New Cars by Jared Paul Stern

The late 2023 into 2024 season is shaping up to be one of the most exciting ever for high-end automotive enthusiasts. With hot new cars from the most famous sports and luxury marques set to roll off production lines—in limited numbers, natch—there’s never been a better time to get behind the wheel. Here are our six favorites, and they’re all ready to rip with loads of sporty style, so get your checkbook ready because order books will be filling up fast.

Rolls-Royce Spectre The legendary British luxury brand’s first-ever fully-electric car, Spectre is set to revolutionize the off-the-charts EV space. Rolls is calling it the “world’s first ultra-luxury electric super coupé”; and despite the trailblazing nature of Spectre, they’re more than pleased to point out that marque cofounder Charles Stewart Rolls touted the appeal of electric cars as early as 1900. Billed as the “spiritual successor” of the Phantom Coupé, Spectre is set to take its place among the brand’s iconic model monikers. While final power, acceleration and range figures for the aluminum-bodied beast are “still being refined” as Rolls puts it, Spectre is expected to do 0-60 mph in 4.4 seconds, top out at 155 mph, offer offer 900 Nm of torque, and be capable of clocking 260 miles on a single charge. “Spectre possesses all the qualities that have secured the Rolls-Royce legend,” notes Rolls-Royce Motor Cars CEO Torsten Müller-Ötvös, who calls it nothing short of “the most perfect product that Rolls-Royce has ever produced…. Silent and powerful, [it] demonstrates how perfectly Rolls-Royce is suited to electrification.” Spectre, he adds, is “perfectly in tune with the sensibilities of our time. It states the direction for the future of our marque and perfectly answers a call from the most discerning individuals in the world to elevate the electric motor car experience, because Spectre is a Rolls-Royce first and an electric car second.” Design inspiration for the car meanwhile came from everything from “haute couture, modernist sculpture, nautical design, and tailoring to contemporary art.” rolls-roycemotorcars.com

Aston Martin DB12

astonmartin.com

Not to be outdone in the field of world firsts, another ultra-posh British brand, Aston Martin, has just debuted the DB12, dubbed the world’s first “super tourer.” The ultimate evolution of the classic GT, this one 007-worthy to a fault, it’s designed to “deliver a quantum shift and set the benchmark for performance, ultra-luxury and style.” Boasting 671 hp and 800 Nm of torque courtesy of its 4.0 V8 twin-turbo engine, DB12 can do 0-60 in 3.5 seconds with a blistering top speed of 202 mph. This is a decidedly old-school, take-your-hyrbid-and-shove-it style grand tourer that doesn’t stand on ceremony. Aston is calling DB12 “the most complete and accomplished DB model in Aston Martin’s history…. blessed with exceptional performance and handling to satisfy and reward the most demanding drivers.” As will be true of all vehicles bearing the hallowed Aston Martin badge, which celebrates its 110th anniversary this year, the DB12’s hallmarks are “prodigious performance and pinpoint dynamics, seamless integration of advanced technologies, and the sublime style and exemplary craftsmanship for which the brand has long been renowned.” Roberto Fedeli, Aston Martin’s Group Chief Technology Officer, calls DB12 a “statement car,” noting, “we have pushed every aspect of this car to be best-in-class. The result is more power and performance than its rivals. Combined with exceptional handling and an exciting soundtrack, it is a car with passion and a truly sporting character. Crucially, thanks to its breadth of capability we have achieved this without compromising refinement, comfort and luxury. Together with our use of industry-leading dynamic control and infotainment systems, DB12 is the start of Aston Martin’s most exciting new era.”

Lamborghini Revuelto Lamborghini has unleashed its long awaited successor to the Aventador with the new Revuelto—and with an insane 1,001 hp (converted from 1015 CV) it will blow everything else off the road. While V12s are by necessity on the way out, the Italian marque has found a way to combine one with three electric motors, thereby paying homage to its lineage while delivering unbeatable power. And the plug-in hybrid Revuelto is a fitting way for Lambo to celebrate its 60th anniversary this year, on the heels of 2022 which was the brand’s best year ever in terms of deliveries, turnover and profitability. Lamborghini Chairman and CEO Stephan Winkelmann declares that, “The new Revuelto is a milestone in the history of Lamborghini, and an important pillar in our Direzione Cor Tauri electrification strategy”—a €1.9 billion, 5-year initiative. "It is a unique and innovative car but at the same time faithful to our DNA: the V12 is an iconic symbol of our super-sports heritage and history. Revuelto was born to break the mold, combining a new 12-cylinder engine with hybrid technology, creating the perfect balance between delivering the emotion that our clients want with the necessity to reduce emissions.” With a bonkers amount of carbon fiber keeping the Revuelto’s power-to-weight ratio on the eye-popping side, its stats will knock your (Italian made) socks off: 0-62 mph in 2.5 seconds and a top speed of more than 217 mph. An evolution of the Aventador’s futuristic design, it borrows even more aerospace-inspired elements and emphasis the Y-theme with headlights, taillights, and large side air intakes as well as the center of the dashboard. lamborghini.com

