Welcome

Welcome to the September edition of Wokingham Local, where we recently rejoiced with Gordon and Linda at Care UK’s Shinfield House as they celebrated their 70th wedding anniversary, and talking of weddings, we call in to Holme Grange Craft Village where the most amazing, unique and bespoke wedding products and services make for a really special shopping opportunity. Anthony Blay and Becker Bespoke have the menswear sewn up for made to measure and fully bespoke collections, and Crown Plaza in Reading and Forina Aesthetics complete our bespoke wedding feature.

I spent 5 minutes with local entrepreneur, business owner and family man, Jim Moore, before setting off on my travels once more. Firstly, to White Waltham to visit Ruchi at Milaanj at the Beehive where she explains that Indian food does equal a fine dining experience. Then I venture further afield to San Marino to climb a mountain, before returning to Wokingham where the team have set off to explore the great outdoors including camping and foraging! That was a busy fortnight! I call in to visit Josh and the team at recently opened restaurant FARE Eatery at the town hall, where they are settling in to their new Wokingham venue, and very relaxed it is I have to say, they are a very friendly bunch.

Well September marks the end of Summer, as we venture back to work and school, and in the next issue we will be embracing Autumn, a season of crisp air and vibrant foliage, where the leaves transform into a tapestry of reds, oranges, and yellows before they leave the trees, and we celebrate again, this time around the festival of Diwali with fabulous colours and even more fabulous spicy Indian food. We are looking forward to that! Happy 70th Anniversary

To Gordon and Linda, at Parsons Grange in Shinfield

Love was in the air recently at Shinfield care home as two residents celebrated a very special milestone. Gordon Lovegrove and his wife Linda toasted their 70th wedding anniversary at Care UK’s Parsons Grange on Westall Street in Shinfield.

When asked the secret to their long-lasting marriage, the couple responded with “never go to bed on an argument.”

At the tender age of 20 and 17, dance lovers Gordon and Linda started their lives together after meeting at the old Olympia Ballroom in Reading. Gordon said:

“I will always remember the day we met. The thing I liked most about Linda was her smile.”

The pair were married at St John the Evangelist on Watlington Street on 24th July 1954, and later expanded their family, and welcomed two wonderful daughters into the world. They now have four

grandchildren, and two great-grandchildren.

Former lorry driver Gordon reflected on the vital factors that have helped their marriage to thrive and survive through seven decades. He said:

“I would say the two main qualities that have helped our marriage to stand the test of time are patience and compromise. These are the most important aspects of a relationship. Of course, it also helps that the word ‘love’ is in our name.”

by loved ones, including their two daughters, as they reminisced on happy memories and enjoyed a delicious cake created by the home’s Head Chef.

Rozina Ali, Home Manager at Parsons Grange, said:

“We were honoured to be a part of such a special moment for Gordon and Linda. They are a wonderful couple, with lots of wisdom about building a strong and successful marriage that I think we could all learn from.”

We regularly celebrate big anniversaries and understand the importance of maintaining relationships and marking life’s milestones. The atmosphere in the home was wonderful and prompted many residents to reminisce and share fond memories of their own weddings.

How long have you lived in Wokingham, and what do you like best about it?

I moved to Wokingham in 2018 from the Camberley area. I like the market town atmosphere, and Wokingham has great transport links with easy access to the countryside.

Tell us about Hamilton Nash, how did that come about?

Dealing with the psychology of conflict and working with workplace disputes has always been interesting to me. Hamilton Nash was founded as an HR firm to focus difficult and sensitive workplace specific issues.

These can be difficult to deal with in-house if senior management are involved, even if you have an HR department, because the status and influence of the senior leader can make it difficult for witnesses to speak freely, and affect the perceived impartiality

of the investigation. We’ve carried out a number of investigations involving senior executives, VPs and CEOs, including in well-known brands and multinationals. These need particularly careful handling! We’ve also expanded into offering employment law support, and we have lawyers within our team that can support employers with Employment Tribunal claims and settlements.

How did your business empire grow from the area of HR and employment law to the Lazy Frog Thai massage and spa located on the town’s Denmark Street?

