Every June, we spotlight some of the incredible men who contribute to and enhance our great town. They are fathers and sons, business owners and experts, learners and teachers. One of these great guys is Mike Fonseca. Meet Mike.

Q: TELL US A LITTLE ABOUT YOURSELF.

A: I was born in Mexico City to a Mexican father and an American mother from Long Island. I am the youngest of 4 children. We moved to San Diego in the second grade and I went to College at Cal Poly in San Luis Obispo.

Q: WHAT IS YOUR CONNECTION TO FAIRFIELD AND THE COMMUNITY?

A: My family and I have called Fairfield home since 2006. After viewing a home on North Pine Creek, we made an offer on the spot. At the time, my wife was concerned my commute to the city would be too far, though I was unphased. Fairfield is such a special town and I’ve become its biggest cheerleader.

Q: WHAT IS YOUR PROFESSIONAL BACKGROUND?

A: My entire professional career has been dedicated to the sports management industry. I got my start at the storied IMG working in tennis and golf representation. In 2006, I was fortunate enough to be a part of the founding sports group at CAA (Creative Arts Agency). Most recently, I moved on from Excel Sports to start my own agency, The Fonseca Group, which is a sports management & private equity firm.

Q: WHO IS YOUR TYPICAL CLIENT?

A: Professional athletes make up our clientele for the sports representation side. In the private equity space, we see more corporate clients or brands who lean on our expertise and relationships to raise strategic capital. I’ve been fortunate enough to work with some of the biggest names in sports across baseball, football, basketball, tennis, golf, MMA, boxing and more, so The Fonseca Group allows me to execute high-level sports marketing strategies and activations in a meaningful and profitable way.

Q: WHAT SETS YOUR COMPANY APART? HOW IS YOUR APPROACH UNIQUE?

A: Our approach is narrow and deep on the athlete side. Where I used to look after 50 athletes and transact on 350 deals per year, we now have six athletes and we want to do about 60 deals that range from traditional endorsement deals to licensing, content, private equity, speaking, brand building and non- traditional deals.  On the private equity side, we leverage our relationships and expertise in business to unlock opportunities.  Sometimes we attach our clients or other influential investors, but regardless we look for strategic synergies between the potential investor and the company.

Q: ANY NEW OR EXCITING THINGS YOU ARE WORKING ON NOW TO SHARE?

A: Every day presents new opportunities. We get pitched on private equity deals a few times per week. Most are interesting, but very few rise to the top of the type of deals we really get excited about. We have a very cool real estate project in East Hampton village; we have a big golf project in Mexico, and we are partners in a very fast-growing Mexican restaurant concept with one of the most successful restauranteurs in the world. We are marketing the most popular Hispanic athlete. We are getting ready to launch an ultra-premium Mexican-owned mezcal brand called Zomoz in Fairfield after successfully launching in California; we just hosted the world premiere in Fairfield of an

inspiring sports movie that one of our client’s executive produced, so we have a very diverse plate at the Fonseca Group.

Q: ALTHOUGH YOU ARE AN INCREDIBLY BUSY PERSON, WHEN YOU HAVE SOME DOWNTIME, WHAT ARE SOME OF YOUR FAVORITE THINGS TO DO IN FAIRFIELD?

A: Some of our favorite things to do in Fairfield is just enjoying what this special town has to offer. My wife, Taralyn and I love to walk our dog Duke around our neighborhood.  We love to go to the beach in the summer.  We enjoy going out to eat at all the amazing restaurants Fairfield has to offer.  We enjoy watching our boys play baseball or basketball and spending time with a great group of friends in town.

Q: BEST ADVICE YOU’VE EVER RECEIVED THAT YOU USE PERSONALLY AND/OR PROFESSIONALLY:

A: Believe that you are as good as everyone but not better than anyone.

Q: BIGGEST LESSON LEARNED?

A: Push your limits, or at least what you perceive are your limits. Be vulnerable and uncomfortable and don’t be afraid to experience real stress.  You will quickly realize your potential far exceeds what you previously believed.

Q: WHO OR WHAT INSPIRES YOU?

