With the changing seasons comes a change in what we're craving, and with fall that often means comfort food. October is our most delectable issue of the year.
The smells of fall bring memories to my mind of sitting in my mom’s kitchen, and the aroma of cinnamon, apple, pumpkin, chili and soups of any kind brings me right back to her table.
There's definitely an art to creating a flavorful dish that not only satisfies our taste buds but evokes memories. The aroma of certain spices and foods can bring us right back to our childhood, which can be incredibly powerful and comforting.

Known as a Prosper tradition of community, music and hospitality since 2001, The Cotton Gin Café has been a beloved establishment that provides a sense of fellowship and delicious homestyle meals to its customers. The story of The Gin notably reflects Prosper’s journey from a quiet town to a bustling hub of activity, and the Pettis family’s ownership since 2015 has been pivotal in shaping this transformation.
Pettis family members state they began operating the restaurant with a vision to expand while maintaining its charm and nostalgia.
“We bought The Cotton Gin Café with hopes of developing Prosper’s missing piece: a place with a fun-loving atmosphere where people could gather and enjoy each other’s company,” explains Mike Pettis, The Gin co-owner.
In 2017, the Pettis family introduced The Gin Bar as an expansion, creating a space where friends and families can gather to enjoy cold beer, craft cocktails and live outdoor music. This addition merged the restaurant and bar, reflecting Prosper’s growth and evolution, with an eye toward community values and serving customers with Southern hospitality.
“We’ve always wanted The Gin to be a friendly, homey, easy-going venue to bring people together,” says Mike. “We love seeing old friends meet back up; that was always the goal.”
The Gin’s emphasis is on quality food and drinks. Mike says he and his staff take a homestyle approach to breakfast, lunch and dinner, ensuring that every meal is prepared with care and attention to detail. The Gin’s staff has capitalized on the opportunity to introduce more tastings and samplings, not only attracting new patrons but also gaining insights into the preferences of Prosper’s residents.
“We decided to move to fresher, ‘made to order’ items,” states Mike. “This has increased our quality of food significantly, and our customers are loving it.”
All beef at the restaurant, including Wagyū, is exclusively sourced from HeartBrand Ranch in Harwood, Texas. Additionally, The Gin now offers rotating daily specials, featuring different items each day. Mike says pizza remains the most popular item, however. The dough is made in-house and spun in The Gin kitchen, then cooked to perfection in a dedicated pizza oven.
The bar is a popular spot for people to unwind and enjoy their downtime. The menu features an extensive selection of bottled or draft beer, wines and spirits to cater to different preferences. For customers looking for a refreshing beer, glasses of wine to complement their meals or custom cocktails, The Gin offers a fully stocked bar. Mike says The Gin recently partnered with Bacardi, which includes brands such
as Grey Goose Vodka and Angels Envy Bourbon. This collaboration has inspired The Gin’s bar manager, Eddie Betances, to curate a series of captivating cocktails.
The Gin offers live outdoor music every Friday and Saturday, creating a vibrant atmosphere for guests to enjoy. Mike says he and his team are working on some exciting things in the way of music. For those who have a liking for country or Red Dirt music, the upcoming “Bluebonnet Series” is an event to which to look forward (at press time, exact dates were still being finalized).
Many see The Gin as the perfect venue for hosting parties and celebrating special occasions with family and friends. Rain or shine, The Gin staffers say they provide indoor and outdoor options designed to make events memorable.
The establishment has not been immune to change, though. Recent adjustments include closing for breakfast Mondays through Thursdays, due to changing customer patterns and rising food costs.
As more bars and restaurants emerge in Prosper, particularly downtown, Mike believes The Gin stands out with its unique offerings and small-town feel. The Gin boasts a dedicated team of leaders committed to providing excellent service and Southern hospitality in a welcoming environment. Mike says The Gin prioritizes customer service and aims to make guests feel at home and treated like family. He says he eagerly anticipates the growth of downtown Prosper, as it will enhance the overall ambiance and make it a vibrant destination.