My wife, Tassie, had worked as a massage therapist in London for many years but found herself stuck at home during lockdown. We talked about her dream of opening a truly authentic Thai massage salon, and I suggested that Wokingham was an ideal location. One thing led to another, and The Lazy Frog was opened in September 2021. Tassie is proud of her culture, and we really wanted to give people an experience that lived up to the best that Thailand has to offer. We’re delighted and grateful for the support we’ve had from the local community and our regular guests!

Where do you gain inspiration?

I’ve always been inspired by people who have shown great resilience; those who don’t give up, who pick themselves up after stumbling, and persevere until they succeed. We all have dark days, when we feel like throwing in the towel, and those people inspire me to find the strength to keep going.

What is the best piece of advice you have been given?

American playwright Wilson Mizner once said:

“Always be nice to people on your way up, because you’ll meet them again on your way down.”

It’s good advice! People may forget the specifics about what you said or did, but they won’t forget how you made them feel.

What would you say to someone starting out in business today?

Business is about calculated risk taking, not gambling. Know your market, do your research, and have a plan. That way, if you stumble, and we all do from time to time, you’ll recover more quickly.

What do you do to relax?

When I get the time, which isn’t often, I love composing music – both classical and modern.

What is your future ambition?

Ever since I saw the James Bond movie Moonraker in my youth, I’ve wanted an orbital fortress.

But in the meantime, I’ll settle for finishing the book I’m writing, and building up the business so it reaches the point where I can let my leadership team take care of day to day operations, and I can spend more time with my family.

Tomato Caper Bruschetta

For a taste of Italy, this Tomato Caper Bruschetta is a crowd-pleasing appetizer!

Ingredients

2 pounds cherry or Roma tomatoes

4 tablespoons extra virgin olive oil

3 large cloves of garlic, smashed, peeled and minced

1/2 cup fresh basil, rocket, or spinach, plus additional for garnish

2 tablespoons capers, smashed and minced

1 tablespoon fresh oregano, finely chopped

1 tablespoon aged balsamic vinegar

Sea salt and cracked black pepper to taste

Fresh shaved Parmesan cheese for garnish

1 Large crusty baguette

Method

Step 1

Preheat the oven to 325 degrees.

Slice the tomatoes in half and toss with 2 tablespoons of olive oil and spread out on a baking tray. Roast until the tomatoes have broken down, about 45 to 50 minutes.

Step 2

In the meantime, slice the baguette diagonally into 3/4 to 1 inch slices. Lightly brush with the olive oil.

Heat a large frying-pan and toast the bread on each side until lightly brown about 2–3 minutes on each side.

Step 3

Add tomatoes, garlic, rocket, capers, oregano and vinegar to a bowl and mix well, mashing with the fork a little and season well. Arrange the toasted baguette slices on a serving tray and top with a generous spoonful of the tomato mixture.

Garnish with additional greens and the shaved Parmesan.

The Four F’s of Foraging

Foraging for wild edibles is a pastime I love. Every time I accidentally find a haul of oyster mushrooms or stumble across a maitake it is the best feeling you can have in the woods with your trousers on. I liken it to the most incredible treasure hunt you will ever go on, and generally, you get a free feast for your efforts.

Foraging can also be disastrous and it is very easy to make yourself very ill, it is also very easy to make yourself very dead. So do your research and crossreference in at least 2 books to avoid editorial mistakes. If you’re smart and diligent you will be fine, I promise.

So what are the four F’s of foraging?

The four F’s are the four things we can collect and remove without needing the landowner’s permission.

These are:

• Fruits

• Fungi

• Flowers

• Foliage

We cannot dig up and remove any roots or plants without the permission of the landowner. You may also need to research locally as many places have banned foraging. This is mainly in and around London due to unsustainable amounts being picked for the restaurant industry. This is NOT a foraging guide and I will not be liable if you go and shove a destroying angel in your gob!

Fruits

Brambles ramble and raspberries climb. These are generally the easy ones to find and ID. We have a good variety in the UK including brambles, raspberries, wild strawberries, hawthorns, sloes and elders to name a few. Beware though, some contain poisonous pips and have lookalikes, so do your research. You won’t go too far wrong with a bramble though, and I highly recommend you hunting down the odd bilberry or two.

Fungi

You know that music from Jaws? Well that’s the theme tune to some of these beauties. Get it wrong and you will die, it really is that simple. Some will kill you with as much as a square millimetre. Others, however, taste amazing.

Research research research!

