So, what have we been up to recently, where have we been, and what have we seen? Well, we visited Holme Grange craft village and stopped off to see Gayle at Enchanting Glass Designs who offers bespoke and unique handmade fused glass art, and she also offers courses if you fancy a go yourselves? Our teenage reporter Madison takes us on a trip to York, and I have the enviable job of tasting street food in Istanbul - well someone had to do it! What a ‘must see’ vibrant city it is, I have to say.
We hear from Mel at Melanie Curtis Accountants and the Lazy Frog and Care UK have lots of useful help and advice. The Benefits of Voluntary VAT Registration
by Starling BankSome businesses choose to register voluntarily for VAT before their annual income reaches the compulsory limit of £90,000 on VATable turnover.
But why on earth would somebody volunteer to register for VAT and pay a tax when they don’t have to? It’s because the benefits may sometimes outweigh the disadvantages - it really depends on your individual circumstances.
VAT is a tax collected on behalf of HMRC. It never belongs to you. VAT registered businesses add VAT to their sales invoices and can reclaim any VAT included in the items they have bought. If you are not VAT registered you still have to pay the VAT on your purchases but are unable to reclaim it. Those who suffer in paying the actual tax, are the non-VAT registered businesses and individuals, at the bottom of the chain.
What are the benefits of being VAT registered?
You’ll appear to be a bigger business if you’re charging VAT, as the current limit for compulsory registration is £90,000 on VATable turnover (2024/25).
If you sell to VAT registered businesses they can reclaim the VAT from HMRC so your selling price is still competitive and you will be able to recover the VAT on your costs.
Maintaining up to date records will provide better information for running your business.
You can claim VAT on certain items that you purchased prior to the date of VAT registration. Talk to your accountant about the exact details. If you are in a VAT reclaim situation then you will definitely be better off.
You’re likely to receive repayments because your VATable sales are lower than your VATable costs. This may be because you’re accumulating stock or because your sales are below the standard rate of 20% at either the reduced rate of 5% or zero rate 0%.
Here’s an example of how being VATregistered could help:
If your income is £50,000 and your costs are £24,000 then you would have a profit of £26,000.
If you register for VAT then you would have income of £60,000, of which £50,000 is yours and £10,000 is VAT collected on behalf of HMRC.
If your £24,000 includes £2,000* of VAT then you pay HMRC £10,000 - £2,000 = £8,000.
Your profit is then £50,000 - £22,000 = £28,000 so you are better off by the £2,000 of VAT that you are now able to reclaim from HMRC.
*Not all costs include VAT (e.g. there is no VAT on salaries or bank charges).
Are there any disadvantages of being VAT registered?
There can be increased admin and bookkeeping costs. Although this needs to be done for your annual accounts anyway and there is software to help you - such as the VAT feature in the Starling Business Toolkit.
If your customers are not VAT registered themselves then you will immediately appear 20% more expensive when you add VAT onto your sales invoices.
If I register for voluntary VAT, can I deregister again?
Yes you can, but only under specific circumstances, which can be viewed in detail here: starlingbank.com/resources/ business-guides/benefits-of-being-vat-registered/
How do I register for VAT voluntarily?
The process is exactly the same as for a compulsory registration. You can read more about that in our article on becoming VAT registered, also at the page shown above.
From 1 April 2022, anyone registered for VAT (including those who registered voluntarily) will need to comply with Making Tax Digital.

The Essence of Excellence

I’m Graham, and I would like to share with you a little about how “The Essence of Excellence” came about.
40 years ago, I had the privilege to work with a leading psychologist and author who showed me the power of behaviour and how it drives our lives for better or worse. This helped me build one of the largest and most successful teams in pharmaceuticals and subsequently several businesses.
I also learned how most of us deny our true selves to put on an image we think we need when we work, which often fails and can be frustrating and stressful.
Since then, I have evolved my understanding of behaviours, became a clinical hypnotherapist, coach and trained in neuroscience and how that shows how our brains work and the processes we all share yet don’t recognise. I love this and watching how people grow once they accept who they really are and learn how to manage that, sometimes a superpower they don’t know they have.