A: My children. Covid taught me so much about balancing work and family. Prior to that, I’m sad to say I spent a disproportionate amount of time on what I thought I should have been spending time on. Not realizing you could spend your whole life working, and before you know it, you missed living your life and sharing the best experiences with your family and the ones you hold dear. Luckily, I realized that while my boys were still young enough and I’ve worked on becoming a better dad. Watching them grow up, enjoy life, play sports and develop their personalities and knowing that I get to participate inspires me every day.

What Pat and his team have created has become a beloved local staple. Whether dropping in for a quick bite to enjoy the popular OPT Burger, celebrating a family milestone with fan favorite Tarragon Chicken, or meeting friends for their extensive Happy Hour specials, you’ll be coming to a place where the food is always delicious and the atmosphere is always warm and welcoming.

Old Post Tavern is an essential part of downtown, which Pat notes is the most rewarding: “I love being a part of the community. It is hard to describe the sense of family among the staff and frequent patrons.

Over the years, many of us have grown together, celebrated the happy moments, and supported each other in the most difficult times. When I walk out of the kitchen and look into the dining room or the bar, it brings tremendous pride to see what my family, staff and I have created.”

Pat has shared two menu favorites to try at home. Although now that we’re in full Coastal Connecticut warm weather mode, you’ll see me dining at the coveted outdoor patio. It is always bustling with University students, locals, and families, especially enjoying the live music on summer Sundays - a restaurant for everyone.

Ingredients for Risotto

• 4 1/2 cups chicken stock or vegetable broth

• 2 tsp olive oil

• 1/3 cups shallots, chopped

• 1 cup arborio rice

• 2 oz dry white wine

• 3/4 lb fresh asparagus, tough ends trimmed, cut 1-inches long

• 1 tsp white truffle oil

• 1/4 cup chopped fresh parsley

• 1/4 cup freshly grated

Parmigiano-Reggiano

• salt and fresh cracked pepper, to taste

Directions

Step 1: In a large saucepan, heat chicken stock over medium heat. When it boils, reduce heat to a simmer and maintain over low heat, taste for salt and adjust as needed.

Step 2: In a large heavy saucepan over medium heat, heat the oil and add the shallots; sauté 3-4minutes.

Step 3: Add the rice; mix well so the rice is completely coated. Saute until the rice is slightly translucent, about 2-3 minutes.

Step 4: Add the wine and stir until it is absorbed.

Step 5: Add a ladleful of the simmering stock; stir and wait until it is absorbed before adding another ladleful stirring gently and constantly. Continue this

process until the rice is creamy, tender to the bite, but slightly firm in the center.

Step 6: Add the asparagus along with the last ladle of broth and continue cooking for 5 minutes, total time should be about 25-30 minutes from the time you started. When all the liquid is absorbed, remove from heat and stir in the truffle oil, parsley and Parmigiano Reggiano.

Step 7: Serve immediately and top with fresh cracked pepper and extra grated cheese if desired.

Scallops (4 pieces)

Step 1: Season the scallops on both sides with salt and pepper. Heat olive oil in a large frying pan until it is smoking.

Step 2: Add the scallops and cook for 90 seconds and flip the scallops over and cook for an additional 30 to 45 seconds. Remove the scallops

Ingredients for Lemon Butter Sauce

• 1/4 cup lemon juice

• Pinch Kosher salt

• 1 tablespoon shallot, finely chopped

• 1/4 cup (1/2 stick) cold butter, cut into cubes

• 1 tablespoon finely chopped parsley

Directions

Step 1: Warm a small pan over medium heat and add lemon juice and shallot.

Step 2: Cook until reduced by approximately 1/2, then add butter.

Step 3: Slowly swirl butter into the mixture until thickened, season with salt to taste (be careful if using salted butter) and add parsley.

Step 4: Stir to mix and serve

SAUTEED COD OVER BASMATI RICE TOPPED WITH A RUSTIC TOMATO SAUCE

Ingredients for Basmati Rice

• 2 tablespoons butter

• 1 medium yellow onion diced

• 4 garlic cloves

• 1 cup basmati rice

• 2 1/2 cups chicken stock

• salt & pepper

Directions

Step 1: In a saucepan, melt butter over medium-high heat. Add diced onion and saute until translucent, stirring occasionally for about 5 minutes.