I forage loads of mushrooms including chanterelles, oysters, maitake, porcini, hedgehog fungi, ink caps and deceivers to name a few. They all have distinguishing features and ways to tell very clearly what they are. It is not rocket science and I’m not dead yet so it can’t be that hard, however, I ALWAYS check.

I did find the most poisonous one in the UK in our woods last season though. Fascinating thing, and again it has its tells to let us know what it is. Just don’t lick it!

Foliage

There are some amazing leaves out there but I will stick with the forgotten gems, and my favourite ones.

Beech leaves – When young, are fantastic. Almost like apple skin and a taste of the changing season.

Young hogweed – Great in a stir-fry.

Wild garlic – The most essential one here!

Sorrel – Well worth picking and adding into your

Flowers

Nothing looks better than a salad with a few edible flowers in it. They taste marvellous and smell great. Some of my top ones include Ramsons when very young and still in the bud. Primrose flowers are one of the first to come through in spring and are lovely. Gorse can be a tasty nibble, but my absolute favourite is elder flowers. Dip them in batter, fry them up and dip them in sugar. Elderflower doughnuts, now that’s not just surviving, that’s thriving!

Wild mustard – I used to drive up in the Rover, open my ham sarnie and pick it out of the window!

In terms of survival and long term food we need starchy carbohydrates. This is actually a bit tricky to find. However, burdock wins the day for me in this regard. Make an expedient digging stick and go to town. Just remember the root of big plants can go down a LONG way so prepare for a bit of a battle. Treat it like a parsnip or spud and boil or roast it. Well worth the effort.

So there you go. I hope you are now inspired to go out and have a poke about with a book and a basket. We have some top-notch free grub in the woods and hedgerows. And you never know, one day, you might just be relying on it to Survive and Thrive!

Simple Sorrel Pesto

makes a great substitute for basil in this creamy pesto.

Ingredients

2 large garlic cloves

2/3 cup pumpkin seed kernels, pine nuts or walnuts

20 sorrel leaves

1/3 cup extra-virgin olive oil

1/4 teaspoon coarse salt

1/2 cup grated Parmigiano Reggiano cheese

Method

Step 1

Place garlic in food processor; process until minced.

Step 2

Add pumpkin seeds; process until ground. Add sorrel; process.

Step 3

Add olive oil and salt and process until creamy. Stir in cheese. Serve with pasta.

What could be easier, and more delicious?

Homemade Mozzarella Sticks

This recipe by Taylor at Fifteen Spatulas makes for an easy, wonderfully ooey gooey snack! Freezing them before frying is the secret for even cooking, and no cheese oozing out.

Ingredients

16 oz block whole milk mozzarella cheese

- or string cheese

3 large eggs

3 cups bread crumbs salt

tallow (beef fat)

- or other deep frying fat of choice

Method

Step 1

Cut the block of cheese into 1/2 inch thick sticks, a few inches tall approx 20 pieces.

Step 2

Place the eggs in a bowl with 1/4 tsp salt and 1 tablespoon of water, and whisk to combine. Place the bread crumbs in a second bowl next to the eggs.

Step 3

Take a cheese stick and dip it into the egg, letting the excess drip off. Then coat it in the bread crumbs, and place on a tray. Repeat with the remaining cheese sticks. Once each cheese stick has been breaded, take each one through the egg and bread crumbs again for a second coating.

Step 4

Freeze the sticks, on a tray, for at least for two hours.

Step 5

Heat the tallow or frying fat of choice to 365F, using either a deep fryer or a heavy bottomed 8” saucepan monitored with a thermometer. You want the fat to come a few inches up the sides of the pan.

Step 6

Fry the mozzarella sticks in batches for about 2 minutes, until golden brown. Let the cheese sticks drain briefly on a paper towel, then serve promptly with marinara or your favourite dunking sauce. Enjoy!

San Marino

Have you ever experienced a subliminal attraction to visit a particular foreign land? Well, for me, the tiny independent country of San Marino, has always been something of an enigma. And, as I am something of an amateur explorer, who likes to go off-the-beatenpath, I set off recently to discover Northern Italy and San Marino, and here is what I found.

First, let’s start with a little introduction - San Marino, officially the Republic of San Marino, is one of the world’s oldest republics, with a rich history dating back to ancient times. It is a landlocked microstate surrounded by Italy, located on the northeastern side of the Apennine Mountains.