McLaren 750S

We’ve all been waiting to see what McLaren’s first move would be under newly-minted CEO Michael Leiters, who joined the esteemed marque last summer. And by the looks of it the new 750S won’t disappoint. It’s the lightest and most powerful series-production McLaren ever built, with 740 hp, 590 lb-ft. of torque, a 0-60 mph sprint of 2.7 seconds, and a top speed of 206 mph. “When you have a car [like the 720S] recognized by so many drivers as a benchmark, to do something even better you have to examine every detail and really push hard for improvements that raise the bar again,” Leiters notes. “This is what we have done with the new 750S and the lightweight, V8 engine performance and outstanding dynamic abilities combine to deliver a supercar driving experience that hits new heights, with truly exhilarating levels of emotional connection.” Around 30 percent of the 750S’s components vs. its predecessor the 720S, which had 30 hp less power, are new or improved, making this a truly groundbreaking model for McLaren. Priced in the U.S. market from a base of $324,000 for the Coupe and $345,000 for the Spider—which is fitted with a retractable hardtop— the 750S is bound to delight collectors and all who appreciate beautiful machines that go really, really fast. McLaren’s MSO customization department has also been given full reign to create whatever a customer might desire in terms of personalizing the wicked new ride, though the stock TechLux and Performance interior themes are already on the mark. In the brand’s own words, the sensational new supercar is a “design that speaks the language of speed.” mclaren.com

Range Rover Sport SV landrover.com

It’s the most powerful Range Rover ever built: the new Range Rover Sport SV may not be a supercar like the other thoroughbreds on the list, but this super-SUV can more than hold its own. With 626 hp—a 50 hp boost over the outgoing Range Rover Sport SVR—courtesy of a eco-friendly “mild-hybrid” twin turbo V8, it can do 0-60 mph in 3.6 seconds in dynamics-optimized SV Mode with a top speed of 180 mph. An “airflowhoned” exterior includes a redesigned front-end and lower body sides, which while recognizable from the previous generation are unmistakably upgraded, as are the carbon fiber hood and quad tailpipes. Inside you’ll find Range Rover’s first ever Body and Soul Seat, which uses the latest incar sensory audio technology to provide a truly memorable experience in conjunction with the state-of-the-art entertainment system. And for the first time ever on a production Range Rover there’s a Brembo Carbon Ceramic Brakes option, with exclusive eight-piston SV calipers announcing to all and sundry that this is no ordinary SUV. Nick Collins, Jaguar Land Rover, aka JLR’s Executive Director of Vehicle Programs, call the new Sport SVR an “optimum blend of supreme performance, unrivaled desirability, capability and refinement. It’s a visceral addition to the Range Rover Sport line-up that powerfully demonstrates the world-class expertise of our high-performance specialists.” For the first year of production New Range Rover Sport SV is only available to select clients, built to order and by invitation, in limited edition SV EDITION ONE specification, “representing a curation of the best feature combinations, colors and finishes.” We could say that competition will be fierce; but every SV EDITION ONE has already been spoken for by a current Range Rover Client, so that’s a battle was over before it began.

Maserati GranTurismo Folgore Having relaunched the GranTurismo in style last year, Maserati is now gearing up to debut the next-level version of the supercar, in the form of the GranTurismo Folgore, the the first-ever car in Maserati’s 100-yearplus history to feature a 100% electric battery-based powertrain. Mind-bending performance is the result of this impressive endeavor, with the Folgore capable of doing 0 to 62 mph in just 2.7 seconds with a top speed of 202 mph. Based on 800V technology, the car’s Folgore— Italian for “lightning”—system was developed with the help of the iconic marque’s Formula E program. The ecofriendly theme is carried through even to the interior, with the use of sustainable materials such as Econyl, a new fabric made with recycled nylon from netting recovered from the oceans. This features a “parametric design that expresses a natural dynamism… speaking of a controlled performance, a movement made eternal.” The dashboard and door panels meanwhile are produced using “high-frequency” leather printing technology, a process borrowed from high-end leather goods which Maserati points out is a first for the automotive industry. The most exclusive examples of the Folgore are reserved for existing top-drawer Maserati clients, under the GranTurismo PrimaSerie 75th Anniversary badge, “a modern heroine that carries forward into the future the significant legacy of a timeless car, raising the concept of travel towards new design and stylistic horizons for an unprecedented level of driving experience and pleasure.” Only 75 examples of the Fologre in the PrimaSerie 75th Anniversary trim will be built, wearing exclusive Blu Inchiostro paint. maserati.com

A r m Ca n dy From High Complications to High Jewelry, Piaget Shines a Light by Kristen Shirley

IN the KNOW WATCHES

Few maisons have the technical and artistic skills to meld high jewelry and high horology. Piaget’s mastery of both is unparalleled, and its 2023 releases showcase its rich history. From the late 1960s through the 1980s, Piaget was firmly in the spotlight of trendsetting jewelry and watches, seen on the most stylish women of the day, including Jackie Kennedy and Elizabeth Taylor. Its pieces highlighted the gorgeous colors and joie de vivre of the French Riviera, as well as the technical expertise of its Swiss watchmakers. Not only did it have a 2mmthick ultra-thin movement that shocked the watch world, but it transformed precious metals into supple designs in showstopping jewelry watches. Ever since, ultra-thin movements and colorful watches with expert metal work have been signatures of the brand. Today, the maison has 100 different engraving techniques it employs throughout its watches and jewelry. Two cuff watches highlight its engraving techniques, which gives gold a rich finish that is more like silk than metal. Each features a stunning stone dial, another Piaget hallmark. The yellow-gold version has a turquoise dial offset by ombré blue sapphires. It features the Palace Decor motif. Each gold link is engraved with a number of stylized grooves, giving the metal an organic feel that also hides the individual links, giving the visual effect of an unbroken piece of gold. The white gold model has a fiery opal dial surrounded by ombré green gemstones. Its engraving echoes snowflakes and frosted surfaces. Both watches have an asymmetrical dial design, where it appears that the gemstone dials are breaking out of the metal cuffs. The Aura high-jewelry watches are the pinnacle of gem setting. They have fully integrated cases and bracelets that are fully set with baguettecut sapphires and diamonds, including sparkling diamond dials. Cutting the gemstones and diamonds to perfectly fit the watch case and the dial is a time-consuming and technical process, as was sourcing the perfect color gradient. Sourcing and selecting the stones alone took eight months, and setting them took more than 260 hours. Piaget’s gem setters used a clever technique to set the stones, shaping the claws as diamonds. Within, you’ll find an ultra-thin mechanical movement that measures a mere 2.1mm thick that is a descendent of Piaget’s original ultra-thin movement from 1957. It has a 43-hour power reserve. Piaget also showcases pendant watches, set on long sautoir necklaces. Each has a handtwisted gold chain that takes more than 130 hours to create. The high-jewelry model features a 25.38-carat oval cabochon Zambian emerald above an oval-shaped malachite dial. It’s topped with a fringe crafted from gold chains, diamonds, and more emeralds. The more daytime sautoir has an oval-shaped gold dial decorated with the Palace Decor motif and two tassels. Another highlight is the Piaget Polo Perpetual Calendar Obsidian. It combines a perpetual calendar with an obsidian stone dial, and the bezel is set with blue sapphires that accentuate the many hues within the dial. It is finished with a rubber strap, adding a more casual look to the high-jewelry masterpiece.

