrope with authenticity is what inspires the loyalty of tomorrow’s global traveller.
ROBERT DALLIMORE AREA VICE PRESIDENT, WEST INDIA AND GENERAL MANAGER, GRAND HYATT MUMBAI HOTEL & RESIDENCES
n the evolving landscape of luxury events and weddings, opulence is no longer just about crystal chandeliers, five-course menus, or silk-draped banquet halls. Today, true luxury lies in crafted experiences which are immersive, emotional, and deeply personalised. The hospitality industry is rewriting the definition of refinement, steering away from functionality and towards the unforgettable.
This shift is rooted in a growing desire for storytelling. Modern couples and corporate hosts seek a memory, a narrative, a moment that reflects who they are. As a result, luxury is being measured by the intimacy of design, theatricality of execution, and emotional resonance rather than just aesthetic splendour. At the heart of this transformation lies the hospitality sector, which has become the curator of moments rather than just the provider of venues.
Technology has played a pivotal role. The most forwardthinking properties now integrate multisensory experiences: custom lighting that mirrors the mood, surround-sound audio that dramatises a grand entry, or live culinary counters that turn meals into performances. The venue becomes a pivotal breathing character in the story.

The meticulously calibrated heartbeat of a fine timepiece has long stood as a testament to human ingenuity and mechanical mastery. Artificial intelligence is subtly weaving its rhythm into the storied symphony of watchmaking. From design concepts to the final flourish on the wrist, AI is reshaping the way luxury watches are envisioned, crafted, and experienced. This subtle revolution augments the dawn of a new era in which cutting-edge technology complements tradition, ushering in a future of innovation deeply rooted in horological heritage.
boundaries of mechanical innovation, giving rise to timepieces that are aesthetically captivating and technically profound. The enduring legacies of some maisons, such as Rolex, Breguet, and Patek Philippe, are built upon the foundation of human touch and mechanical soul.
For centuries, the art of watch design has rested in the hands of master artisans whose skills are not just learned but inherited and refined through generations of meticulous craftsmanship. Guided by time-honoured tradition and an unyielding pursuit of precision, these horological maestros have pushed the
Across the ages, watchmaking has mirrored the spirit of its time. From the elaborate elegance of pocket watches and the precision of chronometers, to the clean lines of contemporary minimalism, each era has left a distinct imprint on the design philosophy. Behind every silhouette lies the quiet dedication of a master watchmaker who has spent years perfecting the intricate balance between engineering and artistry. It is on this rich heritage of craftsmanship that artificial intelligence now enters the realm of horology as a powerful complement that is poised to redefine the boundaries of innovation while honouring the authentic spirit of the craft. The goal isn’t to replace human skills but to enhance them.

In haute horology, artificial intelligence is emerging as a powerful ally to human creativity, enhancing the design process with unparalleled precision and insight. Sophisticated AI-driven tools can now analyse vast datasets ranging from historical design archives and evolving aesthetic trends to subtle consumer preferences. The synergy between human expertise and machine intelligence is giving rise to timepieces of remarkable innovation. Designs that might once have taken years to refine are now being envisioned much quicker. Prestigious maisons are experimenting with AI to optimise case design, blending form and functionality with exquisite balance. Perpetual calendar mechanisms are now being refined through AI-driven simulations, resulting in more reliable and compact designs. These advanced systems can simulate and assess thousands of design permutations in moments, weighing variables such as ergonomics, weight distribution, material durability, and visual harmony while preserving the heritage that is intrinsic to luxury watchmaking.
The rise of smartwatches has brought AI to the forefront of the watch industry. Digital timepieces are rapidly becoming intelligent companions that adapt to our lifestyles. The intersection of traditional watchmaking and cutting-edge technology is creating a new category of timepieces that blend the best of both worlds.
At the heart of every smartwatch is an AI-driven system that uses sophisticated algorithms to monitor health, analyse sleep patterns, and even predict daily routines to improve overall well-being. AI also powers the voice assistants integrated into many smartwatches, allowing for easy language interactions. This hands-free functionality is particularly convenient in situations where it might not be possible to use a phone. The luxury watch industry is embracing this technological shift by creating hybrid timepieces that marry traditional craftsmanship with smart features. These watches maintain the aesthetics and mechanical intricacies of luxury timepieces while incorporating subtle smart functionalities.