Step 2: While the onions are cooking, rinse rice in a fine-mesh sieve until the water runs clear and be sure to shake out any excess water.

Step 3: Add garlic to the saucepan and cook, stirring until fragrant. Next, add rice and stir to completely coat butter. Next, lightly toast the rice; do not brown the rice.

Step 4: Add chicken stock to the saucepan and stir. Bring to a boil over high heat and cover the saucepan. Reduce heat to a simmer and cook until stock is absorbed, about 15 to 20 minutes.

Step 5: Remove from the heat and let rice rest for 5 minutes with the lid on.

Cod Filet 4-6oz

Step 1: Pat the cod dry with a paper towel on both sides and lightly flour the fish.

Step 2: Heat the olive oil in a saute pan over medium heat (oil will begin to smoke). Add the floured fish and cook for 2-3 minutes on each side. The fish should no longer be opaque and have a light golden color.

Ingredients for Rustic Tomato Sauce

• 2 tablespoon butter

• 2 cloves garlic chopped

• 1 small shallot diced

• 1/4 cup dry white wine

• 1/2 cup marinara sauce

• 1 cup chicken stock

• 1/2 cup cherry tomatoes

Directions

Step 1: In a medium saucepan, add butter, garlic and shallots. Cook over medium heat, stirring occasionally, until translucent.

Step 2: Add white wine once the shallots and garlic are cooked through with no color. Reduce the wine by half.

Step 3: Add the marinara, chicken stock, and cherry tomatoes and simmer for 10 min Add salt and pepper to taste.

Behind The Curtain

Fairfield residents Steve Benko and Eli Newsome are the collaborators behind Fairfield Center Stage, a roving theater company launched in Fairfield in 2018, whose goal is to provide a quality, accessible, and affordable theatre arts experience for the community by the community. Each show is a unique and fun, inclusive experience; one notable show is their annual immersive production of A Chrismas Carol, performed at Burr Mansion. Take a peek behind the curtain to learn more.

FLM: WHAT ARE YOUR ROLES WITHIN THE THEATER COMPANY?

Steve: I have been a performer and Board member, rising through the ranks to my current position as Board President. Eli: I serve as Founding Executive Producer, which means I oversee the day-to-day operations and serve as the ‘coach’ of the company. I also wear different hats on each production, depending on the show, sometimes serving as Director, Music Director, and/or Lighting Designer.

FLM: HOW DID FAIRFIELD CENTER STAGE START? WHAT IS THE ORIGIN STORY?

Steve: It was formed by Eli, his wife Christy, and a few other friends back in 2010 as a non-profit corporation. It was then known as Bridgeport Theatre Company and operating out of the Playhouse On the Green in downtown Bridgeport.  When the landlords closed that facility a year later, it moved to the Downtown Cabaret Theater. That’s when I joined the company.  When those arrangements came to an end seven years ago, we relocated to Fairfield and renamed ourselves Fairfield Center Stage, developing relationships with several venues around town as we do not have our own physical location.

FLM: HOW WOULD YOU DESCRIBE THE COMPANY? WHAT IS THE MISSION?

Steve: We are a 501(c)(3) non-profit community theater company dedicated to providing a creative outlet for the local community of performing artists of every color, age, orientation, gender, ethnicity, walk of life, religion, etc., forming bonds as they work together, mainly on a volunteer basis, to produce high-quality entertainment.  This includes mainstage productions, concerts, and after-school and summer youth drama programs and camps.

Eli: I would describe us as an inclusive community theater group that strives on producing high quality local shows at

affordable prices -we try to keep ticket prices around $30. We pride ourselves in utilizing local artists and the depth and diversity of our talent pool is one that I’m very proud for cultivating over the years. Each year we work with 100-200 artists, all local, with a nice mix of new and returning company members.

FLM: CAN YOU GIVE READERS AN OVERVIEW OF THE PROCESS OF PUTTING A PRODUCTION TOGETHER - FROM SHOW SELECTION TO OPENING NIGHT?

