3. Marinate that meat Inject some instant flavour into your cuts by marinating them. Marinating overnight is the best way to ensure the flavours permeate the meat. Or keep things super simple and add some ready marinated selections of meats which are available from most butchers and supermarkets. Don’t forget to shake off any excess marinade before the meat hits the grill, especially if it contains oil. If it’s too saucy the meat is more likely to burn or flare causing that bitter smoky flavour. 4. Avoid fridge chill Taking the raw meat or fish out of the fridge at least 20 minutes before barbecuing gives it long enough to lose its chill and get down to room temperature. If the meat is too cold when it hits the grill there’s a danger it could burn on the outside before it’s cooked through to the middle. This is especially important with chicken, sausages and any other pork. It’s still important to do this with beef burgers and steaks to ensure your meat is as rare or well done as you like it. When meat is removed from the fridge, keep the time to a minimum to prevent it spoiling and always keep it covered.

5. Cooking – direct or indirect Direct cooking is the most common method on the barbecue. It’s great for thin cuts like steaks, burgers, fish and sausages as they’re placed directly over the heat. One of the main advantages of direct cooking is the high temperatures within the barbecue create the perfect conditions for searing, resulting in great flavour and texture to the meat. Indirect cooking methods are a little more advanced than direct cooking. Place the meat next to, not directly over, the heat source. Once they’re warm separate your coals into two piles at opposite ends of the grill. Place a drip tray underneath the grill, between the coals. Your meat goes on the grill in the space over the drip tray. With this method the barbecue acts like an oven so is ideal for cuts like roasting joints that require slow cooking on a lower heat. Always ensure meats cooked on the barbeque are cooked through and eaten straight away, especially chicken and pork products. Some people prefer to pre-cook chicken pieces in the kitchen oven to ensure the meat is cooked through before transferring it to the barbeque to ‘finish off’ and add the smokey barbeque flavour.

6. Test the meat An obvious one but so important, especially if you’re cooking for a lot of people. It can be hard to tell how welldone meat is on the barbecue by sight alone. Be sure to cut into chicken and pork and check whether the juices run clear, or invest in a temperature probe. 7. Have your kitchen pans prepared as back-up Be prepared for the weather to turn. With British weather being unpredictable, have your griddle pans and oven prepped to finish off any items that get caught in a sudden downpou8r. 8. Think veggie And finally, give some thought to friends and family who may be vegetarian or vegan. If you have any veggie guests, consider vegetable kebabs, marinated tofu and haloumi cheese, all of which maintain their shape and texture on the grill and absorb flavours from marinades well. Pineapple wedges or slices are delicious grilled on a barbeque, as are whole bananas cooked in their skins until blackened, or with the skin slit down the top and pieces of chocolate pushed into the banana.

Delicious Homemade Coleslaw • 1 small cabbage or half large cabbage – white, red or green, or a mixture • 4 large carrots • 1 large red onion • Approx 3 large spoons of mayonnaise • 1 tblsp of vinegar – white wine, malt or lemon juice • 1 tblsp of sugar – white, soft brown or demerara • Celery salt Remove any dense core from the cabbage and shred thinly. Coarsely grate the carrots or cut into thin strips and thinly slice the onion. Put cabbage, carrot and onion into a large bowl. Into another bowl whisk together three large spoons of mayonnaise, a tablespoon of white wine vinegar (malt vinegar or lemon juice can also be used), a spoon of sugar (either white, soft brown or demerara), a shake of celery salt. You can also add to the mix any favourite chopped herbs, paprika, a dash of mustard or

even a dash or Hendersons relish. Sour cream or yoghurt is also nice added to the mayonnaise to give a more tart flavour. Playing around with the flavours is part of the fun. Pour the mayo mixture over the dry ingredients and toss together to coat evenly. All quantities are rough and can be tweaked to suit your own taste. Taste the end result before mixing with dry ingredients and ensure you have enough quantity to coat the cabbage/carrot/onion mix as thickly or thinly as you prefer.