TIME AFTER TIME

IWC Revives the Iconic Ingenieur by Kristen Shirley

One of the hottest releases of the year isn’t a new design; it’s an update of a watch that was discontinued 40 years ago. IWC’s collectors have been waiting — not so patiently — for the re-release of Gérald Genta’s iconic Ingenieur watch. Now that it’s here, they might admit it’s been well worth the wait.

a more affordable price. The new Ingenieur Automatic 40 features an in-house movement with a 120-hour power reserve that retains the powerful anti-magnetic properties for which the original timepiece was known. The stainless steel models come with black, silver-plated, or teal dials, and the titanium version sports a gray dial. The dials each feature a “grid” pattern and are topped with luminescent hour markers and hands. At 3 o’clock, there’s a date window, and the Ingenieur logo is just above 6 o’clock.

Genta first added his mark to the Ingenieur collection in 1976, the same year that Patek Philippe unveiled Genta’s Nautilus watch, with the debut of Ingenieur SL Reference 1832. He introduced a five-screw bezel, a patterned dial, and an integrated H-link bracelet to the collection. Throughout the years, it’s become one of the most sought-after watches produced by IWC. The Swiss watch brand faced the tricky proposition of updating the watch for the modern era while retaining Genta’s distinctive design codes.

Continuing the sporty theme, IWC released new colors and materials in its beloved Pilot’s Chronograph. For the first time, the 41mm Pilot’s Watch Chronograph Top Gun comes in ceramic, either in black or a new blue hue created with Pantone. The color is dubbed Oceana and is inspired by the color of the US Navy’s coveralls. It has a complementary strap that has a denim-style finish. Why ceramic? The material is extremely durable and is renowned for its resistance to scratches. It’s perfect for those on the go, even if they’re not in the cockpit.

Christoph Grainger-Herr, CEO of IWC Schaffhausen, says, “While taking inspiration from Gérald Genta’s Ingenieur SL from the 1970s, we invested a lot of time and effort into engineering a new automatic model with perfect case proportions and ergonomics, a high level of detail and finishing, and equipped with modern movement technology. The new Ingenieur Automatic 40 is a versatile luxury sports watch for the 21st century.”

If you’re looking for a dress watch, consider the new Portofino Complete Calendar. It comes in 18K yellow gold or stainless steel and houses a new in-house complete calendar module that displays the date, day of the week, month, and moonphase. In contrast to many calendar watches that feature a plethora of subdials and apertures, IWC contains this wealth of information in two subdials that are vertically stacked, giving the dial an elegant and balanced composition.

The result is sure to please fans of Genta’s original designs, as well as bring in new clients who are drawn to Genta’s designs and will be thrilled to find one at 48

Sleek, modern, and comfort-minded: these are the outstanding superlatives which encapsulate both the tranquil atmosphere of Nobu Ryokan Malibu and the innovative CEO and creator behind Vivélo Bikes, Piotr Nowocién. For the European executive, cycling was a business avenue which came naturally following a lifelong passion for biking, with an impressive portfolio of e-commerce and supply chain management projects to boot. Inspired by a gap in the American market for custom-made bikes, Nowocién transplanted his expertise from Poland— one of the largest bicycle exporters in Europe— to the sunbathed shores of Miami, Florida in 2017 with a singular goal of creating bespoke, European-quality bicycles for the modern, all-purpose customer. Looking ahead, the everenterprising Nowocién still seeks to expand Vivélo’s brand reach with an additional state-of-the-art factory in Warsaw, with a forthcoming line of personalized, Italian-designed electric bikes. Beyond cycling, Nowocién has also recently launched his own chain of European-inspired bistros, offering elevated fast-food alternatives to patrons in Miami, with further locations coming soon in New York City, Los Angeles, and Chicago. As part of his enthusiasm for globetrotting, Nowocién most enjoys driving his collection of vintage cars along the rugged, idyllic coastlines of France and California, frequently taking trips along the storied Pacific Coast Highway to stop at one of his favorite travel destinations, Nobu Ryokan Malibu. As a devotee of refined elegance and thoughtful personalization, Nowocién particularly enjoys the hotel’s elegant, Japaneseinspired courtyard and dedicated hospitality staff, who seek to ensure an elevated and relaxing experience for all guests who enter the Ryokan.

