Chilean health food producer Soy Silvestre has been offering quality health supplements based on natural ingredients for the last 8 years. The company’s ethos has always been to promote connection with nature and healthy habits. Wheatgrass shots constitute an important part of their offering and were previously packaged in 30ml plastic pots, wrapped by hand. Today, the company has adopted compostable flexible packaging to protect their very special product and its nutritional content. This is a significant step as liquid products are notoriously difficult to pack, particularly in compostable packaging.

The packaging structure is provided by Green Heart Solutions, a Chilean packaging converter. The highperformance structure includes a high barrier cellulose NatureFlex™ film layer sourced from Futamura, laminated to another biofilm for hermeticity. It allows Soy Silvestre to produce small flexible sachets for their dose of liquid goodness.

The new solution enables automated

packaging and effectively protects the fragile product through its life cycle. Not only is the product protected for its 4 months shelf life, but the sachets are also compostable. Served by Regal: Winning restaurant wines

We’re delighted to welcome Served by Regal as our Specialist Wine Importer of the Month

Served by Regal is a specialist wine importer that brings both artisanal aromatic whites or earthy reds, lovingly crafted by Spanish women winemakers from indigenous grapes. The range of wine is made using biodynamic or natural wine techniques.

The Finca Mas Perdut selection has gained particular attention from the wine industry. The earthy, fruity red ‘Cervell’ wine is made from a combination of grapes, including the drought-resistant Sumoll. This indigenous grape requires less irrigation than other French varietals grown in Catalunya, saving precious water supply and thriving despite challenging climate conditions. The natural white ‘Pell’ was picked as a ‘wine to watch’ at the London Wine Fair 2024.

The Pell De Mas (Skin) (Finca Mas Perdut) has a stunning straw yellow appearance with golden tips, but not only does it look exquisite: it has intense floral notes: rose, citrus and aromatic herbs and is ideal when paired with rice, meats and tapas dishes like carpaccio and part-cured cheeses.

For a gastronomical delight, Pell’s sister wine: Ma De Mas is a wonderful herbaceous white wine with refreshing notes of white flowers, green tea and forest herbs. This pairs excellently with a range of cold starters or semi-cured cheeses to mains including sushi, vegetables and semi-cured cheese.

This is underpinned by our unwavering commitment to ecological techniques like biodynamic, minimum intervention and regenerative practices to positively impact the environment,” outlined Dan.

Speciality & Fine Food Fair delivers a 25th anniversary event to remember

Speciality & Fine Food Fair, the UK’s leading showcase of artisanal food & drink, returned to Olympia London from 10-11 September 2024 to celebrate its 25th anniversary with an extravaganza of inspiring producers and insightful conversations.

Farm shops, delis, independent retailers, specialty wholesalers, leading supermarket multiples, hospitality professionals and more descended on the Fair to discover the latest innovations and new products in artisan food & drink and to network with industry peers.

Multi-award-winning broadcaster, Hugh Fearnley-Whittingstall, joined Emma Mosey, Chair of the Farm Retail Association, onstage for an in-depth discussion around the power of local food, and commented, “We want not just great food but food with a great story, we’re better nourished by food when we know its story. LittlePod returned to Olympia for the 25th Speciality & Fine Food Fair bearing news, updates and product developments aplenty to share with visitors to our stand.

It was a pleasure to shine a light on our innovative vanilla orchard in Indonesia, where our farmers use a pioneering system of polyculture to increase biodiversity, improve soil fertility, and regenerate the rainforest around them.

Those who came to see Richard and Paul in the Taste of the West pavilion were able to see – and smell – the LittlePod farmers’ vanilla pods, become the first to sample our recently-launched vanilla powder and learn about our versatile vanilla paste and our other most popular products.

We were also delighted to showcase our new Gift Boxes and share news of our latest innovative offering – an alcohol-free vanilla paste in a tube that we are excited to launch this autumn.

Navigating the Golden Quarter: Retail’s annual pressure pot

Retail Express’ Ed Betts explores the reasons the Golden Quarter is so difficult for retailers, and explains how AI-driven retailing can drive strategic and tactical benefits which lead to bigger profits

The Golden Quarter is a pressure pot when it comes to planning. The 100 day countdown to Christmas encompasses the majority of the year’s key fixed seasonal events, and also squeezes together retail’s most profitable period with its most critical planning window. The Golden Quarter demands that retailers not only take every measure to trade out of the year cleanly, but also that they ratify their strategy for the year ahead.

This period is monumentally difficult, and it is increasingly easy to argue that the Golden Quarter is more challenge than opportunity. The past two years have seen late-year trading happen under a veil of financial uncertainty, with increased costs pressing down on suppliers, retailers, and customers alike. There has been no great reversal of financial fortunes in the past year and the new government’s ‘tough decisions’ mean trade during 2024’s Golden Quarter will certainly not be characterised by a spending free-for-all.