A day in The Dales

Isn’t it amazing how a good day out can completely lift your spirits! I’ve been going to Burnsall in The Yorkshire Dales (10 minutes drive past Bolton Abbey) since I was a little girl and it still holds all the charm and beauty for me now. It’s a shorter ride than to the coast – usually takes us about an hour and a half, give or take and once you’re there you feel like you’ve entered a completely different world. A world of aged, dry stone walls, green valleys and hills, scattered farmsteads and gentle snaking rivers. It’s a place to feel at peace, and I’m sure many of us need that at the moment. Burnsall is a beautiful Wharfedale village that lies on the bend of the River Wharfe. There are a couple of small cafes, public toilets and carpark and The Red Lion pub that sits in the heart of it, right next to the large five arched bridge. However, when we visit we park in a well-kept field (£8 for the day) and park right up to the edge of The Wharfe that wraps around the field. We unload our loungers and chairs, towels and blankets, sandwiches and drinks and settle down for the day -

The views of the fells and fields are truly breath-taking but if you fancy being a little more energetic there’s plenty of neatly trimmed field to set up a game of cricket or kick a ball. There are also gentle walks all along the river side. Whatever you feel like… The field has some clean, well-kept toilet too and there’s a Yorkshire Dales ice-cream van, as well as selling the obvious, also fishing nets, dinghies, buckets and spades and rubber rings. Children, adults and dogs safely paddle, swim, fish and bob along the river, round all its bends and shallows. It’s idyllic. A lovely day. But there’s more… A twenty minute drive at teatime and you enter a different world. This time a world of jaw dropping burgers, thick shakes, crispy chicken, syrupy waffles, homemade icecreams, fluffy pancakes and fizzy sodas – all served up from a 50’s style wooden clad American diner ‘Billy Bobs’. This was our first visit with Molly, our cockerpoo so we sat on one of the many outdoor

picnic tables. The food is always delicious but there’s just one dilemma… savoury or sweet??? Both are amazing but disappointingly too big to indulge in both! Previously, I’ve devoured their pancake stacks and sweet waffles served with marshmallows, honeycomb chunks, mini do-nuts, toffee pieces, fudgy sauce and domes of yummy ice-cream but on this visit I fancied savoury and I am so glad I did! I has Louisiana Balls – pulled pork and sticky rice rolled into breadcrumb coated balls and fried, served with salad and chipotle mayo. My daughter had a hotdog with sausage as good as the butchers and the boys had heaped burgers with melted cheese, pulled pork and warm bbq sauce. It’s really lovely, well-priced food but if you just want to call in for one of their many homemade ice-creams and a play on the wooden trucks and trains you can do that too! It’s a truly delicious end to a wonderful day. So The Dales is good for body, mind and soul and I always feel lucky that we live close enough to enjoy some of its splendour all in one day!

Curried Chicken Gratin This has been a family favourite for years. If you keep breadcrumbs in the freezer, its quick and easy to prepare, and using different bread, such as herby bread, gives a slightly tastier flavour. We sometimes use individual gratin or pie dishes rather than one larger dish, and chop the chicken into large chunks. METHOD 1. Cook frozen broccoli for 5 mins, drain and place in a buttered dish. 2. Simmer chicken in stock until tender. 3. Drain, reserving stock, and place chicken on top of broccoli. 4. Mix in a pan, condensed soup, cheese, curry powder, evaporated milk, mayonnaise and lemon juice. 5. Warm through until well mixed, diluting with some of the reserved stock if necessary to get a consistency or double cream..

500g (20oz) packet frozen broccoli spears 4 chicken breasts 280ml (½ pint) chicken stock 284g (10oz) can undiluted condensed chicken soup ½ cup grated cheddar cheese 1 heaped teaspoon curry powder ½ cup evaporated milk ¾ cup mayonnaise 2 teaspoons lemon juice ½ cup breadcrumbs

6. Pour sauce over chicken and sprinkle with breadcrumbs. 7. Bake at 350˚C / 180˚F / Gas Mark 4 for 30 mins or until thoroughly warmed through Serve with new potatoes and seasonal vegetables, or pasta, rice or garlic bread.

