T

uvimos recientemente la ocasión de reservar un viaje de última hora por internet alrededor del Mediterráneo, en un pequeño transatlántico, el Vision Athena.

Aunque fuéramos ligeramente conscientes que un barco más pequeño quizás se moviera un poco, tardamos 3 minutos en decidir que “SI”, realmente querríamos verlo todo en dos días y lo reservamos.

Como el punto de salida era Barcelona, fue fácil encontrar vuelos desde Málaga. En el día, nos daba tiempo suficiente en caso de hubiera algún contratiempo, y aunque el barco no partiera hasta las 9 de la tarde, llegamos a Barcelona a las 10.30 de la mañana, para pasar un día en la ciudad. Compramos un billete T10 que proporciona 10 viajes en trenes, metros o autobuses y puede compartirse entre todos. Cogimos el tren del aeropuerto a la estación de Sants, donde dejamos nuestras 2 maletas durante el día en la consigna por 4.50€ y nos fuimos a explorar La Rambla, que es una fabulosa calle que sale del centro de la ciudad y baja al puerto. Fue mágico, tantas personas, tanto pasear, los comerciantes callejeros vendiendo de todo en sus coloridos puestos, desde 6 OCIO axarquía

pájaros a flores exóticas. Fuimos al puerto y habiendo averiguado donde íbamos a embarcar, volvimos para recoger nuestro equipaje, así que tomamos el metro para salir del puerto. Afortunadamente descargamos las maletas en seguida, porque tenemos que decir que la recepción de embarque fue un caos, un descontrol.

Los pasajeros que salían, con su equipaje completo, tenían que abrirse camino entre todos nosotros, que estábamos ansiosos por embarcar. Fue ruidoso. Fue muy ruidoso (bueno, ¡esto es España!). Había una gran falta de información, nadie para preguntar, ningún lugar para sentarse, los ánimos se caldeaban. Cuándo finalmente embarcamos, casi una hora más tarde de lo planeado, fue rápido y eficiente. Averiguamos más tarde que se había producido una emergencia en el viaje anterior, y alguien había tenido que ser transportado por aire y llevado al hospital, causando que el barco llegara tarde y de ahí el caos.

Una vez que el caos terminó, se nos dio la bienvenida a bordo y nos acompañaron a nuestro camarote, a diferencia de otro cruceros en los que tuvimos que encontrarlo solos. Nos sorprendió agradablemente el u

You don’t know how to party until you’ve spent 10 days on a cruise with over 400 Spanish passengers!

e recently had the opportunity to book a last-minute internet bargain cruise around the Mediterranean, on a small liner, the Vision Athena.

Although we were a bit concerned that a smaller boat might rock a bit, we took all of 3 minutes to decide that “yes, we really would like to drop everything in 2 day’s time” – and we booked it.

As the departure point was Barcelona, it was easy to find flights from Malaga. On the day, we gave ourselves plenty of time in case of any hiccups, & although the ship didn’t depart until 9pm, we arrived in Barcelona at 10.30am, looking forward to a day in the city. We bought a T10 ticket which gives 10 trips on the trains, metro or buses and can be shared between all those travelling in your party. We took the train from the airport to Sants Station where we deposited our 2 suitcases for the day in the left-luggage office at a cost of €4.50 and we set off to explore La Rambla, which is a fabulous street that runs from the centre of town down to the port. It was magical, so many people, so much going on, the street vendors selling from their colourful stalls with everything from birds to exotic flowers. We walked right down to the port &

having found out where we were to embark, we made our way back to collect our luggage, then took the metro back to the port. Fortunately we offloaded the cases straight away, but to say that the embarkation hall was organised chaos, is an understatement. The passengers from the previous cruise, complete with luggage, had to fight their way through all of us who were eager to get onboard. It was noisy. It was very noisy (well, this is Spain !). There was a serious lack of information, nobody to ask, nowhere to sit, & tempers were rising. When we did finally embark, about an hour later than scheduled, it was quick & efficient. We later found out that there had been an emergency on the previous cruise, & somebody had had to be airlifted & taken to hospital, causing the ship to dock late and hence the chaos.

Once the chaos had ceased we were welcomed onboard & escorted to our cabin, unlike on our previous cruises when we were left to find our own way. We were pleasantly surprised by the cabin which, although being an inside one, was spacious, clean & well-equipped, if not a little dated. Because of our late embarkation it was time for dinner, we had been allocated the first sitting u OCIO axarquía

camarote, que aun siendo interior, era amplio, limpio y estaba bien equipado, sin embargo un poco anticuado. A causa de nuestro retraso en el embarque, era la hora de cenar, fuimos asignados al primer turno, a las 8 de la tarde (el segundo turno era a las 10 de la noche -sin duda el preferido por los españoles).

El comedor era hermoso, los camareros muy atentos, y la comida fue excelente con multitud de opciones.

Dormimos bien esa noche, después de una rápida visita a las 7 cubiertas del buque - y no notamos movimiento alguno.

El buque era una réplica exacta de los grandes transatlánticos, pero en miniatura. Había un salón/ teatro, un piano bar, un bar de fumadores, cine, discoteca, gimnasio, sauna, casino, sala para jugar a las cartas, sala para fumar puros, la biblioteca con cibercafé, boutique y tienda de fotografía. Había un autoservicio donde la mayoría de los huéspedes tomaban el desayuno y el almuerzo, aunque el desayuno fuera también servido por camareros en el comedor principal. La merienda, café y bizcochos se servía diariamente y había tentempiés para aquellos con “todo incluido”. El vino de las comidas y las bebidas del bar no eran demasiado caras, como sucede generalmente en los cruceros, pero habría sido agradable que hubiera agua disponible después de que el restaurante hubiera cerrado. Había algunos bufets de medianoche fantásticos.

Siendo un barco tan pequeño, con una capacidad total de 620 pasajeros, pero con sólo 421 en este incluyendo 22 niños, pronto conseguimos conocer a las otras cuatro personas inglesas a bordo y mucO38hos de los más de cuatrocientos españoles. El idioma del buque es el español, pero algunos anuncios (importantes) también 8 OCIO axarquía

los hicieron en inglés. Es un requisito que los 246 miembros del personal hablen inglés aunque esto solo asegura la comunicación para algunas entre las 18 nacionalidades diferentes del personal.

El equipo de entretenimientos fue magnífico, así como los espectáculos nocturnos. Fueron todos muy profesionales. Pronto descubrimos que los españoles son muy dispuestos. Siempre que se pedían voluntarios para participar en actividades, no había espacio suficiente en el escenario para todos aquellos ansiosos de tener su momento de gloria. Fue a menudo bastante atrevido, pero siempre divertido. Si la mayoría de los pasajeros hubieran sido ingleses, definitivamente no habría sido lo mismo.

Aparte del amplio entretenimiento a bordo, nosotros visitamos una multitud de países maravillosos. La prisa normal para dejar la multitud del barco no sucedió, ya que no había ninguna multitud. Se ofrecieron las excursiones esperadas, Ñ8 pero escogimos hacerlas por nuestra cuenta, usando los transportes locales y taxis.

El Capitán fue muy accesible y se ponía a hablar con nosotros siempre que él nos veía. Se le veía a menudo mirando y a veces participando en las actividades del día, y estaba siempre presente en los espectáculos nocturnos, junto con otros oficiales. La Directora del crucero, Sonia, era una señorita de Paraguay, y era realmente encantadora y útil. Ella parecía ser muy popular y obviamente tenía el respeto de su personal.