NOBU HOTELS' REMARKABLE 10th Anniversary Celebrating a Decade of Luxury and Hospitality

The name Nobu Matsuhisa requires no introduction. As one of the most renowned restauranteurs on a global scale, his influence on dining and hospitality reverberates across every corner of the world. Anchored by his enduring partnership with Robert De Niro and Meir Teper, Nobu Hospitality stands as a luxury lifestyle brand known for its intuitive design, premium ingredients, vibrant energy, and unwavering commitment to service excellence.

Building on the achievement of the hotels, the residential dimension emerged as a logical progression. The first residential project was unveiled in Toronto in 2017, with plans to open its 650 residences within the coming years. After the residences were announced, all units were sold out within a span of 90 days. This enthusiastic and rapid uptake served as a clear indication that the world was ready for the Nobu residences. Since the introduction of these residences, we now have a portfolio of ten projects in development, poised to open their doors within the upcoming years. The remarkable growth in this sector has been fueled by the interest of hotel owners in establishing residences as well. The allure of living the Nobu lifestyle is an extraordinary experience, enticing many of our existing customers to invest in this distinctive way of life.

The narrative of the Nobu brand takes root in the late 1980’s when Robert De Niro’s initial visit to Matsuhisa’s eponymous sushi restaurant in Los Angeles marked the beginning. After four years of perseverance, De Niro successfully persuaded Nobu to extend his culinary artistry to De Niro’s own Manhattan realm. This culminated in the emergence of sister brand Nobu in 1994, gracing a serene TriBeCa street. Possessing a 150-seat capacity and ensconced within a space crafted by the Rockwell Group, Nobu introduced an innovative and pioneering approach to Japanese cuisine. Swiftly amassing popularity and universal acclaim, Nobu stood as a transformative force, not only for its unprecedented flavor combinations but also for its departure from traditional Japanese norms, embracing the distinctive Nobu Style. With its ever-growing acclaim and expansion, the foundation was laid for the birth of Nobu Hospitality.

Reflecting on the incredible journey of Nobu Hotels, covering a decade of resounding successes, it is truly awe-inspiring to witness the exceptional growth and widespread acclaim that have defined our brand. From the visionary partnership between Nobu Matsuhisa, Robert De Niro, and Meir Teper to the thriving success of our iconic hotels and the expansion into the world of residences, every step has been marked by innovation, dedication, and a commitment to delivering unparalleled experiences. As we stand on the cusp of an even more promising future, we remain deeply grateful to our loyal customers, dedicated teams, and visionary owners who have propelled Nobu’s ascent to great heights in the hospitality industry.

In 2009, the impetus to venture into the world of Nobu Hotels was ignited by De Niro, prompted by the success of a restaurant nested within a branded hotel. Recognizing that the hospitality realm was attainable given the success of the restaurants, De Niro observed that hotels housing a Nobu restaurant flourished due to the allure of the culinary experience. This led to a partnership with Caesars Entertainment, resulting in the inaugural Nobu Hotel at Caesars Palace in 2013. The hotel received widespread attention and media coverage. Following the debut, the Nobu partners received requests for three additional hotel projects, thus leading to the inception of the hotel legacy.

Kanpai to all!

Since the pivotal decision to launch the first hotel in Las Vegas, Nobu has been fortunate to collaborate with property owners who have experienced success and subsequently invested in expanding the brand’s footprint. On the trajectory to reach 40 hotels by year-end, this success is attributed to the dedication of our owners and their unwavering commitment to the brand.

Master Pieces T h e fa s h i o n o dy s s e y o f B i l ly R e i d by Emma Ungaro

Born in a small town in Louisiana, Billy Reid’s dream to champion an American Fashion House based in the deep South is over 20 years in the making. “I grew up in Amite, LA,” Reid explains about his upbringing. “My mom owned a women's boutique that was located in my grandmother's old house, and that had a big impact on the way hospitality is portrayed in our shops today.” Working his way through the Art Institute of Dallas with a job at Saks Fifth Avenue, Reid launched his career with a six-year stint at Reebok before branching out to start his own label. “I launched my own collection in 1998 under the label William Reid,” he recounts, “which had critical success and CFDA award recognition. Things were really taking off with that collection until I held a New York Fashion Week runway show on September 10th, 2001, a day before the 9/11 attacks. Everything eventually unraveled, ultimately closing that business.”

transformation and how a person’s sense of style changes through the moments and experiences they encounter throughout early adulthood. My Journey from a small town to traveling the world and developing products has transformed my own personal outlook on style. I believe people should feel comfortable wearing pieces whether they’re in Chicago, Paris, or Muscle Shoals, Alabama. That really has been a consistent thread through the years, one which has helped us establish a look and vibe for the brand.” Though Reid has accomplished much throughout his career, including recognition at The Council of Fashion Designers of America, he names the relationships built with his customers as his proudest achievement. “Hospitality is a core pillar of our brand, and we aspire to create a welcoming environment in each of our eleven stores across the country,” he smiles, “there is nothing more gratifying than having someone tell us about their favorite piece, where they’ve worn it, and what it means to them.”

After a move to his wife’s hometown in Alabama, Reid made his return to the industry in 2004 with the Billy Reid label. “I had a vision that an American Fashion House could be based outside of the usual New York, Paris, and Milan fashion centers. Nearly 20 years later, we have seen that vision through, and we continue to build and create from Florence, AL.” Based on exceptional quality, timeless design, and a genuine community, the Billy Reid collection is grounded in usable and wearable pieces that live life with you and stay in your closet rotation for years to come.