Humans haven’t changed much, yet in the last 30 years our world has, mostly thanks to social media and the TikTok world of instant Psychology!
We do however now have an even deeper understanding of behaviour and the way the brain works thanks to neuroscience which continues to evolve.
Most of our barriers are in our minds, learn how to change that. In leading successful businesses, a driver has always been around building the people so they can build the business.

Vincent Van Gogh
by Jacqui PriestleyVincent van Gogh, a Dutch postimpressionist painter, was born in 1853 in Groot-Zundert, Netherlands. Despite his immense talent, his life was marked by struggle and mental illness. Van Gogh began his artistic journey relatively late, in his twenties, initially working in various professions before fully committing to art.
His early works were influenced by Dutch realist painters, but his style evolved into the expressive, colourful brushwork he is famous for. Van Gogh’s life was fraught with personal and professional challenges. He suffered from depression and anxiety, which often fuelled his art but also led to erratic behaviour and conflicts with others, including fellow artists and family members.
In 1888, in order to seek refuge from hectic city life, Van Gogh moved to Arles in the south of France, where he produced some of his most iconic works, including “The Starry Night” and “Sunflowers.” However, his mental health continued to deteriorate, culminating in the infamous incident where he cut off a portion of his own ear.
Van Gogh voluntarily admitted himself to a mental asylum in Saint-Rémy-de-Provence in 1889, where he continued to paint prolifically despite ongoing struggles. Tragically, he died in 1890 at the age of 37 from a gunshot wound, leaving behind a vast body of work that would later be celebrated as some of the most influential in Western art history.
Despite his hardships and the lack of recognition during his lifetime, Vincent van Gogh’s paintings are now revered worldwide for their emotional depth, vivid colours, and innovative techniques. His legacy has endured through generations, inspiring countless artists and admirers, and cementing his place as one of the most influential figures in the history of art.

When retracted to the fully closed position, sun awnings take up only a small amount of space as the awning arms and fabric retract into a full width cassette for long-term protection of the sun awning
against the elements and a neat trim finish when not in use. The awning arms and cassette are available in a number of ‘on-trend’ colours, with anthracite grey being a popular choice along with white.
Most sizes of areas can be covered by a retractable sun awning, with a size maximum of a single awning generally being 6.5M maximum width and a 3.5M maximum projection. For areas wider than 6.5M it is usual to install more than one awning alongside each other.
Installation is completed usually by two technicians with the help of an electrically operated awning lift that moves the awning safely into the install position ready to be attached to the wall. A normal 240v, 13 amp electrical supply is all that is required to power the awning’ tubular motor within the cassette.
Control of a sun awning is by a simple hand-held remote controller that quietly extends the awning out to the required position and retracts it back into its cassette.
Further automatic control options can be added by way of a wind sensor that retracts the awning back into the closed position should the wind rise to an unacceptable level and a sun sensor can also be included to open the awning automatically when the sun is at its fullest.
Integral LED lighting and overhead heaters can also be added to ensure the awning can be enjoyed well into late autumn and early winter. There are many challenges when it comes to textiles for awnings.
They must, of course, serve well as sun protection, but without foregoing quality or colour. The fabrics are, of course, flame-retardant too, and the quality guarantees that the awning lasts well, even when used frequently. Made for a long, safe and beautiful
awning life, fabrics for sun protection are well thought-through and are efficient, with over 200 designs to choose from. There are artisan crafts, workshops and places of entertainment for children - young and old! Brickies Lego is as popular as ever, Pottery Pals and Sewisfaction have unique parties for all kinds of celebrations. Jacqui Priestley spends five minutes with Jonathan Becker of Becker Bespoke Tailoring
When and how did you become a bespoke tailor?
I became a bespoke tailor in 1983 enrolling in a Youth Training Scheme run by the government of the time and in conjunction with The City and Guilds Bespoke Tailoring Course at The London College of Fashion ‘graduating’ in 1986. During this time I worked as an apprentice coat maker for Wells of Savile Row until 1985 moving to the City to learn cutting and fitting.