De hecho, estuvimos muy agradablemente sorprendidos por toda la experiencia, y no vacilaría en realizar otro crucero con esta compañía. Ayudó el que habláramos algo de español – realmente la mayoría de nuestros diez días nos parecieron clases de español. n

orrox, situado a sólo 50 kilómetros al este de Málaga, no es sólo conocido por tener el mejor clima de Europa, además es conocido por ser uno de los pueblos más impresionantes de toda la provincia. Su estilo árabe, su valioso y lejano pasado combinado con su prometedor futuro turístico lo hacen un lugar para no perdérselo. Una distancia de tan sólo cuatro kilómetros separan Torrox Pueblo de Torrox Costa. Ambos son Torrox, pero ambas localizaciones ofrecen algo totalmente distinto a los numerosos visitantes y residentes.

Como en casi todos los pueblos de este lado del Mediterráneo, el pasado musulmán ha dejado su indeleble marca sobre Torrox. De cualquier modo, es necesario volver a tiempos pasados para encontrar los orígenes de este lugar. La documentación junto a las excavaciones llevadas a cabo, prueban la existencia u

orrox, located just 50 kilometers east of Malaga, is not only considered to have the best climate in Europe but is considered to be one of the most stunning villages in the entire province. It’s Moorish design, its valuable and distant past combine with its promising tourist future to make it a location not to be missed. A distance of just four kilometers separates Torrox Pueblo and Torrox Costa. Both are Torrox but both locations offer something completely different to it’s many visitors and residents.

As almost every village on this side of the Mediterranean, the Muslim past has left its indelible mark upon Torrox. However, it is necessary to go back to earlier times to find the origins of this location. Documentation, together with the excavations carried out, prove the existence of a Punic-Phoenician emplacement but, the most significant finds come from the Roman Empire. In the u OCIO axarquía

well known Punta de Torrox at the foot of the lighthouse, lies the site of Claviculum. Discovered in 1905, these ruins reveal what was once a group of houses and some thermal baths.

According to the surveys, Torrox became a factory town, founded in the 1st century, whose main resources were sea trade and the plant of garum production, which was a fish sauce essential in the Roman diet. But it is in the 11th century when a written reference to this locality with its present name appears for the first time. Various Arab writers from poets to geographers, mention “Turrux”, the town of towers, referring to the various watchtowers which stood out on the cliffs to watch the comings and goings of ships.

The town had a long period under Arab rule which has left a very deep mark in the soul and body of the people. Its importance within the Al-Andaluz history is indisputable. In the year 775, Prince Abd ar-Rahman, the last representative of the Umayyad dynasty from Syria landed at Almuñecar and travelled along the coast to Torrox. From the old castle of this town, the prince attacked the town Archidona. Then, after conquering the capital, Cordoba, the Arab rebel proclaimed himself caliph of the new Reino Andalusi. He died in Cordoba in 788. In addition, Torrox has the honour to have been the home of one of the most notable warriors in that time, the fearful Almanzor. Torrox today is a more peaceful town

de Al-Andalus es indiscutible. En el año 775, el príncipe Abd ar-Rahman, el último representante de la dinastía Umayyad de Siria, desembarcó en Almuñecar y viajó a lo lardo de la costa hasta Torrox. Desde el viejo castillo de este pueblo, el príncipe atacó el pueblo de Archidona.

Entonces, después de conquistar la capital, Córdoba, el rebelde árabe se proclamó a sí mismo califa del nuevo Reino Andalusí. Murió en Córdoba en el año 788. Además, Torrox tuvo el honor de haber sido el hogar de uno de los guerreros más importantes de esa época, el temeroso Almanzor.

Hoy día, Torrox es un pueblo más pacífico, con sólo 12.000 habitantes entre la costa y el pueblo.

iempre escuchamos las virtudes de la dieta mediterránea pero qué es realmente y por qué funciona? Una razón para este aparente éxito parece hallarse en la suelo. Muchos nutricionistas han investigado y han descubierto que el contenido mineral en el mediterráneo es verdaderamente muy alto. Según sus conclusiones la tierra es rica en calcio, hierro, zinc, selenio y manganeso. Todos estos minerales son esenciales para la buena salud. veamos un par de ejemplos.

El selenio que se encuentra en los champiñones, las nueces, las semillas de girasol y el pescado ayudan a luchar contra los radicales libres, que son carroñeros que pueden hacer estragos en el cuerpo.

Los radicales libres a menudo están provocados por la ingesta de alimentos demasiado procesados, así que, añada algunos champiñones crudos a su ensalada, tómese un puñado de nueces y semillas y sus niveles de selenio recibirán un gran empujón.

Quizás. ¡La vitamina E es buena para la piel y el anti - envejecimiento! Se encuentra en las nueces, en las semillas, y en los aceites prensados en frío (sin refinar), la vitamina E es un combatiente de esos horribles radicales libres. La vitamina C ayuda al sistema inmunológico. Es una gran arma contra el combate anual contra el frío que parece suceder después de cada fin de verano y el paso del otoño al invierno. e are always hearing about the virtues of the Mediterranean diet but what is it really and why does it work? One reason for it’s apparent success appears to lie in the soil. Many nutritionists have investigated and discovered that the mineral content in the Mediterranean is very high indeed. According to their findings the soil is rich in calcium, iron, zinc, selenium and manganese. All these minerals are essential to good health. Let’s look at a couple of examples. Selenium which is found in mushrooms, nuts, sunflower seeds and fish helps fight against free radicals, which are scavengers that can cause havoc within the body. Free radicals are often triggered by eating too much processed foods, so, add some raw mushrooms to your salad, snack on a handful of

nuts and seeds and your selenium levels will receive a big boost.

Calcium is needed by everyone for bone formation and continual growth. So no matter what your age, eat your greens! Vegetables such as broccoli, spinach and kale are particularly good for you.

Remember also that strangely enough, calcium can also be found in sardines and mackerel.

You only have to look around and see the plentiful crops ripened by the sun. Olives, almonds, walnuts, oranges, lemons, cherries, figs and pomegranates, to name but a few. The Mediterranean has these items are more in abundance and are often available direct from the farmers which is even better. Then there are the wonderful tomatoes, spinach, broccoli, peppers, onions, carrots, potatoes and cucumbers which are again available here in an abundance. These as we all know, are very rich in vitamins which are great for a healthy body and mind.

Now olive oil for instance, which is often reduced in many conventional diets, is used often in large quantities here but, unlike the high amount of animal fats typical to the northern European diet, olive oil lowers cholesterol levels in the blood. It is also known to lower blood sugar levels and blood pressure. Research indicates olive oil prevents peptic ulcers and may be a factor in preventing cancer, wow.

Let’s now look at the vitamins and in particular A, E, and C and find out why they are so important to us and where we can find them.

Vitamin A, (also known as retinol because of it association with eye sight) can be found in many general fruits and vegetables. Peaches, apricots, watermelon, tomatoes and especially carrots, are all rich in this nutrient. I am sure we all remember the tales from our childhood that suggested carrots would help us see in the dark and you never see rabbits wearing glasses, all because of carrots? Perhaps. Vitamin E is good for the skin and anti ageing! Found in nuts, seeds, and cold-pressed oils, vitamin E is a fighter of those horrid free radicals.