Dedicated to keeping the brand’s core values intact through years of evolution and growth, Reid is honored to celebrate the brand’s upcoming 20th anniversary. “We’re very excited to celebrate 20 years of Billy Reid with our incredible team members and customers who feel like family,” Reid nods. Through an unwavering commitment to timeless design and to the community that supports him, Billy Reid’s vision of an American Fashion House has certainly been realized - and we’re positive that his success is only just beginning. And don’t forget when in town visiting Nobu Hotel Chicago next to swing by the Billy Reid store directly across the street. The shop has everything you need to keep stylish in the windy city, no matter the season.

Reid’s journey in the fashion industry continues to inform his design process, inspiring many elements in his latest collection. “I cannot help having a personal point of view when we build our collections,” he explains. “This season, we dove into the idea of

The Cod Father Pulling Gold from the Sea WORDS by Beth Short-Rhoads

102

Black Cod with Miso is an icon at Nobu Restaurants, imbued with a masterful balance of house-made miso and artisanal sake. This classic entrée has delighted Nobu guests since the brand’s inception, a crown atop every menu from New York City to Tokyo. But where in the world is the star ingredient of this famous dish—rich, velvety black cod—procured? The answer: Southeast Alaska, where icy ocean waters mean superlative seafood quality. Here, snowcapped mountains meet coastlines of lushly-fringed evergreen forests and quaint fishing towns. Each spring, fishermen set off in longline boats the size of a railcar to carry on the tradition of harvesting black cod, one by one, on sturdy lines that descend 200 fathoms (1,200 feet or 360 meters) into the sea. Black cod, also known as sablefish, yield fillets the color of a pearl and are prized for their silken texture and delicate flavor. Certified sustainable by the Marine Stewardship Council, the black cod fishery supplying Nobu kitchens means a priceless way of life for Southeast Alaska fishermen. Kurt Hansen of Sitka makes his living aboard the 100-year-old F/V Middleton, a wood-hulled longliner he has operated for nearly three decades. “It’s not a bad view from my office window,” he jokes, gesturing to the ocean swells outside his wheelhouse.

103

Fisherman like Captain Hansen will tell you that finding black cod on the remote seas of Southeast Alaska requires an intimate knowledge of local fishing grounds. Favored locations are a well-kept secret, but most are situated along the legendary black cod edge a 3-hour journey from the harbor. The continental shelf drops here from 100 fathoms to what oceanographers call the abyssal plain located a dizzying 1,000 fathoms below. Nutrientdense upwellings churn from the deep, calling to fish like a siren song. Near underwater canyons and ridges, the black cod gather. And so do the men and women who harvest them. “Fishermen are on the front line of all that’s going on in nature,” Captain Hansen says. “Out on the edge where the continental shelf breaks off and goes down into the abyss—that’s where we go.” Much like the craft of cuisine for which Nobu restaurants are revered, longlining is a similarly time-honored skill passed down through generations. A technique originally developed by the ancient Phoenicians and Egyptians, this fishing technique was revitalized by Japanese fishermen in the mid-19th century and quickly adopted in Southeast Alaska. Longlining is named for the fishing lines that stretch all the way to the ocean floor, anchored by bright orange buoys at the surface. Deftly-baited hooks span these lines and attract black cod in darting schools destined for Nobu restaurants on five continents.

104

Like all good craftsmen, Alaska fishermen take pride in their work, handling each black cod with meticulous care. “These fish are coming aboard and going into the slush in 10 to 15 minutes,” Captain Hansen says. “So they are in pristine condition. Every moment in this process is critical to bringing these fish to a top-quality market.” Shoreside processing facilities like Seafood Producers Cooperative (SPC) in Sitka, a foremost supplier of Nobu black cod, await Hansen’s radio call that signals a delivery is on the way. Staff quickly offloads, dresses, and flash freezes his catch before preparing it for shipment by oceangoing freighter to Europe, Asia, and other locations around the world. The cooperative is keenly aware that its black cod is a centerpiece at Nobu, according to Stephen Rhoads, a former longline fisherman and now Vice President of Sales. “We have a dream of doing something important by placing our fish in the finest restaurants in the world,” he says. “Seeing our product on the Nobu menu is the ultimate achievement.” On a recent trip abroad, Rhoads dined at Nobu Barcelona, enjoying its dusky Spanish ambience and glittering views. Even more memorable was the Black Cod with Miso. “Experiencing Alaska black cod prepared by a Nobu chef hugely elevated my perception of the role our region plays on the global seafood stage,” he says.

105

It’s no surprise that Nobu Restaurants, in its never-ending quest for culinary excellence, sources black cod from a distant edge of the world like Southeast Alaska. As Captain Hansen says about fishermen like himself who have spent a lifetime there, “That’s where we go to pull some of this wonderful gold out of the sea.”

Seeing our product on the Nobu menu is the ultimate achievement.

Vine Art

I

n the decades after pioneering winegrower Robert Mondavi opened Napa Valley’s first post-prohibition winery in 1966, this Northern California viticultural region has undergone many eras of evolution. Experimental planting by the first families paved the way for another wave of vintners in the 1980s and early 1990s who poured their business savvy and wealth from commercial successes elsewhere into furthering wine quality and brand prestige. Then, a new generation of scrappy winemakers and entrepreneurs moved in, this time focusing on sourcing fruit from top growers and making wine in custom crush facilities rather than buying expensive properties—the founders of Realm Cellars among them.

REALM Cellars is Defining a New Pioneering Era for Napa Valley Wines by Gemma Price

172

One decade later, Realm is focused on spearheading a new era for Napa Valley wines, standing on the shoulders of those who came before them, practicing them alchemy of science, passion, precision, authenticity and respect for nature to elevate the craft of with an eye to the next generation.