When did you know you wanted to become a business owner and entrepreneur?
I realised that I wanted to be a business owner/ entrepreneur in 1985.
What motivates you?
My motivation is creating something from a set of measurements and seeing the clients delight in receiving a beautifully made and fitted garment.
I know that you are a modest man Jonathan but you are quite famous yourself, and you have many celebrity clients and friends, don’t you?
I wouldn’t say I was famous, maybe quite well known throughout my trade. I have had the good fortune to work for several very well known clients with whom I have a very friendly rapport with but every Becker Bespoke client is treated exactly the same whether they are in the public eye, have a title before their name, letters after their name or not.
Who is your biggest inspiration?
My biggest inspiration is my former mentor at Couch & Hoskin, Derek Hodges. His patience in teaching me and his knowledge he passed onto me will always be something I will always be truly grateful for.

You were nominated for a prestigious award recently, which you won! Tell us a little about that?
I was nominated for the Merchant Taylor’s Master Taylor Award this February in recognition of my contribution to the trade which was an unexpected honour and exceedingly humbling. I received my award from the Lord Mayor of The City of London and the Master of The Taylor’s Guild at a ceremony at Mansion House.
What is the best piece of advice you have been given?
Difficult to choose what is the best piece of advice I’ve been given, Treat people how you would wish to be treated or Life is not a dress rehearsal, you are only here once.
What do you like best about Wokingham?
What I like best about Wokingham is the town hall, such a beautiful building that always reminds me of moving here in 1974.
What do you do to relax?
To relax I like Hill Walking in Snowdonia, gardening and DIY.
What is your future ambition?
My future ambition is to be able to retire young and fit enough to enjoy it.

I’m Holly, and the adorable dog in the pictures is my companion, Oakley. I’m a 20-year-old student studying fashion design at university in London. Unfortunately, Oakley cannot join me at university until he is officially qualified. I am managing multiple chronic conditions such as POTS, Fibromyalgia, CFS, anxiety, and depression. Oakley and I have been training together since he was 13 weeks old. Over the past 20 months, we have learned a great deal. However, we now find ourselves in a challenging situation that requires assistance.
To help Oakley become qualified, we must seek help from a private company rather than the charity we were with, which incurs significant costs. I intend to use the funds left to me by my late grandmother, but I still need to raise additional funds to cover the remaining expenses for Oakley’s training as it’s going to be roughly £16,000. Asking for financial support is a significant request, so in return, I will provide regular updates on Oakley’s progress and our journey once he becomes fully qualified.
In 2022, I met Oakley, and I instantly formed a deep connection with him. He is not only training to save my life but has also become my loyal companion - a kind and affectionate soul with boundless love to offer.
His loyalty and companionship have brought me immeasurable joy and comfort. Together, we have forged an unbreakable bond, built on trust, love, and shared experiences.
When I was first suspected of having chronic illnesses and then later being diagnosed with them, I was very depressed, I was stuck in bed and on the sofa sleeping for 16 plus hours a day. We bought Oakley home in October 2022 and my life has never been the same, he helped me find a new lease on life, teaching him new things and learning to see the world through his eyes. He helped me out of the pit I was in and ready to achieve my dreams. I owe Oakley everything, he deserves this training and to have so many beautiful adventures while keeping me safe by my side.

Street Food
by Jacqui PriestleyJust what is it about street food and our fondness for it? Well, in essence it captivates us with its rich tapestry of flavours, convenience, and cultural authenticity. It offers an immersive culinary experience, connecting us to the heart and soul of local traditions and communities. Each bite tells a story, crafted from recipes passed down through generations. The vibrant street markets provide a sensory feast of sights, sounds, and aromas, creating a lively atmosphere that enhances the enjoyment of eating.