Vitamin C helps the immune system. It is a great weapon against the annual fight against colds that appears to happen after each summer ends and autumn/winter moves in. It can be found in all fresh fruit, green peppers and most fresh vegetables.

As well as the soil and its mineral content we of course have the sea with its abundance of nutrient rich food. The humble sardine for example, which is also rich in omega 3 and is very important to a healthy body, is found in almost every beach bar and restaurant. It has always been part of the staple Spanish diet and makes a great snack mid afternoon.

So that is it really, that’s the Mediterranean diet. Nothing too clever, nothing too fancy and no special diet books or recipes to follow.

Living from the Mediterranean land and sea, you have an abundance of foods available to you all year round which are rich in the nutrients your mind and body needs for a healthy life. Mixed with warmth of the sun and an occasional glass or two of red wine and you have the perfect diet...The Mediterranean Diet. Enjoy. n

YOGA ¿Esta buscando un programa de entrenamiento que sea fácil de aprender, requiera poco o ningún equipo, y tranquilice su alma a la vez que tonifica su cuerpo? Si fortalecer su sistema cardiovascular, tonificar y fortalecer sus músculos y mejorar su salud mental están en su agenda, entonces quizás el yoga sea para usted.

Así que le oigo preguntar: ¿qué es exactamente el yoga? Bien, aunque parece una nueva moda, la verdad es que el yoga empezó hace más de 3.000 años en India. La palabra yoga viene de la lengua sánscrita y significa “unir” o juntar la mente, el cuerpo y el espíritu.

Aunque el yoga incluye ejercicio, también es una forma de vida, para la cual el ejercicio es solo uno de los componentes. Disciplinar su mente y cuerpo a la vez que se conecta con su espiritualidad son las principales metas del yoga. El componente físico en el yoga se centra en “asana”, o poses. Una persona que practica yoga realiza una serie de poses específicas a la vez que controla su respiración. Algunos tipos de yoga también pueden implicar meditación y de vez en cuando cantos.

la flexibilidad, fuerza, equilibrio y resistencia. Además de los beneficios físicos, muchas personas que practican yoga dicen que reduce la ansiedad y el estrés y mejora la claridad mental. Tiene muchas elecciones cuando va a confeccionar su entrenamiento de yoga. Puede ser algo personal que practique en la comodidad de su casa o jardín o puede disfrutarlo con un grupo en una clase. Muchos centros de salud, forma física y bienestar ofrecen clases de yoga; y viviendo aquí en el sur de España, algunas de estas clases se organizan en una playa o un cualquier otro lugar igual de sensacional y motivador.

El yoga puede ser tan vigoroso o tan moderado como usted quiera que sea, así que casi todos pueden practicarlo.

Are you looking for a workout program that’s easy to learn, requires little or no equipment, and soothes your soul while toning your body? Is strengthening your cardiovascular system, toning and stretching your muscles, and improving your mental fitness on your agenda? Yes? Then perhaps yoga is for you.

So what exactly is yoga I hear you ask? Well, although it seems like a hot new trend, yoga actually began more than 3,000 years ago in India. The word yoga comes from Sanskrit and it means to “yoke,” or bring together the mind, body, and spirit.

Although yoga includes exercise, it is also a lifestyle for which exercise is just one component. Disciplining your mind and body as well as connecting with your spirituality are the main goals of the yoga lifestyle. The physical component of the yoga lifestyle focuses on asana, or poses. A person who practices yoga goes through a series of specific poses while controlling his or her breathing. Some types of yoga can also involve meditation and occasionally some chanting.

Yoga has tons of benefits. It can improve flexibility, strength, balance, and stamina. In addition to the physical benefits, many people who practice yoga say that it reduces anxiety and stress and improves mental clarity. You have lots of choices when it comes to tailoring your yoga workout. It can be a personal thing practiced in the comfort of your home or garden or it can be enjoyed as a group in a class.

Many health, fitness and well being centers offer yoga classes and living here in southern Spain some of these classes are organised on a beach or an equally stunning and motivational location.

Yoga can be as vigorous or as gentle as you want it to be, so just about everyone can do it. A good instructor will be able to provide

modified poses for students who are just beginning, advanced, or who have special needs.

Also, be sure to mention any orthopedic problems or special needs you may have to your instructor before the class begins.

So having made the decision to start, what do you need? Actually not much at all. Firstly you should dress comfortably. Snug-fitting shorts or tights and a T-shirt or tank top are best. Yoga is practiced barefoot, so you don’t have to worry about special shoes. Many people who practice yoga or take yoga classes like to use a sticky mat, which provides cushioning, and friction while you are doing your poses.

Many classes will provide these for you of course until you are ready to purchase your own.

If you are new to yoga then a class is most definitely the way forward for you. However, once you are experienced you may feel you want to break out on your own or with a workout buddy. Doing your yoga routines with a friend is a great way to remain motivated. If you have an appointment with a friend to work out, you’ll be less likely to cancel. You and your buddy can compare tips on healthy eating and exercise habits, evaluate each other’s poses for form, and keep each other on track.

If you are concerned that your schedule is already packed and you do not know how are you supposed to fit in time to work out then simply break it all down to manageable chunks. If you can’t do a half hour of yoga in one sitting, try doing it in two 15 minute sessions or try three 10-minute workouts to break up a long day.

One thing to bear in mind is that everyone is different. Some people have more success working out in the morning before the day’s activities sidetrack them. Others find that a night time workout is the perfect way to unwind after a hectic day. Experiment with working out at different times of the day and find the time that fits your u OCIO axarquía

schedule and energy levels best. It would be great to be able to reach peak levels of fitness and wellbeing with just a workout session here and there but of course it doesn’t work out like that, trust me on this, I have tried and there are no shortcuts.

If you want to reap the benefits that yoga provides, you’ll have to do it consistently. A once-a-month yoga workout may relieve some stress and will certainly make you feel better, but for benefits like increased flexibility and stamina, you should aim to practice yoga three or four times a week. It generally takes about 4 to 6 weeks of regular exercise for your body to begin to release the endorphins that make exercise such an uplifting experience. If this seems a lot don’t worry, we all have to start somewhere and, some exercise is better than no exercise. There are classes all over this part of Spain so there is really no excuse. Remember, today is the first day of the rest of your life. Go to it! n

Mucha gente que practica el yoga o asiste a clases de yoga les gusta usar una esterilla, que proporciona amortiguación y fricción mientras que están haciendo las poses. Muchas clases se las proporcionarán hasta que esté preparado para comprarse la suya propia.

Si es nuevo en el yoga, entonces una clase es definitivamente lo mejor para usted. Sin embargo, una vez que tenga experiencia quizá quiera probar solo o con un amigo de entrenamiento. Una cosa para tener en mente es que cada persona es diferente.

Algunas personas progresan más practicando por la mañana antes de que las actividades diarias les distraigan. Otras descubren que el entrenamiento por la noche es la forma perfecta de relajarse después de un día frenético. Pruebe a hacerlo a diferentes horas del día y averigüe qué hora es mejor según su programa y sus niveles de energía.

