Die ‚Pure Dynasty‘ -Mischung wird zunächst auf den Bahnen ausgebracht. Im Laufe der kommenden Jahre wird der Paspalum-Rasen auch in den semi roughs angepflanzt werden. Die Vorteile des Paspalum-Rasens werden auch in der Umweltbilanz von Son Gual zu Buche schlagen. Der Bedarf an Düngemitteln, chemischen Substanzen und Wasser wird beträchtlich sinken. Dadurch verringert sich der Strom- und Brennstoffverbrauch, nicht zuletzt deswegen, weil Pumpen und Beregnungsanlagen weniger oft oder für ein kürzeres Zeitfenster eingesetzt werden müssen. Und: sobald der Paspalum-Rasen ausgereift ist, werden auch die Probleme im Bereich Wasserqualität reduziert! Gareth Anwell ist sich sicher: “Das ist zweifelsohne der beste Rasen für das Golfspiel und das Klima auf Mallorca. Unsere Mitglieder und Kunden werden begeistert darauf Golf spielen.“

The blend of ‘Pure Dynasty’ chosen has been imported directly from the United States and the actual seeded varieties in the mix have only recently been developed from the most advanced Paspalum’s on the market. It was first released for sale only last year but has already been used on several projects in the United States, Dubai and Indonesia, to name a few. The introduction of ‘Pure Dynasty’ will begin in the fairways and over the coming years it will naturally become the predominant grass and spread into the semi-roughs. Further benefits of its introduction will be seen on the golf course’s environmental footprint thanks mainly to a vast reduction in fertilizer, chemical and water requirements which will of course lead to less electric and fuel consumption due to less pump usage and spraying time. Even water quality will not be less of an issue once the Paspalum plants have matured! “Without doubt this is the best variety of grass for golf in our Mallorcan climate and our members and customers are absolutely going to love playing on it”, concludes Gareth Anwell.

Diego ist seit mehr als einem Jahr als Marshall tätig. „Zu meiner Arbeit gehört es, Spielzeiten zu vergeben, die Spieler zu Bahn 1 zu führen, ihnen einen kurzen Überblick über den Platz zu verschaffen und eventuell auftauchende Fragen zu beantworten“, erläutert er. „Son Gual unterscheidet sich von allen anderen Plätzen auf Mallorca, auch, was die Spielzeiten angeht, die hier 15 Minuten zwischen den Runden betragen.“ Die Spieler auf Son Gual sind, so Diego, „gebildete, sich sehr korrekt verhaltende Menschen.“ Alle anderthalb Stunden dreht Diego im Buggy eine komplette Runde auf dem Golfplatz und überprüft, ob alles in Ordnung ist. „Am besten gefällt mir, dass ich in einem prestigeträchtigen Unternehmen wie Son Gual arbeiten kann, immer in der Natur bin, mit so vielen Menschen zu tun habe und dafür sorgen kann, dass sich unsere Gäste hier wohlfühlen.“ Caddy Master Montse kümmert sich um alles, was die Spieler benötigen, bevor sie zur Golfrunde starten: Schlägersets, Buggies, Essen und Getränke, die während des Spiels bestellt werden. „Meine Arbeit macht mir Spaβ, ich helfe unseren Gästen gern bei allen Dingen, die sie brauchen.“ Wie Kollege Diego zeigt sich auch Montse begeistert von der schönen Natur auf Son Gual. 14

Diego and Montse are the first people to attend to the players who are about to go out on the course after they obtain their green fee ticket at the front desk of Son Gual. Diego has been performing the duties of marshal at the course for over a year now. “My work consists of giving the starting signal to the players, guiding them to hole number 1 and explaining the course to them briefly, as well as answering any questions that may arise”, he explains. “The Son Gual course is different from all the others on Mallorca, in the starting-time interval too, which is 15 minutes between rounds here”. For him, the profile of the Son Gual client is “an extremely polite, courteous person”. In addition, Diego does a complete round of the whole course in his buggy every one and a half hours, to make sure everything is running smoothly. “What I like the most about my work is belonging to a company like this one, the contact with nature and naturally, dealing with all the customers and helping to keep them happy”. As for Montse, the caddy master, her main mission is to help the players with everything they need before going out on the course: a set of clubs, a buggy, food or drinks ordered during the round, etc. “I love serving our customers, and helping them with everything they need”. Like Diego, Montse is delighted with the nature found at the Son Gual course.