Retailers will be challenged at every turn to meet their customers’ needs and expectations while maintaining their own bottom line.

Forward planning is critical. Joint business planning, in most cases, must be arranged with suppliers, margins negotiated, and the dotted line signed by the start of the next financial year.

Strategy versus tactics

Squeezed, as they are, by the vast amount of pressure the Golden Quarter brings, retailers must be keenly cognisant of the relationship between strategy and tactics. Even with a winning strategy, there are forces that retailers cannot control. It doesn’t matter if a retailer has rolled into the Golden Quarter fully prepared: volatility is a fact of life.

Supply and inventory hiccups must be dealt with tactically. Tweaks must be made to future planning which has, in the course of business, not quite hit the mark. If a retailer is outplayed, surprised by a competitor with a better price or a stronger promotion, that retailer cannot

simply cling to its plan defiantly. It must respond fast with effective solutions.

But those beholden to legacy systems and siloed data will struggle to move quickly. Finding key up-to-the-minute promotions and, most importantly, delivering on them when it counts, means working with the latest information and the strongest insights. The pace of business

between a retailer and its suppliers must match the speed of the market – and today’s market moves faster than ever, particularly at this time of year.

Relieving the pressure

At such a stressful time, retailers must work hard to maintain their tactical acuity at all levels, while high-level executives must also be free to make high-level decisions. These set the course for the year ahead but, in legacy retailing, execs cannot always offer overall strategy the attention it deserves.

A competitor makes an unexpected move, a supplier hits a speed-bump, and bosses are forced to spend countless hours on minute tactical mechanics, refining and revising plans over and over, searching for any way to maintain margins and hit profit targets.

But why do this at all, when a better solution is available? Data, properly analysed, plots a course away from market share dips or worrying sales figures in the long term, and can offer immediate resolution to short-term troubles. Analysis reveals the reasons and helps suggest the solutions. With

Bluewater responds to alarming new research on tap water quality: Spotlights emerging fluoride and microplastic health risks and advocates for cleaner solutions

Bluewater, a global leader in water purification and beverage solutions, is calling for immediate action in response to urgent new research that has raised significant concerns about health risks associated with fluoridation of tap water and microplastic contamination to safeguard public health.

The studies reveal links between tap water fluoridation and lower IQ levels in children. They also show growing levels of microplastics in human brains, spotlighting the pressing need for safe drinking water solutions.

The US Department of Health and Human Services (HHS) has shared a report analysing previously published research that concluded fluoride in drinking water at twice the recommended limit may be linked with lower IQ in children. Various research studies suggested that exposure to elevated fluoride levels, particularly during critical periods of brain development, could correlate with decreased IQ scores.

Low levels of fluoride have been added to drinking water for decades in countries such as the USA, UK, and Ireland as part of efforts to strengthen teeth and reduce cavities, but the practice is rare in most of continental Europe due to perceived health risks.

Adding to these concerns, another recent study detected mounting levels of microplastics in human brain tissue, raising questions about the safety of our drinking water and our broader environmental health.

The preprint science paper – published by the US National Library of Medicine – reported that the amounts of microplastics found in brain samples and other organs have increased significantly since a similar study in 2016. Microplastics, often derived from the breakdown of plastic products, have been shown to infiltrate water sources and ultimately enter the human body, underscoring the growing urgency for cleaner water solutions.

The water-based paint used is low in volatile organic compounds – harmful gases that are emitted into the air which can react with other gases and form air pollutants – and it’s organic, which means it’s made up of natural ingredients and contains very few or no chemical components.

To help improve shelf life of food, beverage and pharmaceutical products alike, Beatson Clark can also spray a UV coating to glass packaging to protect products from the harmful effects of sunlight, including light strike in beers, and changes to the colour and flavours of food products.

Vikings and Goddesses adopts compostable packaging

Vikings and Goddesses is a Minnesota-based, wholesale bakery that supplies over 30 restaurants, coffee shops, and grocery stores with a variety of baked goods and desserts. During the pandemic, they developed a line of frozen products to bring home-made bakery quality and perfection to home ovens.

Since their opening in 2019, the company’s number one priority has been growing a sustainable business, with meaningful employment and liveable wages, while making a high-quality product for consumers. Over the last year, 80% of the waste produced by the bakery has been diverted from the landfill, and either recycled or commercially composted. Quantex pumps manage of chocolate solutions

Product viscosity is a very important consideration for any manufacturer or flow-control engineer who manages the dispense of thick, highly viscous liquids, but especially for those working with chocolate or confectionery-related products due to the unique and variable viscosity of chocolate.