The TAG Heuer Connected series features exquisite mechanical designs reminiscent of their iconic chronographs, but with full smartwatch capabilities powered by AI. Similarly, Montblanc’s Summit collection offers a perfect blend of Swiss watchmaking tradition and modern technology, with AI-driven features seamlessly integrated into classic designs.
Breitling’s Exospace B55 is another prime example of this fusion. It connects to your smartphone via Bluetooth, allowing for easy time setting and the ability to record flight times, a nod to Breitling’s aviation heritage, while maintaining the look of a traditional chronograph. Beyond the Exospace B55, Breitling’s smartwatch collections include the Endurance Pro and the Professional series, each offering unique features tailored to different lifestyles.
Behind the gleaming façades of luxury watch boutiques, a quiet revolution is unfolding, powered by artificial intelligence and defined by innovation. AI is now deeply embedded in the fabric of haute horology, transforming how timepieces are crafted, managed, and perfected. Inside Switzerland’s revered ateliers, AI works alongside master artisans to execute tasks requiring near-microscopic precision. Robotic systems, guided by machine learning, perform delicate operations, from applying infinitesimal drops of lubricant to flawlessly setting jewel bearings, ensuring unwavering quality and consistency. This allows craftsmen to focus on the expressive nuances of design and finishing that elevate a watch from functional to extraordinary.
Using predictive analytics, brands now forecast demand with accuracy, aligning supply with market trends and minimising waste. Even quality control is elevated by AI. Advanced computer vision systems inspect components with extraordinary accuracy, detecting flaws invisible to the human eye and ensuring uncompromised authenticity.
Across the ages, watchmaking has mirrored the spirit of its time
In this elegant fusion of heritage and technology, AI is not replacing craftsmanship; it is refining it, helping horology’s finest maisons shape the future while honouring their storied past.
For decades, the luxury watch industry has set the benchmark for craftsmanship and bespoke client service. Now, with the integration of artificial intelligence, these experiences are becoming more intuitive, personalised, and immersive.
One of the most compelling innovations is the rise of AI-powered virtual try-ons, where augmented reality enables clients to visualise timepieces on their wrist with extraordinary realism. Pioneering brands like Omega and Rolex offer digital experiences that adjust to wrist size, skin
tone, and lighting, delivering a near-tangible sense of how a watch will appear, without ever stepping into a boutique.
AI is also quietly reshaping the customer journey. By analysing browsing habits, purchase history, and lifestyle preferences, intelligent systems curate highly tailored recommendations, transforming them into a bespoke experience. Enthusiasts may be guided toward rare models or contemporary reinterpretations that align with their taste. Supporting this are AI-driven chatbots, offering detailed information on specifications and availability, while seamlessly scheduling appointments or connecting clients with human experts. Available at any time, they enhance service without compromising personal touch. In this new era, AI elevates luxury by ensuring that every interaction feels as enduring as the timepiece itself.
In the exalted world of luxury watchmaking, authenticity is sacred. Every timepiece embodies the legacy of its maison, the artistry of its makers, and the trust of its wearer. As counterfeiters grow increasingly sophisticated, the industry is embracing artificial intelligence as a powerful safeguard of integrity.
At the forefront of this technological vanguard are learning algorithms meticulously trained on extensive archives of authentic timepieces. These intelligent systems can discern the most minute, often imperceptible details that distinguish a genuine masterpiece from even the most convincing replica. AI examines all elements with forensic precision, often uncovering inconsistencies that are invisible to the human eye.
Prestigious watch retailers and certified resellers are now integrating these AI-powered authentication tools into their evaluation protocols, particularly within the burgeoning preowned and vintage markets. During the appraisal process, high-resolution imagery of each watch is analysed by AI systems, which compare the data against curated databases of known genuine models. This process offers an additional layer of verification, working in tandem with human experts to ensure every watch presented to clients meets the highest standards of authenticity. This technology enhances transparency and reassures collectors that the timepiece on their wrist is unquestionably authentic.
