INGREDIENTS 1.

1 to 1 1/4 pounds dry sea scallops, approximately 16 2. 2 teaspoons unsalted butter 3. 2 Teaspoons Olive Oil 4. Kosher Salt 5. Freshly Ground Black Pepper 6. 1 Vanilla Pod 7. 1 Bottle Red Wine 8. 225g Caster Sugar 9. 1 Cinnamon Stick Halves 10. Fresh Thyme 11. Fresh Orange Zest 12. Caviars 13. Red Currants

Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry. Add the butter and oil to a 12 to 14-inch sauté pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the Scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Halve the vanilla pod lengthways, scrape out the black seeds and put in a large saucepan with the wine, sugar, cinnamon and thyme. Cut each piece of pod into three long thin strips, add to pan, then lower in the pears. Poach the pears, covered, for 20-30 mins, making sure they are covered in the wine. The cooking time will very much depend on the ripeness of your pears – they should be tender all the way through when pierced with a cocktail stick. You can make these up to 2 days ahead and chill. Take the pears from the pan, and then boil the liquid to reduce it by half so that it’s syrupy. Slice the pears and top with caviar and neighbored with Pan seared scallops and garnish with red current.