“We don't need to reinvent the wheel—cab will always be king here. We need to find how we can make these one percent improvements. The devil is in the details.” says Scott Becker, Realm co-owner and CEO. Its most recent acquisition, the 40-acre Nine Suns property on Pritchard Hill, which Becker aptly describes as the Rodeo Drive of Napa Valley, is arguably its most visible. Perched at the end of a serpentine access road, the glass-fronted modern residence offers sweeping views of the Valley and the property’s Houyi Vineyard from which Realm has sourced fruit since 2013 and farmed from 2022—almost a full year before Realm purchased the estate.

173

“We took the risks ahead [of time] because that's how much we believe in the importance of take control of the farming and the viticulture,” explains Winemaker and Co-owner Benoit Touquette. “Last year ended up being a very difficult vintage because of the heat spike at the end. We were rewarded with all the work we put in, previous to ownership—it was a gamble that paid off.” Taking calculated risks has been Realm’s stockin-trade since Becker and Touquette, a Bordeaux native and protegée of celebrated wine consultant Michel Rolland, took the helm in 2012. Becker met one of Realm Cellars’ co -founders Juan Mercado in 2011—the same year that Touquette, who was Mercado’s roommate at the time, joined Realm after the previous winemaker departed. The business was in shambles, but Becker—an Air Force veteran and Harvard Business School graduate who was “intellectually and emotionally” drawn to the wine world—was intrigued by what had been accomplished since establishing the brand in 2002, persuading top growers like Andy Beckstoffer to sell them fruit, and bootstrapping to build a mailing list. A month before he signed the contract to acquire Realm in July 2012, Becker paid for glass and corks for the June bottling of Realm’s 2010 vintage; the Realm team hadn’t been paid for months and the winery was practically bankrupt. Soon after, when Becker and Touquette realized the 2009 vintage of The Bard exhibited unmistakable taint of spoilage yeast brettanomyces, or “brett,” and made the tough call to pour what remained in the cellar down the drain—a $250,000 hit to a business worth less

than $2 million—Becker’s faith in their supportive customers, Touquette’s talent and the phenomenal 2012 vintage in barrel inspired him to ignore external advice to either raise capital or fold.

As part of their agreement, Realm partners with son Tom Farella on farming and development decisions. And Tom continues to make wine under his own label.

“We've done things that at first, if you look at it from the outside, it seems like it doesn't make business sense. But it makes relationship sense, that in the long run ends up making business sense,” he says. In the following years, Becker, Touquette and first hire Eden Foley, now Realm’s Chief of Staff, deepened the connections with growers forged by the original co-founders and turned their attentions to making the best wine possible. After Realm’s 2012 vintage sold out following spectacular reviews from The Wine Advocate—five wines scored upwards of 96 points, with Beckstoffer Dr. Crane and The Absurd earning “perfect” 100-point scores—the team, after years of feeling like they were “cooking in someone else’s kitchen,” at Château Boswell, began to look for their own space.

“Bob [Hartwell] ultimately decided to sell to us because of our relationship. In so many words, he said, ‘Benoit and Scott, I'm handing you the baton. Don't screw it up’.” recalls Becker.

After months of negotiation, they were successful in acquiring the Hartwell Estate in Stag’s Leap, largely because Touquette had made wine for the Hartwell family since 2004 and worked as a viticulturist on the Estate since 2008, and they trusted him. So did Frank Farella, the lawyer who represented Realm in their purchase of the property. He was so impressed by the team’s vision and collaboration with the Hartwells that in 2018 he proposed they enter into a lease agreement to eventually take over his family’s eponymous vineyard, where the team had been making a Single Vineyard Farella Cabernet Sauvignon since 2003—an offer that Becker and Touquette accepted.

“It's a lot of confidence in us. It's just not just passing on just a property, but walking alongside together,” adds Touqette. The Realm team got to work developing the Realm Cellars Stag’s Leap property, replanting blocks, creating 5,000 square feet of caves in the hillside and upgrading the winery, and constructing Whiskey Hotel, a modern structure in concrete and enough steel to withstand an earthquake. Its name is taken from the NATO phonetic alphabet for Wappo Hill, where the winery is located, and the team’s code for the Hartwell property before the sale went through. Flanking an open-plan kitchen and fireside lounge featuring antique rugs knotted and woven by female members of Persian mountain tribes, a floor-to-ceiling cellar displays wines from all over the world—Krug Champagne, Masseto, Domaine Leflaive, Château-Figeac—that Becker says is “both for enjoyment and also for inspiration”. In the glass-fronted tasting room, sweeping views of the estate vineyards are framed by huge artworks commissioned from various artists who create Realm’s eclectic suite of labels.

Jim Sullivan’s graphite drawing of a tree bedecked with butterflies by adorns estate-grown cabernet Sauvignon Hartwell XX label in miniature, the color of the butterflies changing with each new vintage. Manuscripts of Nature, a work by Chinese-born, New York-based artist Cui Fei, features vine tendrils arranged like Chinese characters, many collected from the vineyards that produce Moonracer—a complex, layered “intellectual” wine of red, blue and black fruit with floral notes named for the indigenous Wappo tribe that Jack London wrote hosted moonlight races in on the hill. “I think one particular beauty of this site is the elevation and the aspect. It’s very intellectual to me to peel the onion when you have the wine in a glass. For Stag’s Leap, you expect powerful, silky tannins—an iron fist in a velvet glove,” says Touquette. In two decades, Realm has grown from a scrappy start up to a portfolio of three Napa Valley estates producing 15 wines spanning proprietary blends, estate wines and single vineyard productions. Cabernet sauvignon is the focus alongside smaller