Sería fantástico si fuera capaz de alcanzar altos niveles de forma física y bienestar con solo una sesión de entrenamiento de vez en cuando, pero por supuesto esto no funciona así, créame, lo he intentado y no hay atajos. Si quiere cosechar los beneficios que proporciona el yoga, tendrá que practicarlo consistentemente. Una sesión, una vez al mes quizás alivie un poco el estrés y seguramente hará que se sienta mejor, pero para obtener beneficios como aumentar la flexibilidad y resistencia, debería tener el propósito de practicar yoga tres o cuatro veces a la semana. Normalmente lleva unas 5 o 6 semanas de ejercicio regular para que su cuerpo empiece a liberar las endorfinas que hacen del ejercicio una experiencia que suba el ánimo. Si esto le parece mucho, no se preocupe, todos tenemos que empezar por algún sitio, y algún ejercicio es mejor que ninguno. Hay clases por toda esta parte de España, así que no hay excusa. Recuerde, hoy es el primer día del resto de su vida. ¡A por ello! n

Bien, primero hay varias decisiones que tomar antes de ir buscando los establos, los anuncios periodísticos y en internet. El presupuesto, ¿Dónde mantendrá al caballo, cual es su propio nivel al montar y para qué propósito y actividades deseará el caballo? ¿El caballo será utilizado para montar por placer, para competición o puramente como compañía? Entonces usted necesita pensar ¿hay un tipo o casta particular de caballo para lo que desea? Por último, pregúntese ¿qué calidades esenciales debe tener el caballo? Es demasiado fácil enamorarse del primer caballo que vea.

No se dé prisa, encontrar el caballo correcto lleva su tiempo y en muchos casos usted verá varios caballos antes de encontrar el que sinceramente es el adecuado para usted.

Los propietarios del caballo utilizan establos con mantenimiento por varias razones. Por ejemplo, puede que no tengan las facilidades convenientes ellos mismos, o que los compromisos del trabajo no les pueda permitir el tiempo para manejar sus caballos durante la semana.

Un servicio de establos puede adaptarse a muchos casos para convenir sus propios requisitos pero hay básicamente tres principales servicios que ofrecen.

El servicio completo de un establo preverá todos los aspectos del cuidado del caballo. Es una labor intensa y requiere mucha pericia por parte del propietario o del personal del establo. Naturalmente este es el servicio más caro ofrecido pero ofrece a su caballo un nivel alto de cuidado y atención.

El establo reducirá parte de sus costes implicándole en parte del cuidado diario. Esto por supuesto es especialmente útil si usted está ocupado entre semana con compromisos de trabajo.

Los picaderos en los que asiste al caballo uno mismo es la opción menos costosa pero requiere más trabajo por su parte ya que usted, el propietario, emprende todo deber del cuidado. Esta es una gran opción si usted tiene tiempo para dedicar a su caballo pero no las facilidades en casa.

o you want to own your own horse? Well, there are a number of early decisions to make before you go searching the stables, newspaper advertisements and the internet. Budget, where you will keep the horse, what is your own level of riding ability and what purpose and activities will you want the horse for? Will the horse be used for hacking, competition or purely as a companion?

Then you need to think if there is a particular type or breed of horse you desire? Finally, ask yourself what essential qualities the horse must have?

It is all too easy to fall in love with the first horse you see.

Do not be in a rush, finding the right horse takes time and in many cases you will see a number of horses before you find the one that is truly right for you.

Horses are advertised in many different places both for sale and loan, but the first place to start your search should be the local riding establishments, livery yards, riding clubs and with equine experts (i.e. farriers and instructors).

Consideration needs to be given as to where and how you will keep the horse.This will not only affect you financially but will also affect how much time you will need to commit to the horse. There will be advantages and disadvantages to owning your own land or keeping the horse at livery.

Horse owners use livery yards for a variety of reasons. For example, they may not have suitable facilities themselves, or work commitments may not allow them the time to manage their horses during the week. A livery service can

be adapted in many cases to suit your own requirements but basically there are three main services offered.

A full livery service will provide for all aspects of the horse’s care. It is labour intensive and requires a great deal of expertise on the part of the proprietor or staff of the stable.

Naturally this is the most expensive service offered but does offer your horse a high level of care and attention.

Part livery will reduce your costs by involving you in some of the day-to-day care. This of course is particularly useful if you are busy midweek with work commitments.

DIY livery is the least expensive option but requires the most work on your behalf as you the owner undertake all duty of care. This is a great option if you have the time to dedicate to your horse but not the facilities at home.

Remember, when purchasing a horse you are taking on an enormous commitment, so you must consider the longterm future of the horse. If you buy a child’s pony what will you do with the pony once the child has outgrown it?

Would you sell the pony, loan it or perhaps keep it as a companion? Will you keep the horse into its old age and retirement? Would you know how to care for an elderly horse? What will happen if your financial circumstances change? What will you do if you can’t handle or deal with the horse you have bought? These are all very important questions to ask yourself before entering into a purchase.

Never get on any horse without seeing somebody else ride it first so you are able to observe the horse being handled. Make notes and check the general health of the horse as he is put through his paces.

Observe the movement and behaviour under saddle. Take every opportunity to assess the horse. Make sure you ask any questions that spring to mind, no matter how silly you think it may be. Once you are happy with the horse ask if you can ride the horse. If you feel the horse may be appropriate for you still do not make an instant decision, go away and discuss the viewing with your advisor. Do not be afraid to contact the seller and ask more questions or to arrange another viewing and ride it a few more times so you can develop a feel for the horse.

Once you have found the horse which you feel is the most suitable for you, it is strongly recommended that you arrange for a vet to carry out a pre purchase veterinary examination. Whilst this may seem costly, it may save you a lot of money in the future. If you choose to insure the

horse the insurance company may request a copy of the pre-purchase examination certificate in any event, which your vet will issue if the horse passes the examination.

And finally, once you have your horse you need to turn your thoughts into his/her new life with you. Introducing the horse to companions or field mates should be done gradually to avoid bullying and to allow changes in the pecking order. The first few weeks should be spent getting to know your new horse and allowing the horse to get to know you. It will take time for the horse to learn to trust you and for you to establish a good partnership. Take your time with your new companion and you will enjoy many happy years together. n

finales de los años 70, mi marido Edward y yo solíamos venir, desde Londres a la provincia de Granada, a un encantador y apartado cortijo que él tenía en la Sierra Tejeda, justo al lado de La Maroma. Por aquella época teníamos cuatro chiquillos, 2 hijos míos y dos de mi marido, cuyas edades rondaban entre los 4 a 7 años. Edward tenía una galería de arte en Londres. Él es el tipo de hombre inquieto y emprendedor, que al poco tiempo de llegar al Cortijo La Viña, no dejó pasar la oportunidad para comprar una granja cercana a los montes de Játar.

La nueva granja, llamada Los Nacimientos, se trataba de una explotación arborícola, que compro junto a su primo. Al año, algunos de los árboles estaban preparados para ser vendidos. El comprador que teníamos, solo podía pagar la mitad de su valor, por lo que ofreció como forma de pago una casa. Edward, aceptó el trato sin ni siquiera ver la casa. Esta fue nuestra primera propiedad en El Cañuelo, Casa Álamos. Esto ocurrió antes de que otro vecino de la zona, nos ofreciera sus tierras. A menudo estas ofertas incluían una casa, pero como ya poseíamos nuestra residencia en El Cañuelo, nos centramos en la compra de las tierras colindantes a la nuestra. Poco a poco, en 5 años nos convertimos en los dueños

n the late 70’s Edward, my husband, and I used to come across from London to a lovely remote farmhouse he owned in the Granada Province, just the other side of La Maroma in the Sierra Tejeda. At that stage we had 4 young children, 2 of mine and two of his, ranging in age from 4 to 7. Edward had an art gallery in London. He’s the type of man who could not let the grass grow under his feet, consequently within a short time of arriving in Cortijo la Viña, on being asked if he was interested in buying another farm, just over the hills towards Jatar, he jumped at the opportunity.

