Apricot and coconut cake IN 4 EASY STEPS

During lockdowns and restrictions, lots of people have been cooking me included. There’s nothing like home cooking and the smell from the kitchen to ease anguish. I went back to my old recipe books and mixed up my favourites. Here’s a recipe that always pleases. ED

200g packet of chopped dried apricots in ⅓ cup boiling water while preparing cake mixture. Rinse.

In moderate oven 35 to 45 minutes until cooked through. Nicer with icing on top.
