DUNE BIRD WINERY’S SUMMER RELEASES The Northport winery’s brand-new pinot noir, with its silky tannins and long, smooth finish, is like “velvet in a glass,” says owner Nichole White. You’ll catch notes of cranberry and spice, and black cherries and oak on the nose. In other news? Dune Bird recently added spritzers to its menu featuring Audacious Elixirs’ non-alcoholic spirits, and offers espresso and small plates (like crispy vegan spring rolls with soy ginger sauce and baked goat cheese with Michigan cherry marmalade). Case in point, the Montrealstyle smoked brisket is cured for seven days with a house brine, given a spicy rubdown, lightly smoked with cherry, apple and beech wood, then braised in beer until forktender.