The new farm, called Los Nacimientos, was a tree farm which he bought with his cousin. Within a year or so some of the trees were ready to be sold. The buyer could only pay half and offered a house as payment for the balance! His offer was accepted by Edward without even seeing the house. This was to be our first property in El Cañuelo, Casa Alamos.

It wasn’t long before we were being approached by other local Spanish wanting to sell their land to us. Often the land included a house in a nearby hamlet and as we already owned a house in El Cañuelo we concentrated on buying land near by. de varias propiedades de El Cañuelo y nuestro propósito era conseguir llevar una forma de vida sencilla y natural.

El Cañuelo 3, como así lo llamamos en un principio, era la principal casa en la pequeña villa y llego a ser el Bar El Cañuelo. Las casas conservan sus apariencias originales, los interiores apenas habían cambiado, salvo por las instalaciones eléctricas y sanitarias.

Los gallineros, se han convertido en la cocina y la barra del bar. Las habitaciones y sala de estar, son ahora el salón principal del bar, además cuenta con una estancia al fondo con una gran chimenea abierta, que en invierno pasa a ser un acogedor salón comedor.

La terraza exterior fue ampliada considerablemente, para satisfacer las necesidades del Bar y proporcionar un marco formidable para tomar aperitivos y comidas con unas incomparables vistas de la zona. Es una apuesta personal de Manolo y su equipo.

El Cañuelo esta compuesto de alrededor de un total de 28 viviendas, 7 de los cuales están situadas en el camino que conduce de Periana a las Ventas de Zafarraya. Con la compra de estas tierras nos hemos convertido en los propietarios de 4 pequeñas cortijadas y cada una de las cuales poseen un corral en frente del carril.

Esos corrales se encontraban en un estado lamentable de conservación, debido a que no habían sido construidos como viviendas, sino como establos o corrales para animales.

Fueron los únicos edificios en ser derribados y en su lugar se construyeron “Las Casitas”. Que en su conjunto, están formadas por seis apartamentos, cuatro de 2 dormitorios y 2 de un solo dormitorio.

Están construidos sobre una ladera desde el carril de tierra, se puede ver tres casitas típicas. Cuando rodeamos los jardines y la piscina, a continuación un poco más abajo se descubren las tres casitas restantes.

Estas han sido edificadas con encanto y en consonancia con los cortijos adyacentes, de manera que se conserva el aspecto el blanco y natural de las aldeas. Poseen tejas de arcilla e interiores sencillos pero muy atractivos y acogedores.

Todas las casitas tienen terrazas orientas al sur, y desde ellas las vistas que se presentan son las siguientes: al este tenemos la Sierra de Tejeda, al sur el Pantano de la Viñuela y al fondo el Mar Mediterráneo y al oeste se puede divisar el pintoresca villa de Comares y más allá los Montes de Málaga. Por otro lado, el Cañuelo se encuentra encaramado entre los montes conocidos locamente como la Sierra de Aguadero.

El nuevo El Cañuelo tuvo sus primeros clientes en 1993 cuando contábamos con solo 5 casas para alquilar. En aquella época, nuestra familia ya había crecido con 3 miembros más, hasta alcanzar los siete hijos. Todos ellos, han participado y disfrutado en el proceso de creación de El Cañuelo, afianzándoles un profundo cariño por el lugar; ahora tenemos la oportunidad de gozar con nuestros hijos y nietos, de una bonita vida rural entre los montes.

Hacia 1996, Las Casitas fueron completadas y desde entonces hemos alcanzado las nueve propiedades a lo largo de los años.

Muchos de nuestros clientes se han convertido en nuestros amigos, a algunos le ha gustado tanto El Cañuelo, que han adquirido sus propias casas en la zona. Otros clientes regresan cada año en vacaciones o pequeñas escapadas, ¡Incluso algunos vienen acompañados por sus nietos!

Independientemente del motivo que les traiga al El Cañuelo, estaremos siempre encantados de volver a verles y, si desean adquirir una casita o finca que aún no haya sido restaurada ni reformada, será un verdadero placer ayudarles a hacer realidad sus sueños. n

and we set about getting them into an easier-to- live- in state. El Cañuelo 3, as it was called in the beginning, was the main house in the hamlet and was to become Bar El Cañuelo.

The interior has had the minimum possible changed, the exceptions being the installation of electricity and sanitation. The animal feeding troughs remain and the hen coops etc. and what had been the animal living quarters became the bar kitchen. The bedroom/ sitting room is now the main body of the bar with the end room with its large open fireplace becoming a nice winter eating area. The outside terracing has been increased considerably to cope with the needs of the Bar and provides a magical setting for a meal out and must rival anywhere for its views. It is run independently by Manolo and his team.

El Cañuelo consists of about 28 dwellings in total, 7 of which are along the main track that leads from Periana to Ventas de Zafarraya.

In buying land we had become owners of 4 of these little street houses each of which owned a corral on the opposite side of the track. These corrals had fallen into a sorry state of repair; they had never been constructed for people to live in being animal houses and therefore were not strongly built. They were the only buildings we pulled down and in their place we built “The Casitas”. These are four two bedroom and two one-bedroom apartments. They are built on a hillside and so from the track, they look like three single story Casitas but, once you go around into the gardens and pool area below, you can see that there are another three casitas underneath.

These have been built sympathetically so as not stand out from the indigenous houses and in keeping with the look of the village are white washed, naturally. They are terracotta tiled and have simple but attractive interiors. All have south facing terraces with views to

the east of the Sierra Tejeda, to the south of Lake Viñuela and the Mediterranean Sea and to the west the hillside capped with the picturesque village of Comares and beyond the Montes de Malaga, whilst El Cañuelo itself perches on the side of the hills known locally as the Sierra de Aquadero.

The new El Cañuelo had its first clients in 1993 when we had 5 houses to let. By that stage we had increased our family by 3 and had seven children. They have all enjoyed the process of building up El Cañuelo and they all still love coming out to stay, now bringing our grand children with them to enjoy the beautiful Spanish hillside life.

By 1996 the Casitas were completed and since then we have continued to let all nine of our properties throughout the years. Many of our guests have since become friends and quite a few have loved El Cañuelo so much that they’ve even bought their own properties in the area. Other guests return to us every year for holidays and short breaks and some are now bringing their own grandchildren!

a Bodega de Pepe es uno de los restaurantes más populares de Frigiliana. Situado en una cuesta poco empinada en la zona del aparcamiento principal del pueblo, el restaurante tiene las más maravillosas vistas desde Frigiliana y alrededores hasta la costa a lo lejos. La comida que se ofrece es toda casera, incorporando en muchos de los platos un sabor internacional para su disfrute. Se utilizan sólo los mejores alimentos frescos para crear los platos caseros y se utilizan productos locales siempre que es posible.

