Al llegar el mes de diciembre, nos detenemos a reflexionar sobre un año que, aunque lleno de desafíos, también nos ha mostrado la fuerza, la esperanza y la unidad que definen a nuestra comunidad hispana en el Lowcountry y más allá.
Sabemos que el 2025 trajo consigo cambios difíciles en temas migratorios: familias enfrentando incertidumbre, jóvenes soñadores con caminos bloqueados, y trabajadores esenciales luchando por estabilidad. Pero también hemos sido testigos de algo más poderoso: la solidaridad que nace cuando nos apoyamos unos a otros, la valentía de quienes alzan la voz por sus derechos, y la fe que nos impulsa a seguir adelante, incluso en los momentos más duros.
Desde Bluffton hasta Hilton Head, desde Savannah hasta Beaufort, hemos visto

We know that 2025 brought difficult changes in immigration policy—families facing uncertainty, young dreamers with blocked paths, and essential workers striving for stability. But we’ve also witnessed something even more powerful: the solidarity that emerges when we support one another, the courage of those who raise their voices for justice, and the faith that keeps us moving forward, even in the hardest moments.
From Bluffton to Hilton Head, from Savannah to Beaufort, we’ve seen how our roots are woven into the fabric of this region. We are entrepreneurs, students,

“La Navidad comienza con el Día de las Velitas, el 7 y 8 de diciembre, cuando se encienden velas y faroles en honor a la Virgen María, acompañados de buñuelos, natilla y música. Cada vela lleva una petición especial para la familia. Luego, del 16 al 24 de diciembre, se celebran las novenas al Divino Niño Jesús, rezando y cantando villancicos en distintas casas, compartiendo refrigerios y alegría. La noche del 24 culmina con la entrega de regalos, símbolo de unión y esperanza”
FAMILIA NACIF (BOLIVIA)
“En Navidad, la tradición comienza con la Misa de Gallo a la medianoche del 24 de diciembre, seguida de una cena típica con picana, lechón al horno y buñuelos con api. Los pesebres ocupan un lugar central en la decoración y los villancicos se acompañan con instrumentos andinos como el charango y la zampoña. A la medianoche, los fuegos artificiales celebran el nacimiento de Jesús, mientras la generosidad se refleja en compartir comida con vecinos y personas necesitadas”

EL SABOR DE LA NAVIDAD AMERICANA: JENGIBRE Y ALEGRÍA

Para un chef, la Navidad es una época que se saborea. Y en Estados Unidos, las festividades giran en torno al hogar, la luz y, por supuesto, la cocina.
La celebración comienza temprano, con el ritual familiar de escoger el árbol navideño y colgar los calcetines sobre la chimenea, que Santa Claus llenará de dulces y pequeños regalos la mañana del 25. Las luces deslumbrantes son obligatorias, transformando vecindarios enteros en mágicos paisajes invernales.
Pero el corazón de esta tradición es el olor que emana de las cocinas: las galletas de jengibre. Decorar figuras de hombres, estrellas y árboles es una actividad intergeneracional. Incluso se le dejan algunas galletas y un vaso de leche a Santa Claus la víspera de Navidad.
Aquí un toque de esa tradición para su casa:
MINI GALLETAS DE JENGIBRE
ESPECIADAS (Rinde 15-20 galletas pequeñas)
• Mezcle 1 taza de harina (120g),
• 1/2 cucharadita de jengibre molido,
• 1/4 de canela
• 1/4 de bicarbonato.
PROCEDIMIENTO
1. Aparte, bata 1/4 taza de mantequilla (55g) a temperatura ambiente con 1/4 taza de azúcar moreno y 1 cucharada de miel o melaza.
2. Incorpore los secos poco a poco hasta formar una masa.
3. Estire a 3-4 mm de grosor y corte con un cortador pequeño.
4. Hornee a 180°C (350°F) por 8-10 minutos. Deje enfriar y decore con un simple glasé de azúcar glas y unas gotas de limón.
¡Una deliciosa manera de recrear el espíritu "Merry Christmas" en su propia cocina!
THE FLAVOR OF AN AMERICAN CHRISTMAS: GINGER AND JOY