1 kg reife Tomaten, 1 Gemüsepaprika der Saison (60 g), 1 Gurke, 100 g Zwiebeln, 50 g Weiβbrot (am besten StangenBaguette), 1 Knoblauchzehe, 2 dcl Olivenöl, 2 dcl Weiβweinessig, 1 TL Salz, 1 TL gemahlener Kümmel, Wasser.

1 kg very ripe tomatoes, 1 green pepper, in season (60 g), 1 cucumber, 100 g onion, 50 g white bread (preferably baguette), 1 garlic clove, 200 ml olive oil, 200 ml white w ine vineg ar, 1 teaspoonful of salt, 1 teaspoonful of ground cumin, a little water.

Clean and chop all of the vegetables and place in the blender with all the other ingredients. Blend until there are no pieces of vegetable left (the time will depend on how powerful the blender is). Add salt and vinegar to taste. If the gazpacho does not have the right consistency, add a little cold water to taste. Keep in the fridge and serve chilled.

Limpiar y cortar todas las verduras y meterlas en un vaso de batidora, con todos los ingredientes. Batir hasta que no deje ningún trozo de verdura (el tiempo dependerá de la potencia de la batidora). Añadir sal y vinagre al gusto. Si el gazpacho no tiene la consistencia adecuada, habría que añadir un poco de agua fría hasta que esté al propio gusto. Guardar en la nevera y servir muy frío.

Pesto: Pinienkerne, Basilikum, Parmesan-Käse, Olivenöl, Salz, Knoblauch. Alle Zutaten für das Pesto in den Mixer geben, das Öl nach und nach zufügen. Beiseite stellen. Tomaten schälen, in dünne Scheiben schneiden und auf einen groβen Teller legen. Den Burrata in die Mitte des Tellers legen (Vorsicht, damit die Käsestücke nicht zerbrechen!). Das Pesto, die Olivenpaste sowie Salz und schwarzen Pfeffer darauf geben. Den Ruccula-Salat mit Öl und Essig anmachen und um die Burrata-Scheiben drapieren.

Pesto sauce: pine nuts, basil, Parmesan, olive oil, salt, garlic.

Salsa pesto: piñones, albahaca, parmesano, aceite de oliva, sal, ajo.

Make the pesto sauce by blending all the ingredients together and gradually adding the oil, and reserve. Peel the tomatoes and slice finely. Arrange on the dish, place the burrata in the centre, taking care not to break it. Season with the pesto sauce, a little olive paste, salt and the black pepper. Dress the rocket lettuce with oil and vinegar separately and then arrange around the burrata.

Pelamos los tomates y los cortamos en finas lonchas que pondremos en el plato, colocamos la burrata en el centro, con mucho cuidado para que no se rompa. Jaume Rosselló aus Inca hat mit speziell abgerichteten Hunden, die vom Festland und aus Italien geholt worden waren, die begehrte Edelknolle in Inca, Campanet und Capdepera gefunden. Während Capel auf der Insel weilte, zauberte Andreu Genestra, Chefkoch des Restaurants Son Jaumell y Aromata (ein Michelin Stern) mehrere Gerichte mit den einheimischen Trüffeln. The great guru of gastronomy journalism in Spain, José Carlos Capel, surprised everyone a few weeks back by announcing that truffles had been found on Mallorca, in several places around the island, amongst the damp shade of the holm-oak groves and the leaf-strewn soil. Truffles are typical of colder climes, making this find exceptional. It was Jaume Rosselló, from Inca, who discovered this exquisite mushroom that perfumes and enhances dishes, in Inca, Campanet and Capdepera, with the aid of trained dogs brought in from the peninsula and Italy. Chef Andreu Genestra, who has a Michelin star and runs the restaurants Son Jaumell and Aromata, prepared several dishes based on the truffles found during Capel’s stay. Those who tried them said they were truly exquisite. Jaume Rosselló confesses he has extracted up to 100 kilos of truffles in a year, selling them at up to 300 Euros a kilo.

Several typical Mallorcan constructions, some of which are centuries old, now function as top hotels held in high esteem by visitors from all over the world. One can discern the passage of history in their high stone walls and the old wooden beams. On the island, they are known as “possessions”, and usually they are set between pine woods and small villages inland or in the Serra de Tramuntana mountain range (a World Heritage site). En la isla se conocen como “possessions”, y suelen hallarse entre pinares y pequeños pueblos del interior y de la Serra de Tramuntana (Patrimonio de la Humanidad).