El servicio es amable y eficiente, con un ambiente relajado que parece casi tan mágico como la puesta de sol. Set up on a gentle slope from the main car park areas of the village, the restaurant enjoys the most wonderful views of Frigiliana and the countryside below down towards the coast in the distance. The food on offer is all home made, with many of the dishes incorporating an international flavour for you to enjoy. Only the finest freshest ingredients are used to create the home made dishes and local produce is used wherever possible. Por supuesto que me gusta le queso, en una tostada o en una galleta, pero todo tiene su lugar, afrontémoslo ¡el queso pertenece al frigorífico!. El mundo culinario tiene que estar totalmente loco para no añadir este manjar a las Tapas.

Las Tapas son simplemente ingeniosas. Eso es exactamente lo que dice en la tapa. Es extraordinariamente reciente, (normalmente maravillosa comida casera cocinada en el local). Las tapas que usted come reflejarán la región de España en la que se las está comiendo. Cuando masca al lado del mar, espere unas tapas de pescado, cuando mastica en el campo, las habas y las lentejas quizás estén a la orden del día.

De todas formas, en un evento social, las tapas pueden ser fascinantes –usted quizás sea atrevido e intente con algo que nunca antes había comido. Las Tapas algunas veces pueden ser un poco atrevidas –¡una nunca es suficiente! Y dependiendo de con quien comparta sus tapas podría ser indudablemente un pasatiempo sexy.

Cuando está comiendo Tapas, la comida es tan importante como la compañía. Las Tapas no tienen límites sociales, ni código de vestimenta e indudablemente no pesan en su economía. Supongo que eso convierte el milagro de una comida Lamborghini en un plato, ¿no cree?

En España las Tapas se sirven en cualquier sitio y a cualquier hora. Usted probablemente no podría andar más de 60 pasos (bueno, bueno... en un área razonablemente urbanizada) sin tropezarse un bar que sirva suntuosas y satisfactorias tapas de algún tipo.

Así que, ¡venga! ¿A que esta esperando? ¿No es fantástico que todos podamos tomar un trozo de la tortilla?

La preparación de las tapas es tan simple o complejo como usted se sienta ese día.

Cualquier cosa, desde un cuenco de aceitunas aliñadas hasta un pequeño plato caliente o pulpo asado bastarán, siempre y cuando este delicioso bocado vaya acompañado de algo, preferiblemente una bebida alcohólica - ¡es una tapa!

recently read cheese is the new ‘black’. If this is true, it’s a sad day for ‘foodkind’. Sure I like cheese, on toast or on a biscuit, but everything has its place, let’s face it, cheese belongs in the fridge! The culinary world has to be completely bonkers not to award this accolade to Tapas.

Tapas are quite simply ingenious. It does exactly what it says on the lid. It’s fantastically fresh and usually wonderful home cooked local produce. The tapas you eat will reflect the region of Spain you are eating it in. When munching by the sea, expect a fish heavy tapas, when masticating in the campo habas and lentijas may be the order of the day. However, as a social event tapas can be intriguing – you may be daring and try something you’ve never eaten before. Tapas can be sometimes a little cheeky -one is never enough! And, depending on who you share your tapas with it could definitely be a sexy pastime - Always leave them wanting more I’m reliably informed! When you’re eating Tapas, the food is equally as important as the company it’s shared with. Tapa has no social boundaries, no dress code and it’s definitely not heavy going on your finances. I guess that makes it a Lamborghini food miracle on a plate doesn’t it?

In Spain tapas is served just about anywhere, anytime. You probably couldn’t walk more than 60 paces (ok, ok ...in a reasonably built up area) without stumbling across a bar serving a sumptuous satisfying tapa of some kind. So come on! What are you waiting for?

Isn’t it great we can all have a slice of the tortilla?

Partaking in tapas is as simple or complex as you happen to be feeling that day. Anything from a bowl of marinated olives to a small sizzling dish of grilled octopus will suffice, as long as it’s a delicious bite sized companion accompanied, preferably by an alcoholic drink - it’s tapa!

A propósito, existe un creciente número de restaurantes en España y alrededor del mundo que se especializan en este tipo de comidas. ¿Y su historia? Bueno, hay bastantes teorías sobre el nacimiento de esta comida. Originariamente una tapa (lid) de pan se ponía sobre una copa de cerveza o de vino para cubrir la bebida, esto podría ser para protegerla de moscas e insectos; sin embargo, una explicación más lógica podría ser que alrededor de 1598 el Rey Felipe III introdujo una ley para intentar frenar el aumento del consumo de alcohol en España.

Decretó que se serviría una tapa de pan y se comería antes de consumir el alcohol. Hay historias conflictivas que sugieren que el mismo Rey tenía problemas de salud y no podía consumir alcohol sin comer algo a la vez. La intención que se escondía tras el decreto era reducir el consumo de alcohol. Siglos más tarde, la humilde tapa de pan se ha sustituido por infinitas opciones más deliciosas; por ello, las tapas han ganado terreno en España y la historia culinaria mundial. En algunos lugares de comida, esta rebanada por excelencia se sirve gratis con su bebida. ¿Cuánto mejor puede ser? De hecho, leí en internet que una agencia de viajes americana estaba ofreciendo una “ruta de las tapas” a ciudades de España, donde podrían pasar horas probando tapas sin pagar, siempre que compraran una bebida para acompañarlas, ¿puede creerlo? Buena bebida, fantásticas ciudades, y... ¡la tapa gratis!

Y hay más... mientras que está masticando por los lugares de tapas de la Axarquía ó sentado en una efervescente taberna, metido debajo de una sombrilla en un bar de la playa ó posado en un bar de carretera en el campo empapado de sol y la atmósfera cultura única en las Calles de España, quizás esté contribuyendo a mejorar el mundo. ¿Por qué?

Porque entre los suntuosos bocados de nuevas experiencias en comida, estará hablando, riendo, relajándose y sintiéndose genial. Está comiendo buena comida, viviendo “la vida”, en un maravilloso país. ¿Aún con ganas de esperar meses para esa mesa sagrada en Casa “El Bulli”?

Por último, supongo que la regla dorada para recordar cada vez que coma tapas, es esta: Cuando un poco es mucho, te das cuenta que lo importante no es cuánto tienes, sino qué tienes en tu plato y con quién lo estás compartiendo. Tapas, lo dice todo, ¿verdad?

a starter nor a meal, I guess it’s more of an accompaniment. When tapas is served in groups of 10 on a platter it becomes a tabla, this is a whole new ball game. Incidentally, there is a growing number of restaurants in Spain and world wide that specialise in this kind of dining experience.

And it’s history? Well there are quite a number of theories behind the birth of the uber food. Originally a tapa (or lid) of bread was placed over an ale goblet or wine cup to cover the drink, this could have been to ward away flies or insects, however a more likely explanation could be around 1598 King Felipe III introduced a law trying to stop increased alcohol consumption in Spain. He decreed that a bread tapa should be served and eaten before the alcohol consumed.

There are conflicting stories suggesting the King himself was ailing in health and couldn’t consume alcohol without taking some food with it. The idea behind the decree was to slow down the consumption of alcohol.

Centuries later the humble bread lid has been replaced with infinitely more delicious options; behold, the tapas has earned its place in Spanish and world culinary history.

In some food venues this quintessential slice of Spain is served free with your drink. How much better does it get? In fact, I read on the internet,that an American travel company was offering ‘tapas’ tours to cities in Spain where you can spend hours sampling tapa without actually paying, as long as you buy a drink to accompany it, can you believe that? Good drink, great cities, and the tapa is thrown in for free!