AI is emerging as a transformative force to create a more conscientious future for ne watchmaking
In the ever-evolving world of luxury watchmaking, the art of storytelling and engagement is shaped by discerning artificial intelligence. Traditionally reliant on heritage, aspiration, and exclusivity, luxury marketing is now being redefined by data-driven precision, offering watch maisons a precise understanding of their clientele.
Sophisticated algorithms are now sifting through vast universes of consumer data to empower brands to craft personalised marketing narratives with artistry and accuracy. The result is: messages tailored to resonate with individual preferences, delivered at precisely the right moment in the customer’s journey.
This intelligence shapes bespoke email communications, curated website journeys, and even exclusive offers that feel intimate and not intrusive. Every touchpoint becomes a reflection of the brand’s understanding, subtly reinforcing the emotional connection between the client and the timepiece. In this new paradigm, artificial intelligence allows maisons to remain attuned to their clientele, elevating the luxury experience into one that is aspirational and personal.
As sustainability becomes an essential pillar of the modern luxury ideology, the world of haute horology is turning to artificial intelligence to harmonise environmental responsibility with elegance. From resources to production efficiency, AI is emerging as a transformative force to create a more conscientious future for fine watchmaking. Through advanced algorithms, AI is optimising manufacturing processes with remarkable precision, reducing material waste, conserving energy, and minimising the environmental footprint of each timepiece. It is also paving the way for innovative recycling and material recovery techniques, allowing brands to reclaim and repurpose rare and precious elements from vintage or end-of-life watches. By preserving the integrity of resources, maisons can honour the past while crafting for the future.
Equally impactful is AI’s role in demand forecasting. By analysing market trends, collector behaviour, and regional preferences, AI allows brands to tailor production with exquisite accuracy.
In the pursuit of sustainable excellence, AI offers the luxury watch industry a way forward to preserve the artistry of the craft while protecting the resources that make it possible. It is innovation in its most responsible form.
AI is subtly reshaping the landscape of luxury timepieces, enhancing every facet from craftsmanship to client experience. Through intelligent personalisation, predictive servicing, and curated digital journeys, it complements the artistry and heritage of fine watchmaking.
“I just like red” won’t cut it anymore
WORDS YASHITA DAMANI
Let’s be honest, wine can be intimidating. One minute you’re trying to look sophisticated while peering into your glass, and the next, you’re nervously agreeing with someone who says the Chardonnay smells like “wet stone and sun-drenched hay bales.” What? If you’ve ever swirled your wine like you’re conducting a science experiment or sniffed a Merlot so hard your contact lens twitched-congratulations, you’re not alone.
But here’s the twist: wine doesn’t have to be pretentious. In fact, with five simple steps, you can go from clueless to clink-worthy. This is your crash course in tasting like a sommelier: minus the snobbery, with a splash of humour, and a swirl of science.
QUICK TIPS BEFORE WE BEGIN:
Always hold the glass by the stem to avoid warming the wine. (Someone once told me the glass would take on my body temperature.)
Use a white background when evaluating colour.
Don’t wear perfume, it competes with the wine’s bouquet.
No need to gulp or down your drink; small sips reveal more.
Wine tastes better in good glassware; tulip-shaped glasses are ideal.
You’ll learn how to look, swirl, sniff, sip, and savour like a pro, while also picking up fun facts (like why holding the stem is a power move) and decoding terms like “tannins” without googling mid-dinner.
Believe it or not, wine has a lot to say if you’re willing to look. Tilt your glass against a white background (a napkin or menu works great) and take a moment to admire the colour and clarity. White wines can go from pale lemon to deep amber as they age. Red wines evolve too, starting from bright ruby to garnet, eventually turning a brick-red or brown as they mature. More pigment? Usually, more power.
Sommelier’s sidebar:
If the wine is dull, cloudy, or tired-looking, it probably tastes that way too. First impressions matter.
Clarity class:
A clear, brilliant wine indicates finesse. If it looks hazy or murky and wasn’t meant to be unfiltered, that’s a red flag, not a red wine.