175

blocks of petite syrah, cabernet franc, petit Verdot and sauvignon blanc for Realm’s seminal Bordelais-style Fidelio. Roughly half the fruit is sourced from their properties and half from landmark Napa vineyards; Realm is one of few boutique producers to have access to Andy Beckstoffer’s legendary To Kalon vineyard, named for the classical Greek ideal of allencompassing beauty where grapes fetch in excess of $18,000 per ton, more than double the Valley’s average. This proliferation is particularly remarkable as quality fruit is harder to access than ever before, and land is only becoming more expensive. Napa properties cost between $400,000 to $500,000 an acre, compared to an average of $61,000 for an acre in France’s Appellations d'Origine Protégée (AOPs), kicking up to $500,000 in Champagne, the most expensive region. California Department of Food and Agriculture’s 2021 Grape Crush Report notes the average price per ton of Napa cabernet sauvignon was $8,082, compared with $2,728 in Sonoma.

“Before, it was a millionaire's game. Now, it's a billionaire's game,” quips Touquette. But wine lovers are happy to pay top tier rates. In 2021, the average tasting room purchase in Napa County was $377.87. Spring through fall, impeccably coiffed people in well-cut suits and designer dresses compete for tasting experience reservations that can run from $50 to more than $950, with add-on experiences including vineyard tours by private plane and Baccarat crystal glasses engraved with your name. Realm hasn’t hosted visitors for more than five years, and now the Stags Leap and Pritchard Hill properties are well-appointed, by and large for guests, the team is putting thought into developing experiences that are uniquely Realm. As many voices lamenting that their membership is aging and young Millennials and Gen Z don’t drinking wine, Realm is doubling down on authenticity and stoking curiosity in the brand rather than chasing scores: the origins of the wines in the vineyard and the associated stewardship of the land and agricultural craft; the perspective and design of the labels and hospitality design choices. “At the high end, we have to be careful not to try to target somebody because you feel it when you're being marketed to.” Becker. “If you're chasing the next demographic, or the next critic, or the next trend, I think you get a little bit lost. That philosophy is true north for us.” Now they no longer worry if the tanks are clean and cellar workers have been paid, Realm is thinking very long-term, laying the groundwork for vineyards that will produce fruit for 50 years and make wines that can age for 100 years. Central to their vision is what Touquette describes as “MMA winegrowing”—a multifaceted approach where the team eschews dogmatic traditions to explore different disciplines and ideas, tapping an informal scientific advisory network to dial in row orientation, clones, rootstock and bud wood, and water and nutrient uptake. Mitigating the impacts of fire is a core focus. In 2020, the Glass Fire turned Bay Area skies turned apocalyptic shades of red and orange as ash blotted out the sun and blanketed grapes, and Realm forewent making any red wine due to smoke taint. (Instead, they decided to craft a rosé, La Fe, from merlot and cabernet sauvignon in homage to the hard work of their vineyard teams and to share with members in lieu of their 2020 allocation—a wine which was so well received the team is considering making it again.) Realm is working to install UV and infrared cameras as part of an early warning fire detection system that will alert CalFire so a firefighting aircraft can be dispatched within minutes. Touquette is also working with Foundation Plant Services at UC Davis—the source of all California Registered or Certified grapevines—to develop proprietary heritage petite syrah and charbono clones using bud woods from legacy sites which he’ll populate in Realm’s greenhouses. “The long-term opportunity is to continue to establish Realm as iconic to the Napa Valley with global reach—the vision was always this idea of a first growth with enough scale to be relevant around the world, producing around 25 to 30,000 cases,” explains Becker, adding that they have a potential Bordeaux project in the works that they’re not quite ready to talk about.

176

“If you're chasing the next demographic, or the next critic, or the next trend, I think you get a little bit lost. That philosophy is true north for us.”

“The portfolio approach is that Realm isn't one wine, it isn't one place, but everything together.” While the Realm team can’t say for sure what will define this era, they know continuing to take advantages of opportunities that come their way and enhancing their estates—currently the team is updating Nine Suns’ catwalkaccessed gravity-fed tanks to double production and introduce more estate wines—will steer them right. “Robert Mondavi took a big swing. We share the same values: making a move on such a property, this is a big swing,” says Touquette. “You’ve got to have the passion, the drive, vision and dare greatly.”

More than two thousand years of history have created an alluring mix of culture, cuisine, and luxury in the Andalusian capital. Let’s explore it - the Nobu way. Words by Jennifer Bradley Franklin

2023 opening of Nobu Hotel Sevilla on the vibrant Plaza San Francisco added another reason to visit. Find a relaxing home base in one of the hotel’s 25 stylish rooms and suites, designed with a mix of Adalusian and Japanese sensibilities. You’re never far from the sun-drenched city’s storied history: Terrace seating on the Plaza is positioned at the foot of a wall built by Julius Caesar.

Sevilla has been an important destination in Southern Spain for more than two millennia. With an advantageous location on the east bank of the Guadalquivir River, the metropolis first flourished under the Romans in the second century B.C. The city’s blend of Moorish and Catholic architecture and cuisine bear witness to the Andalusian capital’s mix of influences over the years, so you’ll want to take full advantage of exploring Mudéjar palaces, baroque churches and lanes dating back to the Middle Ages. Fashion Lover To make your shopping dreams come true, head to Calle Sierpes, a car-free stretch in the city’s commercial heart that’s been the epicenter of trade since the fifteenth century. There you’ll find everything from locally made leather goods and embroidery to typical souvenirs and flamenco dresses. Branch off onto other equally interesting shopping streets and discover local favorites including Atelier Victorio y Luccino, by a duo of Andalusian-born fashion designers who have achieved worldwide recognition, and Maquedano Sombreros, that’s been turning out handmade hats for more than a century. Head to La Importadora, a concept store run by locally born designer Rafa García Forcada that blends art, decor and fashion (with a penchant for beautifully draped dresses). Find a piece of clothing or jewelry from an emerging designer at Ruc Store or score a delicate stationery set at Papelería Ferrer (founded in 1856, it’s one of Spain’s oldest such shops). Finally, for a souvenir that doubles as a fashion statement piece and a work of art, peruse the wares at Olivier Bernoux. Luxurious handmade fans range in style from punk rock to elegant.

