NATIONAL NUTRITION MONTH
National Nutrition Month® is a nutrition education and information campaign sponsored annually by the Academy of Nutrition and Dietetics The campaign is designed to focus attention on the importance of making informed food choices and developing sound eating and physical activity habits National Nutrition Month also promotes the Academy and its members to the public and the media as the most valuable and credible source of timely, scientifically based food and nutrition information
This year, the National Nutrition Month® theme is “Beyond the Table.” The theme encourages us to focus on how good nutrition can not only help ourselves and our families’ health, but also the environment by reducing food waste. By partnering with a VA Dietitian, you can learn sustainable eating habits while selecting nutritious foods to help meet your individual goals.
HERE ARE SOME TIPS TO HELP YOU PLAN “BEYOND THE TABLE” AND TO HELP REDUCE FOOD WASTE:
1) Grow some of your own food:
Start small Try planting a few herbs or some leafy greens Foods that don’t fruit are easier to grow
If space is tight, try container gardening in a sunny window, patio or balcony
2) Eat some seasonal produce when able:
In season, locally grown foods are often less expensive and may have more flavor
Try your local farmer’s market
Frozen and canned produce is also a great option, and is often canned or frozen promptly after harvest, keeping it fresh tasting. Choose no-salt added, low-sodium and un-sauced options.
3) Meal plan to help save money and reduce food waste:
Plan meals for the week by selecting recipes based on ingredients you already have in the refrigerator, freezer, and pantry to help save time and money
Make a grocery list based off when you plan to make for the week and buy only what you plan to use
4) Add more plant-based foods:
Many plant proteins such as beans and lentils are less costly than many animal proteins

IRISH POTATO BITES
20 small Red potatoes, small (golf ball size)
1/2 cup Corned beef
1/4 cup Cheddar cheese, shredded
1 tablespoon Butter, melted
1/8 teaspoon Salt
INSTRUCTIONS
a large pot with water and bring it to a boil.
Add potatoes and boil until they are fork tender
oven to 400°F
Once potatoes are cooked and have cooled cut each one in half and cut a small slice off of the rounded end so the potato can sit up.
Scoop out the inside of each potato half saving the potato insides in a bowl
Add cheese, corned beef, butter to the bowl with the saved potato insides
Salt mixture to taste. Also sprinkle some salt over the potato halves.
Scoop mixture into potato halves and then place them on a baking sheet.
ST. PATTY’S DAY GREEN SMOOTHIE
1 1/2 very ripe bananas, peeled, diced and frozen 6 oz fresh strawberries, hulled (about 9 medium) 2 mandarin oranges, peeled and halved
INSTRUCTIONS
Add bananas, strawberries, oranges, spinach, water and half of the ice to a blender
Blend until combined then add remaining ice and blend until smoothie is