San Marino’s foundation is traditionally dated to September 3, 301 CE, when Saint Marinus, a Christian stonemason fleeing persecution under the Roman Emperor Diocletian, founded a small Christian community on Monte Titano.

This community established a monastery and eventually developed into a self-governing entity.

According to legend, the area was granted to Marinus by a sympathetic landowner.

During the Middle Ages, San Marino managed to maintain its independence despite the fragmentation and turbulence that characterised the period. The development of a republican system of governance began in the 13th century, with the establishment of the Arengo, an assembly representing the heads of families. This assembly elected the first two Captains Regent in 1243, a practice that continues to this day.

During the Renaissance and early modern period San Marino’s independence was tested. In 1503, Cesare Borgia briefly occupied San Marino, but the republic managed to restore its sovereignty after his death. The Treaty of Fossombrone in 1511, brokered by Pope Julius II, reaffirmed San Marino’s independence and its protection under papal authority.

During the Napoleonic Wars of the 19th Century San Marino managed to avoid conquest by allying diplomatically with France. Napoleon recognised its sovereignty and offered to expand its territory, which San Marino declined to preserve its independence and neutrality. In the mid-19th century, during Italy’s

unification process, San Marino offered refuge to Italian revolutionaries, including Giuseppe Garibaldi. Despite its small size, it maintained independence while Italian states unified around it.

In the 20th Century, San Marino remained neutral during both World Wars, although it was briefly occupied by German forces in 1944. Post-World War II, it established a stable political environment and developed its economy, focusing on banking, tourism, and the production of ceramics and textiles.

In 1992, San Marino joined the UN, further cementing its place in the international community.

San Marino’s political system retains a unique governmental structure with the Grand and General Council (the parliament) and the Captains Regent as the heads of state, elected every six months, maintaining independence due to its unique status as a symbol of republicanism and continuity.

Mount Titan

Mount Titan, is the highest peak in San Marino, rising to an elevation of 739 meters (2,425 feet), Mount Titan is not only a significant geographical landmark but also a symbol of San Marino’s historical and cultural heritage. The mountain is renowned for its three towers: Guaita, Cesta, and Montale, which date back to medieval times and offer stunning panoramic views of the surrounding regions.

These towers are part of San Marino’s UNESCO World Heritage Site, recognised for their historical importance and preservation. The summit provides an unparalleled vantage point, allowing one to see the Adriatic Sea. The area around Mount Titan is dotted with charming villages and historical sites, adding to its allure as a popular tourist destination. It wasn’t too busy as I wandered around the picturesque villages, in awe, I have to say of its natural beauty, and its historical monuments for the afternoon.

How to get there?

I flew to Bologna and caught the (very slow) fast train to Rimini, and then continuing by public transport on a local bus traversed the very winding uphill journey almost to the top of the Mount Titan, and continued on foot to the three towers. Just worthy of note is that there is a cable car available for this leg of the journey, however, as I was still feeling quite adventurous I decided to trek to the top!

So, was San Marino worth a visit?

Yes, San Marino is well worth visiting. This tiny, mountainous microstate offers stunning views, rich history, medieval architecture, and unique culture. Exploring the Three Towers, and charming streets of the capital - it’s a delightful, off-the-beaten-path destination in Europe.

Autumn Colours at Stourhead

Located near Mere, Wiltshire, BA12 6QD

Autumn is Stourhead’s crowning glory as foliage in the landscape garden becomes ablaze with deep golds, ambers and rich reds. There are many hundreds of species of trees and shrubs at Stourhead, and it can take up to six weeks for the cosy autumn colours to flood the trees around the garden. No two visits are the same throughout this unpredictable time of year.

Though the schedule of the season is ever-changing, towards the end of summer the North American maples have begun to turn a scarlet red, while the Japanese acers, hornbeam and chestnuts also get their vivid display underway.

A little later in autumn the tulip trees take on a yellow hue, while the oak and beech enact the season finale with bright oranges late in October. In the garden, autumn crocuses provide a comforting contrast with their mauve and lilac shades.