Viscosity = clue into alcohol or sugar:
The units of dynamic viscosity are: Force/area × time — but don’t worry, we’re not dealing with that today. Ever notice the slow, tear-like streaks sliding down the side of the glass? Those are called legs, and the thicker they are, the more alcohol or sugar content you’re likely dealing with.
Yes, the swirl; it’s not just for Instagram Boomerangs. Swirling exposes the wine to oxygen, waking up its aromatic compounds and allowing you to sniff all those subtle notes like a poet waiting for the reader to decipher the anecdotes and hidden meanings.
Tips:
Swirl like a human, not a helicopter, please: Hold the glass by the stem (no fingerprints, no accidental wine warming).
Gently rotate your wrist in a small circle. Picture a goldfish in there — you want motion, not turbulence. they are, the more alcohol or sugar content you’re likely dealing with. Stop. Sniff. Repeat.
WINE WORDS DECODED
(No judgment if you take a screenshot of this)
Tannins: Plant compounds giving wine its dry, astringent quality. Mostly in reds.
Acidity: Gives wine freshness. Without it, wine tastes flat.
Body: The ‘weight’ of wine in your mouth. Think skim milk (light) vs. cream (full).
Bouquet: The nose of an aged wine — complex, layered aromas.
Legs: Wine trails down your glass. High alcohol/sugar = slow, thick legs.
Terroir: The sum of a wine’s environment — soil, climate, altitude, and attitude.
Finish: The flavours left behind. Good wines don’t ghost.
You can taste only five basic flavours, but your nose? It can detect thousands of aromas. So before sipping, breathe in deeply.
Primary aromas: Straight from the grape — think fruity (like cherry, peach), floral (rose, honeysuckle), and herbal (mint, basil).
Secondary aromas: Yeast can add a bready or doughy scent. Malolactic fermentation? Hello, buttery notes. (Also releases some carbon dioxide in the meantime.)
Tertiary aromas: Develop during ageing. Oak barrels = vanilla, spice, leather, tobacco. Bottle ageing = earthy, mushroom, dried fruit vibes.
Wine whisperer: Smell with your mouth slightly open. It helps volatile compounds hit your olfactory receptors better, and looks just mysterious enough to seem experienced.
DON’T JUST GULP- ANALYSE IT LIKE A FOOD CRITIC WHO’S TWO GLASSES DEEP AND FEELING METRICAL.
Tannins give ‘body’ to a wine and a more well-defined structure, as well as texture and mouthfeel.
You can detect tannins by how drying a wine feels- it sometimes feels as if they’ve vacuumed all the saliva right out of your mouth. It’s easiest to notice this sensation on your gums and upper inner lips. Cheers to becoming ‘that’ person at the table.
Here’s your tasting cheat sheet: SWEETNESS ACIDITY TANNINS
BODY AND TEXTURE FLAVOUR SLURP SCIENCE
Detected right at the tip of your tongue.
You’ll feel it on the sides of your mouth — it’s what makes a wine zippy and mouth-watering (think of biting into a green apple).
Found in red wines, create that drying, almost puckery sensation we spoke about earlier. If your mouth feels like it’s been velvet-lined, that’s good tannin.
Light and crisp? Rich and velvety? The alcohol, glycerol, and tannins create that full-body mouthfeel.
If you get “cherry cola with a hint of cigar box,” run with it.
Sucking in a bit of air as you sip helps spread the wine across your palate and intensifies flavour. It’s awkward, until it’s impressive.
swallow — that lingering aftertaste. A quality wine sticks around like a good conversation, not a bad date.
Short finish: It fades quickly. Often simple, young wines.
Long finish: Flavours linger, evolve, and leave you pondering. That’s a signature of something more serious. The encore test: Can you still taste it 10 seconds later? Bonus points if new notes sneak up on you.
Always hold your glass by the stem — you’re not at a lemonade stand.
Don’t wear perfume to a tasting — your Sauv Blanc doesn’t pair with Chanel No. 5.
Trust your taste. If it reminds you of your grandma’s jam cupboard, say it.
Cheap wine? Serve it chilled. Cold hides sins.
Just remember: drink what you like.