Zen Seeker Sevilla’s ancient streets are a shining example of walkability: It’s easy to go car-free for your visit, eliminating one potentially stressful element of traveling. To get the lay of the land, head to the world’s largest wooden structure, Las Setas, at sunset. Designed by Berlin-born architect Jürgen Mayer, the outdoor exhibit consists of six 85[4] -foot-tall, mushroom-shaped parasols. Rumor has it that their unusual shape may have been inspired by native ficus trees. Take the lift up to the serpentine walkway for 360-degree views of the city. For a mix of history and beauty, explore a trio of sites that have gained UNESCO World Heritage status. Start at the Catedral de Sevilla, the world’s largest gothic cathedral and the final resting place of explorer Christopher Columbus. Art lovers will want to keep an eye out for paintings by Murillo, Goya and Luis de Vargas. Built by craftsmen in the 14th century for Catholic king Peter of Castile, Royal Alcázar is Europe’s oldest occupied palace, constructed on the site of a former Islamic fortress with stucco arches, azulejo tiles, manicured gardens and subterranean baths. Finally, visit the Archivo de Indias, a historic repository of archival Spanish documents with more than 6 miles of bookshelves. For the ultimate zen end to a day, hire a boat and float down the glittering Guadalquivir River.

Foodie

Resist the urge to assume that Sevilla’s culinary scene is all traditional. You’ll find plenty of flawless tapas for which the city is known and so much more. See— and taste—some of the region’s best ingredients and simple preparations at the Feria Market, the city’s oldest. If you find yourself exploring Santa Cruz, the charming old Jewish neighborhood, pause for lunch at Vermutería "Yo Soy Tu Padre,” where homemade vermouth is served alongside traditional bites and a terrifically curated Spanish wine list. For a pickme-up any time of day, head to Virgen Coffee for single-origin brews, from espressos to flat whites, in a hole-in-the-wall cafe. Casa Anibal, housed in the historic building designed by Aníbal González Álvarez-Ossorio, the architect who designed, among other things, the iconic Plaza de España, is a feast for the eyes and the palate, thanks to vibrant decor and avant garde Mediterranean fare. For a taste of some of Sevilla’s most exciting food, reserve a table at Sobretablas where chef Camila Ferraro creates thoughtful dishes from pristine local ingredients such as turbot, lamb and clams with meticulously prepared stocks and sauces. Dishes are paired with Spanish wine selections from sommelier Robert Tetas.

Art Aficionado UNESCO recently recognized flamenco as part of the world’s intangible cultural heritage. For a deep dive into the elements that make it up—poetry, singing, guitar, dance, finger snapping and rhythmic clapping—at Museo del Baile Flamenco. Across four floors, visitors can explore the history, evolution of costumes over the years, visual interpretations by artists and see a dynamic performance. For a more intimate show, head to the Alfalfa neighborhood to La Milonga Tablao, owned by two Argentinian dancers. A maximum of 35 guests attend each show by a singer, a dancer and a guitarist. Appreciate another of the region’s key works of art at the Triana Ceramics Center. Founded in 2014 and located in the complex that was once the headquarters of an important ceramics company, the museum highlights the storied regional history of pottery craftsmanship. End your art quest with a visit to Maria Luisa Park, Sevilla’s largest green space. On the north side of the park, seek out the Gustavo Adolfo Bécquer Monument, celebrating the life and work of one of Spain’s most wellknown Romantic poets. Inspired by his Rimas poetry collection, the lifelike bronze and marble sculptures of Cupid as a child and an adult and a trio of young women are set among an verdant landscape.

Outdoor Adventurer Southern Spain’s Mediterranean climate means mostly sunny days, with scorching summer days and balmy days that stretch into the winter. Cheer for the hometown soccer (that’s fútbol to locals) team, Real Betis Balompié at the outdoor Benito Villamarín Stadium. Don your green and white and feel the excitement among more than 60,000[2] fellow spectators as the team takes the field. Take part in another quintessential local activity: horseback riding. The area is famed for its Andalusians, also known as Pure Spanish Horses, a breed that dates back thousands of years. Book a lesson and a tour of the majestic Aznalcázar pine with the experts at Entrepinares Equestrian Center. They cater to all levels of riding experience, from novice to proficient. If you prefer to explore on an inanimate object, consider renting a bike from Sevivi, the easily accessible municipal bike rental service, and navigating more than 100[3] miles of cycling lanes that snake in and around town. In fact, Sevilla boasts one of the largest cycling networks of any European city, so thrill seekers looking to pedal their way to discovery are in luck. + Walkable City: Sevilla is compact and super walkable so you don’t have to worry about public transportation. + Nightlife: Most people in Spain don’t go out to eat until 8-9pm so the sidewalk cafes are bustling well past 11 pm ± which means the bars are busy well past midnight. And there is a large student population in Sevilla so there are plenty of nightlife and clubs that cater to this crowd as well. + Romantic Atmosphere: It’s hard to deny that Sevilla is a romantic city — especially at night when the city is illuminated and people are out in the streets enjoying life. 187