Organizers of the McKinney Wine & Music Festival are set to make the event’s grand return for the seventh year on Saturday, Oct. 14, from noon to 5 p.m.
This highly anticipated event, hosted by SBG Hospitality, promises a delightful experience filled with live music, delectable wines and exciting activities. With an impressive lineup of musical acts, a grape stomping competition, local vendors and VIP offerings, Towne Lake Park will be transformed on that day into a hub of excitement and entertainment.
Lauren Stephan, president, owner and founder of SPG Hospitality, emphasizes the festival’s significance to McKinney. “For over six years now, McKinney Wine and Music Festival has been a staple in the McKinney community, offering the city a unique and exciting way to mix, mingle and enjoy great live music and fun activities,” she says.
The Texans Credit Union Main Stage will showcase acts such as Downtown Fever, Maylee Thomas, and Just Like Pink.
McKinney Wine & Music Festival Pricing: The festival offers a variety of passes. The Mini Wine Tasting Pass, priced at $35 each, includes a souvenir wine glass and 10 tasting tickets. The Wine Tasting Pass for $45 grants 20 tasting tickets and exclusive access to the H-E-B culinary tent. The VIP experience, priced at $85, offers access to the Trinity Falls VIP tent. Limited quantities of VIP tickets are available.
The festival promises a diverse selection of wines, from local award-winning wineries to esteemed California vineyards, to appeal to various palates. Beyond the music and wine, attendees can savor cuisine from 80-plus local vendors. The Union Bear beer garden will offer craft beer selections, complementing the diverse culinary offerings.
Adding a dash of competitive spirit to the event, a grape stomping competition organized by the local nonprofit The Warrior’s Keep invites guests to participate in friendly grape-stomping battles. Teams of four will compete to stomp the most grapes within 60 seconds, with the winning team earning a bottle of wine. Participation is free, and all ages are welcome to join in the grape-stomping fun.
Lauren says attendees can expect a day of excitement no matter how they choose to attend, but she says one of the best ways to get the full experience would be through the VIP experience. Trinity Falls VIP ticket holders will enjoy all-day access to this exclusive area, featuring a dedicated bar with exclusive wine and craft beer options. Local restaurants will serve up delectable bites, while the H-E-B dessert and wine bar is designed to satisfy sweet cravings. Lounge seating, a dedicated photo booth, and VIPonly lawn games add to this premium experience. Limited quantities of VIP tickets are available.

OWNERSHIP BATON PASSES INTO HANDS OF CHEF AND GROCER FAMILY
“Nothing helps scenery like ham and eggs,” quipped American GOAT writer Mark Twain. The new owners of Hamm’s Meat + Market in McKinney agree wholeheartedly, especially when adding curated, customized meals to the fare.
Noah and Lacey Hester recently purchased from previous owners Tony and Sarah Smith the boutique butcher shop at 307 West Louisiana St. The shop is known for a commitment to carrying locally sourced products and artisan-prepared accouterment, and the Hesters vow nothing will change about that.
“We did a lot of praying lately about the next new chapter in our lives, and the stars aligned for us to work with Sarah and Tony to purchase Hamm’s. We love its charm, and will continue to feature fresh food options and products that originate from sustainable practices,” explains Lacey.
Perhaps the stars and the universe have been aligning for decades regarding this path for the Hesters, as general stores and food markets are threaded throughout both Lacey and Noah’s families.
• The ‘Puako Store’ in Hawaii was owned by Noah’s mother. Noah says he used to work there, providing catering from the kitchen.
• The ‘Edwards Store’ in Stoutland, Missouri, was Lacey’s great-grandfather’s operation. “My great-grandfather was born in 1920, and grandmother grew up working in this store, like I hope my kids now will, with our butcher shop and market,” she adds.
• The ‘Edwards Market’ was owned by Sylvester and Flora Edwards, Lacey’s great-great-grandparents. Their store was in Richland, Missouri.
• The ‘Country Store’ in Freedom, Missouri, was owned by Lacey’s great-great-grandfather on her grandmother’s mother’s side.
“This is all another reason why we’re so proud to keep the tradition going for Hamm’s as a family owned and operated location,” Lacey says.

