exhale. Simultaneously inhale and exhale as you move your le leg out and twist your torso rightwards almost like you are touching the right knee with your le elbow. Inhale while straightening your body and switch legs, exhale as you move the right leg and twist your torso le wards like you are touching the le knee with the right elbow. Repeat 10 times.
Leg Kick: Lie on your le side, raise your torso till the waist and support it with your le arm and elbow and point your head looking to the ceiling. Let your right arm rest on the oor, raise your
right leg till hip with the toe pointing upwards, exhale and kick your right leg in the front, count till ve and bring it back to its original position. Repeat 10 times on both sides.
Leg Circle: Lie at on the mat with your palms by your side facing the oor. Raise your le leg up with the feet pointing towards the ceiling, make small circles in a clockwise direction with the le foot rotating the leg from the hips. Inhale as you start making the circle and exhale while nishing. Try to keep your posture as comfortably steady as possible and tighten your abs. Make 5 circles in the
clockwise direction followed by anticlock wise, repeat with both the legs.

INGREDIENTS:
FOR PICKLED WATER MELON:
1. Water melon (deseeded and cut into roundel shape) 500 gms.
2.
3. White wine vinegar 100 ml.
4. Salt 1 tsp.
5. Sugar 30 gms.
6. Fresh mint (torn) 5 gms.
7. Fresh basil (torn) 5 gms.
8. Green chilli (slit) 4 nos.
DIRECTIONS:
1. Take a mixing bowl mix all the ingredients except water melon.
2. Marinate the water melon with the brine for 6 hours in to the chiller.
FOR WATER MELON GAZPACHO:
1. Pickled water melon 300 gms.
2. Cucumber (peeled and deseeded) 25 gms.
3. Tomato (cut in to cube) 25 gms.
4. Red wine vinegar 1 tsp.
5. Salt to taste.
6. Extra virgin olive oil 1 tbsp
7. Tabasco sauce ½ tsp.
8. Fresh basil leaves
FOR WATER MELON GAZPACHO:
1. Pickled water melon 300 gms.
2. Cucumber (peeled and deseeded) 25 gms.
3. Tomato (cut in to cube) 25 gms.
4. Red wine vinegar 1 tsp.
5. Salt to taste.
6. Extra virgin olive oil 1 tbsp.
7. Tabasco sauce ½ tsp.
8. Fresh basil leaves 2 nos.
DIRECTIONS:
1. Put all the ingredients into the blender and make a smooth puree.
2. Strain it with the strainer and keep into the chiller.
FOR WARM SHRIMP CAPONATA:
1. Shrimps (peeled, wash and slit)
100 gms.
2. Eggplant (cut into small cube)
100 gms.
3. Red onion (cut into small cube)
100 gms.
4. Golden raisin (soak in water)
20 gms.
5. Pine nut (roasted or fried) 20 gms.
6. Olive oil 20 ml.
7. Red wine vinegar 20 ml.
8. Sugar 1 tbsp.
9. Tomato puree 50 ml.
10. Fresh basil (torn) 5 gms.
11. Salt and pepper taste. Capers 10 gms.
12. Fennel bulb (cut into small cube) 10 gms.

FOR FRYING.
DIRECTIONS:
1. Blanched the shrimps with water,
2. Marinate the shrimps with olive oil, it aside.
3. Deep-fry the eggplant and keep it aside.
4. Sauté the onion and fennel over medium heat until light brown in colour.
5. Add raisin, pine nut, red wine vinegar and sugar, cook it for a while.
6. Add tomato puree, capers and seasoning, cook for sometime until little dry.
7. Finish with torn fresh basil.
FOR TART:
1. Flour 500 gms.
2. Butter 250 gms.
3. Water 250 ml.
4. 4. Salt 10 gms.
DIRECTIONS:
1. Mix all the ingredients in a mixing bowl and make dough.
2. Make a sheet by the dough with a rolling pin and cut it by the roundel mould.
3. Place the sheet on greased tart mould for baking.
FOR CRANBERRY AND RED PEPPER CAULIS:

2. Red pepper (roasted) 100 gms.
3. Star anise (powder) ¼ tsp.
4. Salt and pepper to taste.
5. Butter 2tsp.
DIRECTIONS:
1. Make red pepper puree with the blender.
2. Cook the red pepper purée, cranberry puree and star anise powder in a sauce pan over low heat.
3. 3Adjust the seasoning and nished with hard butter.
1. Filled the tart mould with caponata and bake into a preheated oven (170 degree C) for ten minutes.
2. De-mould the tart and place into a serving plate; place the shrimps on the tart.
3. Pour the water melon gazpacho in a shot glass and assemble on the serving plate.
4. Assemble the pickled water melon on the serving plate.
5. Served with red pepper and cranberry caulis.

INGREDIENTS
1. Tri color bell pepper, chopped 1/4 cup
2. Basa fillets minced 500 gms
3. Mayonnaise 2 tbsp
4. Parsley Chopped 2 tbsp
5. Paprika powder 1 tsp
6. Green Chilli fine chopped
7. (seedless) 1 tbsp Salt to taste
8. Aromatic Seasoning 1 tsp
1. Tomato Large 2 nos
2. Tomatoes, chopped (seedless) 100 gms
3. Chopped Onion 1/4 cup
4. Chopped Coriander 2 tbsp
5. Salt to taste
6. Crushed black pepper 1 tsp
7. Tabasco Sauce 1 tbsp
8. Tomato Ketchup 6 tbsp
• STEP 1 – Wash the sh and drain the excess water and mince the sh in a mincer.
• STEP 2 – in a medium mixing bowl place the minced sh, chopped bell peppers, parsley, paprika, green chilli, salt and aromatic seasoning and mix well set aside.
• STEP 3 – Grill the large tomatoes on a hot charcoal grill for about 3 mins, remove from heat and peel the skin, deeded the tomato and ne chop it.
• STEP 4 – In another medium mixing bowl place the chopped tomatoes, onion, coriander, salt, pepper, tabasco sauce, tomato ketchup and the grilled tomato mixture mix well set aside.
• STEP 5 – add mayonnaise to the sh mixture and scoop the sh mixture and form small patty about 40 gms and griddle fry on a hot nonstick pan. Drizzle little olive oil on the pan while frying the sh.
• STEP 6 – place the cooked sh on a serving plate and top with the prepared tomato salsa and serve hot.