Chocolate Roulade A delicious dessert anytime, but especially lovely as a centrepiece for a summer garden party or family meal, with raspberries or strawberries. Also lovely with extra fruit chopped and mixed into the cream filling the roulade, with whole pieces of the fruit reserved for the topping. METHOD 1. Melt the chocolate gently. 2. Whisk the egg yolks with the sugar until thick and creamy and gradually whisk in the melted chocolate. 3. Whisk the egg whites until stiff and gently fold into chocolate mixture. 4. Turn into a lined and greased large roasting tin. 5. Bake in a preheated oven, 180˚C / 375˚F / Gas Mark 4 for 25-30 mins until firm. 6. Leave to cool for 5 mins, then cover with a clean damp tea towel and leave overnight. 7. Carefully remove the cloth and turn the roulade onto a sheet of greaseproof paper sprinkled thickly with icing sugar. Peel off the lining paper. 8. Whip the cream and spread three quarters over the roulade. Roll up the roulade like a swiss roll, using the greaseproof paper to help. (The roulade WILL crack). Decorate with cream, fruit and chocolate.

If you haven’t heard of this, it’s me to head to your local gardening store to pick up these must-have bedroom plants because indoor houseplants can make a world of difference in your health. The last of the healthy indoor plants that we’re going to talk about is the Boston Fern. These are very commonly grown in homes as they’re very simple to take care of. It’s known to be a natural humidifier and air purifier for the home. Boston ferns are described as having a cluster of long green leaves that are fernlike in nature. You’ll see a thin stem run through each leaf with tons of tiny leaves running horizontally along the stem. This type of fern will continue to spread to two or three feet in length at its prime

Care: Boston ferns thrive in cool environments and their soil must be kept very moist. You can grow these ferns in indirect sunlight as well.

Benefits: Apart from removing carbon dioxide, this plant also removes harmful toxins including toluene, xylene, benzene, trichloroethylene, and formaldehyde. This issue’s restaurant review comes from The Royal and Ancient, Huddersfield The Royal and Ancient, situated in between Bradley and Upper Heaton, Huddersfield has been recommended by friends several times, so recently we decided to give it a try for lunch and we weren’t disappointed. Considered to be the oldest pub in Huddersfield, The Royal and Ancient began life as The Spinners Arms in 1780 and was renamed The Royal and Ancient in 1990. The long history is evident in the imposing exterior building and beautifully decorated interior bar and restaurant area. It’s everything you expect to find in a traditional pub steeped in history and the warm welcome from Alan, the landlord, and his staff definitely makes a great first impression. Ample and convenient car parking is an added bonus. The Royal and Ancient is very much a traditional family run pub and restaurant, offering a delicious menu of classic and genuinely homemade meals with a wide selection of hand pulled cask ales, draught beers and lagers. We were told that, where possible, all food is sourced locally to help support local businesses. The lunch menu wasn’t huge, but there was enough of a selection, and it gave us confidence that the food was indeed homemade. We had heard that portions were generous, so we decided not to order starters, but we could have chosen from

homemade Soup of the Day, Yorkshire Pudding and gravy, Creamy Garlic Mushrooms, Pate, Traditional Prawn Cocktail or Battered Black Pudding with garlic mayonnaise. One small niggle was that, had we been vegetarian our choice of starters would have limited to just the Garlic Mushrooms, and possibly Soup of the Day. The starters did look delicious as we watched them being delivered to other diners. Starters ranged in price from £4.50 to £5.25 The lunchtime main course menu was more extensive and included classic meals such as traditional roast beef dinner, beer battered locally sourced haddock and chips, homemade beef or vegetarian lasagne, pie of the day, homemade steak and kidney pudding, Whitby Scampi and chips, a couple of chicken dishes and baked cheese and apple tart as a second vegetarian option. All main courses were either £9.95 or £10.95