From being established in 1954, Hamm’s original location was off Highway 5 while entering McKinney from Route 75. This served as a slaughterhouse and processing plant for Collin County. The shop was relocated to its current spot in the 1980s and continued to evolve as the city developed around it.
Noah was born in Austin, Texas, before moving to Hawaii. Growing up on the Kohala Coast, he says he discovered his love for Pacific Rim flavors at a young age. He was influenced by Alan Wong, one of Hawaii’s first chefs to specialize in Hawaii’s Regional Cuisine. He spent his early years working in Big Island restaurants before moving to Nashville to reconnect with his Southern roots. Once stateside, he says he blended his love of Southern hospitality with the aloha spirit, and now has 15 years of beneficial chef experience.
Noah is also the brand manager for Bradshaw Bourbon (Kentucky straight whiskey), and creates his own collection of sauces.
Noah confirms they will still carry fresh/pasture-raised eggs and hand-cut meats originating from sustainable farms, plus specialty seasonings, rubs and glazes. He says they also will have a varied selection of beer, wine, ciders and locally sourced delicacies, such as gourmet pickles, cheese slices, seasonal vegetables, breads, buns, dips, Hamm’s potato salad, pimento spread, cold snack plates and Chef Noah Hester’s branded soy and hot sauces.
While Hamm’s currently is open for lunch, Noah says they plan to offer a brand-new, membership-based ‘Supper Club’ for once monthly meal tasting events. “We can accommodate about 10 to 15 diners, and hope to debut this club as early as possible this fall. Patrons can expect some favorite meals with a Hester spin on them,” he adds.
Lacey says customers also may sign up for “butcher boxes,” which will be ready-made meats and accompaniments to pick up at the shop.
She says they’re already brainstorming what type of fanciful food packages to assemble for the upcoming holidays. “We envision racks of lamb, smoked meats, creamy casseroles and gourmet desserts.”
Customers also can get ready for Noah’s house-made bacon jerky and barbecue-related creations. “We believe healthy food can, and should, still have lots of flavor, so delivering that will be our daily goal,” he vows.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cureall, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling:
Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.
This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!
This Indian-inspired dish is the perfect fall topping for pork chops and also pairs nicely with ham. This is so easy to make and will fill your kitchen with the aroma of fall.
INGREDIENTS:
• 4 tablespoons butter
• 2 cups Granny Smith apple, chopped
• ¼ cup pecans or walnuts
• 1/3 cup apple juice
• 3 tablespoons brown sugar
• 3 tablespoons dried cranberries
• 1 teaspoon lemon juice
• ¾ teaspoon cinnamon
• ½ teaspoon nutmeg
INSTRUCTIONS:
Heat butter in saucepan, then add remaining ingredients. Cook over medium heat until the sauce has cooked down and the apples are tender. Serve over pork chops. Enjoy!

• 6-8 apples, peeled and sliced
• ½ cup dark brown sugar
• ¼ cup flour
• 1 teaspoon vanilla
• 1 teaspoon cinnamon

Topping:
• ¾ cup flour
• ¾ cup dark brown sugar
• 1 teaspoon cinnamon
• ½ cup cold butter cubed
• 1 cup oats
• ¼ cup pecans, chopped
Preheat oven to 375 degrees. Lightly grease pie plate or baking dish. Mix all filling ingredients together and place in baking dish. Prepare topping by combining the flour, brown sugar and cinnamon in a bowl. Cut in butter using a fork or pastry cutter. Stir in oats and pecans and sprinkle over filling until covered. Bake for 45 minutes and serve with caramel drizzle and vanilla ice cream.

Whether you’re hosting a pool party or simply enjoy sipping the sweet and tartness of an amazing Margarita, this healthier version with these natural ingredients is sure to make your palate happy. This is all fresh ingredients, no mixers. It’s just as easy, much cleaner and better for you!
• 2 oz. Casamigos Reposado or Blanco Tequila
• 1 oz. Fresh Lime Juice
• .25 oz. Fresh Orange Juice
• .5 oz. Agave Nectar
• .5 oz. Orange Liqueur
• Garnish with a lime wheel through a skewer
• Combine all ingredients into a tin shaker.
• Add ice, shake vigorously and strain into rocks glass.
• Add fresh ice and garnish.