As we previously discussed in our blog ‘How to transfer high-viscosity liquids’ the “pressure and flow rate needed to propel the produce out of its primary container and into its intended location will differ” depending on the viscosity of the liquid. In the case of melted chocolate, however, the final viscosity can vary greatly depending on the differences in production, composites, temperature and other factors. Examples of different chocolate-related food and beverage items and their approximate viscosities are noted in the below table: (Note pure water is 1.0cP).

of cocoa butter than its other ingredients. This would indicate that dark chocolate (which has a higher level of cocoa butter) is more viscous than milk chocolate or white chocolate.

● Added ingredients (flavours) – In order to make chocolate, the cocoa nibs and cocoa butter need to be mixed with other ingredients that hold their own viscosity levels, therefore altering the product’s final viscosity level.

● Emulsifiers – products with more emulsifiers tend to be less viscous as the emulsifier will aid the smoothening of chocolate.

● Degree of temper – this is the temperature needed at various stages to keep the liquid chocolate melted and at its best condition. If chocolate is not tempered properly, the cocoa butter crystallisation is uneven and uncontrolled, resulting in an unattractive dull looking chocolate with white streaks throughout it. If allowed to cool enough, it would harden becoming more viscous during manufacture.

● Temperature – a colder temperature significantly increases the viscosity of a product making it more solid and less smooth/runny.

How conching affects the viscosity of chocolate

When we talk about the conching process of chocolate, we’re referencing the continuous grinding, mixing, and kneading of the chocolate solution over time. During this process, the chocolate will undergo mechanical shear forces, be heated and be distributed to multiple destinations.

It’s in this process that the tiny particles of solids (often cocoa, sugar, and milk) acquire a more uniform and consistent shape allowing them to be evenly coated with cocoa butter. This process will determine the viscosity of chocolate, how it flows, its textural properties and determines how the finished product will melt smoothly in the mouth.

This conching process achieves several essential objectives which can affect the viscosity of chocolate solutions:

● Texture change – the more the chocolate solution is worked and moved, the smoother the texture. The agitation and kneading action reduce the particle size of cocoa solids and sugar, resulting in a fine, homogeneous mixture

Chocolate starts its life from the Cacao tree. This plant will produce the cocoa beans/seeds which are then roasted and ground into a paste. The paste is then mixed with ingredients that may include milk, sugar, emulsifiers and other flavourings depending on what type of chocolate is being manufactured. The final viscosity of the chocolate depends on how the chocolate is treated, its additional ingredients and how it gets manufactured.

Multiple factors can alter the viscosity of chocolate products, these include:

● Fat content – the higher the fat content, the more viscous a product tends to be, eg. it’s considered that ‘the higher the percentage of cocoa butter, the more viscous the chocolate will be’. If the first ingredient listed on a product label is cocoa butter, then the chocolate is considered more viscous as it indicates that it has a higher quantity

● Conching time – this entails the continuous movement and displacement of the product over a prolonged period. The longer the conching process, the more viscous the chocolate will be.

● Evaporation – any residual moisture in the chocolate can be programmed and designed to evaporate during the conching process. This can help enhance the shelf life and stability of the final product but can make a product more viscous

● Enhanced flavour – moving the chocolate solution around allows more volatile flavours (often short-chained fatty acids and aldehydes) to evaporate while providing a time for the interaction between cocoa solids and cocoa butter, leading to the release of flavour compounds and the formation of

● Physical changes – through the conching of a chocolate product, you’re promoting chemical reactions, such as acid-base reactions, oxidation, and reduction processes, which can further refine the flavour, viscosity and colour of the chocolate

● Acidity removal – by altering the chocolate through the conching process, you’re reducing the acidity of cocoa and improving its pH

Normally milk chocolate on a pure chocolate solution (eg. a chocolate bar) is conched at around 50°C to prevent the caramelisation of the product. Should the temperature be any higher, this can cause lumps and sandiness in the mouth when eating the final product.

How Quantex pumps uniquely dispense chocolate

By using Quantex pumps, the high-level viscosity of chocolate is no longer a problem due to the advanced transfer capabilities of the pumps. They use a positive displacement rotary action, with high vacuum and high pressure capability, so the dispense or transfer of chocolate solutions can be carried out at lower temperatures than with other pump technologies. Quantex pumps are powerful

enough to dispense viscous fluids across distances, including cooling areas, without damaging or curing the chocolate solution. They can even pump particulates if the chocolate has small caramel pieces or salt/sugar crystals, fruit or nut pieces.