The selection of desserts at lunchtime was limited but difficult to choose from, as they all sounded very delicious. The choice was from School Pud of the Day, Baileys Cheesecake, Sherry Trifle, Chocolate Fudge Cake and Chocolate and Praline Profiteroles. All desserts were priced at £4.95 A Lunch Meal Deal is available with 2 courses for £12.95 or 3 courses for £14.95, which considering the generous portions sizes the fact that the meals are homemade, is great value. We decided to skip starters and to opt for the steak and kidney pudding with chips peas and the beef lasagne with chips and side salad. The steak and kidney pudding was lovely with tender chunks of steak, delicious gravy and perfectly cooked suet pastry. The beef filling in the lasagne was really flavoursome and had obviously been cooked slowly, as it was tender and

melted in the mouth and lasagne wasn’t swimming in bechemal sauce, which was a refreshing change. I would definitely order this again. Both meals were piping hot and served with home cooked chips, which were deliciously crispy on the outside and soft and fluffy on the inside – perfect! We debated whether to have a pudding, as we watched other diners being served and the portions were very generous. We were both pretty full from our main meals, but out of pure greed, we decided to go for the School Pud of the Day, because who can resist dessert when eating out? The School Pud of the Day was a large slice of treacle tart, which was a warm pastry base topped with treacle sponge and served with custard. We could have chosen to have cream or ice cream instead of the custard, but as it was a traditional school pudding, we had to go with the custard. It was very tasty, the sponge cooked to perfection, and it really finished the meal off, but even though we shared the pudding, we were both overly full. The evening menu is more extensive, including for example steak, fish and grill dishes and it’s a little more expensive. A

meal deal is still available with 2 courses for £14.95 and 3 courses for £17.95, although not all menu items are included in the deal. Overall we were pretty impressed with The Royal and Ancient and will definitely return. The atmosphere and interior was warm and welcoming, and the staff very efficient and friendly. The menu is traditional English pub fayre with no frills but quality of the food was very good and obviously homemade, and the portions were definitely generous. It was a 10 mile journey from Ossett, taking us 25 minutes. Travelling from central Wakefield would add about 3 miles and 5-10 minutes to the journey. We had a pleasant run out, great food and a lovely relaxing couple of hours, so well worth the journey. The pub and restaurant felt very ‘Covidsafe’ and they were taking the required steps to keep customers and staff safe.

A second restaurant review coming from Barugh Green’s The Royal The Royal at Barugh Green is a real favourite of mine. The cocktails and tapas never disappoint, whether I’m with friends, couples or taking the kids – cosy winter fires in the informal bar or sunny beer garden fun – The Royal is great any time of year. I’ve been a couple of times since the pubs and restaurants reopened and this place has really got it right. The beer garden is covered with a large canvas tepee so even with the rainy spring we’ve just had it’s been an absolute haven sitting under fairy-lit cover to enjoy the scrummy Mediterranean style food (albeit without the Mediterranean climate).

There’s always a lovely bustling atmosphere too – young and old, smart and casual – it’s clear it’s for everyone and everyone enjoys it. So the food… I’ve heard Sunday lunch is lovely but the Tapas is the best I’ve had. There’s an extensive menu to suit everyone but I’ll tell you about some of my favourites. Gambas pil pil are a sizzling mix of garlic and chilli – mopping up the juices with the toasted bread is mouthwateringly good. Slow braised pork cheek with apple puree and black pudding is soft and delicious and so is the braised

pork belly in a barbeque sauce with crackling. The round of baked goats cheese with honey and nuts is a sweet and salty delight. And of course, there’s patatas bravas, paella, meatballs, calamares, croquetas, baby octopus and the Spanish ham and cheese

Car insurance premiums expected to fall by up to £35/yr as whiplash reforms take force Drivers could save up to £35 a year on their car insurance, the Ministry of Justice has said, as major reforms to the claims process for whiplash injury come into effect this week. The shake-up includes a new online portal for road traffic injury claims, while whiplash cases can no longer be settled without medical evidence. There were more than 550,000 whiplash claims in 2019/20 alone – a figure the Ministry of Justice has called "unacceptably high". But it believes the new reforms will reduce the number of claims, which in turn should allow insurers to cut premiums for millions of drivers. The Ministry of Justice says insurers have pledged to pass on savings worth a total of £1.2 billion to drivers.