Eli: Not having a permanent theater has inspired our creative choices since we launched. My wife, Christy, our Artistic Director, has been instrumental in some of our more memorable ideas for shows or unique, non-traditional locations. Sometimes, we find the venue first and then brainstorm what show might work well there, or sometimes, we choose a show that we think would be good for our group and then try to find a place to do it! I hire the production staff (Director, Music Director, Choreographer, Scenic Designer, Lighting, Sound, etc). We hold open auditions for all our productions and rehearse our bigger shows for around 5-6 weeks, in the evenings and on weekends. We bring everything together through a tech rehearsal process and publicly present our shows for usually 2 or 3 weekends. Some of our concerts or new works events are onenight presentations. The actors are all volunteers, and we provide modest stipends for some of the critical artistic positions and musicians who play in our bands.

FLM:  WHAT ROLE DOES THE BOARD PLAY EACH SEASON?

Steve: The Board holds regular meetings to discuss and decide on all aspects of our programming, with each member contributing their particular skills in a very hands-on way to individual productions -designing and building sets, running the website and social media, directing shows, performing -they generally have to audition like anyone else- coordinating and hosting events. My particular skills, apart from performing and acting as master of ceremonies at different events, are presiding over the meetings, budgeting and financial matters, filing annual government reports, working on grant applications and venue negotiations.

FLM: WHAT DO YOU FIND MOST REWARDING ABOUT BEING A PART OF FAIRFIELD CENTER STAGE?

Steve: When I first started in community theater strictly as a performer, I found acting to be a fun way of expressing myself, and there was nothing quite like the applause and appreciation. Over the years, through that process and then becoming more involved on the production side, it became more about the sense of teamwork and bonding in making something joyous for the cast, crew, and audience alike happen with a community of quirky, diverse, dedicated, passionate group of talented artists literally from ages 4 to over 80 from all kinds of backgrounds.

Eli: I love our company, as it provides a container for people to cross paths with others from our community that they might not normally ever even meet in life. We provide an opportunity for deep connection with other fellow humans, through the structure of artistic collaboration --- in short, I think theater is the most rewarding team sport out there.

Founder Carmine Battimelli started at a young age at his local butcher shop in Brooklyn, NY. Working his way up from delivery boy at 13 to making fresh mozzarella and Italian sausage to master butchering and preparing classic entrees, he learned all aspects of the business along the way. That experience, combined with family traditions and recipes, eventually led to his own store in Stratford before opening the cherished Fairfield location. Carmine has built a shop and menu like no other. Known for their award-winning sandwiches, bakery, top quality gourmet items, Certified Prime Black Angus Meats, top quality poultry, pork and veal, and a large variety of fresh pasta. The store also carries a large selection of hot and cold prepared entrees, soups & salads. People in town - particularly in Ridgebury - are all abuzz about a new cafe coming to the neighborhood. Named Sunrise Cafe, the eatery and coffee shop will make its home inside Meetinghouse, a vibrant and inclusive community organization and meeting space for locals. Sunrise Cafe is the second Ridgefield venture from beloved Wooster Hollow Cafe owner Ron Herman, and all of its proceeds will be donated to local charities.

A resident of Fairfield and a passionate member of both the Ridgefield and Fairfield communities, Ron’s thriving career as a local restaurateur is actually his second act. His first (and last) corporate job was with General Electric (GE), where he retired as CEO of GE Capital’s Middle East business. He opened Wooster Hollow in December of 2014 and the Cafe will celebrate 10 years in business this year.

We spoke with Ron recently about his passions, what’s next, and what he loves about Ridgefield and Fairfield.

CL: WHAT DROVE YOU TO SMALL BUSINESS OWNERSHIP, PARTICULARLY IN THE FOOD AND BEVERAGE SPACE?

RH: I did a lot of soul searching and prayer to determine my purpose in the second phase of life, and what I found was that I was driven to own small businesses and give good jobs to my team. Good jobs create independence and self-reliance for people, and I feel that is significant. In addition to Sunrise Cafe, which opens in May, and Wooster Hollow Diner, I own CT CRAB CO, a gourmet crab cake manufacturer; Corales 40, a Dominican Republic-based hospitality company; Sunrise Investment Group, a private equity firm consulting group; and Sunrise Real Estate Holding, which owns commercial real estate.