With our Quantex pump range, the liquid chocolate can be sealed aseptically within the pack as the pump is either secured directly onto the liquid pack (see our Bag-in-Box pumps) or is attached to the primary container in-line and the pack and pump are disposed of or placed into a recycling stream at the end of the pack-life. The pump simply clips into a standard motor-drive in the fixed equipment which means that product changeovers are rapid and there is no risk of cross contamination because the product stays contained within the primary container and pump head.

This game-changing technology is perfect where chocolate or highly viscous food and beverage products need to be dispensed within a retail or food service environment. This is because it keeps the product free from air and contamination, prolonging its shelf-life and eliminates cleaning – reducing costly maintenance regimes. Having the ability to swap products in and out in seconds, without

cross-contamination makes the technology ideal for reducing manufacturing downtime.

This is NOT Scaffolding: A Platform for the 21st Century

We all appreciate that one of the most expensive overheads in a business walks on two legs, arrives every day at 9am, and leaves at 5pm. So, it might just be worth investigating when a product comes along that suggests it can reduce labour costs and provide a more flexible and safe way of working.

Scaffolding is not usually a subject I would get excited about; however, analysis of the data suggests this product requires deeper scrutiny. I would have my knuckles wrapped by the manufacturer if I did not dispel the image conjured up by the word scaffolding. There are significant differences between scaffolding and the LOBO Work Platform System, the subject of this article. Unusually, the differences are both technical and commercial, hence the excitement.

Firstly, it is improbable you’ll see this product on a building site, so dismiss from your mind the concept of traditional scaffolding, with its heavy tubes and planks of timber. Instead, think more of an industrial version of Meccano or an Erector set that can be assembled without any tools and is used by companies to gain safe working at height access when performing both routine and unscheduled maintenance and production tasks.

Enough about the product; let us look at the cost benefits that LOBO claim could save your company thousands of pounds. The system manufacturer has supplied me with countless examples of companies who use it in preference to expensive and inflexible scaffolding contractors. It needs to be said upfront that the system is not the answer to every access requirement. Still, for any internal facilities,

plant or machinery applications, it is a strong contender.

Case examples

We all accept that the way data is presented can have different interpretations, but looking closely at the figures, they appear to stack up. Well-documented case studies clearly show the cost-saving advantages, revealing impressive results with only a minimal investment. The customers studied are not all from the same sector and range from double-glazing installers to large manufacturing multinationals. While they come from a diverse industrial base, they all appear to have similar cost issues.

LOBO cites NASA, Boeing, Airbus, Miller Brewing, Anheuser Busch and Sainsbury’s as only some of their best-known customers. The actual use may differ due to the versatile nature of the product, but the cost-saving benefit applies to all. All these companies and many more besides, have to employ external scaffolding contractors. This can be expensive, as it is time-consuming (in labour costs) to erect, and the scaffolding has to stay up for an agreed minimum rental time, which can be a week or longer, with overrun penalties. However, LOBO points out that anyone can assemble their system (once trained) quickly and easily and then pack away immediately when not in use.

The additional benefit of having your system is that it is available seven days a week and can be deployed whenever you want it, more quickly than traditional scaffolding. The knock-on effect could mean increased production uptime, with obvious cost-saving implications.

The case studies I looked at revealed a payback time of between one and nine months, with capital spend of between 10% and 40% of the existing scaffolding budget. This cost only applies in the first year as, once you have invested, it is ‘free’ to use whenever and wherever from then onwards.

There are ongoing, annual operational costs. In addition, training is recommended, and replacements, spares and additional components have to be factored in. Still, looking at the big picture, these figures make impressive reading – cost savings alone could decide the issue: LOBO claims they might be able to cut your scaffolding costs in half or even reduce it down to zero.

For example, big-budget holders, oil and chemical companies spend millions each year and may feel resigned to paying these vast sums year after year. Now perhaps there is an alternative where the cost benefit analysis adds up, safety is not compromised, and your reliance on scaffolding contractors can be reduced.

Four Speedor Cleanroom high-speed doors have been installed by Hart Door Systems at a major frozen and cooked meat manufacturing in northern England. The doors, at just 1.5m wide and 1.95m high, are the second smallest Speedors ever manufactured by Hart.

Hart’s shutters shut out villains

Amajor contractor has chosen Hart’s shutters to protects its new building in a high crime area in the North West of England.

Brian Woodcock, Hart’s regional sales manager, said the client moved to purpose-built premises located in an area known for high levels of

criminal activity. “The client chose to protect themselves from theft by installing tubular driven window/door shutters around the entire building,” explains Mr Woodcock.

A total of 14 shutters have been installed along with two Sectional overhead doors all finished

in a mixture of anthracite grey and goose-wing grey. These provide comprehensive protection. This order shows that we are capable of delivering a comprehensive range of door products all manufactured by Hart which is the crucial point.