DOES GOOD GLASSWARE MAKE A DIFFERENCE?
SHORT ANSWER? ABSOLUTELY.
Long answer? It’s like drinking espresso from a paper cup vs. fine porcelain.
Both get the job done, but one turns the experience into art.
Shape matters: A narrow glass focuses aromas (great for whites), while a wider bowl gives reds room to breathe and develop complex notes.
Thin rim = better sip: Thinner glass feels more delicate on your lips and helps the wine flow more evenly.
Crystal vs. glass: Crystal is more porous, so it can hold aromas longer, and it’s stronger, allowing for thinner, more elegant designs.
Stem is supreme: Holding your glass by the stem avoids warming the wine with your hand and keeps smudges off the bowl.
Bottom line: You don’t need a cellar full of Riedel, but investing in a good universal glass will instantly elevate your wine game- and (yes, your Instagram too).
Rule number one? What grows together, goes together. Think Chianti with tomato-rich pasta or Sauvignon Blanc with goat cheese from the Loire Valley.
Whites love light: Sauvignon Blanc loves citrusy salads and anything herby. Chardonnay (especially oaked) cosies up with buttery dishes. Reds need heft: Pinot Noir flatters mushroom risottos or aged cheddar. Sweet with spicy: Riesling and Gewürztraminer are magic with Thai, Indian, or anything with a chilli kick.
Bubbles? Universal: Champagne and sparkling wine are freakishly foodfriendly — sushi, fries, yes.
A
sustainable journey through Valencia— Spain’s third largest city
As I step onto the cobblestones of Valencia’s historic centre on a sunny May morning, the city is already buzzing with life. Café owners arrange their outdoor tables, market vendors prepare their stalls, and locals rush to work with their customary brisk pace.
Yet, unlike Barcelona or Madrid, there are no overwhelming crowds, and there is no need to jostle for space or book tickets weeks in advance. Valencia, Spain’s third-largest city, offers authenticity without compromise.
I’ve arrived when the city is celebrating the 550th anniversary of modern chess, a game whose European rules were formalised here in 1475 with the publication of “Scachs d’amor” (Chess of Love), the first text documenting what would become today’s standard chess moves. While chess enthusiasts are gathering at special exhibitions and tournaments across the city, I’m embarking on a different kind of exploration: Valencia’s celebrated ‘Green Route,’ a network of ecofriendly trails promoting cycling, walking, and sustainable tourism. Part of Spain’s Vías Verdes initiative, it repurposes disused railway lines into scenic paths. Key trails include the 160 km Vía Verde de Ojos Negros, the farmland-rich Vía Xurra, the 7 km Green Route of Safor, and the 9 km Turia Gardens.
The Green Route isn’t just a tourist trail, it’s more like a quiet manifesto for how old cities can still move forward
The Green Route, named for both its environmental sensitivity and its transformative emotional journey, threads through one of Europe’s largest and most beautifully preserved historic centres. It’s a masterclass in responsible tourism development, with the city having invested millions in pedestrianising streets, preserving heritage buildings, and creating thoughtful pathways that distribute visitors across different neighbourhoods. “We want visitors to experience Valencia at a human pace,” says Eduardo Aracil, Market Manager of Fundació Visit València. “Walking or cycling these routes connects you to the city in a way that rushing between attractions in a taxi never could,” he adds.
Throughout my week-long exploration, I walked approximately 80% of the journey, keeping my carbon footprint minimal while discovering hidden corners that would have been impossible to notice from a vehicle window. On the occasions when fatigue set in, I’d catch a regular or an electric bus back to my centrally located base in Campanar. The seamless public transport system is convenient with the Valencia Tourist Card, which includes unlimited public transport travel and free or discounted entry to various museums and attractions.
As we begin our walk from Plaza del Ayuntamiento, Valencia’s grand central square, Aracil points out how the morning light plays
The Valencia of 500 years ago wanted to show that prosperity was not just concentrated but also distributed
across the ornate façade of the town hall. The best way to understand Valencia is to follow its natural rhythms: the light, the meal times, the afternoon pause. A major stop was La Lonja de la Seda, the 15thcentury Silk Exchange and UNESCO World Heritage site. Before entering, I paused in the small but fragrant orange grove outside, where medieval merchants once refreshed themselves between negotiations. Inside, the main hall, the Contract Hall takes my breath away. Spiral columns soar upward like stone palm trees, spreading into elaborate vaulted ceilings that seem to defy gravity and logic.