Throughout the autumn, Stourhead will be offering guided walks around the world-famous landscape gardens. Taking place twice daily on most days throughout the week, visitors can enjoy a walk and talk with a knowledgeable volunteer, including an insight into the historical background of Stourhead, as well as the artistry of the landscape and stunning architecture. There’s no need to book in advanceupon arrival, visitors can ask at reception for more details on the fascinating guided walks.

Beyond the tranquil lake and ornate temples, there are 2,500 acres of countryside to explore on the Stourhead estate. This includes an Iron Age hill fort and many acres of ancient woodland. The magnificent woodland surrounding Stourhead is full of autumn colour, with a canopy of ochre and copper hues overhead, and a carpet of crunchy leaves underfoot.

Visitors can enjoy a short circular walk which ventures behind the Temple of Apollo in the garden through picturesque woodland, returning along the

disused airfield that formed part of RAF Zeals during the Second World War. Walkers can also amble to Whitesheet Hill to take in the panoramic views over the estate and surrounding countryside, under the golden veil of low autumn sun.

Encompassing a significant area of considerable archaeological interest, the walk includes a Neolithic enclosure dating from around 3000 BC, a circular earthwork, Bronze Age barrows and an Iron Age hill fort to the south.

An impression of wildness surrounds the Stourhead estate in autumn and abundant autumn fruits include rosehips and crab apples. Autumn also marks the arrival of many overseas birds seeking warmer climes for their winter stay. At Stourhead, this includes large flocks of golden plover on the open farmland, along with lapwings.

Can Indian Food Equal Fine Dining?

Indian cuisine has a rich and diverse heritage. India has a long-standing tradition of fine dining. The history of royal cuisine in India can be traced back to ancient times when emperors were known for their extravagant lifestyles and their love for indulgent feasts. The royal kitchens or “rasoighars” were run by expert chefs who created culinary masterpieces with elaborate presentation and garnishing fit for royalty.

The influence is still very prevalent. This was not just in the royal households, but the age-old concept of serving food in a ‘thali’ (a compartmentalised plate) placed on a ‘chauki’ (low table) was a tradition in common households then and is still followed today. The arrangement of various dishes in a thali, along with the attention to presentation, reflects our appreciation for culinary artistry. Indian cooking has always embraced sustainability. Earthen pots (matkas)

were (and still are) commonly used for cooking and serving. These vessels not only preserve flavours but are also environmentally friendly. Interestingly, many countries are now adopting similar practices due to their eco-friendliness.

While it’s true that the British popularised the term ‘curry,’ it’s essential to recognise that this label does not fully capture the depth and sophistication of Indian food. In India, each dish has its distinct name, and we don’t refer to all our dishes as ‘curry.’ From royal biryanis, kebabs, dosas to our street food, the culinary landscape is incredibly varied.

From regional specialities to intricate delicacies, the culinary heritage is a vast tapestry of flavours. This provides an expansive playground in the domain of fine dining. Beyond the well-known dishes, there is a treasure trove of culinary gems in India that are waiting to be discovered.

There are many renowned Indian chefs who have revolutionised and elevated Indian food to new heights. Indian cuisine is so wide that creativity and innovation in this space has no bounds and there’s always room for pushing the boundaries of taste and presentation. It is here that you find inspiration—a canvas where you play with spices, textures, and ingredients to create art on a plate.

Indian cooking has now become a delightful fusion of tradition and modernity, where the kitchen becomes a studio, chef the artist and every plate a masterpiece.

Former Fat Duck director, Nigel Sutcliffe has joined forces with ex-Hand & Flowers chef, Josh Wilde to unveil their brand-new eatery, FARE. The multi-Michelin starred team recently opened FARE in the heart of Wokingham, inside the majestic Grade 2 listed Town Hall building.

FARE serves seasonal contemporary cuisine featuring a range of small to large plates, allowing guests to grab a small bite or to get together family style, and share a big celebratory meal.

At the heart of the brand-new kitchen is a robata grill which will provide the backbone for the exciting fire-led menu. Dishes include Merguez Kofta with Cucumber and Mint; Rump of Lamb, Crispy Shoulder, Smoked Aubergine and Mint; savoury tarte tatins, as well as Cornish Cod, Brassicas & Truffle Sauce.

FARE also stocks a hand-picked collection of wines focusing on sustainable, natural, organic, and biodynamic small producers from all over the world, many will available both by the bottle, carafe and glass. Alongside this will be a handcrafted cocktail list.