Convenience and affordability also make street food irresistible. It’s quick, accessible, and often much cheaper than restaurant dining, making it an ideal choice for busy urban lifestyles. The variety of options available caters to diverse tastes and dietary preferences, ensuring there’s something for everyone.
Also, street food fosters social interactions and a sense of community, as people gather around stalls, sharing food and stories. This communal aspect adds a layer of warmth and connection, making street food a beloved part of our culinary landscape, and even moreso in Countries all around the World.
And so, I set off once again on my travels to seek out some of the best authentic street food I could find, and a few hours later I was in Istanbul in the ‘Old City’ taking in the dusty heat, the atmosphere and the tasty street food.
But just before I take you to Istanbul, this recipe - for spicy chicken burgers is a family favourite, and while it might not be street food exactly it certainly is a crowd pleaser at our barbeques - give this one a go!
Spicy Chicken Burger with Smoked Cheese
Ingredients
2 Small Chicken Breasts
Marinade:
15g (6-7) Thai Birds Eye Chilli Peppers
50g Onion
4 Garlic Cloves
2 tbsp Malt Vinegar
2 tbsp Groundnut Oil
1 tbsp Smoked Paprika
½ tbsp Lime Juice
1 tsp Dried Basil
1 tsp Dried Oregano
½ tsp Dried Rosemary
½ tsp Salt
Burger:
4 tbsp Mayonnaise
2 Burger Buns
Lettuce Leaves
1 Tomato
2 Slices Smoked Cheese
Red Onion
Method
Butterfly the chicken breasts to an even thickness of around 10-15mm and place them in a sealable bag.
Add the chilli peppers, onion, and garlic to a blender, and blitz to a paste, then add the rest of the marinade ingredients and blitz again to a smooth paste. Remove 2 tablespoons of the marinade and mix it through the mayonnaise, cover with cling film and place in a fridge until you make the burgers, and add the remaining marinade to the chicken breasts and place them in the fridge. Leave to marinate for 1 hour.
Remove the chicken breasts from the marinade and place them in a frying pan/griddle with a little oil and cook for 6-8 minutes per side, or until the internal temperature reaches 73°C or 165°F. Slice the tomato and red onion. Remove the chicken breasts and set them aside and griddle the burger buns to pick up any residual flavour from the pan. This will take no longer than 90 seconds.
Build your sandwich, starting with the spicy mayonnaise on the base, followed by lettuce, a slice of tomato, and then the smoked cheese. Finally add the chicken breast, more mayo and some red onion rings.
Street Food: Istanbul
by Jacqui PriestleyWhat better place to start than the Old City and just outside the Grand Bazaar, which actually as I arrived felt initially like turning up on a film set from ancient biblical times, with thick, tall fortress like City walls and stone archways. There’s a palpable sense of history here, where every stone and archway whispers tales of Byzantine and Ottoman splendour.
Arriving at the Old City in Istanbul is also a sensory feast. As I step into this ancient quarter, I am immediately enveloped by a vibrant blend of sights, sounds, and smells. The air is rich with the aroma of spices wafting from the Grand Bazaar, where vendors call out, eager to share their wares. Cobblestone streets wind through a tapestry of architectural wonders, each telling stories of empires past.
The calls to prayer from minarets echo harmoniously, weaving through the daily hustle and bustle. But before I go on my tour of Istanbul (which I will guide you through over the next two issues) I set about to discover the street food - here we go…
It’s a well-known fact that even the most elite of Istanbulites have a hard time resisting the tantalising scent of this freshly baked, molasses-dipped and sesame-crusted dough.
Turkey’s answer to the American bagel, simit is a staple of breakfasts on-the-go. I expected it to be dry and not really tasty, but this was surprisingly chewy and delicious I have to say.
Durum or Kebab
One of the most democratic Turkish culinary inventions. Why? You’re just as likely to encounter it on a street corner as you are at the fanciest of restaurants. Whether it’s the chicken, beef, cheese or veggie variety you prefer, this meal in wrap form is sure to set you free from your hunger pangs. I tried one of each over the next few days, and yes, you know it - they are all delicious.