The registered tour guide Gabor Juracsik, offers fascinating insights into the building’s spiritual symbolism: “According to the architect, this is part of the Solomon Temple, because if you look above your head, you can see it looks like you’re standing under palm trees in the Middle East. The ceiling was painted dark blue, and they put some golden stars everywhere. So, the medieval man would feel himself somewhere under palm trees on a hot summer night.”
When I walked in, I could tell right away the floor wasn’t original but was probably restored at some point. The ceramics of blue and white ships and vases scattered throughout the space created a splash of colour against the dark ceiling above, and the contrast was striking. The mathematical precision of these Gothic arches reveals why Valencia was once one of Europe’s wealthiest trading centres. Each column represents wealth flowing upward and outward. The Valencia of 500 years ago wanted to show that prosperity was not just concentrated but
By mid-morning, the Mediterranean sunshine bathes Valencia’s Cathedral in golden light as we approach its imposing Baroque façade. I’ve timed my
visit fortuitously. The cathedral is currently celebrating the third jubilee year of the Holy Chalice, which many scholars believe was used at the Last Supper. After touring the main sanctum, I climb the Miguelete Tower, the cathedral’s bell tower, offering panoramic views of the city. The highlight is undoubtedly the Chapel of the Holy Grail. The chalice, a simple agate cup, is mounted on a medieval gold base and sits behind protective glass. Archaeological evidence dates the cup to the 1st century BCE, placing it in the correct historical period for its purported sacred use. Just a short walk from the cathedral stands what locals proudly call “Valencia’s Sistine Chapel”— the Church of San Nicolás.
The next morning, I swap my strolls for wheels, picking up a rental bike to ride through Valencia’s ‘Green River’ trail. This remarkable nine-kilometre park was once the Turia River, which was diverted after a catastrophic flood in 1957. Rather than building highways as originally planned, citizens campaigned to create a green space, now one of urban Europe’s most visionary park projects. Cycling along shaded paths, I pass families picnicking, joggers and elaborate playgrounds. Orange trees, palm groves, and rose gardens create distinctive sections throughout the park’s length. After two hours of revelling in the scenery and beauty of Valencia’s rich heritage, I drop off the bike and continue on foot. My walk concludes at the City of Arts and Sciences. Designed by architect Santiago Calatrava, this complex of museums, performance venues, and Europe’s largest aquarium resembles a collection of alien spacecraft that have landed in the former riverbed. While Valencia is modern in many ways, its traditional festivals are some of the best times to visit.
Valencia, Spain’s thirdlargest city, offers authenticity without compromise
Valencian oranges are meant to be eaten fresh or juiced. Consider picking up a bottle of sweet orange wine before you leave!
Visit traditional horchaterías where horchata (tiger-nut and lactose-free milk) is served fresh alongside fartons (sweet pastries for dipping).
Hidden beneath schools, markets, and buildings are Civil War-era air raid shelters. While some are closed to the public, a few—like the Refugio del Ayuntamiento (under City Hall) and the Refugio de Serranos can be visited by booking in advance.
During March, a local festival called Fallas takes place. The locals create beautiful 20-metre-high monuments which cost approximately one million euros each, but in the end, they burn them all. This 800-year-old tradition started with the carpenters. The festival exemplifies Valencia’s approach to celebration and community, grand and deeply rooted in tradition. Pregnant women and small children are not allowed to attend because of the loud explosions and noise levels.
On my last day, as I enjoy a lunch of authentic Paella Valenciana at a local seaside restaurant, I reflect on how, unlike so many European cities now struggling with over-tourism, Valencia has created infrastructure that encourages sustainable exploration while preserving authentic local life. The pedestrianised historic centre, comprehensive bike share program, and well-maintained green spaces all support visitors in experiencing the city at a human pace. This deliberate approach helped earn Valencia the designation as European Green Capital for 2024, emphasising the city’s commitment to sustainable mobility and quality urban spaces.