And there’s more ..... whilst you’re munching your way round Axarquia’s many thousands of tapas venues, either sitting in a vibrant taverna, tucked under a umbrella at a beach bar, or perched at a roadside bar in the campo soaking up the sun and the unique atmosphere of Spanish Calle cultura, you’re probably doing yourself the world of good as well. Why? Because in between sumptuous mouthfuls of new food experiences you’ll be chatting, laughing, chilling out and feeling great. You’re eating good food, living ‘la Vida’, in a wonderful country. Still fancy waiting months for that sacred table at Casa ‘El Bulli’ ? I guess ultimately the golden rule to remember each time you eat tapas is this: When a little is a lot, you realise that it’s not how much you have, but what you have on your plate, and who you are sharing it with that’s important. stoy seguro de que estarán todos de acuerdo en que el vino es un tema fascinante. No importa de donde sea usted o en que trabaje, en algún momento la conversación girará hacia el vino. Algo interesante que he averiguado es que cada uno tiene una opinión diferente sobre el vino, entonces, sinceramente, su opinión es tan valida como la de cualquier otra persona. Pero, ¿qué hace bueno a un vino? ¿Qué es lo que nos hace elegir un vino en vez de otro? El sabor, el valor, la fiabilidad de la marca o las uvas de las que hemos aprendido a disfrutar. Todas estas son buenas razones en las que basar su elección.

Pero, ¿alguna vez ha pensado qué hay detrás de todo eso? ¿Cómo la botella de vino que ha elegido empezó su vida como uvas en las viñas?. Vale, lo admito, yo 68 OCIO axarquía

Me invitaron a visitar las viñas y la bodega, conocer al equipo y ver un poco del proceso de producción de sus vinos. I

am sure you will all agree, wine, is a fascinating subject. No matter where you are or what company you are in, at some stage the conversation will turn to wine. Interestingly the one thing I have found to be true about wine is that everyone has an opinion and, if you drink wine, then frankly, your opinion is as worthwhile as the next person’s. But what does make a great wine.

What is it that makes us choose one wine in front of another. Taste, value, reliability in the brand or grapes that we have learned to enjoy. These are all good reasons with which to base your choices on. But do you ever give any thought to what goes on behind the scenes? About how your chosen bottle of wine started out life as grapes on the vines. Ok, I admit it, I too have never really given it too much thought either...until recently. I was introduced

to a Dutch couple, Clara Verheij and André Both who are the proprietors of Bodegas Bentomiz in Sayalonga.

For the past 4 years Clara and André have professionally created their own brand of Spanish wine, Ariyanas. I was invited to visit the vineyard and winery to meet the team and see a little about what goes into making their wines.

Now I have never been to a winery before so I didn’t quite know what to expect but, what I experienced, was far removed from what I imagined it would be. Up in the hills of Sayalonga this small family run business is turning out in excess of 28,000 bottles of wine a year and, not only that, but they can count some of the finest restaurants in Europe as their clients. To name drop just a little, the Gordon Ramsay restaurant chain in London are proud to have Ariyanas on their wine lists and they are not the u OCIO axarquía

cadena de restaurantes Gordon Ramsey de Londres está orgullosa de tener Ariyanas en sus cartas de vinos y no son los únicos. Este magnifico vino se distribuye por toda Inglaterra, España y el resto de Europa. Cuando nos sentamos y hablamos aprendí sobre la selección de las uvas, la cosecha, el proceso de fermentación y las especiales botellas alemanas hechas de cristal de Murano y los tapones, y mientras hablábamos me ofrecieron uno o dos vasos de vino como degustación de los espléndidos vinos.

Ellos actualmente producen cuatro vinos en la bodega. Dos vinos dulces no fortificados de Moscatel 100% de Alejandría, un vino blanco seco de la misma uva Moscatel y un vino tinto que es una mezcla de diferentes variedades, incluyendo la uva Romé local.

Tengo que decir que disfruté muchísimo de cada uno de los vinos, aunque me gustó particularmente el seco, (ahí vamos otra vez con las opiniones...). Fue sorprendente ver como se producían los vinos justo desde la pisa de las uvas, ahora hecho con una máquina esterilizada muy eficiente, pasando por la 70 OCIO axarquía

prueba del zumo de uva, antes de la fermentación.

La visita guiada que realicé fue informativa pero relajada. La mayor parte de la información la recibí de las preguntas que hice y, mientras que André debe haber pensado que algunas de mis preguntas eran un poco de lógica, su paciencia fue loable.

Inicialmente, antes de que la bodega tuviera un enfoque profesional hace 4 años, las uvas aun se pisaban a pie de la forma tradicional. Supongo que el progreso cambia las cosas y después de todo, 28.000 botellas de vino son muchas uvas que pisar.

Cuando mi visita estaba llegando a su fin, prometí que escribiría este pequeño artículo para contar a todo el mundo mi experiencia y animarles a que hagan lo mismo. Clara y André estarán encantados de recibir su visita y hacer una ruta guiada con ellos. De hecho, André incluso preparará algunas tapas para que las disfruten con el sabor de su vino. De cualquier modo, como puede imaginar, hay una actividad frenética en la bodega, así que si decide visitarla, llame antes a Clara o a André, ¡ah! y quizás sea mejor que pida un taxi. n

only ones. This fine wine is distributed throughout England, Spain and the rest of Europe. As we sat and talked I learned about grape selection, harvesting, fermentation processes and special German made glass bottles and bottle tops (the revolutionary VinoLok system that substitutes the traditional cork to prevent ‘corked’ wines) and as we spoke, I was offered a sample glass or two of the superb wines.

They currently process four wines at the bodega. Two unfortified sweet wines of 100% Moscatel de Alejandría, a dry white wine of the same Moscatel grape and a red wine which is a blend of different varieties, including the local grape Romé. I have to say that I thoroughly enjoyed each of the wines, although I was particulaly fond of the dry one, (there we go again with the opinions...). It was a real eye opener to see how the wines were processed right from the stemming and pressing of the grapes, now done by very efficient and sterile machines, through to tasting the grape juice, pre fermentation. The guided tour I was given was informative but very relaxed. I found the more infomation I received the more questions I asked and, whilst André must have thought some of my

questions were a little on the obvious side, his patience was commendable. Incidentally, before the winery took on a professional approach four years ago, the grapes were still crushed by foot in the traditional way. I guess progress moves things along and after all, 28,000 bottles of wine is a lot of grapes to crush. As my visit came to a close I vowed I would write this short piece to tell everyone about my experience and to encourage you to do the same. Clara and André are only too pleased to receive visitors and give them a guided tour. In fact, if there is a group of you and you want to make an afternoon of it, for a few euros per head, André will even prepare some tapas for you to enjoy with your wine tasting. However, as you can imagine, it’s a busy hive of activity at the bodega so if you would like to visit, do make sure you give Clara or André a call first, oh, and maybe book a taxi. n

June of this year saw the re-opening of ‘El Casino’, one of Frigilianas oldest bar/restaurants. Francisco Ramirez has injected new life into this establishment and given it a complete transformation. The cuisine is traditional andalusian with a modern twist, serving many favourite dishes in their own inimitable style. menudo tengo la sensación de que los jefes de cocina tienden a infravalorar el nivel de destreza de los cocineros entusiastas. Yo sé que algunos de mis amigos son excelentes cocineros, con un conocimiento de ingredientes, un nivel de destreza y un paladar que avergonzarían a muchos jefes de cocina. Con este pensamiento en mente, quiero contarle aun poco sobre el adobo de la carne, lo que mejorará enormemente cualquier plato que vaya a preparar. Muchos de ustedes quizás sepan ya que el adobo es una técnica que se usa por los jefes de cocina para aumentar el sabor y ablandar la carne. Se ha utilizado en todo el mundo durante siglos e incluso en el mundo frenético de hoy día, es digno de una reaparición en la cocina.