Kestane
Apparently, the street vendors mentioned above shift to roasted chestnuts in wintertime, however, right now (in May) they are selling both! Very popular they are as well, equally with locals as with tourists.
Misir
Freshly boiled or grilled corn on the cob, often sprinkled with salt or spices. This popular snack is almost exclusively sold during the summer months by the real street sellers with their push cars.
I am soon getting to understand that eating street food and drinking freshly pressed fruit juice is very much part of the Istanbul way of life, and as I leave the Grand Bazaar and Eminonu Square to continue on my tour I see the juxtaposition of the ancient and modern; traditional tea houses sit beside contemporary cafés, and historic sites blend seamlessly with everyday life. The Old City is a living museum, where each corner turned reveals another layer of Istanbul’s rich, multifaceted heritage.
It’s an exhilarating immersion into a world where past and present coexist in perfect harmony.
Batata Vada (Potato Vada)
This South Indian vegetarian street food favourite will surely spice up your BBQ!
Ingredients
450 grams Potatoes (boiled, peeled and grated)
1 tsp Garlic (minced/ crushed)
1 1/2 tbsp Oil
1 tsp Rai (red mustard seeds)
1 tsp Sarson (black mustard seeds)
7-8 leaves Kadhi Patta (curry leaves)
1/2 tsp Chilli Powder
2 cups Besan (gram flour)
1 1/4 cup Water
1 tsp Turmeric Powder
1 tsp Baking Powder and a pinch of Salt
8 small bread buns
Method
To make the potato vadas, grate the boiled potatoes in a large dish and keep aside.
Add 1 1/2 tbsp of oil to a pan and once the oil is hot, add rai, sarson and kadhi patta, 1/2 tsp turmeric and let this temper on medium heat, then add to the potato mix. Add salt, chilli powder, crushed garlic and mix until everything is well incorporated. Divide the mixture into 8 equal parts and prepare potato balls of 60 grams each. Keep aside.
Prepare the batter by mixing gram flour, water, salt, remaining turmeric. Add baking powder and mix well. Dip the potato balls in this batter, dip off the excess and deepfry until yellow/ golden brown.
For the Garlic and Peanut Dry
1/2 cup Peanuts, 10 cloves Garlic, 1 tsp Chilli Powder and a pinch of Salt
Dry roast the garlic cloves and peanuts on medium heat until they are fragrant and brown. Let this mixture cool down for 10 minutes. Transfer to a blender and add salt and chilli powder. Pulse/ blend for not more than 10 seconds until everything just comes together and you have a powder like mixture, then transfer to a bowl to serve over the potato vadas.
York - A Magical City
by Madison PriestleyYork, with its ancient cathedral towering over the cityscape, is like stepping into a time capsule of history. As a teenager, I find myself drawn to the mystique of York Minster, its Gothic architecture looming over the cobblestone streets below. The sheer size of the cathedral is awe-inspiring, making me feel small in comparison to the grandeur of centuries past.
The Shambles (left), nestled within the winding alleys of the city, feels like something out of a storybook. In particular, Diagon Alley from the Harry Potter novels - and I am a Potterhead myself. The crooked timber-framed buildings lean in towards each other, casting shadows that seem to dance in the narrow lanes. It’s a bustling hub of activity, with quaint shops selling everything from handmade crafts to traditional sweets. I love exploring these unique stores, each one offering a glimpse into York’s rich heritage.
The atmosphere in York is palpable, especially as dusk settles and the street lights flicker to life. There’s a sense of mystery and adventure around every corner, as if the city itself holds secrets waiting to be discovered. Whether it’s wandering through the ancient city walls, visiting the ancient York Minster, or admiring the view from Clifford’s Tower, there’s never a dull moment in York.
But beyond its historical charm, York has a vibrant energy that speaks to the present. From street performers entertaining crowds in the square to lively cafés serving up delicious treats, there’s always something happening in this dynamic city. A visit to York is a ‘must-see’, it’s a place where the past and present collide in the most magical of ways.