Petrol prices reach highest level in two years Unleaded prices are at their highest level in two years, experiencing the biggest annual increase in 11-years, according to motoring firm the RAC. It blames the hikes on retailers charging motorists more to make up for falling fuel sales during the pandemic. The average cost for a litre of unleaded has soared to 129.27p, which is the highest level since August 2019 (when it stood at the same price) data from the RAC Fuel Watch reveals. Compared to this time last year, prices have risen by 22p/litre, which is the biggest 12-month increase seen for 11

years. Diesel, meanwhile, is now almost 20p dearer than at the end of last May after a 14.4p/litre hike in the past six months alone. The average cost for a litre of diesel now stands at at 131.59p, although it still hasn’t surpassed the 132p a litre it reached at the end of January 2020. According to the RAC, this means a full tank for a 55-litre family car will set you back £71.10 to fill up with unleaded, and £72.37 for diesel. The RAC adds that it's the seventh month in a row of rising prices.

Degenerative disc disease (ddd) JUST ABOUT every single one of us will experience some type of back pain in our lifetime with pain levels going from mild to severe. Dependant on our own body’s condition, our wellbeing at the time and how we damage our back, the period of pain can be short-lived or last for a long time. No matter how strong we are or how we caused the injury, pain in our back will make our normal everyday activities more difficult to perform. WHAT IS DDD? Firstly, it’s worth pointing out that this is not actually a disease but a condition and suffering from DDD is very normal. As we age, our discs start to naturally degenerate; the average age for this to start happening is around 25 years onwards and by the time we hit 40 years old there’s a very good chance that we may have a mild form already but may not show any symptoms. Approximately 80% of our discs are made from water which is surrounded by the Annulus which is a tough fibrocartilage. When we put stress and strain on our discs the water will gradually start to dry out. Dehydration of a disc is the first sign of degeneration and when more than

one disc is affected in this way, this will be classed a DDD. Continuing the stress and strains on our discs usually causes further degeneration and we stand a good chance of placing too much downward pressure on the disc(s) which will cause it to bulge – continuing the strain over another period of time will see the heightened risk of prolapsing (slipping) one or more discs. Unlike the other tissues in our body, there is very little blood supply to our discs so once we sustain an injury the body cannot repair it and it will start to deteriorate. WHAT ARE THE CAUSES? As you would expect, there are many causes of DDD, but below are the most common: • Genetic or Hereditary – a weakness in your Annulus can run in families or you can be born with a weakness in one or more discs • Wear and Tear – degeneration will be caused by the stress we place on our own backs over the years • Poor Nutrition and Dehydration – sustaining a poor diet will dramatically reduce the strength of our ligaments and fibres in and around our discs

• Sport – usually caused by tearing the outer portion of the disc • Age – as I explained earlier, our discs will naturally deteriorate • Poor Posture – understandably constant forward bending forward or putting our backs in a compromised position will increase the amount of pressure on the discs and speed up the degenerating process • Injury – any other trauma that causes damage to our discs WHAT TREATMENTS ARE AVAILABLE? • Heat – this will afford the area comfort and help to ease and sooth the pain. Heat therapy can also assist with our mobility • Medication - pain-killers and antiinflammatories usually do exactly what they are designed to do but advice from your GP or pharmacist is advised prior to starting any medication • Manual Therapy – modalities such as massage, ultrasound, electrical stimulation, medical acupuncture and heat therapy will all help after an initial diagnosis to identify the problem. This clinic will also design a bespoke rehabilitation programme with constant updates containing

