Cornwall’s coastal brasserie champions local producers and seasonal ingredients.

The appointment of David Waters as Head Chef at Brasserie on the Bay marks a significant development for St Michaels Resort. Waters brings credentials forged at Outlaw’s where he absorbed the discipline of working with premium Cornish seafood. His approach reflects both technical precision and genuine respect for local ingredients.

Brasserie on the Bay is St Michaels’ coastal dining space occupying a commanding position above Falmouth Bay. Waters’ philosophy centres on building relationships with Cornwall’s fishing fleet and farming community, ensuring ingredients travel minimal distances from source to plate. The St Michaels kitchen brigade works closely with day boats landing at nearby harbours, adjusting what they cook based on what the sea delivers.

Earlier this year, a culinary collaboration between St Michaels Resort and acclaimed chef Stephane Delourme, saw the development of new menus, celebrating the best in local produce without unnecessary embellishment. Waters will continue to develop this offering as the seasons unfold, bringing his own individual skills to the table.

An example of which is the torched mackerel fillet which receives careful treatment, enhancing rather than masking its natural qualities, partnered with soused tomato and squid ink tuile that add textural interest without overwhelming the primary ingredient.

Cornwall’s natural larder extends beyond the shoreline, as evidenced by the wild mushroom and summer truffle linguini. Here, Waters incorporates miso to create depth whilst maintaining focus on the woodland fungi. Such dishes prove that celebrating Cornwall’s bounty need not mean parochial cooking – international influences can strengthen rather than dilute local identity.

The lobster thermidor represents more than culinary skill. Each serving generates funding for Padstow’s National Lobster Hatchery, demonstrating the kitchen’s commitment to sustainable practices. This approach ensures that today’s menu choices support tomorrow’s fishing industry.

From the dining room’s Falmouth Bay views, diners can look out over the very waters that supply their table. This connection between location and plate creates context for honest, flavourful dishes that require no artificial enhancement. From home experimentation to one of Cornwall’s most respected beer producers.

The story of Verdant Brewing Co. begins with curiosity and a thirst for something different. Back in 2014, Cornwall-based homebrewers Adam Robertson and James Heffron collaborated with Richard White to create the kind of beer they couldn’t find locally – juicy, hoppy, hazy brews that challenged conventional British ales. Over ten years later, their creations flow from taps in over 1,000 UK venues and travel to more than 20 countries worldwide.

At the heart of their success sits Lightbulb, the 4.5% Extra Pale Ale that illuminates Verdant’s distinctive approach. Surrounded by historic architecture and tranquil gardens, this Grade II-listed retreat serves up refined yet relaxed dining in its elegant gardenview restaurant. Under the direction of Head Chef Ollie Wyatt, alongside Nick Hodges, menus are designed to let Cornwall’s natural flavours shine. “We try to keep things simple,” Ollie explains, “so what’s on the plate really speaks for itself.”

Creative meat dishes, succulent local seafood and delicious veggie options highlight a deeply rooted respect for seasonal produce. The Alverton’s afternoon teas are equally popular, served with a touch of quiet sophistication. In the summer months, Ollie takes to the terrace for Friday night barbecues, filling the gardens with the scent of sizzling meats, fresh fish, and charred vegetables. And for seafood lovers, Lobster on the Lawn returns on Saturday 26th July – a decadent outdoor celebration with fresh seafood, bubbles, and a relaxed al-fresco vibe.

With Liam Trathen at the helm, the future of dining at the Polurrian is deliciously bright.

Perched above some of Cornwall’s more breathtaking coastline, the Polurrian on the Lizard is fortunate to have 29-year-old Liam Trathen as its head chef. With an infectious passion for local ingredients and bold coastal flavours, Liam’s culinary journey began in 2017 when he joined the Norway Inn as a kitchen porter. It was here that he got his first taste of the high-energy kitchen environment and he was hooked.

From there, Liam stepped up as a commis chef at The Falmouth Hotel, where he spent several years honing his skills and learning the building blocks of fine dining. In 2018, he joined the Polurrian team as a sous chef and by January 2020, he’d taken the reins as head chef.

