Apricot and coconut cake IN 4 EASY STEPS

During lockdowns and restrictions, lots of people have been cooking - me included. There’s nothing like home cooking and the smell from the kitchen to ease anguish. I went back to my old recipe books and mixed up my favourites. Here’s a recipe that always pleases. ED

1. SOAK 200g packet of chopped dried apricots in ⅓ cup boiling water while preparing cake mixture. Rinse.

2. MIX 1 ½ cups sifted self raising flour, 1 ¼ cups desiccated coconut and 1 ¼ cups caster sugar.

3. ADD 125g melted butter, 3 lightly beaten eggs, ½ cup milk and the plumped apricots.

4. BAKE In moderate oven 35 to 45 minutes until cooked through. Nicer with icing on top.