both stretching and strengthening exercises enabling you regain your mobility • Braces – it may be necessary to use a brace for short period of time. The most common look like a corset and wrap around your stomach and back to give support. It is strongly recommended that these types of braces are not used for extended periods as your body will become reliant and the original problem/injury may not have been dealt with properly • Traction – there is evidence supporting the effective use of traction and inversion tables in combatting back problems. The Real Dangers of Unregulated Will Writing Services When obtaining and paying for legal documents, it can seem to many as an unnecessary expense, and with the advent of online ‘quick Wills’ and standard preprinted packs that can be bought from high street stores like WHSmiths, many people question why they should go to the expense of instructing a Solicitor. Many online Will services offer the convenience of home visits and draw people in with headlines claiming Wills at ‘rock bottom’ prices. It is therefore not surprising that over the past few years these services have become a lot more popular. However, in line with their increased popularity, there has been a massive increase in people who are dissatisfied with the service they receive and ultimately, when they come to rely upon the documentation, they find that it does not necessarily provide for what they require.

I have seen many cases situations where Clients suddenly find that they have inadvertently appointed the Will writing service as their Executors, been talked into setting up Family Trusts and appointed these Will writing companies as Trustees, and where they have been charged for the storage and return of their documents. In some cases, the company has even disappeared, along with their original Wills.

We appreciate that over the years Solicitors have received bad press. Many people think that all of us are ‘in it for the money’ and many may dismiss this article as sour grapes from a Solicitor who has been provided with healthy competition by Will writing services but that could not be further from the truth. Having being faced with, on a number of occasions recently, relatives who have attended at my office in a panic and where we have tried to unravel and resolve the issues caused by unregulated Will writing services, my advice comes from a place of genuine concern and caution. Solicitors are very heavily regulated. Local charity SCARD supporting those affected by road incidents receives The Queen’s Award for Voluntary Service Trustees and volunteers

Ossett-based SCARD (Support and Care After Road Death and Injury) has been honoured with The Queen’s Award for Voluntary Service. The Queen’s Award was established in 2002 as a celebration of the Queen’s Golden Jubilee. The accolade is the highest recognition a voluntary group can receive in the UK. SCARD is one of 241 charities, voluntary groups and social enterprises to receive the award in 2021. SCARD offers year-round support to those affected by road injury or death, including free and low-cost one-to-one counselling with a BACP-approved counsellor; emotional support; sign-posting to legal assistance, and general help and advice. Other groups to be awarded include a London-based children’s bereavement charity, a support group in North Yorkshire for those living with dementia and their carers, and a Cumbrian volunteer minibus service. SCARD are looking for Helpline Volunteers to join their team Our aim is to help relieve distress among people who have been bereaved, injured or affected by road death or injury. To provide emotional support through a telephone helpline, support groups and personal support system. with the award crystal and certificate later this summer. Two SCARD volunteers will also be invited to attend a garden party celebrating The Queen’s Award at Buckingham Palace in May 2022 (depending on COVID-19 and restrictions at the time). Trustee and founder Carole Whittingham said: “We are honoured and delighted to accept the Queens Award for Voluntary Service. Over the last three decades, many of our supporters and volunteers have worked tirelessly, reaching out to support all victims of road death and injury. At SCARD, we know first-hand the trauma that road death brings to loved ones and we all work together to help those affected. We will

continue to do so while there is ever a need. “We couldn’t have done this without the unwavering support of all of our volunteers.” The SCARD team includes five trustees, two BACP-approved voluntary counsellors, one administrator, 15 helpline volunteers and six fundraisers. SCARD is a local charity (based in Ossett, Wakefield) with a national reach. It was founded by Carole and Frank Whittingham following the tragic death of their son in a road traffic incident in 1992. The charity also works closely with its partner CADD (Campaign Against Drink Driving).