CL: WHY DID YOU CHOOSE TO OPEN EATERIES IN RIDGEFIELD, AND WHAT DO YOU LOVE ABOUT THE COMMUNITY?

RH: At first, I simply liked the location of what was previously known as Wooster Hollow Diner, Deli & Pizza along Route 7, which is a busy corridor. In my research, I had also learned that delis and diners typically have greater longevity than other types of restaurants, so this was a win-win. In 10 years of working in the Ridgefield community, I’ve come to love so much more about it - from walking along historic Main Street to picking up a box of Deborah Ann’s milk chocolates for my wife. They’re her favorite. But I’ve loved the Ridgefield community for a long time. My wife and I married at St. Mary’s over 30 years ago, and this town has so many magical qualities: its historic streets, the arts, the music, the Prospector Theatre, and most of all - an accepting and giving community spirit.

CL: TELL US ABOUT YOUR LIFE IN FAIRFIELD.

RH: We settled in Fairfield in 1998 while I worked for GE, purchased an old home and have restored it over the years. I love walking around the village of Southport or along one of our five beaches. My wife, Kathryn, owns Kathryn Herman Design, a landscape design business. She’s created lovely gardens on the property, which we open often for tours and charity events.

CL: YOUR BUSINESSES ARE VERY PURPOSEDRIVEN. CAN YOU TELL US MORE ABOUT THAT?

RH: I have a belief that we are nothing without our customers, and our purpose is to serve them. At Wooster Hollow, we have partnered with Ability Beyond for a number of years to

employ young adults with special abilities. Sunrise Cafe will also have a higher purpose.

CL: TELL US ABOUT MEETINGHOUSE LIFE AND YOUR INVOLVEMENT THERE.

RH: I am excited to be opening the Sunrise Cafe at the Meetinghouse in Ridgebury this May. Last year, I got involved with the Meetinghouse community center because of my belief in the importance of creating safe places to gather and grow as friends and neighbors. As the reconstruction progressed, it became clear that the Meetinghouse was the perfect location for a coffeehouse with a higher purpose.

The Sunrise Cafe will be open every day from 7 a.m. to 5 p.m. We will serve coffee, baked goods, sandwiches, soups and salads. The team from Wooster Hollow Cafe will manage the Cafe with the same focus on excellent food and friendly service. We will donate all profits from Sunrise Cafe to local charities. This will be our higher purpose!

CL: ONE LAST QUESTION! HOW DID YOU CHOOSE THE NAME “SUNRISE CAFE”?

RH: One of my favorite expressions is, “The sun is coming up tomorrow.” I use it to console those who are sad, stressed, anxious or troubled. Knowing that no problem or issue will cause the sun not to come up helps put things into perspective. So far, I have always been right with my prediction! Most days, I get up early to watch the sunrise. Each sunrise brings a new day and, with that, an opportunity for us to start over and do good in the world. That is why we have picked the name Sunrise Cafe.

Whether you are a new golfer or have been playing for decades, we all want the same thing—to be a single-digit handicap (or better). In some professions, golfing with clients is a must, and slicing off the tee box can kill the deal.

Get fit for equipment.

If you’ve been playing with the same clubs for 5+ years, it’s time to take advantage of the new equipment. Newer clubs have lower and deeper center of gravity (CG), creating an easier launch off the face. Even off-center strikes can produce a straight shot with the right set of clubs. Any major golf store will fit you for free—just make sure you get the correct length club and size grip.

On drivers and hybrids, some of the newest equipment have premium shaft options off the rack. The shaft is the engine of the club, so getting custom shafts will add distance and forgiveness—guaranteed.

As for the putter, you use it more than any other club in your bag on every round of golf. It should be the most tailored club in your bag.

Practice your short game every day.

You don’t even have to spend time away from your family while practicing if you don’t have a golf simulator. You can practice putting and chipping on the carpet while watching TV with your family.

Chipping and the bump and run: The only mechanical advice I will give is the most important lesson you can learn in the short game. When you miss your approach shot you must be able to chip the ball within 8 feet of the hole for a one putt. Try this shot from Dave Peltz’s short game book. It gets me up and down from 25 yards out to just off the green.
