It’s hard to believe another golf season is coming to a close, and our attention is now turning toward winter projects We could not have asked for better weather to finish out what has been a busy fall While tournaments, weather, and a few irrigation issues delayed some of our seeding, fertility, and aerification work on roughs and fairways, we will continue these practices as conditions allow.
In early November, we are scheduled to begin culvert and cart path repairs at the #16 tees, which were damaged during Hurricane Helene. This project should take about two weeks We will also begin several smaller initiatives, starting with the removal of the “bird baths” that have developed in fairways on holes #2, #5, and #7
As winter progresses, we will address drainage issues on holes #5 and #7. Over time, the existing drainage has failed, leading to slower drying and less-than-ideal playing conditions Raising and installing new drainage basins, replacing pipe, and tying in additional low areas will provide a lasting improvement in course conditions.
With colder weather ahead, frost delays will become more frequent. Updates will be posted to the Superintendent’s Corner by 7:30am each day, and the Golf Shop staff will also communicate any delays or adjusted starting times
Even during the offseason, it remains just as important to fill divots, repair ball marks, and manage cart (including push cart) traffic These small efforts make a big difference, especially when grass growth slows and recovery takes longer Care taken now helps ensure a strong start to the 2026 season.

November: Walnut Cranberry Cookie
Patrick Budniewski, Executive Chef at Holston Hills Country Club
Ingredients:
1 cup white sugar
¾ cup, packed light brown sugar
½ cup butter, softened
¼ cup milk
2 tablespoons orange juice
1 egg, whole
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon baking soda
2 ½ cups dried cranberries
1 cup walnuts, chopped
¼ cup (for dusting or as needed) confectioners’ sugar
Directions:
1 Preheat oven to 375 degrees F

2.In a large mixing bowl, cream together sugars and butter.
3.Once creamed and smooth, add in milk, OJ, and egg into the creamed mixture and mix on medium speed using the paddle attachment.
4 In a separate bowl, sift together flour, baking powder, cinnamon, salt, and baking soda
5 Slowly add dry ingredients into the bowl of wet ingredients, scraping down the sides of the mixing bowl as needed
6 Continue to mix on low until combined
7 Gently fold in cranberries and walnuts
8.Drop the dough into bite-sized balls onto a parchment-lined baking sheet.
9.Bake in the oven for 10-15 min or until edges are slightly golden brown.
10.Remove cookies and let cool completely, dust with confectioners’ sugar, and serve.
December: Chewy Oatmeal Cookies with Blueberries & White Chocolate Chips John Hanek, Executive Chef at The Water’s Edge Country Club
Ingredients:
2 cup unsalted butter, softened to room temperature
2 cup packed light or dark brown sugar
1/2 cup granulated sugar
4 large eggs*
2 tablespoons pure vanilla extract
1 tablespoon molasses
3 cups all-purpose flour
2 teaspoons baking soda
3 teaspoons ground cinnamon
1 teaspoon salt
6 cups old-fashioned oats
2 cups dried blueberries
1 cup white chocolate chips
Directions:

1.Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the softened butter and both sugars together on medium speed until smooth, about 2 minutes Add the eggs and mix on high until combined, about 1 minute Scrape down the sides and bottom of the bowl as needed Add the vanilla and molasses and mix on high until combined Set aside
2 In a separate bowl, whisk the flour, baking soda, cinnamon, and salt together Add to the wet ingredients and mix on low until combined Beat in the oats, dry blueberries, and white chocolate chips on low speed Dough will be thick, yet very sticky Chill the dough for 30-60 minutes in the refrigerator (do the full hour if you’re afraid of the cookies spreading too much). If chilling for longer (up to 2 days), allow to sit at room temperature for at least 30 minutes before rolling and baking.
3.Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
4 Roll balls of dough (about 2 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets I recommend using a cookie scoop since the dough can be sticky Bake for 12-14 minutes until lightly browned on the sides The centers will look very soft and underbaked Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire
completely. The cookies will continue to “set” on the baking sheet during this time.