While the pandemic posed challenges for many, Liam used lockdown as a springboard –experimenting with new ingredients, developing fresh ideas and refining dishes at home with the help of his biggest fans: partner Neisa and their newborn daughter. The enforced pause allowed him to reconnect with his culinary roots and explore Cornwall’s rich seasonal produce. His creative journey through those isolated

months yielded unexpected innovations and flavour combinations. The result? A rejuvenated post-lockdown menu full of vibrant, seasonal plates that truly reflect Cornwall’s coastal bounty.

Liam’s menus are rooted in his love for seafood, so you can expect beautifully cooked local seabass, mackerel and hake, often paired with hand-gathered samphire from Polurrian Cove. Elderflower posset, made from locally gathered blooms, is a signature dessert and a personal favourite of his.

He’s also passionate about developing emerging young talent and encourages his team to explore ingredients, forage sustainably and contribute creatively. With exciting development plans on the horizon, including a new kitchen and expanded facilities, Liam is looking ahead to an executive chef role and shaping the next chapter of the Polurrian’s food story.

METHOD

1 Heat the olive oil in a large pan over medium heat. Add the onions and cook until softened. Stir in the garlic and cook for 1 minute.

2 Add the minced beef and cook until browned. If you’re using plantbased mince, follow the packaging instructions for best results.

3 Stir in the red bell pepper, smoked paprika, cumin, and coriander, cooking for another 2 minutes to release the spices’ aromas.

4 Mix in the chopped tomatoes, tomato puree, and Cornish Chillies Mole Sauce. Stir well to combine.

5 Add the kidney beans and stock. Bring the mixture to a simmer, cover and let it cook gently for 25-30 minutes, stirring occasionally.

6 Season with salt and pepper to taste. Remove the lid for the last 5 minutes of cooking to allow the sauce to thicken.

7 Serve hot over rice, with tortilla chips on the side, or enjoy as a hearty filling for jacket potatoes. Garnish with fresh coriander leaves.

For extra flavour and heat, try adding a Cornish Chillies Chocolate Habanero to add a lovely depth of flavour as well as heat.

1 large onion, finely chopped

2 cloves of garlic, minced

1 red bell pepper, diced

400g tin of chopped tomatoes

2 tbsp Cornish Chillies Mole Sauce

1 tbsp tomato puree

1 tsp smoked paprika

1 tsp ground cumin

1 tsp ground coriander

400g tin of kidney beans, drained and rinsed

1 cup of beef or vegetable stock

1 tbsp olive oil

Salt and pepper to taste

Kota Kai is embracing the season with fresh flavours, a summer wine list and new cocktails. We will also be having barbecue events happening on the green with our chefs cooking up an exciting and different style of cuisine. Dishes from the barbecue like scallops with ponzu citrus butter and XO chilli crunch, Octopus salad with Aji Rojo, marinated grilled bavette steak taco with salsa Fresca and pickled chillies, will be sure to tantalise the taste buds. The launch of our every day £5 happy hour on the green this summer between 4.30pm and 6.30pm, will be a great way to relax in the sunshine after a day on the beach.

We will have a selection of some organic wines, beer and cocktails to enjoy while the sun goes down and dinner time approaches.

Ash and his bar team have created a summer cocktail list full of refreshing twists, such as a Lemongrass Mojito, Pineapple Chilli Margarita, Coconut Negroni and a Miso Butter Old Fashioned to name just a few. Our seasonal wine list has been carefully curated to suit summer flavours with a great selection of rosé, bubbles, white and light red wines. There is even a selection of more full-bodied reds to match the barbecue dishes too.

Myself and Head Chef Ryan Venning have created a summer menu designed to capture local seasonal produce, while keeping our signature global-inspired influences. From vibrant seafood

dishes to bold, flavour-packed small plates, snacks, Philip Warren Butcher’s meats and colourful vegetarian dishes, the summer menu is a celebration of the best produce we can find in Cornwall. Expect day-boat fish, mussels, scallops, lobster, crab, vegetables and meat dishes enhanced with Asian flavours. We also have a varied and exciting brunch menu available throughout summer with some classic dishes such as pancakes, French toast, smoked salmon bagel, mixed up with Roti John (Malaysian breakfast roll) and a smoked bacon and 63-degree egg ramen – a great way to kick start your day along with some breakfast cocktails such as a Bloody Maria, Grapefruit Paloma or maybe a Marmalade Daiquiri.