Los adobos a menudo son ácidos, con ingredientes como vinagre, zumo de limón o vino. De modo interesante, la acidez causa que el tejido de la carne se rompa, así la hace más blanda, permitiendo la absorción de más humedad. Un buen adobo tendrá un equilibrio delicado de especias, ácidos y aceite.

Como el adobo impregna la carne, el sabor estará más incorporado y será más suave, permitiendo un plato más pleno con sabor extra.

often feel that chefs tend to under estimate the skill level of enthusiastic cooks. I know that some of my friends are excellent cooks, with a knowledge of ingredients, a level of skill and a palate that would put a lot of chefs to shame. With this thought in mind, I want to tell you a little about marinating meat, which will greatly improve any dish you are preparing. Many of you may already know that marination is a technique that is used by chefs to infuse flavour and tenderise meat. It has been utilised all over the world for centuries and even in today’s hectic world, it is worthy of a kitchen comeback.

Marinades are often acidic with ingredients such as vinegar, lemon juice, or wine. Interestingly, the acidity causes the tissue of the meat to break down, thus making it more tender, allowing more moisture to be absorbed. A good marinade will have a delicate balance of spices, acids, and oil. As the marinade permeates the meat, the flavour will be more integrated and subtle, leading to a more rounded dish with extra taste.

All of these recipes have been tried and tested in my kitchen.

They serve 6 to 8 people and the ingredients can all be sourced locally. u

RECETACOMER mi cocina. Son para 6-8 personas y los ingredientes se pueden encontrar en establecimientos locales.

Kebabs de cordero adobado a la parrilla Usted necesitará: Aproximadamente 1 kilo de pata de cordero Para el adobo: El zumo de 1 limón 2 dientes de ajo machacados 1 cebolla picada en trocitos finos 3 cucharaditas de orégano seco 3 cucharadas soperas de aceite de oliva Sal y pimienta Preparación: Quite la grasa al cordero. Corte la carne en dados de 2,5cm. y póngala en un cuenco. Mezcle los ingredientes del adobo y viértalo sobre la carne, asegurándose de que todos los trozos queden cubiertos. Déjelo durante al medos una hora.

Método: Inserte la carne en pinchos y ásela durante 7-10 minutos o más si le gusta el cordero bien hecho. Deles la vuelta frecuentemente, rociando con el adobo. Sirva con pan de pitta y yogur con menta como aderezo.

Carpaccio Chiang Mai Usted necesitará: 225 gramos de filetes miñón de buena calidad El zumo de 2 limas 1/2 cucharadita de sal o más según su gusto 2 cucharadas soperas de ajo chalote picada fina ó cebolla suave 1 cucharadita de limoncillo picado fino 1/2 cucharadita de jengibre picado en trocitos finos 1/2 taza de hojas de cilantro picadas Preparación: Corte los filetes miñón en círculos muy finos.

Esto será más fácil si la carne está muy fría. Póngalos en un cuenco poco profundo con el zumo de lima y déjelo durante 5 minutos.

Método: Ponga los filetes en un plato llano, en una sola capa pero montados un poco y vierta el zumo de lima sobrante. Échele la sal por encima, después el chalote, el limoncillo, el jengibre y por último las hojas de cilantro. Servir inmediatamente.

Pollo a la Páprika con piñones y mantequilla de cilantro Usted necesitará: 4 cucharadas soperas de aceite de oliva El zumo de 1 limón 2 cucharadas de pimentón dulce 2 cucharadas de pimentón picante Un manojo grande de cilantro fresco picado 8 pechugas de pollo con piel 250 gramos de mantequilla 45 gramos de piñones Sal y pimienta 78 OCIO axarquía

Preparación: Mezcle el aceite de oliva, el zumo de limón, chile en polvo y 2 cucharadas del cilantro picado para hacer el adobo. Divida el adobo en dos. Use la mitad para adobar las pechugas durante al menos 2 horas en el frigorífico. Saque el pollo y cocínelo en el grill, barbacoa o frito durante unos 6 u 8 minutos por cada lado. Apártelo y cúbralo con papel de aluminio.

Método: Para hacer la salsa, a fuego lento mezcle la segunda mitad del adobo con la mantequilla, los piñones y el resto de cilantro. Cuando la mantequilla esté derretida, sazone a gusto y quítelo del fuego. Quítele la piel a las pechas de pollo y viértales la salsa. Servir con arroz o verduras al vapor. n

COMERRECIPE are coated. Leave for at least one hour.

Method: Thread the meat onto skewers and cook for 7 – 10 minutes, or more if you like your lamb well done. Turn the skewers frquently, basting with the marinade. Serve with pitta bread and a minted yoghurt dressing.

Chiang Mai Carpaccio You will need: 225grams of quality fillet steak The juice of 2 limes 1⁄2 teaspoon of salt, or more to taste 2 tablespoons of either finely chopped shallot or mild onion 1 teaspoon of finely chopped lemongrass 1⁄2 teaspoon of finely chopped ginger 1⁄2 a cup of chopped coriander leaves Preparation: Slice the fillet steak into very thin rounds. This will be easier if the meat is very cold. Place in a shallow bowl with the lime juice and let stand for 5 minutes.

Method: Lay the beef slices on a flat plate, in a single layer but slightly overlapping and pour any remaining lime juice over.

Sprinkle on the salt, then the shallot, lemongrass, ginger and then the coriander leaves. Serve immediately.

Paprika Chicken with a Pine Nut and Coriander Butter You will need: 4 tablespoons of olive oil The juice of 1 lemon 2 tablespoons of sweet paprika (pimenton dulce) 2 tablespoons of spiced paprika (pimenton picante) A large bunch of freshly chopped coriander 8 chicken breasts with the skin on 250 grams of butter 45 grams of pine nuts salt and pepper

Marinated Grilled Lamb Kebabs You will need: Approximately 1 kilo of a leg of lamb For the marinade: the juice of 1 lemon 2 cloves of garlic, crushed 1 onion, finely grated 1 teaspoon of dried oregano 3 tablespoons of olive oil salt and pepper Preparation: Trim the fat off the lamb. Cut the meat into 2.5cm cubes and put into a bowl. Mix the marinade ingredients together and pour over the meat, ensuring that all the pieces

Preparation: Mix the olive oil, lemon juice, chilli powder and two tablespoons of the chopped coriander to make the marinade.

Divide the marinade into two. Use half to marinate the chicken breasts for at least 2 hours in the fridge. Remove the chicken and either grill, barbecue or sauté over a medium heat for between 6 and 8 minutes on each side. Set aside and cover with tin foil.

Method: To make the sauce, over a low heat blend the second half of the marinade with the butter, pine nuts and remaining coriander. When the butter has melted, season to taste and then remove from the heat. De skin the chicken breasts and pour the sauce. Serve with rice or steamed vegetables. n