For a chef, Christmas is a season to be savored. And in the United States, the holidays revolve around home, light, and of course, the kitchen.
The celebration starts early, with the family ritual of picking out the Christmas tree and hanging stockings over the fireplace, stockings that Santa Claus will fill with sweets and small gifts on the morning of the 25th. Dazzling lights are a must, transforming entire neighborhoods into magical winter landscapes.
But the heart of this tradition is the aroma that wafts from the kitchen: gingerbread cookies. Decorating little men, stars, and trees is an intergenerational activity. Some cookies and a glass of milk are even left out for Santa Claus on Christmas Eve.
Here’s a taste of that tradition for your home:
SPICED MINI GINGER COOKIES
(Makes 15–20 small cookies)
• Mix 1 cup of flour (120g)
• 1/2 tsp ground ginger
• 1/4 tsp cinnamon
• 1/4 tsp baking soda
INSTRUCTIONS
1. Separately, beat 1/4 cup of roomtemperature butter (55g) with 1/4 cup of brown sugar and 1 tablespoon of honey or molasses.
2. Gradually incorporate the dry ingredients until a dough forms.
3. Roll out to 3–4 mm thickness and cut with a small cookie cutter.
4. Bake at 180°C (350°F) for 8–10 minutes. Let cool and decorate with a simple icing made from powdered sugar and a few drops of lemon juice.
A delicious way to bring the “Merry Christmas” spirit into your own kitchen!
ÁRBOLES DE NAVIDAD, VELAS Y LUCES

¡Decora con seguridad esta temporada navideña!
Si vas a usar un árbol natural, asegúrate de que el follaje esté fresco y verde. Si se caen fácilmente, el árbol se está secando y representa un riesgo de incendio. Nunca coloques el árbol cerca de fuentes de calor como chimeneas o calentadores. Riégalo todos los días.
Coloca todas las velas en porta velas resistentes. No las dejes consumir por completo, apaga la vela cuando queden unos 5 cm de cera. Mantén las velas alejadas de cortinas, ventanas y salidas. Las velas en mesas bajas pueden ser peligrosas para niños pequeños o mascotas. Nunca las dejes encendidas sin supervisión.
Revisa todas tus luces navideñas antes de colgarlas. Desecha las que tengan cables pelados, agrietados o enchufes dañados. Como regla general, no conectes más de tres tiras de luces entre sí, aunque lo mejor es seguir las recomendaciones del fabricante. No sobrecargues los enchufes ni pases extensiones por debajo de alfombras.
¿Tus luces están aprobadas para uso exterior? Las luces de interior pueden incendiarse si se usan afuera. No conectes más luces de las recomendadas, podrías provocar un cortocircuito o un incendio. Asegúrate de que todas las luces exteriores estén conectadas a un circuito con interruptor de falla a tierra (GFCI).
Al instalar luces en exteriores, elige un día con buen clima. El viento puede afectar tu equilibrio, y con lluvia, ¡nadie quiere trabajar con electricidad!
Prueba todas tus luces antes de subir al techo, ¡es más fácil cambiar focos desde el suelo! Asegúrate de que la escalera esté sobre terreno firme y nivelado.
Usa clips especiales para colgar luces, como los de canaleta o moldura. No uses pistolas de grapas, pueden dañar los cables y provocar cortocircuitos o incendios.
Recuerda que las luces decorativas son para uso temporal. Retíralas dentro de los 90 días para evitar que se dañen por el clima.

CHRISTMAS TREES, CANDLES & LIGHTS

Decorate safely this holiday season!
If you're using a real tree, make sure the foliage is fresh and green. If they fall off easily, the tree is drying out, and that’s a fire hazard. Never place a tree near heat sources like fireplaces or space heaters. Water your tree every day.
Ensure all candles are in sturdy holders. Don’t burn them all the way down, stop when about 2 inches of wax remain. Keep candles away from curtains, windows, and exits. Candles on low coffee tables can pose a risk to small children or pets. Never leave candles unattended.
Check all your holiday lights before hanging them. Discard any with frayed or cracked cords or damaged sockets. As a general rule, don’t connect more than three strands together, though it’s best to follow the manufacturer’s instructions. Avoid overloading outlets or running extension cords under carpets.
Are your lights approved for outdoor use? Indoor lights can catch fire if used outside. Don’t exceed the recommended number
of connected strands, you could short out circuits or start a fire. Make sure all exterior lights are plugged into a ground fault interrupter circuit (GFCI).
When installing outdoor lights, choose a day with good weather. Wind can affect your balance, and rain makes working with electricity dangerous.
Test all your lights before climbing onto the roof, it’s much easier to replace bulbs on the ground! Always place your ladder on stable, level ground.
Use proper clips for hanging lights, such as gutter or trim clips. Never use a staple gun, it can damage the wires and cause shorts or fires.
Remember, decorative lights are meant for temporary use. Take them down within 90 days to prevent weather-related damage.