Valencia was founded by Roman soldiers way back in 138 BC, so the city has over 2,000 years of stories layered into its streets. As twilight falls and chessboards appear at the La Nau cultural space, I find myself in a two-hour masterclass with none other than Viswanathan Anand himself. The focus, the stillness, the slow burn of strategy, all clicks. And suddenly, I get what my waiter, Jose, meant when he said, Valencia has always moved at its own pace.
The Green Route isn’t just a tourist trail, it’s more like a quiet manifesto for how old cities can still move forward. Here, history breathes, sustainability feels real, and somehow, even as a visitor, you don’t feel like a stranger.

glass of red wine, carefully selected to complement the elegance of the menu, setting a graceful tone for the evening. A delicate serving of Calamars Frits: tender marinated calamari slightly battered and deep fried, accompanied by an Asian dipping sauce that enhanced each bite. For the main course, the PanSeared Sea Bream is a triumph of simplicity and technique. The lightly pan-seared wild Daurade cooked to golden perfection, is artfully paired with julienne vegetables in a signature lobster bisque sauce and served with wild rice. The meal reached a moment of indulgence with a luxuriously smooth and classic Crème Brûlée and a single, expertly pulled shot of espresso. Bold, aromatic, and perfectly balanced, this meal left a lingering impression.

My evening commenced with Nargesi, an exquisite appetiser of tender spinach gently sautéed with a delicate infusion of
garlic, blended with the rich, tangy essence of kashk or a fermented whey prized in Persian gastronomy. It was a subtle, elegant beginning that tantalised the palate. The main course was a luxurious serving of Kebab-e Meygu: succulent, plump prawns delicately marinated in a signature blend and adorned with a subtle hint of golden saffron. The result was evocative of a royal banquet. To conclude this enchanting journey, I indulged in Bastani Zaafroni, the iconic Persian saffron ice cream—luxuriously creamy, perfumed with saffron and crowned with a bold shot of espresso. It was a rich, aromatic finale that lingered long after the meal.
A meal was a seamless blend of attentiveness and genuine Persian hospitality. The skilled staff move with quiet elegance, anticipating every need while offering knowledgeable guidance through the dining experience.
Khursheed Mistry chronicles the metamorphosis of international airports from 2020, tracing their journey from transit points to opulent, technology-driven sanctuaries and offering a glimpse into the future
From functional transit hubs to luxurious lifestyle destinations, international airports have undergone a remarkable transformation since 2020. Shaped by the pandemic, evolving traveller expectations, and technological advancement, the airport experience has become more seamless, secure, and indulgent than ever before.
In the early 2020s, airports faced an unprecedented challenge: reimagining travel in a post-pandemic world. Health and hygiene quickly became paramount, catalysing the integration of touchless technology, biometric verification, and advanced sanitisation protocols. Terminals once defined by queues and paperwork were restructured for streamlined movement and digital convenience. By 2023, biometric corridors, self-boarding gates, and digital health passports became standard, allowing passengers to glide through terminals with minimal contact and maximum efficiency. But the evolution went beyond functionality.
Hospitality-driven philosophy
Recognising a growing desire for comfort and exclusivity, airports embraced a more hospitality-driven philosophy. Lounges transformed into luxury sanctuaries, featuring spa services, private suites, curated dining, and even personal wellness pods. Dutyfree zones evolved into experiential retail spaces, offering high-end brands, concierge shopping, and immersive digital showrooms.

Future of international airports
Looking ahead, the future of international airports promises greater sophistication. Hyper-personalised services powered by AI, autonomous transport within terminals, and luxury sleep pods are expected to become commonplace. Smart luggage tracking, digital concierge assistants, and biometric-based shopping is expected to further enhance the passenger journey.
No longer just points of departure and arrival, airports are now destinations in their own right, where technology, design, and hospitality converge to offer a redefined standard of luxury travel. The airport of tomorrow is intuitive, indulgent, and inspiring, setting the tone for journeys yet to unfold.