For families, summer at Kota Kai means more than just food. Our warm, laid-back atmosphere

makes us the ideal spot for everyone. Kids will love our menu designed just for them and parents can unwind knowing that good times are on the menu for all ages. The lounge is also a lovely place for all to relax and play board games on those less-sunnier days. Even well-behaved dogs are welcome during the daytime. If you’re thinking of planning a celebration, we can seat up to 130 guests in the whole restaurant or up to 30 in a private room. The outside terrace can seat up to 60 people – just call or email for any enquiries.

Open for our 20th year, Kota has undergone a big revamp in 2025, after a refurbishment that has seen a new bar area created for wine tasting and cocktails, new furniture and a new colour scheme, Kota has also had a transformation in the kitchen with a new style of menu, inspired by the Basque region’s PinXos and their food culture of all day eating with a variety of dishes served in different portion sizes. This has led to a buzzy, fun service style delivered by Elle and her friendly front of house team. Kota’s kitchen is headed by Ross Sloan who I have worked with for many years and our dishes still have that touch of Kota’s subtle Asian influences. For example, Spanish tortilla with fresh crab, dashi mayonnaise and spring onion or fish served with a Mouclade sauce infused with Thai yellow curry flavours, green apple and mussels. The new menu has different sections in the form of snacks, PinXos and specials that are designed to share with your table. For those who enjoyed our tasting menu, there’s still a chef’s daily six-course menu that changes depending on what ingredients arrive through our kitchen door, and there will always be an uber-seasonal dish on the menu.

The ever-changing ingredients of the season will always be reflected in Kota’s menus. Ingredients such as hand-dived scallops, shellfish, lobsters, crab and day-boat fish come together with organic vegetables and the best meats to a menu full of creativity and passion. The same applies to the foraged ingredients in our dishes which we gather from nearby woods, pastures, sea and coast to enhance each mouthful. There are always plenty of seafood dishes on the menu and vegetarians are really well catered for with a menu full of the best ingredients. Don’t worry, carnivores are well looked after too with carefully sourced, top- quality meats with full provenance from Philip Warren Butchers who are, in my opinion, the best in the UK. There is a separate children’s menu, or we have dishes available from our normal menu for the more adventurous.

Every course is perfectly matched with a wine recommendation from sommelier Dan, taken from our list of fantastic wines from around the world. Cocktails are a must at Kota with aperitifs such as a Kota Vesper Martini which uses an oyster-infused local gin from Saint Sithney, a Cornish Bramble, or perhaps an Americano using local Knightor Rosé Vermouth to kick off your evening. We have Budvar on tap and local beers from Sharps forming part of our beer-matching courses to go with our chef’s daily menu. Those who like a digestif have a myriad of options to choose from… if you can get past our excellent Espresso Martini that is!

In the evening, the menu moves to an à la carte offering, where the restaurant changes with the sunset tones and immersive Asian décor. Relax beneath impressive light sculptures that cast

a warm glow over your colourful dishes, creating the perfect ambience for a romantic evening.

There’s no need for flourish when your offering speaks for itself. That’s the triumph of Dan Dan the Lobster Man, the open-air seafood shack founded by fisherman Dan and his daughter Jasmine on Porthleven’s harbourside. From the morning haul to the midday plate, Dan’s catch makes almost no detour, just a short lift from the boat.

The set-up is straightforward: a converted shipping container, a few benches and tables. Infact simplicity is a conscious choice here – a lobster tail, split and ready to consume, mackerel pâté made in-house or dressed crab with lemon. These are meals to be eaten with your hands, not due to a lack of cutlery, but because that’s the best way to do it.

The offering couldn’t get any fresher – “Had the best, most fresh crab sandwich ever with a fresh, tasty salad and a glass of prosecco!” and “We had the Jazzy Seafood platter. Absolutely delicious. Fresh shellfish, salad & anchovies!” are just some of the plaudits.

As it’s staffed by family and friends the establishment exudes a warm and welcoming atmosphere, with one reviewer commenting, “The service was great, laughing and joking, do not miss this place if you are in Porthleven.”

In the age of chain restaurants, this is the venue to head to if you want a genuine experience. You sense it in the welcome, in the pride taken with each plate, in the way staff chat with regulars and first-timers alike. It’s a family operation, and it shows in the consistency, generosity and flavour on offer.

And if you can’t make it to Porthleven then head to the Una St Ives Resort in Carbis Bay, where they’ve just set up a shack there.
